esde nuestros comienzos a finales de los años 60, nuestra premisa siempre ha sido la de fidelizar a nuestros clientes. Para ello la familia de Clerck ha puesto su mayor empeño en ofrecer y caracterizar a nuestros hoteles con un toque personal y familiar. Hoy en dia podemos comprobar que hemos conseguido el proposito de aquellos tiempos ya que en muchas ocasiones recibimos año tras año a los mismos clientes, e incluso a las siguientes generaciones de los que por entonces se alojaban en nuestros hoteles. El camino no ha sido ni es fácil, pero aqui seguimos, con la misma o mayor ilusion si cabe con la que mi padre el presidente de la cadena, Jan De Clerck empezó. Con las mismas ganas de mejorar, innovar y ofrecer lo mejor para nuestros cientes, ya que son ellos los que hacen posible todo esto, y aunque como decia antes, el camino a veces se complica, en esos momentos complicados, prevalece y gana la sonrisa de nuestros huespedes, felices, relajados, entusiasmados con nuestro personal e instalaciones, esto es el motor que pone en marcha nuestro dia a dia. Me gustaria hacer una mención muy especial a todos nuestros empleados, que son aproximadamente 500 en temporada. Ellos son una de las piezas más importantes de nuestros hoteles, son los que hacen posible el buen funcionamiento de nuestra cadena. Dia a dia estan cerca del cliente, a su servicio, siempre con buen humor, disposición y entrega, esto es lo que nos diferencia, es nuestro ENCANTO personal y trabajamos diariamente para que siga siendo así. Ahora somos una gran familia, el grupo HACE cuenta con una amplia variedad de hoteles todos ellos situados en la provincia de Cadiz siendo un referente Turístico en nuestra provincia, hoteles vacacionales, urbanos, de negocios y apartamentos de reciente construcción, como Las Suites de Puerto Sherry en El Puerto de Santa Maria. ¿Y por qué Cádiz? humor, es gastronomia, no es un mar, ¡son DOS MARES!...Cádiz es VIDA. Since our beginning in the late ‘60s, our premise has always been the loyalty of our customers. To do this family Clerck has placed his best efforts to offer and characterize to our hotels with a personal touch and family. Nowadays we can see that we have achieved the purpose of those times because we often receive year after year to the same customers, and even the next generation of those at that time were staying in our hotels. The road has not been nor is it easy, but still here with the same or greater illusion if it fits with my father the network president, Jan De Clerck started. With the same desire to improve, innovate and provide the best for our customers because they are the ones that make all this possible, and although as I said before, the road is sometimes complicated, in these difficult times, prevails and wins the smile our guests, happy, relaxed, excited about our staff and facilities, this is the engine that starts our day to day. I would like to make a special mention to all our employees, who are about 500 in season. They are one of the most important parts of our hotels, those that enable the smooth operation of our network. Day by day they are close to the customer, at their service, always with good humor, provision and delivery, this is what sets us apart, is our personal CHARMING and we work daily to keep it that way. Now