From the desk of Nicholas Johnsen I have always found November to be a great month of Thanksgiving. I can remember as a young boy going to our local cemetery on Veterans Day and laying flowers on our relatives who had served in the armed forces during WWII and Korea. I do not remember any form a l c e r e m o n y. N o t many words were spoken by my Father or my uncles all of whom served during WWII. I realized it was not a moment to run around, but the significance of that time spent there in quiet reflection was lost on this young boy. I now have, with the experience of a military career and combat tours, gained a far greater appreciation for Veterans Day. I find my own way of praying for all who now rest in cemeteries around the globe who have so faithfully served our nation. We all should honor them in our own way, and thank them for what they did for all of us when they served. I also pray for their Families for they too sacrificed much in the name of Freedom. We will then give thanks on Thanksgiving Day. Thanksgiving has become a day of Family, traditional meals served with love and care, and football. I have over the years found that I have focused more on the Family aspect and less on the food and football. I can always get something to eat, or watch some football game that really at the end of the day does not change the world for the better. My Family, on the other hand, is unique, special, and cannot be replaced. It is of more importance to me than any medal that was ever pinned on my chest, or any rank attached to my uniform. Thanksgiving for me is now a Day to say thanks for the Family I have. May these days give special meaning to you in a unique and reflective manner, which neither money nor possessions can replace.

he holidays are coming up sooner than you think…and sure, an expensive fancy gift is always welcomed…but this holiday season, use Apache Arts & Crafts to skillfully create gifts as Santa does in his workshop. Apache Arts & Crafts is the place to go if you need to learn a craft or just to indulge your creativity. Classes are offered in a wide range of hobbies. It has facilities for everything from ceramics to woodworking and has a competent staff that will help you every step of the way. The Screen Printing and Embroidery Shops offer an interesting option for personalizing garments for a gift to a friend or for a giveaway at a company’s holiday party. Embroidery is available for an array of items including; hats, blankets, golf bags, and towels. This is the perfect place to find a fun present for everyone on your holiday list. Apache also has a framing shop and a Ceramic Department. Framing an individual’s favorite picture is a fantastic idea for a gift The Ceramic Department also has instructors that can walk you through making almost every imaginable ceramic item. Classes are also available if you want to go that extra mile and

put some real tender loving care into your holiday gifts. Ceramic, wood shop, and Framing Classes are available as well as a wizard matt cutting class, which requires you to finish framing class beforehand. Pottery classes are also available and are taught by a “certified contracted instructor”, If you are interested in the pottery course you must call in 48 hours prior. If you’re into the whole do-it-yourself thing, let Apache’s professional artisans produce something for you…just tell them your idea and let them get crafting in the workshop. It all starts at the Hobby Heaven sales store where you can purchase all your crafting supplies at some of the best prices in town. This is also where you sign up for classes. The Multi-Craft stores is the spot for getting custom engravings and plaques; engravings can be done on wood, glass, leather or acrylic. Hat racks, dog tags, trophies and more are great ideas for items to be engraved and personalized for a special gift. Time is of the essence, so let’s get to the workshop and get to crafting! re you not a tent person? Does the thought of roughing it out in the wild not appeal to you? If you answered yes to either of these questions, you may think that Belton Lake Outdoor Recreation Area is not your cup of tea. Those of you who enjoy the comforts of home can still experience what Belton Lake Outdoor Recreation Area has to offer by staying in one of their gorgeous cottages. Rent a cottage for an evening, weekend or longer and get the experience of the outdoors with a less than rustic living area. BLORA offers one and two-bedroom cottages, both come fully furnished with kitchen supplies, utensils and linens.

They also have a screened in porch, barbecue grill and picnic area. All cottages are also conveniently located near playgrounds. The one-bedroom is perfect for a Family of four, while the two-bedroom accommodates six individuals. Prices for a stay at these cottages include a $3 charge at the gate for DoD registered vehicles; all other vehicles will be charged $8 to enter. Winter rates begin in October and run through March and are as follows: E-1 to E-4, $30 MondayThursday , $35 for Fridays -Sundays and holidays. E-5 and above as well as all other DoD personnel will be $35 MondayThursday, $40 for Friday-Sunday and

Holidays. Check in time is after 3 pm and check out is any time before noon. While enjoying your stay at BLORA make sure to explore all the other activities available in the area, ranging from horseback riding to mountain biking as well as fishing, hunting and even paintball. So come stay in one of the welcoming cottages and experience the fun and excitement that is to be had for the entire Family. Celebrations of all sorts, and the food that accompanies them, bring people from all over the world closer together. Let’s all take a moment to reflect on the thought behind two of the Nation’s most popular holiday feasts…

