Dinner Among the Tomes: The InterContinental Chiang Mai Mae Ping Presents Their Executive Chef

On June 8th, the neoclassical grandeur of Neilson Hays Library in Bangkok was transformed into an exquisite setting for an exclusive occasion, the InterContinental Chiang Mai Mae Ping dinner. Guests filed into this historic, privately-owned English-language library on Surawong Road and were greeted by the enchanting sounds of violins as they were welcomed by the InterContinental Chiang Mai’s General

Manager, Peter Pottinga.The dinner presented a fusion of culinary exploration and intellectual conversation. The library, with its rich history, was an ideal backdrop for an evening that celebrated culture, literature, and gastronomy. Executive Chef of the InterContinental Chiang Mai Mae Ping, Denwers Rattan, used the occasion to exhibit his impressive culinary skills. His role involves directing the culinary operations of the hotel's four restau-

rants, a bar, and overseeing catering and in-room dining.

Born in Paris and raised in Brussels, Chef Rattan, a Thai-Vietnamese national, joined InterContinental Chiang Mai Mae Ping from the InterContinental Hanoi Landmark72, which was recognized among Vietnam’s top 10 hotels in Asia in 2021 by Conde Nast Traveler. His success there in managing five restaurants and bars as Executive Sous Chef was noteworthy. His culinary

journey includes leading the team at Hanoi’s fine-dining establishment, The Clover at Ngoc Thuy, earning it the title of the best French fine-dining venue in Hanoi in 2018, and managing the kitchen at the five-star Sofitel Brussels Europe.

The evening commenced with a social hour, after which GM Peter Pottinga unveiled what guests could expect from the soon-to-be-open 5-star hotel. Nestled on the site of the prestigious Imperial Mae Ping Hotel, the InterContinental Chiang Mai Mae Ping melds its storied past with a timeless,

luxurious experience.

Following Peter's presentation, guests were treated to a gastronomic journey. Under the leadership of Executive Chef Denwers and his team, InterContinental's world-class chefs served exquisite courses. Each dish was a testament to their culinary expertise and harmonized perfectly with the library's regal ambiance.

As the evening's symphony of clinking glasses and spirited conversations echoed through the historic library, there was a palpable excitement for what lies ahead. With the grand unveil-

ing of the InterContinental Chiang Mai Mae Ping slated for September, there was a collective sense of anticipation among those present. A promise of a rendezvous, a pledge to reunite in the hotel's luxurious embrace, and a shared eagerness to experience firsthand the exquisite offerings that this much-anticipated destination promises.

Find a Cool Spot:

In a hot country like Thailand, finding a cool spot for your wine is essential. Look for the coolest area in

your home, such as a lower cupboard or a room with minimal sunlight exposure. Avoid places like the kitchen or near windows, where heat can easily seep in. Remember, your wine is like a vampire - it prefers a dark and cool environment.

The Fridge: Not Just for Food!

When you don’t have a dedicated wine cellar, your regular refrigerator can be your best friend. While it might not be ideal for long-term storage, it can provide a temporary refuge for your wines. Just make sure you keep them away from pungent foods like durian or fermented fish sauce. Try not to keep the wine in the fridge more than a few weeks. One of the primary concerns is the risk of the cork drying up. A prolonged exposure to the cold, dry environment of a refrigerator can cause them to lose moisture. As a

result, the cork may shrink, allowing small amounts of air to enter the bottle. This can lead to oxidation and a potential deterioration in the wine’s quality over time.

Shield It from Sunlight:

Protecting your wine from direct sunlight is crucial. Sunlight can prematurely age your wine and degrade its delicate flavors. So, make sure to store your bottles away from windows or any areas exposed to direct sunlight. If you can’t find a dark corner, consider using blinds, curtains, or UV-blocking film on the windows to shield your wine from those harsh rays. This is beneficial for two reasons. Firstly, it helps keep the cork moist, preventing it from drying out and potentially allowing unwanted air to seep into the bottle. Secondly, when the wine is in contact with the cork, a natural exchange occurs. The wine and the cork establish a micro-oxygenation process, where the wine absorbs some of the cork’s compounds, and the cork absorbs some of the wine’s components. This exchange helps create a barrier that prevents or minimizes potential chemical interactions between the wine and the closure material. So, give your wine a gentle tilt and let gravity work its magic.

Ice, Ice, Baby!

If you’re in dire need of an instant cooling fix, ice can be your savior. Fill a bucket with ice and cold water, then immerse your bottles up to the neck. Voila! Some people even add salt to speed up the cooling process, but I personally keep salt for my pasta water. Do not hesitate to cool even the reds in Thailand because ambient temperature will be too high even for most red wines.

