THE THRILL OF SPEED AT BEAULIEU AS ICONS OF FORMULA 1 TAKE TO THE STAGE

A chance to experience the thrill of Formula 1 and celebrate the legendary icons of speed will be on o er at the National Motor Museum at Beaulieu this season.

From the 24th May until 2nd November 2025 a new special display at the Museum will mark 75 years since the inaugural Formula 1 World Drivers’ Championship in 1950. The temporary exhibition will bring together nine iconic Formula 1 racing cars, including cars from World Championship winning teams such as BRM, Lotus, Williams and Ferrari. Each vehicle represents a decade of technical and sporting development in Formula 1’s illustrious history – as well as some of its most legendary drivers.

The Museum’s celebration of this motorsport anniversary isn’t just o ering visitors the rare chance to see all the cars together but also experience the thrill of driving the powerful machines with an

immersive adrenaline-fuelled Formula 1 simulator experience. The state-of-the art simulator sessions will give the rush of sitting in the cockpit of an F1 car, just like a real racing drive. The sim racing experiences will be available as an addition to the Beaulieu attraction ticket, and visitors will get the opportunity to compete for a monthly Champagne prize for the best lap time around the realistic circuit.

The Icons of Formula 1 display headline sponsor is logistics company IndigoBlue who work with the National Motor Museum to transport historic cars to events across Britain.

Entry to the display in the Museum is included in the Beaulieu ticket, and simulator experience add-on tickets can be booked and purchased on the day – the supplementary price starts at £15 for a 15 minutes sim experience.

INCREASED SUPPORT FOR YOUNG PEOPLE WITH DISABILITIES

Diverse Abilities, Dorset’s Disability Charity, now o ers transitions care and support for young people with physical and learning disabilities up to the age of 30, as they go from children’s services up to adult services.

The disability charity is increasing the age range for it’s Shapes Transitions service from 18-25 to 18-30 years old. The day service provides care at Lily’s Place for children and young adults with profound physical and learning disabilities, where facilities include fully equipped bathrooms, rooms with hoists and specialist equipment, sensory room, garden and specialist switch toys to aid communication.

This is a time for young people to slowly make the transition from children’s to adults services, which can be a particularly di icult time when young people and their families have to navigate leaving school, changing day services and meeting new doctors and consultants. Being surrounded by people they know through this process makes all the di erence.

Especially for Poole Pride they are teaming up with Erin Mansfield, one of the UK’s most energetic young (and queer) callers, to bring us the single best ceilidh of our lives (probably). All dances/ calling will be completely genderless, just bring suitable footwear… and a complete lack of self-awareness!

Also during the day, Destination Opera will present A Meditation on Queer Art Song, featuring music chosen Dorset-based international opera singer and producer Jon Valender by composers such as Tchaikovsky, Benjamin Britten and Francis Poulenc, who were known to be (or widely accepted as) gay, as well as those such as Ivor Gurney who were assumed to be.

FISHERMAN POEM LANDS PUBLISHING PRIZE CATCH FOR YOUNG WRITER NEAVE

A poem called Fisherman has landed a prize catch for 14-year-old Neave Stenning after it was selected for a new poetry anthology.

Neave, who attends the weekly Lighthouse Young Writers course, will see her work published in Poetry Escape – Voices from the UK as part of an annual competition for young creative writers.

“Lighthouse Young Writers has inspired me immensely and helped me become more confident in my writing,” said Neave, from Wimborne.

“Neave is just one of the many talented and imaginative writers who’ve attended one of our weekly workshops,” says Rohan Gotobed, lead facilitator of Lighthouse Young Writers.

“Everyone has a story to tell or a poem to pen, and it’s a joy to see young people flourishing creatively. We’re always delighted to welcome newcomers, and thanks to Lighthouse and ArtfulScribe it’s free to attend.”

A copy of the book will be added to the National Archives of the British Library.

Renters rights bill update

After seven sessions over April and May, the Lords committee stage of examining all the clauses and schedules is now complete and will progress to the report stage. This will involve the Bill being further scrutinised and will also have a chance of making any additional amendments. This normally starts around 2 weeks after committee stage and will last a few days, then followed up by a third reading. General feeling is we are still on track for late summer/October for this to be officially in.

So far 300 plus amendments have been rejected and the feelings are it will not be too dissimilar to its original form from September 2024.

One of the slight changes is to the term landlords have to give notice to their tenant. This will now be 4 months and cannot be given in the first 12 months of a tenant moving into a property, so the earliest this would be given is a month 8. A tenant can give 2 months’ notice on any date (no longer their rent due date).

Mortgage Repossessions on the increase Mortgage repossessions are on the increase, and have jumped 31% in claims compared to the quarter 1 of 2024. Landlords being repossessed has increased by 5%. This will be down to the cost of living increases starting to show in the stats. Rising interest rates and a rise in the cost of living just shows the financial pressures now coming to surface.

Tenants staying in the property beyond their eviction date and going to bailiff stage is also on the increase.

IN THE COURTS

A landlord found themselves in court recently, due to a misunderstanding of the rules for HMO licencing. The property in question was rented to 4 friends and were all unrelated. The landlord claimed to misunderstand the ‘household’ rules of HMO’s and was told the 4 applicants were made up of 1 couple and 2 relatives and therefore was 1 household. The tenants denied this and said they have always said they were 4 friends. The landlord was not equipped under the Hounslow council rules that has ‘additional HMO rules’ with fire doors and fire alarms. The tenants were seeking a rent repayment order. The judge awarded them 75% of the rent they had paid £11,250.

It is vital that landlords are covering all junctions. If the tenants did say they were related and knew they could move in and claim at a later date their rent paid, I would say they knew how to play the system. If the

landlord knew they were friends and didn’t want to go down the HMO licensing rules, then it has come back and bit him.

Either way, a very costly error.

AN OFFER OF ADVICE

It’s clear that the lettings industry is undergoing significant changes, and staying ahead of the curve is becoming more difficult for landlords managing properties on their own. Extendable options offer the flexibility to adjust to your guest list, he adds. “Avoiding the squeeze of too-small tables or the disconnect of oversized ones.”

As Gisela Lancaster, head of buying for Sofology, points out: “Hybrid spaces like open-plan kitchens work seamlessly, when furniture is carefully placed to establish informal delineation.”

For an open-plan kitchen and living room, she suggests a refresh which positions the sofa looking out, whilst “creating a relaxed living-dining space where every element is playfully aligned for a look that feels integrated and intentional”.

Lean into a combination of evocative seasonal tones such as ocean blue with hard-wearing but informal finishes, like chenille, suggests Lancaster, for a scheme that evokes easy and laid-back living.

Update your lighting

“Spring is all about renewal… longer days, more natural light, and the perfect excuse to give your kitchen lighting a little seasonal refresh,” says Jo Plant, head of design, Pooky Lighting.

Layering your lighting with a mix of ambient, task and accent lighting will give your kitchen flexibility, highlights Plant. “Why not experiment with the ultimate scenestealer, a chandelier over the island? Whether you go for bold and sculptural; or classic and twinkly, a chandelier adds instant character and elevates the everyday.”