we are one big family, the group HACE has a wide variety of hotels all located in the province of Cadiz being a tourist referent in our province, vacation, urban, business hotels and apartments recently built as Las Suites of Puerto Sherry in El Puerto de Santa Maria. n el sur todo es distinto: el tiempo se ralentiza, la comida tiene un sabor especial con una mezcla de sal marina y vino y las risas de sus gentes resuenan por encima de los rompeolas, las dunas de arena o los castillos milenarios que defienden esta tierra. La provincia de Cádiz es historia bañada de salitre y naturaleza; es el baile hecho arte al ritmo de sones de alegrías; es el mirador a otro continente y el lugar donde han vivido las más grandes civilizaciones. En sus casi 7.500 kilómetros cuadrados de superficie y 260 kilómetros de playas de arena fina, algunas aún prácticamente vírgenes, es posible avistar cetáceos en las aguas del Estrecho, pasear en bicicleta por numerosas vías verdes, practicar cualquier deporte acuático, aprender el secreto del flamenco más puro o conocer de primera mano nuestra historia. In the south everything is different: the time pass slowly, the food has a special flavor with a mixture of sea salt and wine and laughter of its people resonate above the breakwater, sand dunes and the ancient castles that defended this earth. The province of Cadiz is history bathed in salt and nature; is the dance made art with the rhythm sounds of joy; is the viewpoint to another continent and where have lived the greatest civilizations. In its nearly 7,500 square kilometers and 260 kilometers of sandy beaches, some still virtually untouched, it is possible to see whales in the Strait, cycling through numerous greenways, practice any water sport, learn the secret of flamenco pure or see first hand our history. an de Clerck es un enamorado de nuestra provincia. No en vano, desde que arribó aquí a finales de los 60 y hasta ahora ha luchado por dar a conocer los placeres de un rincón único en el mundo situado entre dos culturas, entre dos mares. ¿Qué fue lo que le enamoró de Cádiz al llegar aquí? Llegué en el año 1969 y enseguida me pareció maravilloso el encanto de toda la provincia y, especialmente, su buen clima, la luz y la amabilidad de la gente. Nuestras relaciones con los socios de por aquel entonces en el Hotel Playa de la Luz no eran las ideales y decidimos quedarnos y apostar por el hotel. Desde Rota fuimos pioneros del turismo extranjero en la provincia, porque entonces no había nada. Ningún hotel trabajaba con touroperadores y nosotros empezamos a traer a belgas y alemanes que se quedaban encantados con Cádiz. Yo iba todos los años a Alemania para conseguir nuevos contratos o renovar los que ya teníamos. Ahora todo ha mejorado y ha crecido, porque yo recuerdo que al principio, en los años 60, teníamos un grave problema y era la falta de un aeropuerto comercial. Sólo estaba el aeropuerto de Málaga y los alemanes y extranjeros que querían venir a Cádiz tenían que aterrizar en Málaga y luego venir hasta aquí en autobuses sin aire acondicionado y por carreteras convencionales, no por autopistas, en pleno agosto y tardaban más de seis horas en llegar de Málaga a Rota. Después se instaló el aeropuerto de Sevilla y mejoramos algo, pero realmente el desarrollo de