Towards the tail end of last year, HOT magazine had the distinct pleasure of sitting down with famed chef and restauranter Alain Ducasse, a man with legendary status in gastronomy. The locale for the interview was his restaurant OSTERIA BBR located within the fabled Raffles Hotel in Singapore.

Chef Ducasse won his first Michelin star as head chef at La Terrasse in the French Riviera’s classic Hotel Juana.

His food at flagship restaurants like Louis XV at Hotel de Paris Monaco and Alain Ducasse at The Dorchester in London set his status as one of the world’s best chefs. He is one of only two chefs to hold 21 Michelin stars and the first to own restaurants in three cities, each carrying three Michelin stars simultaneously.

Today, the Ducasse portfolio includes 60 establishments, from haute cuisine restaurants to Bistros and Cafes,

in seven countries on three continents. Earlier this month Alain partnered with celebrity chef Wolfgang Puck for a Four Hands Dinner at Puck’s CUT at 45 Park Lane Restaurant in London. The pairing of two of the world’s most legendary chefs was the biggest news in the city’s Gastronomy scene since anyone could remember, and rightfully so.

The name Wolfgang Puck is synonymous with the best of restaurant hospitality and the ultimate in all aspects of the culinary arts. The famed chef has built a brand encompassing three companies, and currently holds three Michelin stars (two for his restaurant Spago Beverly Hills and one for CUT, which earned its star just one year after opening). Puck is also more widely known for catering the Governors Ball, the Academy’s post-Oscars celebration,

which he has been doing for 29 years. Puck has amassed such a following that he’s become a celebrity figure in his own right.

The pair, Ducasse & Puck, created what could only be described as a gastronomic fusion of excellence, with each chef presenting alternate dishes throughout the evening. Guests were treated to a culinary journey with exceptional pairings of the duo’s key dishes.

Both chefs were accompanied by their award-winning teams, with Puck’s headed by Elliot Grover and Ducasse’s, led by Jean-Phillippe Blondet, Executive Chef at Alain Ducasse at The Dorchester.

Fortunate patrons were welcomed into the lobby of 45 Park Lane on the evening of June 7 while a string quartet played. Waiters offered flutes of champagne, while guests chatted excitedly.

The price for the dinner had to be requested. However, few did. As they say, if you have to ask how much, you can’t afford it.

Combining French and American cuisine, each chef presented alternating dishes for a total of eight courses throughout the night, each accompanied by a wine pairing.

The evening commenced with Puck’s delectable pretzel bread, served alongside homemade butter. The bread’s outer layer, perfectly seasoned with salt, harmonized exquisitely with the creamy butter, paying homage to Puck’s proud Austrian heritage.

Following that, Ducasse’s culinary expertise shone through with the amuse-bouche course. The attentive waitstaff seamlessly delivered handmade sweet pea agnolotti, accompanied by a flavorful ragout of white asparagus, fava beans, and morel mushrooms, as the starter course. Soon after, the fish course arrived—a delightful combination of Cornish turbot, courgetti, and sea thong marinated in green anise, complemented by a loquat condiment.

The pinnacle of the evening unfolded with the meat course—a dual offering featuring Puck’s renowned Australian Wagyu beef paired with grilled New York steak. The dish was elevated further with the addition of crispy shiso, togarashi, and yuzu kosho emulsion, leaving the table in silent awe as guests savored each bite. It was a true testament to the culinary prowess of both Puck and Ducasse.

As the sun dipped below the horizon, glasses were filled with wine, and the soft glow of candlelight illuminat-

ed cheerful faces. It was a celebration of gastronomic excellence and the simple joy of partaking in an impeccably orchestrated dinner party, where no detail was spared in creating a truly unforgettable evening.

To cleanse palates before dessert, small plates of strawberries and lemon sorbet arrived. The strawberries were delicately peppered, accompanied by subtle hints of olive oil—an exquisite twist on a classic summer dessert.

For those with an ounce of space left, the dessert itself was a delightful masterpiece. A Marjolasian creation comprising cashew nougatine, espresso mousse, and cappuccino ice cream graced the plates, perfectly paired with a dessert wine. It was the epitome of indulgence and the perfect finale to an extraordinary dining experience.

Then, the culinary maestros themselves, Puck and Ducasse, emerged as the stars of the evening, receiving

warm applause and numerous handshakes.

A woman turned to Ducasse and remarked, “I’ll be in Paris this weekend. Where would you suggest I dine?”

“Without a doubt, my restaurant,” he replied, his face beaming with a smile. Both chefs were impeccably dressed in their pristine culinary uniforms, radiating an evident sense of satisfaction.