She continues: “To echo spring’s soft, optimistic palette, try switching up your lampshades for ones in blossom pinks, zingy greens or soft duck egg blues.”

Even small changes, like a pastel-toned shade or pop of sunny yellow can totally lift the mood of the room, adds Plant. “Think fresh, bright, and a little bit playful.”

Drinks at the ready

As Smith highlights, the kitchen island is often seen as the heart of the home, adapting effortlessly from a morning coffee spot… to evening entertaining hub.

Try extending the drinks menu and establishing a curated drinks area for summer tipples, he suggests. “Whilst a classic drinks trolley adds charm, integrating a dedicated drinks zone into your kitchen set-up brings a more sophisticated and functional edge to easy socialising.”

If your kitchen space is large enough for occasional tables, he says to opt for durable, stain-resistant materials… keeping your space looking sharp, even when the drinks are flowing. “Ceramic surfaces reinforced with tempered glass are a great choice, as they can withstand heat and stains,” he adds. “Allowing you to focus on your guests.”

The Vyne lifts the lid on its relationship with Jane Austen

In this celebratory year marking the 250th anniversary of the novelist’s birth

This year the National Trust’s The Vyne in Hampshire celebrates the 250th anniversary of the birth of Jane Austen with a Regency-inspired events programme and for the first time, lifts the lid on its somewhat fractious relationship with one of our greatest novelists.

Ten miles separated The Vyne in the village of Sherborne St John and Steventon parsonage where Jane grew up. Jane’s eldest brother James was rector to the parish of Sherborne St John and dined with The Vyne’s owner William John Chute and his wife Eliza almost every week.

The Austens and Chutes attended many of the same balls and social occasions and although Jane visited the property and knew the family well her opinion of some of them was less than favourable.

“Wm. Chute called here yesterday. I wonder what he means by being so civil.”

Eliza’s diaries record the two families frequently coming together: “Mr and Mrs Austen, James Austen, and a Miss Austen” came to The Vyne on the 25 October 1793, shortly after Eliza herself had settled there as William’s wife. Within a month she had returned the Austens’ visit. However, despite frequent social meetings, mutual friends and Jane even dining at The Vyne in April 1799, she remained rather cold towards the couple.

Jane and Eliza could have easily been friends. They were both intelligent, creative women of a similar age. Their thoughts on each other, if they were ever written down, don’t survive and it’s difficult to understand why there was an apparent dislike on Jane’s part. Perhaps it was a similar situation to Emma Woodhouse and Jane Fairfax in the novel Emma: ‘Why she did not like [her] might be a difficult question to answer’

Jane’s nephew James Edward Austen Leigh felt differently about Eliza, referring to her as: ‘A woman of rare excellence, whose memory I cherish with so much respect and gratitude... her secret good deeds were countless.’

What to enjoy at The Vyne this year

Guided mansion tours and a new exhibition explore Regency life in rural Hampshire, revealing an honest account of the family’s exchanges with the authorpart of a programme of Austen-inspired events and activities including live music, theatre and cinema, and a lighthearted look at Regency underwear.

The exhibition also looks at Jane’s friendship with clergyman Thomas Chute, whom she refers to as Tom in her letters. Tom was the younger brother of The Vyne’s owner William John Chute. Writing to her sister in January 1801, Jane says: “We met Mr Lefroy & Tom Chute, played at cards & came home again.” In another letter she writes mockingly of a riding accident: “You told me some time ago that Tom Chute had had a fall from his horse, but I am waiting to know how it happened before I begin pitying him.”

Thomas owned several of Jane’s books including Sense and Sensibility and Pride and Prejudice. These first editions, unusually still in their original boards and signed by their owner, are on show in the exhibition.

Another new highlight this year is the Regency Ramble; a self-guided walking trail from The Vyne to the neighbouring village of Sherborne St John, taking in a pastoral landscape of fields, lanes and church spires, much of which would have been familiar to Jane. The route passes by St Andrew’s church – the oldest surviving building in the village and where Jane’s brother James Austen was vicar from 1791. He would ride from Steventon to provide the Sunday service here, often dining with the Chutes afterwards.

Although we don’t know if The Vyne and its residents inspired Jane in her writings, Austen scholars have drawn parallels between characters in Jane’s books and the Chute family. Her lived experiences undoubtably informed her stories and she relied on trusted sources to provide detail for her novels.

Featuring Jane Austen, this interactive house and garden family trail introduces kids to remarkable true stories about inspiring people, with games and activities. Little ones are encouraged to ‘be bold, be brave and dream big’ as they follow the stories of authors, activists, naturalists and musicians with the help of colourful illustrations from the bestselling picture-book series by Maria Isabel Sánchez Vegara. Try kangaroo pouch bean bag toss with Steve Irwin, ‘jam’ with Taylor Swift on guitars in the summerhouse, and join Jane Austen in the old kitchen to discover your Regency name.

Join us on the Summer Solstice as we celebrate two wonderful milestones: Basingstoke Symphony Orchestra’s 95th season and the 250th birthday of Jane Austen. Inspired by ancient saints and modern memoirs, embark on a spiritual hike.

South West Coast Path

England’s longest national trail is the subject of a new film due for release at the end of this month. Based on the best-selling memoir by Raynor Winn, The Salt Path follows the story of a couple who lose their home and embark on a long-distance walk with only a few pennies in their pockets. It took them two summers to complete the 1,000km South West Coast Path, which follows the coastline of Somerset, Devon, Cornwall, and Dorset. Those with a bit more cash to spare can complete the full journey on a new 56-night itinerary from Minehead to Poole.

Stonehenge Ancients Day Pilgrimage

Not every pilgrimage route requires strong legs and an even tougher resolve. In the space of less than 24 hours, hikers can reflect on the ancient relationship between land and the cosmos by following a path along sacred terrain connected to Stonehenge. Starting at Woodhenge, a Neolithic timber circle aligned with moon cycles and ancestral rites, the 11km trail weaves through lesser-known sacred sites and ends at the Cuckoo Stone. Pass the King Barrow Ridge Bronze Age burial mounds, where east-facing tombs are illuminated by the rising sun, and follow a ceremonial route linked to the River Avon, which has been used for more than 5,000 years.

The Via Francigena Travel through fields, farmland, chapels and castles to experience part of the Via Francigena (The Road to France), a 2,000km path from Canterbury to Rome. Running to Dover on the south coast, this 31km section of the trail is packed with historical ruins, including former 13th century inn La Maison Dieu. Following major restoration work, the Grade II listed building opens to the public this month for the first time in history. As part of the new North Downs Art Trail, several art installations have been placed along the route, inspired by their surroundings.

St Patrick’s Way

Key sites relating to Ireland’s patron saint form the backbone of this 82-mile signed walking trail which celebrates its 10th anniversary this year. Starting at the Navan Centre in Armagh, walk along paths slicing through dramatic landscapes before reaching the apostle’s final resting place at Down Cathedral in Downpatrick. A literal highlight is a section traversing the 12 peaks of the Mourne Mountains – although trails are reassuringly easy to follow. Walkers can collect stamps in a special Pilgrim’s Passport which includes a map of the trail to collect a Certificate of Achievement.