nuestra zona se produjo con la apertura del aeropuerto de Jerez. Ése fue el inicio de la Costa de la Luz. ¿Qué necesitamos para que Cádiz despegue? Cádiz necesita un equipo de expertos dentro del sector turístico porque, en mi opinión, todos los recursos que tiene la provincia no están bien explotados. Cádiz ofrece un abanico de posibilidades enorme, con muchos atractivos. Necesitamos colocar a Cádiz en el mapa turístico, que el turista tanto a nivel nacional como internacional sepa donde se encuentra la provincia

de Cádiz, que conozcan su cercanía con África, por ejemplo, y todo lo que la provincia ofrece. Además, necesitamos desarrollar mucho más nuestras infraestructuras. Tenemos un aeropuerto adecuado y con suerte en dos años llegará el AVE, pero no es suficiente. Cádiz siempre ha sido la niña maltratada del sector turístico en comparación con otras provincias, porque llegamos siempre tarde a todo. El turismo en Andalucía debe ser algo más que la Costa del Sol y las tres ciudades históricas que son Sevilla, Granada y Córdoba. Hay que comunicar al mercado nacional e internacional las capacidades turísticas de nuestra provincia. Y yo

creo que eso es una labor de profesionales de las administraciones junto a un equipo de expertos del sector privado. Hay que hacer equipo y tener en cuenta que al sector privado es al que más le interesa y que va a trabajar por ello. ¿Qué destacaría de la provincia? La amabilidad de la gente y, sobre todo, su situación geográfica. Porque si conseguimos comunicar que Cádiz está entre dos mares, la primera reacción de la gente va a ser preguntarse “¿por qué dicen eso?”. Y entenderán que estamos hablando de la única provincia española que tiene dos mares: el océano Atlántico y el mar Mediterráneo. De Sanlúcar -en la costa noroestea Sotogrande -en el sur, la Costa del Sol gaditana, como la califica Jan de Clerck- Cádiz tiene 260 kilómetros de costa y 18 pueblos costeros, cada uno de los cuales tiene mucho que aportar. Si conseguimos posicionar la provincia en la mente de los turistas va a ser más fácil vender el producto. A mí me gusta poner el ejemplo de Logroño, que históricamente era una provincia con ese nombre y que en 1980, para constituirse en comunidad autónoma uniprovincial, pasó a llamarse La Rioja, ayudando a su producto estrella a ser conocido en todo el mundo y viceversa. A través de la Estación Náutica estamos trabajando en este sentido.

Queremos que pase a llamarse Náutica Dos Mares. Estamos desarrollando la idea junto a un grupo de empresarios y la hemos presentado en el Patronato de Turismo de la Diputación de Cádiz, en la Delegación de Turismo de la Junta de Andalucía y ante los alcaldes de muchos de los pueblos costeros, entre otros. Hasta ahora nadie ha dicho que no al proyecto, y eso es una noticia estupenda, pero el sector público sólo no va a poner en marcha la idea. Es el sector privado el que debe empujarle y llevarle de la mano. Éso es lo primero que tenemos que conseguir: reunirnos con todos los representantes de los empresarios y conseguir que se unan al proyecto. Así los políticos no tendrán otra cosa que hacer que seguirnos. ¿Qué atractivos tenemos que explotar? Los atractivos que tiene la provincia son innumerables: tenemos un muy buen clima, somos una provincia de luz, sol y playa; pero también tenemos una hostelería moderna y atractivos culturales e históricos, deportivos o gastronómicos que hay que explotar. También hay que saber qué se puede explotar con los recursos que tenemos y cuáles otros hay que desarrollar más. Por ejemplo, se habla mucho del turismo de congresos y yo creo que cualquier rincón de la provincia sería un marco ideal para un gran congreso, pero no disponemos

ni de un salón en toda la provincia en el que quepan dos mil personas... Respecto a la profesionalidad del sector, con las escuelas de hostelería se ha avanzado mucho... Con las escuelas de hostelería se ha dado un paso de gigante, pero para mí aún no es suficiente. La profesionalidad es muy importante y creo que también debe cambiar la mentalidad del empleado, porque la hostelería es una vocación y en muchas ocasiones los empleados de hostelería lo son porque no encuentran otra salida. Además hacen falta más profesionales en niveles más altos, como maîtres, jefes de cocina, gobernantas... Aunque es cierto que en Cádiz, por el carácter que tiene la gente aquí, muchas veces su amabilidad compensa su falta de profesionalidad y eso también es importante. Además, la provincia tiene que aprovechar las oportunidades que se le presentan y no dejarlas pasar como el evento hípico de Jerez 2002 o Mundo Vela... Efectivamente. Ésos ejemplos son la prueba de que la administración los ha organizado por su cuenta, sin contar realmente con los empresarios y los técnicos adecuados. No hubo un control adecuado de la administración y ahora solo quedan facturas sin pagar.

What did that you felt in love of Cadiz when you came here? I arrived in 1969 and was suddenly marveled thanks to the charm throughout the province, and especially its good weather, light and friendly people. Our relationships with partners at that time in the Hotel Playa de la Luz were not the ideal and we decided to stay and invest in the hotel. From Rota we were pioneers of foreign tourism in the province, because then there was nothing. No hotel was working with tour operators and we began to bring Belgian and Germans who were charmed with Cadiz. I went every year to Germany to get new contracts or renew the ones we already had. Now everything has improved and grown, because I remember that at first, in the 60s, we had a serious problem that was the lack of a commercial airport. It was only Malaga airport and the Germans and foreigners that wanted to come to Cadiz had to land in Malaga and then come here in buses without air conditioning and conventional roads, not highways, in the middle of August and that took more than six hours get from Malaga to Rota. Later Seville airport was installed and we improved something, but actually developing our area occurred with the opening of Jerez Airport. That was the beginning of the Costa de la Luz. What do we need to launch Cadiz? Cadiz needs a team of experts in the tourism sector because, in my opinion, all the resources that the province has are not well exploited. Cadiz offers a huge range of possibilities, with many attractions. We need to place Cadiz on the tou-