In 1621, the Plymouth colonists and Wampanoag Native Americans shared an autumn harvest feast that is acknowledged today as one of the first Thanksgiving celebrations in the colonies. For more than two centuries, days of thanksgiving were celebrated by individual colonies and states. It wasn’t until 1863, in the midst of the Civil War, that President Abraham Lincoln proclaimed a national Thanksgiving Day to be held each November. This Thanksgiving, allow yourself an opportunity to experience the Thanksgiving Buffet at Club Hood, on November 24. The buffet will consist of a full spectrum of delicious foods; the carving station will consist of mouth-watering roasted turkey and Virginia baked ham, as well as steamship round of beef. Other meats will include, sliced turkey, pork tenderloin and stuffed flounder. To compliment the meats, the lunch line will contain candied yams, macaroni and cheese, green bean casserole, roasted garlic mashed potatoes and more. A salad station will be available for a lighter choice, and the buffet will be rounded out with a delectable choice of desserts. The man we know as Santa Claus has a history all his own and can be traced back hundreds of years to a monk named St. Nicholas. It is believed that Nicholas was born sometime around 280 A.D. in modern-day Turkey. Much admired for his kindness, St. Nicholas became the subject of many legends. It is said that he gave away all of his inherited wealth and traveled the countryside helping the poor and sick. Over the course of many years, Nicholas’s popularity spread and he became known as the protector of children. On December 4, Santa will be at Club Hood for brunch, before he heads back to the North Pole to check in with the elves at the workshop. Indulge your taste buds in a full breakfast and lunch feast, including a bountiful array of creative entrees, delectable salads and tempting desserts, all prepared fresh. Santa will also be available for pictures, so be sure to bring your cameras. Both, Thanksgiving Buffet and Brunch with Santa offer two separate seatings. The first seating, will be from 11 am - 12:30 pm; the second, 1:30 pm - 3 pm. Each feast is $18.95 for adults, $5.95 for children 5-12 and free for children 4 and under. Club Hood is located in building in Bldg. 5764, on 24th Street at Tank Destroyer Boulevard, near the East Gate. Open to the all authorized Family and MWR patrons. This year, turn the tables on your Thanksgiving leftovers with recipe’s that your Family will gobble up! Turkey and Sweet Potato Quesadillas with Chipotle Mayo • • • • • • • • • • • • • •

2 cups shredded leftover turkey 1/4 cup salsa (I like tomatillo, but whatever you have is fine) 4 large flour tortillas 1/2 cup sweet potatoes, mashed 1 cup shredded Cheddar 2 tablespoons canola oil 1/2 cup mayonnaise 2 tablespoons sour cream 1 lime, juiced 1 canned chipotle pepper, chopped 1/2 teaspoon ground cumin 1 tablespoon chopped cilantro Salt and freshly ground black pepper 1 green onion for garnish, sliced

Directions In a large bowl combine leftover turkey and salsa. To construct quesadilla, place one tortilla on work surface and spread with half the mashed sweet potato. Then add half the turkey mixture and half the cheese. Top with tortilla and brush with a bit of canola oil. In a large skillet over medium high heat add quesadilla oil side down then brush the top with oil. Cook for about 3 minutes until bottom begins to brown and cheese starts to melt. Flip and repeat. In a small bowl combine mayonnaise, sour cream, lime juice, chipotle, cumin, cilantro, salt and pepper. Remove quesadilla from pan, cut into wedges and serve with chipotle dipping sauce. Garnish with onions.

Sweet Potato Bisque • • • • • • • • •

6 slices bacon 1 chopped onion 3 cloves garlic, minced 4 cups leftover roasted sweet potato’s 4 cups chicken broth 1 teaspoon salt 1/8 teaspoon white pepper 1/2 teaspoon dried thyme leaves 1 cup heavy cream

Preparation: In large stockpot, cook bacon until crisp. Drain bacon on paper towels and set aside. Drain off all but two tablespoons of the bacon fat. Cook onion and garlic in bacon fat until tender, about 5 minutes. Stir in sweet potatoes and chicken stock. Simmer for 10-15 minutes until potatoes are falling apart. Using a potato masher or immersion blender, mash the vegetables. Stir in heavy cream and heat through. Garnish each serving with bacon. Serves four to six individuals.