St Declan’s Way

Although little known outside Ireland, a 1,500-year-old pilgrim route has the potential to be as popular as the Via Francigena or even Spain’s Camino de Santiago following plans for major investment. For centuries, devotees have walked in honour of St Declan, an evangelist famous for spreading gospel teachings to residents of Ireland. Starting in his birthplace of Ardmore in Waterford, the 115km route continues through the Knockmealdown Mountains to the Rock of Cashel, where he was said to have paid homage to St Patrick.

Letitia Clark: ‘Lemons are just incredibly pleasing’

British food writer and chef Letitia Clark lives in Sardinia, where lemons are huge and plentiful – hence her new cookbook, For the Love of Lemons.

“I’ve been scheming this book ever since I moved to Italy,” says food writer Letitia Clark, sounding really quite dastardly about it. Anchovies, spaghetti and lemons are, to her, the heart of Italian cooking, and she’d happily write single subject books on all three.

But lemons had to come first, hence her new cookbook, For the Love of Lemons. As a former pastry chef, the citrus fruit was intrinsic to making all the sweet things in her “pastry canon” and they’re also a bit of a family obsession.

“My grandma and my mum – my main cooking influences – were very passionate about lemons. My grandma used to put the classic plastic Jif lemon on my pancakes when I was little and my mum has been trying to grow her own lemon tree since I was a child,” says Devon-born Clark. “I remember her having this very sad sapling sitting in the corner that never fruited. She sent me a photo one time of her first-ever lemon, which was about the size of a hazelnut!”

Her summer holidays were usually spent in cheap and cheerful destinations like Cornwall, but when Clark’s family did go somewhere sunny, “I remember my mum making my dad screech the car to a halt and jumping out to pick up lemons that had fallen on the ground.”

Clark has lived in Sardinia for the past seven years and sees lemon trees every day, and yet, “whenever I see a lemon tree I’m like, ‘Oooh,’ every single time!” she says with a laugh.

She calls the mouth-puckering fruits “Christmas baubles”, an apt description when they are in season during winter. “[At that time of year] the rest of the landscape is looking less colourful and then you have these pops of colour, and the shape, how can you not love that perfect egg shape with two little teats on the end? They’re just incredibly pleasing,” she says. “The trees are so laden, they might have no leaves on but they have four billion lemons just

dangling there, and they look so heavy on these delicate branches. It just feels like a feat of nature that they can even grow like that. There’s just something infinitely cheering about them.”

However, Clark’s own lemon tree is looking a little bit worse for wear at the moment. “It’s actually really sad. I’m in a bit of a depression because I think it’s got a disease,” she says mournfully. “I like to think things are symbolic and [husband] Lorenzo gave it to me as our wedding present, so the fact it’s sad makes me worry about my marriage! Haha.”

It has a few little shoots poking through though, so she’s hopeful they might have some lemons next year…

Clark reckons a whopping four or five trees worth of lemons were used in the making of her cookbook; crates and crates of them. “My [toddler] son was just about walking and was going round knocking all the lemons off and rolling them around the floor having a lovely time,” she says, remembering the day they shot the recipe photos. In fact, his first toy was a lemon.”

Interestingly, she doesn’t think Italians appreciate lemons as much as visitors do. “Italians are so proud and passionate about their own cuisine, if you said to one, ‘Italian lemons are amazing,’ they’d be like, ‘Of course! They’re the best in the world’,” she explains, but they use lemons in cooking a lot less, and mostly in dolce (puddings).

“A lot of my recipes are not that traditionally Italian because I add lemon, so a classic pesto would never have lemon in it, but I like it way more with a lot of lemon zest,” notes Clark. “They almost never serve lemon with fish because they think it ruins the flavour.” Put it down to the fact “Italian flavours are very pure,” so the aromatics of the zest is beloved (hence why in Amalfi they add it to coffee), but the acidity of the juice is considered overwhelming.

Despite her idyllic, sun-drenched Instagram photos, Clark does have her trials and tribulations in the kitchen, and one major adversary: her oven. “I have this horrible oven and every day we discuss whether we should get rid of it,” she says jovially. “I kind of work with it, but it doesn’t really work with me.”

She has to roughly guess what the temperature is and “if I need something to be really precise, I’ll go to my mother-in-law’s!

“It’s a difficult relationship, what can I say? I don’t love him,” she says. “I spend a lot of time browsing ovens online!”

Then there’s the moments of “old-school behaviour” she saw when working in professional kitchens. “There’s so much sexism in restaurants and it’s so oldfashioned in so many ways,” she says. Fortunately she ended up working in some “very civilised restaurants”. The best she ever cheffed in was Skye Gyngell’s celebrated Spring restaurant in London. “She treated people with respect,” remembers Clark.“But that is definitely not the experience of many kitchens, and that wasn’t my experience in my early days.”

She pauses and adds with a laugh, “That’s all stuff for the memoir!” which she’s currently writing. Clark also has grand plans to open an agriturismo – a farm with rooms – but in the meantime, has a summer of Sardinian food tours and talking about lemons ahead.

She hopes that after flicking through the book, readers will “look at the lemon a little differently and appreciate it”, especially the leaves, which are lemony, but a bit like a bay leaf and slightly herbal. “Food is something everybody has everyday and it can be such a source of joy, pleasure and satisfaction,” she says. “There are not many things in life that have that power, so the lemon can do that for you.”

INGREDIENTS

4tbsp extra virgin olive oil, plus extra to serve

1 garlic clove, bashed

2 medium or 3 small courgettes, sliced in half lengthways, then into half-moons

Sea salt

180g pasta of your choice

1 egg plus 2 egg yolks

4tbsp grated pecorino (or Parmesan)

Zest of 1 small lemon, plus juice of ½ Basil leaves, to serve

INGREDIENTS

90ml lemon juice (I use 2 large lemons)

400ml double (heavy) cream

90g sugar

8 hollowed-out lemon halves, to serve

“Courgette and lemon is a combination you will often see in my recipes, and it is a happy and mutually complementary marriage; the sweetness of the vegetable is cut by the acidity of the fruit, and the innate lemony-ness of courgettes accentuated by both the zest and juice of the citrus.”

1. Heat the oil in a frying pan (skillet) over a medium-low heat, then fry the garlic clove until it just begins to sizzle and smell good. Add the courgette slices and sauté, stirring regularly, until they are golden all over, beginning to break down and almost jammy. Season well with salt and set aside (or leave to cool, then keep in the refrigerator for future use).

2. Cook the pasta according to the packet instructions in a large pan of well-salted boiling water until al dente.

3. Meanwhile, mix the egg and egg yolks, cheese and lemon into the courgette mixture, and begin to heat very gently, stirring all the time. Scoop out the pasta with a slotted spoon straight into the courgette pan along with a splash or two of the cooking water. Stir and toss over a low heat until you have a creamy sauce that coats the pasta.

4. Taste for seasoning, add a few fresh basil leaves, extra Parmesan and a drizzle of your best oil, then serve.

Variation: Artichoke carbonara Make as for courgette carbonara, but in place of the courgettes, use 4–5 prepared, sliced artichoke hearts, and finish with chopped mint rather than basil.