What would you highlight of the province? The friendliness of the people and, above all, its geographic location. Because if we can communicate that Cadiz is between two seas, the first reaction of people will be asking “why do they say that?”. And they will understand that we are talking about the only Spanish province having two seas: the Atlantic Ocean and the Mediterranean Sea. From Sanlucar -in the Northwest Coastto Sotogrande -in the south, the Costa del Sol of Cadiz, as Jan de Clerck qualifiesCadiz has 260 miles of coastline and 18 coastal villages, each of which has much to contribute. If we get to position the province in the minds of tourists will be easier to sell the product. I like to set the example of Logrono, which was historically a province of that name and in 1980, to become autonomous province, was renamed La Rioja, helping your flagship product to be known around the world and vice versa. So far nobody has said no to the project, and that’s great news, but the public sector on its own will not launch the idea. The private sector must push and take its hand. That’s the first thing we need to get: meet with all the representatives of employers and get them to join the project. So, politicians do not have anything else to do than to follow us. What attractions do we have to exploit? The attractions that the province has are innumerable: we have a very good climate, we are a province of light, sun and beach; but we also have a modern hospitality and cultural, historical, sporting and gastronomic attractives to be exploited. We also have to know what can we exploit with the resources we have and what others we have to develop more. For example, we are always talking a lot with regards of the tourism centers and I think that any corner of the province would be ideal for a large congress, but we have neither a events room throughout the province with capacity for two thousand people... Regarding the professionalism of the sector, with schools catering has come a long... With schools catering it has been taken a giant step, but for me it’s still not enough. Professionalism is very important and I think you should also change the mindset of the employee, because hospitality is a vocation and often employees are catering because they find another way out. Furthermore more professional at higher levels make foul, as waiters, chefs, housekeepers... While it is true that in Cadiz, because of their personality, people here often compensates their lack of professionalism with their kindness and that is also important. Furthermore, the province has to seize the opportunities presented to it and not let them pass as the equestrian event Jerez 2002 or Sailing World... That’s right. Those examples are proof that the administration has organized them on its own, without entrepreneurs and good specialists. There was no proper management control from administration and only now there are unpaid bills.

i hay algo por lo que se distinguen los hoteles HACE es por el trato personal a sus clientes. El capital humano es el activo más valioso de esta cadena y buena prueba de ello es que en la recepción de cualquiera de sus hoteles siempre encontraremos una sonrisa dulce y amable como la de Vanesa, que lleva en la empresa desde 2003. Vanesa empezó haciendo prácticas en el Hotel Duque de Nájera, en Rota, y más tarde pasó al Restaurante buffet del Hotel Playa de la Luz, donde estuvo durante cinco años hasta recalar en el departamento de recepción. Para ella han sido dos trabajos muy diferentes: “Me gusta mucho más trabajar en recepción. Darle la bienvenida al cliente y hacer que se sienta como en casa es lo mejor de este trabajo.” La mayoría de los clientes del Hotel Playa de la Luz en temporada alta suelen ser españoles y alemanes y para conseguir que todos ellos se sientan cómodos en cada rincón del hotel, Vanesa habla inglés, francés y alemán. “Nuestros clientes