Beyond all the glitz and glamour, these internationally acclaimed chefs simply reveled in the joy of their craft, delighting in showcasing their extraordinary skills. It was an absolute pleasure, and perhaps even a privilege, to be part of such an experience.

A revelation to the Let’s Eat team and one we have now added to our favourites list.

Walk through Baan Thalia’s doors and be transported to another place.

The tropics are replaced by autumnal colour tones from rich chocolate woods, contrasting warm fabric textures, soothing cream walls, and eye-catching suspended light features. It feels like you have entered a dining establishment somewhere in northern Italy--perhaps Milan, Parma, Bologna or Modena. Thankfully, the warm welcome of the attentive and highly professional Thai service staff helps ease you out of your time-machine moment.

A complete selection of aperitif and pre-dinner beverages are available. However, menus listing a curated selection of wine by the glass and another of Italian Classic and Baan Thalia Signature cocktails caught our attention. Perhaps a Negroni or Bellina from the classics or an Italian Sour with Amaretto and Galliano from the Signature cocktail list. Decisions were made, and with our pre-dinner drinks in hand, fresh house-made bread ar-

rived, accompanied by roasted garlic cloves, olive oil, balsamic, tapenade, and Chef’s tomato salsa.

A complimentary Amuse Bouche of chicken parmesan topped with light-as-a-feather potato espuma is presented to announce the start of our Baan Thalia food journey. We move to three dishes from the Antipasti section of the menu. Salad Caprese with Buffalo mozzarella cheese, cherry tomato, basil, and aged balsamic vinegar. The

Hua Hin-made Del Casaro mozzarella favoured by many of Hua Hin’s chefs with its rich, creamy centre is a delight. At the same time, the gentle bite of the cherry tomatoes adds the counterbalance.

Salmon Carpaccio - the thinly sliced fish, salmon roe, lemon gel, caperberries, dill and edible flower petals are presented as a jewelled picture on the plate. The salmon’s richly flavoured, luxurious texture, with contrasting

pops of salty roe and the sharpness of the lemon gel and caperberries, came together in harmonious mouthfuls. Our final starter was Chef’s Antipasti Platter which is ideal for sharing. Prosciutto, coppa ham, salami Milano, two kinds of cheese, baby bocconcini, grilled and pickled vegetables with rocket salad and fig compote.

From the Pasta section of the menu, we sampled the Crab Capellini. Pasta Cappelini sits between the very fine angel hair and the thicker spaghetti and proves to be a perfect vehicle for the local crab meat with hints of garlic and chilli, fresh asparagus tips and cherry tomatoes. The next dish, from The Mains section of the menu, continued the local seafood theme.

Seabass Milanese. Milanese is the technique of breading meat or seafood and pan-frying it. Our lightly breaded and fried seabass was juicy and flaky inside. The breaded crust held the fish fillet together and came atop a caper cream sauce. The tangy brininess of the capers helps tame the cream’s richness and marries well with the seabass. Slithers of raw fresh asparagus, radish, and petit balls of boiled potatoes accompany the dish.

Our final main dish was Chef’s 10day dry-aged Duck Breast. Rendered and cooked to blushing pink, the duck breast was delightfully tender. It was partnered with baked beetroot, radicchio and a sauce of local mulberries. “Salt Baked”, the beetroot pieces are encrusted in a shell of salt and egg white which help retain the root vegetable’s natural moisture and flavour while baking. Once free from the oven, the sweet earthy beets are sauteed with the radicchio leaves, calming the radicchio’s sharp bitterness and proving an ideal partner with the rich duck meat.

Dinner is never complete without dessert, or that’s how the Let’s Eat team thinks. And Italy has so many memorable sweet treats, so onward we forged! First, Tiramisu. However, the Chef’s imaginative presentation of this classic has it arriving in a bowl with a scoop of double expresso ice cream. Across the top is a baked wafer-thin lattice-shaped Tuile and pieces of edible gold leaf, creating a luxurious mystery and intrigue.

Strawberries are always a delight, and in this dessert, Chef has paired them with pistachio in a parfait served with strawberry and balsamic sorbet and diced fresh strawberries. A gentle cheek puckering delight. Finally, the Textures of Chocolate. Chocolate ganache, a brownie-style chocolate cake, chocolate truffle, chocolate soil and dark chocolate ice cream. And that ice cream – if Chef set up a market stall just selling that, the ice cream machine would run continuously to satisfy demand.

The fifth edition of the highly anticipated Mister National Universe 2023 pageant kicked off on June 19th, in Bangkok and featured an impressive lineup of contestants from around the world.