Lemon possets in lemon boats SERVES 8

“You will need to scoop out four whole lemons, to create the ‘boats’ this is served in, but you only use the juice of two, so the pulp from the others can be used in another recipe.”

1. Combine the cream and sugar in a saucepan and bring to a low boil. Stir gently (the cream will expand a lot) and continue to cook for a minute or two, making sure the sugar has dissolved. Remove from the heat, and allow to cool for a few minutes.

2. Add the lemon juice to the cream mixture, then decant into your lemon boats. (Note: the boats need to be on a flat surface so the liquid doesn’t spill).

3. Chill in the refrigerator for at least two hours, or overnight.

Anne Reid and Caroline Quentin in conversation with David Benedict

Ever since they began playing mother and daughter twenty-two years ago at the start of three seasons of the TV series Life Begins, Anne Reid and Caroline Quentin have been friends. “She even came to live next door to me at one point,” says Reid. “She used to get me drunk a lot.” Against her will? “Oh, absolutely: I’d be teetotal if it weren’t for her…” Cue: much laughter from the two of them.

That’s the hallmark of their conversations and, clearly, their friendship. Yet the casting of the pair of them in By Royal Appointment, the first play by Daisy Goodwin – best known for her ITV series Victoria – had nothing to do with them. It was simply a very happy coincidence after Reid had been attached to the play for a couple of years after taking part in a reading.

Anne Reid: “We’re very lucky. It’s the loveliest cast all round. It’s the story of the Queen’s life as seen through her clothes and it’s definitely a four-hander so we have a designer played by James Wilby and a milliner played by James Dreyfus. Caroline plays my dresser and I play Her Majesty the Queen and it’s been an ambition of mine to play her.

David Benedict: Am I right in thinking that, for years, the idea of portraying the Queen, other than as a royal impersonator, was a no-go area and the first dramatic portrayal of the Queen wasn’t until 1988 when Prunella Scales starred in Alan Bennett’s one-act play A Question of Attribution?

AR: Yes! It was shock horror that anyone would dare to play the Queen. Now it seems…

Caroline Quentin: De rigeur!

AR: Absolutely. But this is very different to something like The Crown. This is very funny.

CQ: It is funny, but it’s very moving too. We’ve just done a scene where the Queen presents one of the members of her team with an award and he is so desperately delighted and has just lost his father and it’s deeply touching… and then, seconds later, big laughs. And it’s properly entertaining for people around my generation because Daisy has written this play around the really memorable clothes. You don’t know you remember them until you actually see them and then you suddenly think, ‘I remember that pink hat and coat,’ or ‘Oh, yes, that was an extraordinary hat’. The narrative is told through couture: it’s amazing.

DB: My mother was a huge monarchist and always commented on the Queen’s outfits so I realise I know all sorts of things about her wardrobe, like how she often wore clothes by Norman Hartnell.

CQ: Yes! My mother was obsessed with Norman Hartnell. Obsessed! She was Canadian and the image of the Royal family was very important to her.

DB: Did either of you meet the Queen? Did you meet her when you were made CBE?

AR: Yes! I was an MBE to start with.

DB: And then you got an upgrade.

AR: Yes. And I’ve got to send the MBE back. So I met the Queen then, and I performed in Romeo and Juliet for her at Buckingham Palace. I didn’t enjoy it at all, it was so stressful. And then I met her when I was presented to her at two parties in her jubilee year and then again at the opening of BBC’s New Broadcasting House. So five times in all.

DB: It’s different for you, Caroline, because the public doesn’t know your character.

CQ: I think she is an amalgam of several dressers because in the play I am with Her Majesty for about forty years and in real life she would have had numerous dressers over that time.

AR: Your character is very ambitious.

CQ: Terribly. I think what Daisy has looked at is what it is like to work for very important people. I think the gap between what people present and what’s actually going on behind the scenes is really fun. I’m fascinated by any group dynamic, but there is something special about a group of people who lead a life like nobody else. Daisy has already lifted the curtain on the previous Royal Family in Victoria and this play just lifts a lid on something that none of us will otherwise know. And all the relationships in the play are powerful in their own different way

AR: Well, yes, but I am The Queen and you do what I say.

DB: I’m hoping that’s also true of the rehearsal room…

AR: Oh absolutely…

CQ: Not!

DB: When you are playing someone like Maddie in Jonathan Creek or Celia in Last Tango in Halifax, your only responsibility is to the writer’s work and the detail of your characterisation. How different is it to play a reallife character?

AR: I have a huge responsibility to get the voice right. And her posture. None of the Royal Family slouch: I think they are taught that from very early on. Yet in a funny way I have an easier job than the others because they have to create their own characters. I have to make her as believable as possible. And it’s nice for me to be playing upper class. Normally when there’s a Northern, working-class person, that would be me. So I’m loving this!

DB: Some actors love doing plays like this because it allows them to bury themselves in research. Is that what you’re doing?

AR: I worked with John Hurt once in a film in which I played a small part and it was based on a book. I’d read it and I asked him if he had and he said, “No, I just do what’s in the script. That’s what I do now. Although, obviously, I already know a lot about the Queen because everyone does..

CQ: I’ve loved looking at all the costumes and the jewellery.

DB: The relationship between a dresser and the person dressed is very intimate.

CQ: It’s delicate. One of my character’s first lines is ‘I was personal assistant, i was advisor, I was curator, I was her best friend.”

AR: And you were a stoker’s daughter from Wigan.

CQ: Yes: she is absolutely not a lady-in-waiting from the aristocracy. She’s the daughter of a dressmaker who works her way up through the hierarchy.

AR: And quite dangerous…

DB: It sounds like a portrait of an increasingly intimate friendship.

CQ: When you work for someone over a long period of time, when does working for someone turn into loving someone?

AR: Your character is very possessive of me.

CQ: Protective.

AR: Well, yes, but also possessive. But then the Queen really needs her.

DB: And how do you address one another on stage?

AR: Well the Queen has a nickname for her dresser but, talking to my character, it’s always the formal arrangement.

DB: According to Debrett’s, the record-keeper and chronicler of British society, the monarch was to be greeted initially as Your Majesty, and then ‘ma’am to rhyme with lamb’ not ‘ma’am as in farm’.

CQ: Exactly!

The secret to an affordable, crowd-free getaway in the Canaries

Tenerife can be a sublime spot for a quiet luxury wellness break – and it’s a destination that doesn’t need to break the bank, says Rachael Davis.

On one side, there are the mountains: the towering Roque del Condé with its distinctive flat top sits among countless other remarkable volcanic rock formations edging towards the scattered clouds above.

On the other, there’s the Atlantic Ocean: fresh, blue, serene. And in the middle, there’s me, reclining on a sun-soaked lounger on my private patio beside the pool, sipping a glass of champagne, gently warmed by the balmy April sun.

Quiet luxury is the name of the game at Royal Hideaway Corales Villas, a new hotel in southern Tenerife. Guests are encouraged to ‘leave the world behind’, indulging in a holistic itinerary of wellness activities, gastronomical experiences, and tranquil relaxation inspired by the Canarian surroundings.