valoran mucho que se les atienda en su idioma y para nosotros es un servicio básico. Procuramos darle toda la información que necesitan sobre el entorno, excursiones cercanas, visitas al pueblo o las playas y ellos lo agradecen”. Junto a la piscina nos recibe Luisa, jefa de bares y que empezó a trabajar en el Hotel Playa de la Luz como camarera de piso hace ahora 33 años. Como jefa de bares, esta roteña organiza el trabajo de su equipo para que todo sea lo más agradable y eficaz posible. Luisa describe el hotel como una pequeña familia donde la mayoría de los trabajadores y clientes son, año tras año, las mismas personas, “entre los trabajadores somos como una familia y los clientes repiten cada año y agradecen encontrar aquí al mismo servicio”. En estas tres décadas Luisa ha vivido la transformación del hotel roteño y el crecimiento exponencial del Grupo HACE. “Todos los cambios han sido buenos. Aquí, en el Playa de la Luz, la recepción se ha acercado más al cliente, el bar La Gaviota se ha

cambiado por completo y las habitaciones están todas reformadas. Además, ha cambiado el entorno porque antes todo era campo y el hotel estaba más apartado del centro de Rota y ahora está dentro del pueblo.” Sobre el trato a los clientes, Luisa afirma que es el cometido principal de todos los trabajadores del hotel, desde la recepción a la limpieza de habitaciones. “Ayudamos a nuestros clientes a que tengan unas vacaciones inolvidables. Intentamos que con nuestro cariño, amabilidad y el trabajo reflejado en los detalles se encuentren en un hotel diferente y, sobre todo, que se sientan como en su casa en cuanto a comodidad y como reyes en cuanto al trato personal. We try to give them all the information they need on the environment, nearby excursions, visits to the town or the beaches and they appreciate it. “ Luisa, chief of bars, receives us poolside and started working at the Hotel Playa de la Luz as a maid for 33 years ago. We tried that with our love, kindness and work reflected in the details they feel in a different hotel, and above all, to feel at home in comfort and as kings in terms of personal attention. This is why most repeat”.

ema es abogado, reside en Madrid, está casada y tiene dos hijos de 19 y 23 años. Le encanta viajar con su familia, escuchar música medieval y renancentista y la buena mesa. En este breve cuestionario, nos da su opinión sobre el Hotel Jerez&Spa. ¿Desde cuándo elige este hotel? Lo utilizo solo para mis viajes de trabajo ya que tengo que venir a Jerez a menudo. También viajo con mi familia una vez al año para conocer el entorno.

¿Con qué frecuencia y a dónde? Cada 15 días y a Jerez de la Frontera. ¿Qué es lo que más le gusta de su estancia aquí? Aquí me siento como en casa. ¿Conoce el resto de la provincia? Si, tengo esa suerte. ¿Ha estado en otros hoteles del Grupo HACE? No, aunque no me importaría. ¿Por qué cree que este hotel tiene un encanto especial? Por la decoracion, los servicios que

ofrecen y , sobre todo, por el trato que me dan. ¿Qué lo hace diferente al resto? Que es mi segunda casa, es muy acogedor y familiar. Si tuviera que hacer una sugerencia para hacer su estancia aquí perfecta, ¿cuál sería? Que la ducha tuviera más fuerza. En general tienen todos los baños poca fuerza de agua. Por lo demás, es todo perfecto.

n el marco incomparable del Hotel Playa de la Luz de Rota se reúnen cada Semana Santa desde hace quince años un grupo de amigos orensanos. Cruzan España de norte a sur cada año por la Ruta de la Plata para disfrutar unos días del clima y la comida roteña. “Venimos a descansar. Aquí se habla de todo menos de trabajo”, dice Manuel Baladrón, pionero en esta tradición. Farmacéutico de profesión, descubrió el encanto de este hotel en el año 2001, por recomendación de una amiga, junto a sus amigos Lino y Javier y sus respectivas familias. Este año son cinco parejas, pero Manuel no ha dejado de recomendar el lugar a cualquiera que le pregunte: “en estos quince años han venido también dos hermanos míos con sus familias y hermanos de otros amigos. Volvimos encantados con el hotel y con el clima”, recuerda Manuel. Sus hijos han crecido viniendo de vacaciones al sur. “Los niños no quieren ir a otro sitio. No recuerdan unas vacaciones de Semana Santa en otro lugar que no sea el Hotel Playa de la Luz. Éste es un hotel muy familiar, disfrutan mucho y nosotros estamos tranquilos”, asegura Manuel. La animación del hotel es muy importante para estos orensanos: obras de teatro, tenis, tiro con arco y un personal atento y amable con los más pequeños les han hecho volver cada año con niños de todas las edades. Su rutina en el hotel sigue una premisa muy sencilla: descanso y disfrute. Dedican una hora larga para el desayuno, realizan deportes variados o van a pa-