Ah…the smell of the wood-burning stoves and pine cones is in the air and with the crispness of the night air, it is all we can do to not be overly exuberant in our holiday fervor. C’mon, we all know that when we wake up in the morning to that fresh cup of coffee or other beverage, the thought of singing Johnny Mathis’ “It’s Beginning to Look a Lot Like Christmas” is nearly overwhelming. The holiday season is upon us and once again, it is time to gather the Family up and take in the traditional holiday festivities. Let’s face it: most of the things we love about the winter holidays - the Family gatherings, the parties and overindulgent meals, the giving and receiving of gifts - are also pretty stressful. Many of us cross over into the New Year feeling as if we’ve just run a marathon: happy, but exhausted, and figuratively and literally spent. That is why we all need that little moment to relax and enjoy a holiday light display that will not only brighten the skies, but your spirit as well – Nature in Lights at Belton Lake Outdoor Recreation Area. For many Families, going to see local holiday light displays is a favorite yearly tradition. It’s a great way to jump-start your holiday spirit! So bundle up, jump in the car and spend the evening by taking in some of these great holiday lights. Come on out and make your way to the lights by the lake. Featuring over 115 holiday light displays in a five and a half mile drive

through BLORA, Nature In Lights will light up the night skies for the 15th consecutive year. Some light displays are as much as 40 ft. high, with various themes throughout. The largest and most festive holiday light display in Central Texas will be unveiled starting nightly on November 18 and concludes on January 8 from 5:30 – 11 pm. Entry into the park varies depending on your type of vehicle. Cars, mini-vans, and pick-up trucks have an entry fee of $5, while 15-passenger vans have a fee of $15, 24-passenger vans have a fee of $25, and 47-passenger vans have a fee of $40. If visiting Monday through Wednesday, visitors will receive a Fourth Edition Nature in Lights Ornament, while supplies last. This will be a great way to remember your Family outing at BLORA and create a desire to continue the collection. While enjoying the spectacle of the light displays, don’t forget to stop by Santa’s Village located in Live Oak Pavilion featuring Cowboy Cafe. Santa’s Village hosts a large array of arts and crafts and assorted items, including Christmas ornaments, cookie jars and more for sale from local vendors. Also, remember to stop by and take a picture with our guest of honor and let him know whether you have been naughty or nice. Pictures with Santa are five dollars for a small Polaroid picture. Tokens of by Erica Stiner In celebration of Military Family Appreciation Month, Casey Memorial Library is conducting several activities, as tokens of appreciation. Take time to honor veterans Saturday, November 12, at Casey Memorial Library. From 10 am to 5 pm, we’ll be making “saddle bags” to donate to veterans staying at the Olin E. Teague Medical Center. These handy bags attach to walkers and are great for carrying items. Sewing skills are not necessary; we’ll also need people to iron and cut fabric. If you have a sewing machine, iron, or ironing board you prefer to use, feel free to bring them. The Crossroads to Texas Quilt Guild will be providing fabric and patterns. If you prefer to bring your own fabric, you will need a yard of good quality, sturdy, woven cotton or cotton-polyester blend fabric appropriate for adults. We ask that children be 10 or older. Children ages 1012 years old must be accompanied by a parent. Lunch will be provided around noon and

THE MAGIC TOUCH by Wilson Mathews III hough humans are wired to need touch, in today’s fast paced, technology-driven world, it’s very easy to go days, even weeks or months without experiencing human touch- not to mention massage therapy. While the side effects may not be immediately apparent, the consequences could adversely influence your health and well-being. Writings on massage therapy have been noted throughout history, such as in ancient Greek civilization. In 460 AD, ancient Greek philosopher and physician, Hippocrates, whom is often referred to as the “father of western medicine”, wrote “the physician must be experienced in many things, but assuredly in rubbing”. Touch is the first sense to develop in the womb, the last sense to fail in old age and subsequently one of the most important senses. While the other four senses (sight, hearing, smell and taste) are located in specific parts of the body, the sense of touch is found throughout all organs, especially the skin. The sense of touch in your skin originates in the bottom layer of your skin called the dermis, which is filled with many tiny nerve endings that give information about the things with which the body comes in contact. The nerve endings in the skin determine if something feels hot, cold, painful and pleasant. To the body, painful touch alerts the brain of danger or a malfunction; but pleasant/appropriate touch i.e., massages therapy, can provide a number of benefits. Research has shown that the