Representing their respective countries, the contestants vying for the prestigious title included Paing Soe Khant, from Myanmar, Michael Den Oudsten

Official host hotels for MNU 2023 were Shama Lakeview Asoke Bangkok,

Amari Don Muang Airport Bangkok, and Amari Watergate Bangkok. The contestants, along with media personnel, country managers, and organizing staff, stayed for three nights at each property. Throughout their stay, the men participated in various events and activities at each host hotel as well as day trips to exciting locations within Thailand.

At Shama Lakeview Asoke Bangkok, the contestants enjoyed early morning poolside yoga sessions and indulged in a Thai cooking class. The men improved their cooking skills with another cooking class at Amari Don Muang Airport Bangkok and immersed themselves in the local culture by giving alms to Monks at the Amari Watergate Bangkok.

The men also ventured outside of Bangkok to see different facets of Thailand. The contestants visited Ang Thong, home to Thailand’s largest Buddha image, and took a day trip to Ayutthaya, a historic city that was once the capital of the Siamese kingdom.

On June 26th, the contestants participated in “A Night of Thai Celebration,” a charity event and fashion show held at the Amari Watergate Bangkok. Attendees had the opportunity to interact with all the candidates, take photos, and enjoy the evening’s festivities.

The pinnacle of the Mister National Universe 2023 competition was the Grand Final Night, which took place on June 27th in the grand ballroom of the Amari Watergate Bangkok and broadcast globally.

The evening started with an exciting and energetic dance performance featuring all the contestants. Leading the performance was Viet Haong, a professional dancer and the reigning Mister National Universe 2022 from Vietnam.

The Honorary Chairwoman of the Mister National Universe competition, Khun Sumanee GunaKasem, then delivered the opening speech, setting the stage for the exciting night ahead.

The contestants made their grand entrance one by one, wearing nothing but Calvin Klein Briefs, showcasing their physical prowess and confidence. The judges, who were introduced to the audience, had the important task of evaluating the participants based on various criteria, such as confidence, appearance, answers given to questions posed, etc... Also impacting the overall judging was how the candidates interacted with everyone for the 8 days leading up to the final night.

The event featured captivating performances of Thai classical dance, and the contestants dazzled in traditional costumes, representing the rich cultural heritage of their countries.

Special awards were presented to deserving contestants throughout the evening. Russia’s Maxim Zvonov won the title of 2023 Mr. National Universe Perfect Body, while Michael Den Oudsten from the Netherlands was awarded the 2023 Mr. National Universe Congeniality. Benedict Yu from Malaysia was recognized, winning the 2023 Mr. National Universe Flawless Skin award, and Michael Ver Comaling from the Philippines received the 2023 Mr. National Universe Photogenic award.

Jonzu Jones from the USA was named the 2023 Mr. National Universe Fashion Icon, while Japan’s Takumi Ozawa won the 2023 Mr. National Universe Media Choice award.

As the competition progressed, the top 10 contestants were announced, showcasing their poise and eloquence. Contestants making it into the top 10 included Latvia, Pakistan, Russia, Japan, England, Vietnam, Philippines, Malaysia, Thailand, & Ukraine. Each finalist had 30 seconds to answer a separate question, demonstrating their intelligence and quick thinking.

While the judges were making tough decisions, it was time for the last two special awards. This time the awards were for the Best National Directors, and they went to the Netherlands and the Philippines.

With the judges scores tallied, the top 5 finalists were revealed: They were Latvia, England, Philippines, Thailand, and Malaysia. These remarkable contestants faced the final question, which tested their perspectives on an important topic.

But before the big titles were handed out, it was time for Mr. Donghun Kim from Korea, 2022 Mister National Globe, & Mister National Universe 2022, Viet Hoang from Vietnam, to bid farewell and remark on their memorable reign over the last year.

And then it was time. In a moment of suspense, the winners were announced. securing the title of 4th runner-up and Mister National Intercontinental was Tishkin Vladislav from Latvia. Claiming the 3rd runner-up spot as Mister National Earth was Michael Ver Comaling from the Philippines,

And then in a surprise moment, it was announced that the judges had tied in the voting for the next contestants, so a special question was asked of the remaining three to help with the judge’s decision. That question was, “What Makes Being a candidate Mister National Universe 2023 a Privilege?

With the question answered by the three, the judges made their decisions and the final awards were handed out. And they were, 2nd runner-up and Mister National Globe, Kritti Nampradit from Thailand. 1st runner-up with the title Mister National World went to Marcus Charlie Bishop from England.

An orchestra of courteous staff moves with an efficiency that is almost balletic, each seeking to make your stay as comfortable as possible.