sear, al mediodía se toman unas cañas junto a la piscina o unas tapas en La Gaviota, echan una partida de cartas seguida de una buena siesta y cada tarde hacen una excursión distinta. En quince años les ha dado tiempo a conocer la provincia a fondo: Sanlúcar, Chipiona, El Puerto, Cádiz, Conil, Tarifa, Vejer… Aunque a veces hacen excursiones de un día completo, todos tienen claro que “si hace buen tiempo nos gusta quedarnos en el hotel y descansar. They spend a long time for breakfast, they practice a variety of sports or for a walk, at noon they take a beer poolside or have tapas at La Gaviota, play a card game followed by a good nap and do a different excursion every afternoon. In fifteen years we have had time to thoroughly know the province: Sanlucar, Chipiona, El Puerto, Cadiz, Conil, Tarifa, Vejer… Although sometimes they make a full day excursions, all are convinced that “if the weather is nice we like to stay at the hotel and rest. That’s the reason we come”.

l mundo del espectáculo está unido a la figura de Fernando Álvarez, más conocido como “Pancracito” o el payaso Pancracio, un jerezano de renombre en el mundo entero, con un espíritu libre que desde niño ya soñaba con hacer reír a su público particular. Cuando en los colegios jerezanos en los que estuvo le preguntaban que profesión quería ejercer de mayor, él contestaba muy serio “De mayor quiero ser payaso”. Esa respuesta le valió la expulsión de varias escuelas y que sus padres lo llevaran de médico en médico para averiguar si estaba loco. El diagnóstico era siempre unánime: “Su hijo está perfectamente y es muy inteligente. Sólo quiere ser payaso”. La determinación por cumplir su sueño le llevó a salir de Jerez con siete años rumbo a la Ciudad de los Muchachos de Benposta (Orense), fundada por el padre Silva y cuyo circo, conocido como el Circo de los Muchachos, tuvo una amplia repercusión en el mundo del espectáculo a nivel global desde la década de los 70, exportando su filosofía a países como Colombia. Fernando cuenta que para su madre, “que en paz descanse, fue muy duro. Para una madre es muy difícil depositar su confianza en el sueño de un niño de siete años que quiere ser payaso. Sufrió mucho, pensó que iba a morir en las calles de cualquier ciudad de España o Francia. Pero cuando vino a Madrid a verme actuar, no se lo podía creer. Yo era toda una celebridad”. Con 16 años, Fernando era el mejor acróbata del país. Era pequeño y pesaba poco y, sin saber muy bien cómo, en poco menos de seis meses ya podía realizar el doble salto mortal, cumbre del espectáculo acrobático. Pero hacer reír a los demás seguía