benefits of massage may include pain relief, reduced anxiety, depression, blood pressure, muscle tension and heart rate. A common notion behind the effect of massage stems from the feeling of relaxation and well-being that one may experience from massage therapy is that: it stimulates the release of endorphins and serotonin, preventing fibrosis or scar tissue, increasing the flow of lymph, aiding the immune system and improving the quality of sleep. ere on Fort Hood there is an amazing facility called the Lending Closet, which supports Soldiers and their Families relocating to and from the installation. The Lending Closet is stocked with basic items. Some of the items available to Soldiers and Family members include: irons, ironing boards, toasters, coffeemakers, dinnerware, silverware, cooking utensils, pots and pans, car seats, strollers and highchairs. When borrowing from the Lending Closet, have your own linens, because the Lending Closet does not provide them. The Relocation Readiness Program Lending Closet is especially designed to make transition into the community easier. Orders are not required, but Family members and Soldiers are required to present their DoD ID. For out-processing Soldiers and Families, items may be borrowed after the household shipment has been picked up. Soldiers must still present an DoD ID to borrow items. All items on loan from the Lending Closet need to be returned prior to receiving installation clearing papers. We also offer Welcome Packet CD’s, PCS on the GO information, International Spouse Packets. and U.S. Citizenship & Immigration Service information. Family members can also get current information on the community and the many services available to them. This important service is free of charge and is provided by the Relocation Readiness Program which is responsible for helping mobile military Families get settled quickly by providing Families with basic installation information. f a new job is on the horizon, do you know your worth and how to negotiate your best salary? Whether you are a military spouse seeking a civilian job, or you might one day leave military service, it pays to know how to negotiate your best salary in the civilian work world.

If asked for your salary requirements, don’t tell. Write “open” in the application blank, or tell the interviewer you want to know more about job requirements, benefits, advancement opportunities and the work environment before you name a required salary. If prompted for how much you made in your last job, don’t answer that either. Say you’re willing to discuss past income during your interview. If pressed, make sure you offer the ‘big picture’ for your last salary. Include the monetary value of all your benefits. Before discussing salary, make the connections for how you will help the company improve its bottom line. Develop three to five clear points to share in the interview. Then, tell the interviewer you’ll consider any serious offer they’d like to make. It’s better not to name your salary first. When an offer comes, ask if it’s flexible. You may not see big increase, but you might gain more paid vacation, a signing bonus or other perks. s

Victorian Teas have been around for centuries as a means of having people gather and enjoy the camaraderie and fellowship that ensued. Beginning in both America and England in the late 1880’s, fine hotels began to offer tea service in Tea Rooms and Tea Courts. Victorian ladies and their gentlemen would meet in the late afternoon for tea and conversation. Many of these tea services became so well known that the phenomenon spread throughout the countries and have evolved into what we experience today. Each December since 2005, CYSS hosts the Victorian Tea to give the opportunity to take a moment to enjoy the holiday season and this year the tradition continues. CYSS’ Victorian Tea extravaganza will be held Dec. 8 at the Phantom Warrior Center. ew York’s Rucker Park is famed for having showcased many street ball, college and even professional basketball players on its courts. On any given Saturday afternoon, anyone from Kobe Bryant to Kevin Durant can be spotted balling against neighborhood players. Similarly, the Drew League in California has seen a host of sports enthusiasts hit the courts not for a paycheck, but simply for the love of the game. Following in the tradition of New York’s Rucker Park and California’s Drew League, Fort Hood Child, Youth and School Services is hosting the Youth Services: Teen Sports Extravaganza at Abrams Physical Fitness Center on Saturday, December 17. The Teen Sports Extravaganza will include a variety of sport challenges, basketball games, video game challenges, prize giveaways, a live DJ and live entertainment. The event will kick off at noon with the opening ceremony for the Youth Sports and Fitness Program’s basketball season. At 1 pm the main event will begin, with an action-packed, sportfilled day. Attendees will have the opportunity to watch several basketball games, to include male and female Old School vs. New School games, as well as a Stars vs. Students game. For those individuals not interested in the main attraction– the basketball games, other activities will also include video game challenges, a double Dutch competition, a 3-point shootout contest and free throw contest. Attendees of the event will also have the opportunity to enter to win several prizes, to include gift cards, video games, and more! Players from the Old School vs. New School games will include local coaches, community leaders and youth talent from the surrounding communities. The Stars vs. Students game will include local and regional celebrities along with some surprise guests.