The hotel also shows how this kind of luxury doesn’t have to cost the earth, with rooms at this five-star property starting at €221/£188 per night. Its small size, intimate facilities and stylistic devotion to tranquillity and serenity – not least the fact that most rooms boast a private pool – makes it stand out in a crowded field.

My first day at the Royal Hideaway Corales Villas begins with an early morning yoga class. I’m not usually a morning person, but when I open my blackout curtains

to a glittering blue pool outside my swim-up room, the similarly sparkling ocean in the distance being gently warmed by the rising sun, I instantly feel energised and ready to stretch out muscles sore from travelling.

A short walk from my suite (a swim-up, sea view junior suite starting at €287/ £244) – takes me to Land House, the hotel’s wellness centre which conceptually focuses on the simplicity of nature and earth-inspired rituals.

Here, I join fellow yogis in a plant-filled courtyard to begin a gentle morning session adapted to our abilities and goals. Rooms in the same building host tranquil therapeutic massages and other treatments, with a sauna and a sun-soaked courtyard poised to peacefully adjust back to reality after my rejuvenating back massage.

What’s left after all of that relaxation other than to treat my taste buds and stomach with the same care and attention?

A priority for me when I’m travelling is sampling the local cuisine, an experience the Royal Hideaway Corales Villas offers in droves. The à la carte restaurant Bonfire offers a wide range of Spanish and Canarian dishes from fresh fish and meat to tantalising vegetable plates, beautiful dry rice paella to salty seafood delicacies. A highlight from my dining experience is the fresh oyster, served with a delicate dose of caviar (€9/£7) and the mushroom dry rice paella (€27/£23 per person) – both rich, flavoursome and wholesome, crafted with care and attention.

I am a pescatarian and am travelling with some vegetarian diners, and the restaurant is more than accommodating to our dietary requirements without sacrificing a drop of the quality and devotion given to our meat-eating counterparts.

My second evening is spent at fine dining restaurant Cráter. Canarian chef Eduardo Domínguez’s philosophy is to explore the history, traditions and ingredients of the eight Canary Islands, honouring each distinct island with its own carefully crafted tasting menu.

The restaurant has opened with a menu focused on La Palma, the fifth largest of the eight main Canary Islands. Every 15 to 18 months, a different island will take the spotlight.

There are currently two tasting menus on offer: La Danza del Minué (€85/£72 per person) and La Danza de los Enanos (€105/£90 per person), the latter being larger than the former, but sharing some of the same dishes. Personal highlights include la pimienta palmera – bigeye tuna with pickled red mojo marinade (a local Canarian staple); la Judía Mantecosa, a fragrant and salty bite of butter beans, moray eel and coriander; and el caldero de Fuencaliente – wreckfish, seaweed, green pepper and Marciala potatoes.

Those who enjoy the history and culture of food will certainly get a kick out of a night at Cráter, where each and every dish has a story. Whether it’s the inclusion of rare, endemic ingredients, dishes that are inspired by the staple foods eaten by locals, or innovative table setting and plating based on local traditions, these menus are a love letter to Canarian cuisine.

The restaurant is working towards a Michelin star, following in the footsteps of its One Star neighbour Il Bocconcino at sister hotel Royal Hideaway Corales Suites, just down the road in La Caleta.

While the thumping basslines of nearby popular party town Playa de las Américas don’t even register as a whisper on the breeze out at the Royal Hideaway Corales Villas, there are plenty of opportunities to enjoy a delicious artisanal cocktail or two.

Materia Elemental Bar is the place to go for a sophisticated, well-balanced drink, situated on a terrace that’s nothing short of blissful at sunset. Classic recipes are reimagined here with a modern twist, all based around the four elements – earth, water, fire and air –and crafted entirely with Canarian products.

Head bartender Yonathan Mesa is Spain’s Cocktail Champion 2023, so I know I’m in good hands as I sip on an earthy, beetroot take on my favourite classic cocktail, the Negroni. This is a real cocktail-lovers bar, with short, strong drinks – though those who prefer a non-alcoholic

tipple are certainly not left out, with a personal favourite booze-free cocktail being a Seedlip Grove alcohol-free spirit with honey, strawberries and grapefruit served in a sleek coupe glass.

For anyone looking to sample local living in Tenerife, the hotel runs shuttle buses to nearby fishing village La Caleta, where visitors can enjoy the rocky beaches and turquoise water, boat excursions, and a tranquil amble through the streets.

Far from the busy beaches and boisterous bars that have made this Canarian island so popular in the past, the Royal Hideaway Corales Villas is a destination not to be missed: a dream escape where you really can leave the world behind.

Why you need dopamine decor in your home

Interiors influencer Kate Rose Morgan shares her top tips to spark joy and happiness.

A former hairdresser on cruise ships that travelled around Europe and South America, Kate Ross Morgan says she can’t remember not adding colour to her home.

“I remember getting my first place, I think I was 20, and I’d done all these crazy colours,” recalls Morgan. “Because when I first moved in, I’d done what everyone else had, and went safe – I remember going for quiet, neutral tones.

“And then I said to my dad, ‘can you help me decorate? Because I just don’t like it.’ We painted my kitchen pink and put up some brighter floral wallpaper.

“So, I’d say, from a young age, when I started living on my own, I embraced colour straight away… I didn’t like sitting in a house that felt very beige.”

Today, the self-taught interior designer with more than one million social media followers across Instagram and TikTok, has now written a book – Dopamine Decor: Style Your Home With Colour, Joy And Fun.

“I feel a lot of recent interior designs have been quite beige and grey, very minimal… but I’m kind of embracing a more colourful, fun impact in your life,” explains Morgan.

It’s not for everybody, admits the 42-year old who lives in Essex with her husband and three children. “But I do say everybody can get that dopamine boost, to how it suits you.”

“So it doesn’t have to be pastels and pinks and vibrant colours… it can be anything that makes you smile, sparks joy, makes you giggle or your eyes light up in a room,” she says enthusiastically.

“I feel we don’t have enough of that in our homes, but we always seek it when we leave the house.

“So it might be where we go on holiday, a walk in the park or nice restaurant, and we always find dopamine hits in these places,” highlights Morgan. “But I feel we lack that in the home.”

It’s about bringing all that into your space, she explains. “Adding elements you love, might remind you of when you were a kid, and embracing colour.”

Start small

“I always say to start small,” advises Morgan. “If you’re not very confident; or this is something you’re doing for the first time, because you think you’ll love it and want to try it.

“See how you get on, and then you’ll learn what you like. Because we think we know what we like until we start doing it,” she says knowingly.

“And then we might change our minds and think, actually, I don’t really like that colour, but I might try this one… and treat the learning process as fun,” she advises. “I think too many people get stuck in this rut of ‘if I decorate, then it’s got to last me five years, and there’s no way I can make a mistake.’

“But I think that’s silly. We should be decorating our houses more like we do in the garden, having fun with it.”

So you could paint a piece of furniture, she suggests. Or if you have an all white or beige scheme and want a colour pop, then paint a small wall.

“If you don’t want to paint, but want to see how you get on with colour, then do it with rugs, cushions, curtains, even things like changing your mugs to colourful mugs.”