Desde que empezara en el Circo de los Muchachos ha estado de gira por todo Estados Unidos, Japón y Sudamérica, y puede presumir de haber hecho reír a Salvador Dalí en el Hotel Meurice, de actuar con Julio Iglesias en el Madison Square Garden de Nueva York e invitar a Antonio Banderas a alojarse en el Hotel Jerez&Spa en su próxima visita por tierras jerezanas. “El Hotel Jerez tiene magia”, es lo primero que comenta cuando le pregunto. Asiduo a ese encanto desde hace décadas, cada vez que puede escaparse de París, donde reside con su mujer y sus hijos, su destino es el Hotel Jerez. “Soy de Jerez, nací aquí, así que cuando puedo vuelvo a mis orígenes. Al principio cuando volvía me alojaba en el hotel Los Cisnes, pero en el año 1969 descubrí el Hotel Jerez y desde entonces no he vuelto a cambiar. Aquí me siento como en casa”. Para este artista internacional el Hotel Jerez tiene un encanto especial, “algo mágico e increíble” que le ayuda a pensar, a escribir y a relajarse. Aquí puede dejar atrás las preocupaciones

y descansar. Por eso lo recomienda a cualquiera que le pregunta. Y asegura que todos quedan encantados con la recomendación. Uno de esos amigos enamorados del Hotel Jerez y que le acompaña en sus visitas es el famoso editor francés Bernard de Fallois, presidente de Ediciones de Fallois, uno de los principales grupos editores del país vecino. De Fallois,viaja todos los años a Jerez para pasar unos días en el Hotel Jerez. Fernando nos desvela con un deje de misterio “Bernard siempre se trae algún manuscrito para leerlo aquí. ¿Has leído el libro <<La verdad sobre el caso Harry Quebert>>, de Joël Dicker? Pues ese libro, que ha sido un auténtico éxito, se decidió que se iba a publicar en el Hotel Jerez. Bernard nos lo dejó leer estando aquí y todos le dijimos que era un libro genial, así que se publicó”. Para este payaso dedicado ahora a la labor pedagógica -trabaja en shows con niños con todo tipo de enfermedades, sobre todo autistas- “Jerez es una ciudad noble, me encanta su gente y adoro ser de aquí. A pesar de haberme marchado con solo siete años y de haberme afincado en París, nunca he cambiado mi nacionalidad.” Su madre siempre le ha relatado como su abuelo

materno poseía bodegas en el Marco de Jerez y tuvieron que emigrar por crisis en el sector. “Tengo mi vida en París porque a nivel profesional es donde tengo que estar, pero Jerez y, en especial el Hotel Jerez son como una segunda casa para mí”. Fernando reveals now that for his mother,”she rest in peace, was very hard. Is very difficult for a mother to put her trust in the dream of a seven years old kid who wants to be a clown. She suffered very much, she thought I was going to die in the streets of any spanish or french city. But when she came to Madrid to watch my perform, she couldn’t believe. I was a great celebrity”. With 16 years old, Fernando was the best acrobat in the country. He was little and light weighted and, without really knowing how, in less than six months already he could do the double somersault, summit acrobatic show. But making others laugh continued being him passion. “Pancracito” growed up, he became in a clown and travelled around the world carrying Jerez by flag. Since it began in the Circus Boys has been touring throughout the United States, Japan and South America, and can boast of having made laugh Salvador Dali in the Hotel Meurice, to act with Julio Iglesias at Madison Square Garden in New York and invite to Antonio Banderas to stay at the Hotel Jerez & Spa on his next visit to Jerez lands. “The Hotel Jerez is magic”, this is the first he answer when I ask to him. Siguiendo el litoral hacia el noroeste hasta la desembocadura del Guadalquivir, en Sanlúcar de Barrameda, se pueden ver el monumento natural de los corrales de Rota y Chipiona y el faro que guía a los navegantes antes de entrar en la engañosa barra del río. Estos corrales naturales han sido reconocidos como Monumento Nacional de Andalucía. Forman parte de la herencia recibida de los árabes de construir parcelas en el mar a base de piedras perfectamente encalladas unas con otras que llegan incluso a medir hasta un metro y medio. En su interior el pez queda encerrado durante la bajamar, lo que aprovechan los pescado-

