TITUSVILLE — As an engineer, Tuan Le understands why things work. “I want to know why something works the way that it does,” he said. “I don’t want to just temporarily fix it, I want to understand the entire process.” It is with his scientific mind that Mr. Le has transferred his interest to an area that also surprises him: cooking. “Cooking is a hobby of mine,” he said. “When I married my wife, (Chung Nguyen), she said she hoped to open a restaurant someday because she knew that I can cook. This is making my wife’s dream come true, as well as exploring my hobby.” Since May, VietRiver has offered truly authentic Vietnamese cuisine to the city of Titusville, something Mr. Le said he understands from his life growing up in Vietnam.

“I was raised in a poor family,” he said. “I would cook for my family when my parents were working, so I had to learn how to cook.” It was by cooking his entire life that Mr. Le learned how to prepare authentic Vietnamese food, something he said that a lot of people may be unfamiliar with. “Before the Vietnam war was over, a lot of people knew how to cook traditionally, but, when it ended, ingredients became expensive, and people began to take shortcuts,” he said. “Next generations didn’t know how to cook.” To cook authentic Vietnamese cuisine, Mr. Le uses his scientific background to fully understand “why things work,” including making sure each temperature is set correctly and each dish has the right amount of spices added for the perfect flavor. “If something sits for too long, or it becomes too salty, I won’t serve it,” he

to keep my menu fresh, but it is hard to see where (there is a weakness).” Also, the food isn’t the only spectacular component of VietRiver, as the inside dining area is decorated stylistically French, to both honor the French culture that affects Vietnam and to create a cultured experience for diners. “People travel everywhere in the world,” Mr. Le said. “I want to be the first person to cook authentic food with an environment. It is up to you to decide what is a quality dining experience and what is a cheap experience. I hope what I am doing can carry on to the next level to create more (quality) dining experiences.” VietRiver is located at 1817 S. Holiday Happenings: Brevard County This holiday season, there is no shortage of events and activities going on throughout Brevard County. Check out these listings that feature festive fun for the whole family. Festival of Wreaths sponsorship One Senior Place will be the host site for the Third Annual Festival of Wreaths on Friday, Dec. 6 from 5:30-8:30 p.m. This annual fundraising event was designed to benefit local charitable organizations in Brevard County. This year’s recipient will be Devereux Florida. Devereux is the largest nonprofit provider of mental health, developmental disabilities and child welfare services to children and families in the nation. They provide services to more than 1,000 children in Brevard County

throughout the year and provide gifts to these children during the holidays. Admission to this event is $5, or a donation of a gift card. Attendees can enjoy plentiful savory hors d’oeuvres, beer, wine, coffee and hot cocoa, elegant desserts and live holiday music. Kids are welcome. There will be a kid’s corner with crafts and activities and pictures with Santa. Silent auction items can be previewed from Monday, Dec. 2 through Friday, Dec. 6. One hundred percent of all proceeds will be given to Devereux after the completion of the silent auction on Dec. 6. All event sponsors will be recognized with logo placement and a brief description of their business or organization in our print program, as well as acknowledgment

This is the 17th year of presenting the gift to the community of the drivethru nativity. It will be on Saturday and Sunday evenings, Dec. 7 and Dec. 8 from 6-8 p.m. on the church grounds, 6355 N. Bethlehem in Mims What was the world like when Jesus was born? Did he watch his mother spin wool into thread for clothes? Did he help his father build wooden tools and toys? Was he sent to the market for dates or the apothecary for healing herbs? Now you can learn about the world, as Jesus knew it, as you travel back in time at the Mims United Methodist Church’s “Bethlehem in Mims.” On Saturday, Dec. 14 from 1-5 p.m., you will see Mims United Methodist Church transformed into the ancient city of Bethlehem. Outside, you can see the herd animals and help the townspeople stomp grapes for wine and press olives for oil. Inside, you can visit the marketplace shops and your whole family can learn to weave baskets, throw pottery, play spin the dreidel or sample Biblical foods. Further along the streets, you will pass through the mortuary, the synagogue and the Bedouin village on your way to the stable to see a living nativity. This year, the concert is scheduled for Sunday, Dec. 8 from 1:45-4 p.m. at La Cita Golf and Country Club, 777 Country Club Drive, Titusville. The 60-member Community Band of Brevard will present Christmas selections, along with choral groups from area schools. They include: The First Grade Honors Chorus (110 firstgraders) from North Brevard area schools, Voices of Victory from Park Avenue Christian Academy, the Titusville High School Madrigals and the Astronaut High School Chamber Choir. Following the free concert, when everyone is filled with Christmas spirit, Santa will arrive via helicopter, compliments of Bristow Academy, Inc. Pack your blankets and picnic gear and come celebrate the season. As a courtesy to all patrons, please leave lawn chairs at home. An area will