The designer says she’s learned over time that she loves pastels. “So I love colour, but I love pastels more specifically. But you might be ‘oh, I really like deep greens.’

“Everybody’s different, and dopamine is different for everybody,” she opines. “It’s learning about yourself in the process, and then you’ll find what you like, and it’ll be easier… practice makes perfect.”

Find your comfort colour

“I like a cohesive colour palette running through my home, so it feels every room is connected,” says Morgan. “So even though every room is different, the colour palette runs through… I like to keep pink running through my home.”

To find your comfort colour, she says to look at your space and play around with different items. “So, I don’t have matching things. I have different accessories with different colours, and my furniture is not very matchy.

“Nothing’s very matchy, but the colours match,” she highlights. “So look at your comfort colour – mine would be pink – and run that through the home while adding different colours.”

Morgan says she has a three colour rule: “The main star, supporting actress and the extra… that’s how I always say it.”

So for instance, she says she’d have mainly pink in a room, then her second colour would be green. “Maybe I’d have a pink wall, a green sofa, and something else green, maybe some curtains.

“And then I’d bring in a third colour, and that could be lavender. I’d use that as little accessories… some books or flowers to bring in that lavender pop.”

She continues: “If you use three colours, it makes it a lot easier to get everything looking like it’s connected.”

Have no rules

“I know that sounds cheesy, but don’t have any rules and just really go for it,” she laughs.

“There’s a bit in my book about listening to your inner child and bringing in that fun element. Sometimes people can feel, ‘oh, that’s a bit silly, I can’t have a big porcelain cat on the side.’”

She says, yes, you can. “If you really like it and it makes you smile, then buy it. It’s a little bit of nostalgia and having fun with your home.”

How to make your bijou balcony more beautiful

Here’s how to fuse function with flair, says Sam Wylie-Harris.

With outdoor living such a thing, landscaping your balcony and bringing out its best features feels more like a pastime than a project.

And with blue skies beckoning, creating an attractive vista – whether it’s for soaking up the sun or starting a kitchen garden – is a win-win when summer’s on your side.

As Karl Openshaw, creative director from Blocc Interiors puts it: “There’s nothing better than being outdoors when the weather’s good. While parks and gardens can be idyllic settings to soak up the sun, your own balcony can be even better – if you know how to shape it into a space that truly reflects you.”

To put you on the front foot, Openshaw has teamed up with Barratt London to share some top tips for making your outdoor area more beautiful and functional…

Start with a reset

The first step is to give your balcony a deep clean to sweep away any debris, dirt and tree pollen. “It’s amazing how fresh everything feels once the dust and grime are gone,” says Openshaw. “Like you’ve already reclaimed the space for summer – once it’s clean, you’ve got a blank canvas ready for transformation.”

Repainting your balcony can work wonders, says the designer, whether you’re freshening up the walls or painting the floor. “Just make sure you’re using a hardwearing, weatherproof paint that can withstand both rain and sunshine… it’s the fastest way to breathe life back into the space.”

If you’re renting or simply not up for repainting, he says an outdoor rug or carpet is a smart shortcut. “It adds comfort underfoot, a shot of unexpected colour and softens hard surfaces.”

Or some artificial grass will really add to the space, instantly making your balcony feel more like an outdoor room, suggests Openshaw.

In terms of colour, he says summer 2025 is all about earthy sophistication. “Think terracotta tones and calming sage greens, punctuated with the occasional splash of cobalt blue to keep things vibrant. These hues create a serene link to nature while still feeling fresh and modern.”

“And here’s the game-changer – faux plants. Yes, faux. There’s a fantastic selection available now that look incredibly realistic, and they’re perfect if you’re not exactly green-fingered – or your schedule doesn’t allow for regular watering.

“You can still enjoy that lush, botanical look without the maintenance.”

Combine them with rustic earthenware pots or textural planters for an earthy, organic feel, suggests Openshaw.

“They add richness and style without demanding daily attention… a real win if you just want to pour a glass of something chilled and unwind at the end of the day.”

Light up the mood

“Lighting is often overlooked, but it’s what truly elevates your balcony from ordinary to magical. Approach it like you would an interior, thoughtfully and with layers,” advises Openshaw.

As he points out, string lights have come a long way.

“They’re no longer just for Christmas. Now there are stylish, minimal designs that cast a soft, flattering glow across the space.

“LED strip lighting can also be cleverly tucked beneath railings or around furniture to create a warm, ambient atmosphere.”

Life’s too short for ‘sometime’: Dive in with Clearway Pools and Spas

Turning pool and spa dreams into hassle-free reality

On Saturday 3rd May, independent, familyrun business Clearway Pools and Spas celebrated the grand opening of their fourth showroom, complementing their established stores in Parkstone, West Parley, and New Milton.

The open day was a tremendous success, showcasing the impressive new facilities at their Allens Lane location in Hamworthy. These include state-of-the-art training areas, an indoor swimming pool, a well-stocked shop offering swimming pool and spa chemicals and accessories, and a brandnew pool and spa showroom – now officially the largest of its kind in the South-West.

Steve Power from Nation Radio joined the celebrations, mingling with customers and recording his popular radio show. He was given a tour of the premises by Nathan, one of Clearway’s directors, and remarked that

the day had the warm and lively feel of a family birthday party.

Adding to the festive atmosphere, local band Snap Ambush performed a vibrant set featuring Country, Americana, Blues and Southern Rock music.

A group of local children took part in a sponsored swim, completing a combined total of 5km in the new indoor pool to raise funds for Swim England. Their enthusiasm and determination saw them complete the challenge in just under an hour.

Visitors were warmly welcomed by the Clearway team, encouraged to relax and enjoy the entertainment, and treated to free refreshments – with the bubbly flowing generously throughout the day.

A few weeks into this exciting new venture, the team at Clearway Pools and Spas are thrilled with the positive response. The new showroom offers a wide selection of highquality products and has already attracted many new customers. On display are two swim spas, 13 hot tubs, two saunas, and a fully operational 10m x 5m wooden pool.

The swimming pool is currently being hired by local swim school Super Swimmers, who run lessons for all ages and abilities. Classes are held every Monday from 9.30am to 12.00pm, and weekday afternoons from 4.00pm. Aquafit sessions are also set to begin in June, running every Thursday evening from 6.00pm to 7.00pm.

The pool is also available for children’s birthday parties on Saturdays, with sessions priced at £225.00 for up to 12 swimmers.

Each two-hour booking includes exclusive use of the pool, inflatables, and access to a party room.

The on-site training facilities will be used internally to train engineers and franchisees, with Comfort Academy also delivering training for aspiring swimming teachers. In addition, Clearway plans to offer domestic training courses for pool and spa owners – a move that aligns with their mission to make “the dream of owning a pool or hot tub a hasslefree and enjoyable reality for everyone.”