res para su captura. La pesca es muy variada: peces crustáceos, moluscos, algas, etc. Por su belleza y la variedad de su fauna, son un lugar ideal para realizar un safari fotográfico marino. Es sencillo ver a familias montar en bicicleta las mañanas de verano en pueblos como Chipiona o Rota. Bicicletas de montaña, de paseo, con manillar ancho o de carreras. Cualquier biciclo es bienvenido para pasear por el pinar de Rota, situado en el Parque Natural de la Almadraba y que se extiende desde Virgen del Mar hasta más allá de Punta Candor; hacer una excursión por la vía verde que comunica Costa Ballena con Sanlúcar de Barrameda; o pararse a observar los camaleones de la zona. El camaleón es, de todos los reptiles de España, el más extraño y atractivo. Se caracteriza por ser capaz de adaptar la coloración de su piel a la de su entorno, con el que se confunde, así como de girar los ojos independientemente el uno del otro, hasta 180 grados para ver todo lo que le rodea sin moverse. En la actualidad se encuentra en serio peligro de extinción y Rota es uno de los pocos lugares de España donde existe una mayor población de esta rara especie.

Ya de noche es mágico trasladarse al S. XIII rodeando el Castillo de Luna iluminado por el resplandor nocturno. Este castillo, símbolo de la ciudad y actual sede del ayuntamiento roteño, se construyó sobre un convento fortificado musulmán o ribat del S. XI. Tiene planta rectangular y cinco torreones almenados. La familia Ponce de León utilizó el castillo como residencia y se tiene constancia de que los Reyes Católicos visitaron la ciudad hospedándose en él. Posteriormente el edificio se usó como Hospital y Colegio hasta albergar en la actualidad la sede del consistorio y de su Fundación de Turismo. Rota es, además de un paraíso natural y un municipio turístico, un pueblo tradicional agricultor y pesquero. Hablar en Rota de agricultura es hacerlo de la mayetería, “el trabajo en el campo del mayeto roteño, el agricultor roteño”. El mayeto ha vivido exclusivamente dedicado a cultivar una tierra a la que ha sabido, durante siglos, arrancar sus mejores frutos. Encorvado y sudoroso, se podía ver su figura al recoger los frutos de su arduo trabajo en el mes de mayo. El origen de la vivienda del mayeto, puede considerarse similar al de la arcaica barraca levantina propia de los antiguos hortelanos de origen musulmán. De techumbre vegetal, que las hace frescas en verano y cálidas en invierno, están siempre orientadas al sur en busca de la luz y rehuyendo los fríos vientos del norte. Hoy día quedan algunas, como señas de identidad de un pueblo de vocación campesina. Buena prueba del uso de la excelente materia prima que da esta tierra puede degustarse en el restaurante El Embarcadero, donde se combinan cocina tradicional y de vanguardia.

work in May. The origin of the mayeto housing can be considered similar to the archaic Levantine shack typical of old gardeners with Muslim origin. Por último, a este margen del río, se encuentra la playa de Fuentebravía. En la margen izquierda del río encontramos una banda de arena única que cuenta con dos denominaciones: los primeros dos kilómetros son la playa de Valdelagrana, accesible por la N-IV dirección Cádiz, y los cuatro siguientes pertenecen a la playa de Levante, integrada en el Parque Natural de la Bahía de Cádiz.

Hemos pasado muy buenos ratos y malos también pero bueno esos no importan, solo quedan los buenos recuerdos y anécdotas que tanto nos gusta contar. No quiero citar nombres, por que cada uno de ellos aunque de otros departamentos también fueron necesarios, ya que todos participaban de una forma o de otra para que los demás cogiéramos el testigo y seguir con esta gran labor. Agradecido quedo eternamente, de haber sido elegido para tan gran honor de compartir ese momento tan espacial en que disfrutamos bastante, tanto ellos compartiendo batallitas como yo escuchándolos y sirviéndoles. Quizás el marco no ha sido el adecuado sin desprestigiar a mi querido restaurante y compañeros, pero si esta comida hubiese sido en el Atlántico con el embrujo que tiene, los duendes que allí habitan se hubiesen pasado la noche todos abrazados llorando de alegría.