VOLKSWAGEN PROVIDES A PREVIEW OF AN ENTRY-LEVEL ELECTRIC MODEL

Since the iconic Beetle, the term is over used today but the Beetle does genuinely merit the moniker, Volkswagen has been a leading maker of affordable mobility for millions of people with compact and likeable cars. The ID. EVERY1 is an entrylevel all-electric model. Volkswagen will launch the production version in 2027 –with a starting price of around £17,000. The ID. 2all will be launched in the £21,400 class as early as in 2026. Both models are part of the new Electric Urban Car Family with front-wheel drive, which is being developed by the Volkswagen Group.

With the European launch from 2026, Volkswagen will aim to offer a diverse range from efficient combustion-engine models

and advanced hybrids to future-oriented all-electric vehicles. The production version of the ID. EVERY1 will be the first model in the entire Group to use a fundamentally new, particularly powerful software architecture. This means that the future entry-level Volkswagen can be equipped with new

functions throughout its entire life cycle if its users so wish. Even after purchase of a new car, the vehicle can still be individually adapted to their needs.

The up! – the immediate predecessor of the ID. EVERY1 – built until 2023 still presents well with a distinctive design, VW say the ID. EVERY1 and its siblings aim to follow in that path. The concept vehicle reaches a top speed of 80 mph and is powered by a newly developed electric drive motor with 70 kW (95 PS). VW claim the range is at least 250 kilometres. With a length of 3,880 mm, the ID. EVERY1 is positioned between the former up! (3,600 mm), the ID. 2all (4,050 mm) and the current Polo (4,074 mm). Inside, it offers space for four people and a luggage compartment volume of 305 litres.

Volkswagen will give a further preview of its Electric Urban Car Family in the autumn.

SPORTIEST VERSION OF ŠKODA’S NEW ELECTRIC COMPACT SUV

Škoda is launching the vRS range-topper six months after the world premiere of the new Škoda Elroq, which competes in the popular electric compact SUV segment. The latest member of the vRS family has two motors generating a total system output of 340 PS (250 kW) and is equipped with all-wheel drive. It comes with an electric range of more than 340 miles, specific vRS accessories and comprehensive standard equipment. It is also the fastest accelerating car in Škoda’s current model portfolio, sprinting from 0 to 62 mph in 5.4 seconds.

The sporty top version of the Elroq was part of the Milan Design Week following its digital world premiere, it was showcased at the event in Italy last month, marking the first public appearance of the Škoda Elroq vRS. The electric motors – on the front axle and on the rear axle – develop a total output of 340 PS (250 kW) and support all-wheel drive. Acceleration from 0 to 62 mph in 5.4 seconds, with a top speed of 111 mph mean the Elroq vRS is a veritable pocket rocket. The high-voltage battery has a capacity of 84 kWh (79 kWh net), enabling a stated maximum electric range of more than 340 miles on the WLTP cycle.

Black exterior details and exclusive alloy wheels and the extensive standard equipment includes cutting-edge LED

Matrix beam headlights and LED rear lights with dynamic indicators. An electrically adjustable driver’s seat with massage function also comes as standard. It is available for the front passenger as part of the optional Maxx Package.

Like all Elroq models, the vRS variant is characterised by the new high-gloss black face accommodating multiple sensors, including radar. The LED Matrix beam headlights with their four-eye look is a hallmark of the Škoda SUV range. LED rear lights with dynamic indicators are also included as standard.

UK pricing and specification will be announced later, with first deliveries expected in the summer.

BLACK IS THE DISTINCTIVE NEW LINE-UP FOR SEAT

SEAT have opened their new Black Edition order book. The new trim level is the latest model update from the Spanish car maker, which add new interior and exterior design features to create a more distinctive look. The Black Editions will be available on the FR variants of the Ibiza, Arona, Leon, and Ateca.

First announced back in November 2024, SEAT announced the new look to its line up with the introduction of additions that include alloy wheels, a black roof spoiler, side skirts, and keyless entry.

The Arona FR Black Edition comes with black side skirts and roof rails to complement the tone, as well as exclusive 18-inch alloy wheels painted in black. Subtle additions such as the “Black Edition” identification

embossed into the B-pillar references what SEAT describe as the urban-SUV’s status. Inside there are bucket seats, keyless entry and go, adaptive cruise control, park assist, and a rear-view camera. In addition, dark aluminium matt colouring is used in the dashboard, console, and door mouldings. The Arona is available from £28,805.

SEAT’s bestselling Ibiza, in Black Edition form, includes 18” black alloy wheels, black roof spoiler and side skirts along with keyless entry, panoramic sunroof, sports bucket seats and for the first time ever on the SEAT Ibiza, heated seats. The Ibiza is available from £24,935.

The Leon FR joins the Black Edition line-up with black alloys (of course!), roof spoiler,

and side skirts plus black mirror housings, a panoramic roof, and keyless entry. The Leon is available from £33,150.

SEAT’s Ateca FR Black Edition is the largest Black Edition model to be introduced. With its new 19” black alloys, electric tailgate, and top-view camera, the Ateca Black Edition is available from £36,890 OTR.

Black Edition models are common with a number of manufacturers, including others within the VW stable. While not to everyone’s taste they certainly add a dash of style to the various models in SEAT’s stable, from the more diminutive Arona and Ibiza, through the Leon and on to the larger Ateca.

REDEFINING THE GOLDEN AGE OF BRITISH SPORTS CARS

Marking 70 years since the debut of MG’s most aerodynamically advanced model, the MGA Factory Edition is Frontline Cars’ lightest and most refined restomod yet. The company says it stays true to the spirit of the original while delivering a modern driving experience, and made its debut at the recent 82nd Goodwood Members’ Meeting.

Weighing just 815 kg, each MGA Factory Edition is powered by a choice of naturally aspirated Duratec engines: a 2.0-litre unit producing 225 bhp or an optional 2.5-litre variant delivering 290 bhp. Each MGA Factory Edition is equipped with a fivespeed manual gearbox.

Extending its knowledge and expertise to the MGA, the new Factory Edition’s chassis has been developed entirely in-house. It

comes with a limited-slip differential and the classic fly-off handbrake, a nod to the original, has been seamlessly integrated with modern braking technology. Adjustable electronic power steering adds everyday usability without compromising feel, too.

While the modern drivetrain and engineering features are at the heart, the MGA Factory Edition is faithful in appearance while featuring subtle, contemporary enhancements that distinguish it from its Fifties predecessor. Thoughtful exterior touches include crystal-clear LED headlights, which eliminate the traditional sidelights for a cleaner, more modern front fascia. Each lamp is etched with a bespoke Frontline logo, serving as a discreet signature of its bespoke, handcrafted origin. There’s also

a Frontline badge on the bonnet, a first for the brand in its 30+-year history, to identify the MGA.

Available in both roadster and coupé form, every Frontline Cars MGA Factory Edition is built from a fully restored body, ensuring each car is finished to the highest standard. Using its customer configuration room, which is at the heart of Frontline’s Abingdon-based HQ (or remote meetings can be arranged), which sits alongside the in-house trim shop, customers are invited to customise every aspect of their dream MGA. The possibilities in paint hues, finish and interior materials are endless, creating an experience akin to selecting a handmade suit in Savile Row, or reserved for the most premium of automotive ateliers.

Following its Goodwood Members’ Meeting debut the MGA Factory Edition will enter full production at Frontline’s Oxfordshire headquarters in the UK. Optimised for the company’s growing international audience, particularly in the USA and Australia – two regions where the original MGA was most celebrated – both right- and left-hand drive builds are now available to order, with global customers invited to already start commissioning their bespoke examples. Sugen Gopal, Malaysian chef, has released his first cookbook.

Malaysian chef Sugen Gopal opened London’s Roti King in 2014 and its popularity skyrocketed – with queues famously out the door.

Since then, Gopal’s Corner – and several other outlets, his newest in Brighton – have opened and now he’s released his debut cookbook, Roti King.

Here are two of his recipes to make at home.

Rendang Ayam (chicken rendang); “We serve a beef version of this at the Roti King restaurants, but chicken works so well with the aromatic spices that I wanted to include a recipe here. Enjoy it with a steaming bowl of coconut rice,” says Gopal.

Rendang Ayam (chicken rendang)

SERVES 4-6

INGREDIENTS

For the paste: (Use 500g of it for this recipe)

2-4 fresh green chillies (depending on heat preference), stalks removed

5 dried Kashmiri chillies, seeds removed

2 lemongrass sticks, tops cut off and bottoms bashed and roughly chopped

35g turmeric

35g galangal (or ginger)

1tbsp oil

For the rendang:

3tbsp vegetable oil

1 cinnamon stick

1 lemongrass stick, bashed

600g chicken thighs, skin-on and bone-in

1 1⁄2 tsp salt

40g fresh or frozen shredded coconut, or 60g coconut block

130ml coconut milk

2tsp dark brown sugar

1⁄4tsp coriander seeds

1⁄4tsp fennel seeds

6 lime leaves, stems removed, finely sliced into strips

1. Make the rendang paste: Blitz all of the ingredients along with 100ml of water in a blender until it becomes a smooth paste. Add a little more water to loosen, if needed. If you’re not using this straightaway, keep it in an airtight container in the fridge for up to two weeks.

2. Heat the oil in a large lidded pan over a medium heat, break the cinnamon stick in half and add to the pan with the lemongrass. Add the rendang paste and cook for 5–10 minutes over a low heat, stirring often.

3. Add the chicken along with the salt, give it a good stir, then reduce the heat to low and cover with the lid. Cook for 10 minutes, stirring occasionally.

4. In a separate non-stick frying pan set over a medium heat, toast the shredded coconut (or coconut block), stirring continuously until it’s golden brown – this should take 3 minutes.

5. Remove from the pan and pound to a paste using a pestle and mortar. If you are using coconut block, there is no need to pound as the consistency should already be smooth.

6. Add 100ml of water to the chicken, stir and cover again. Leave to cook for a further 20 minutes, stirring occasionally. Add the coconut milk and cook for another 10 minutes, then add the toasted coconut and the sugar.

7. In a small dry pan, toast the coriander and fennel seeds until fragrant and starting to pop. Remove from the pan and bash roughly using the pestle and mortar. Tip straight into the pan with the chicken. Add the lime leaves, cook for another 2 minutes and serve.

Broccoli & cashew stir-fry

SERVES 4

INGREDIENTS

300g Tenderstem broccoli

2tsp salted butter

50g cashews, roughly chopped

2 garlic cloves, finely chopped

2tsp oyster sauce

2tbsp crispy fried shallots (homemade or store-bought), to serve

“This side dish comes together extremely quickly and would make a great accompaniment to most meals. Here, I use Tenderstem broccoli, but you could easily swap it out for other seasonal green vegetables, such as purple sprouting broccoli, asparagus or green beans. The butter is browned slightly, which gives the whole dish a nutty flavour, further amplified by the toasted cashews.”

1. Start by blanching the broccoli in a pan of boiling water for 2 minutes, then drain and plunge into ice-cold water. Leave to drain in a colander.

2. Melt the butter in large pan over a medium heat, and once bubbling, add the cashews and then the garlic. Stir frequently and cook until the butter is just starting to brown.

3. Transfer the garlic and cashew mixture to a plate, before adding the drained broccoli to the pan, keeping it over a medium heat.

4. Add the oyster sauce, and fry for 2–3 minutes until the broccoli has started to soften a little (but being careful not to overcook). Add the garlic and nuts back into the pan, stir together and serve garnished with the crispy fried shallots.

Customiser Andy Saunders to unveil latest creation at Beaulieu’s Custom & American Show

Well renowned car customiser and brand ambassador Andy Saunders is set to unveil his latest creation at Beaulieu’s Custom and American Show on Father Day, Sunday 15th June.

Originally designed by Dodge’s Bill Brownlie and brought to life by legendary customiser George Barris, the Dodge Daroo debuted on the 1967 show circuit. Built on the new Dodge Dart Convertible platform and painted in eye-catching Pearl Yellow, it was dubbed “The car that revolutionised the Hot Rod scene.” In 1968, it reappeared with updated styling, a two-tone candy green paint job, and a more refined look, but then vanished into history.

With only six surviving exterior photos and no technical documentation, Andy Saunders has spent months recreating this forgotten legend. His version, named Daroo 1/3, reflects both versions of the original while adding a new chapter to its history.

1/3 now joins Andy’s celebrated lineup of builds, which includes three Guinness World Record holders. Its international debut at this year’s show is set to be a real highlight for fans of custom automotive industry.

Andy will also be on the lookout for his favourite custom car at the show as he presents the coveted Andy Saunders’ Award. Owners of custom or American vehicles can still book their participant tickets to show off their ride and be in with a chance of taking home this prestigious award or one of the many others including The People’s Best in Show, The Solent Renegades Choice or the Brian Ackland Memorial award. Classic American Magazine will also be attendance, selecting

a finalist to attend their Classic American Car of the Year final at the Classic Motor Show in November.

As always at the Custom and American Show, which falls on Father’s Day, there will be plenty for all the family to enjoy.

Fans of TV and film are in for a treat at this year’s show, where a star-studded lineup of legendary vehicles will be on show in a special feature display. From cult classics to animated favourites, the display brings together some of the most famous cars to ever hit the big screen.

Step back in time with the DeLorean time machine from Back to the Future, or relive the high-tech crime-fighting action of the ’80s with KITT, the intelligent Trans Am from Knight Rider. Supernatural fans won’t want to miss the iconic ’67 Chevy Impala, and film buffs will recognise the ’74 Chevy Nova

featured in Pulp Fiction. Also on display is the ’87 Chevrolet Corvette C4 from The A-Team, and the beloved 1963 Volkswagen Beetle Herbie.* For younger fans, the display includes a full-size replica the colourful Mystery Machine from Scooby-Doo.

Fans of all ages can also check out the Transformers display, featuring the Optimus Prime truck, the sleek Bumblebee Camaro, and even walking Bumblebee and Megatron robots.*

As always, visitors can enjoy a selection of live music at the show. Whether you’re relaxing or hitting the dance floor, there’ll

be plenty of toe-tapping tunes to keep you in good spirits. This year features Dorset-based country/folk band Route 66 and Craig Jefferson’s lively Elvis tribute act! Adding to the atmosphere, a local cheerleader group will be performing vibrant routines throughout the day.
