ith as much time as we all spend running around, doing errands, working and taking care of those we love, spare time doesn’t usually come into play. For those who need help, whether it is an animal, child or the elderly, the few moments of your day that you spare to help them are priceless. Sometimes, what you get back, though not monetary, can be more rewarding than any dollar amount. The sense of being able to help someone other than your self can be incredible. A few years ago, at the Youth Volunteer Corps in Vero Beach, I spent some time helping children paint. There were those who weren’t interested, some who didn’t see the point in learning, but some stuck

around… even those who originally shook their head at the idea. The project was a simple one, but it gave the teenagers I worked with a sense of accomplishment. They were able to finish the works of art in a very short amount of time. The works were displayed in the Vero Beach Museum of Art. As the parents

were guided down the halls of the museum to see the works, some dragged to the art pieces, it gave me a moment to step back and see what had happened. I had been a part of it. Some of them won awards, some didn’t, but each was proud of their works that they accomplished individually and together. Some of those works hang in the Vero Beach Boys and Girls Club to this day. I still see some of the teens, much older now, getting married and working jobs to pay rent. When they see

me they wave, talk to me and say, “Remember that art that I did?” I blush, laugh, nod and say “Yes.” Again reminded and flooded with a warmth that I had touched their life in some way or another. That feeling… that warmth is the reward for hours spent with them. It continues to this day. In our community there are so many opportunities to volunteer time to help someone. This issue of Forever Young gives a few ideas of places that would be a great place to volunteer. We here at Forever Young encourage all of you to spend some time out in the community to make an impact and leave your mark on a life. Every dog, cat and animal at the Humane Society of St. Lucie County perks up at the sight of their volunteer approaching their kennel. For them, the volunteers are more than just someone who takes them for a walk. The volunteers are their friend. For the volunteers, there is a sense of enjoyment when an animal jumps up and barks in greeting. Paula O’Neal, who runs the volunteer program at the Humane Society, says that the volunteers love it and that they build friendships with the other volunteers,

but mainly they help the animals. “Mainly they are interacting with the dogs and sometimes they interact with the cats,” she said. “We also do outside adoption events in the RV, PetCo adoption events, hurricane expos and events at home depot.” The biggest benefit to the pets is their interaction with their volunteers. It gives them one-on-one time and familiarizes them to be more sociable and closer to finding a forever home. To the society, volunteers help the staff.

“They’re a tremendous help,” Ms. O’Neal said. “They’re always helping the kennel staff and watering.” For those interested in volunteering, there is a class every Saturday at 11 a.m. that all potential volunteers must attend. “It shows the volunteers our way of taking the dogs in and out of the kennels, learning the medical boards, which dogs to walk first,” she said. “And other things, like who to talk to if there are any issues. Really, it is just a little training.” Anyone interested in volunteering should wear proper attire.

Ms. O’Neal recommends longer shorts or pants, because sometimes the dogs jump. Wearing closed toed shoes is important and not wearing a lot of jewelry. Now, more than ever, the shelter needs volunteers as they lose a lot of volunteers due to students going back to school. We want to ensure the parents that all the people who are working with the children have been screened.” Each volunteer interested should be committed to spending once a week for 30 minutes. The Big Brother’s and Big Sisters of St. Lucie, Indian River and Okeechobee Counties have helped children in their counties through various programs. Through these programs, studies have shown that children have become more confident in their schoolwork performance, their able to get along better with their families, 46 percent less likely to begin using illegal drugs, 27 percent less likely to begin using alcohol and 52 percent less likely to skip school. None of this would be possible if it wasn’t for the volunteers who help. “The volunteers are a big part of it,” said Kari Tankersley, match support specialist for Big Brothers and Big Sisters. Ms. Tankersley heads the Jump Into Reading program at schools in the counties. She encourages those who love reading to volunteer to read to children. The reading sessions occur at the local schools so the child is never taken out of the school. Valerie Collins is a reading volunteer in St. Lucie County and lives in Port St. Lucie. “I saw something about the program in the paper and decided to check it out,” Ms. Collins said. “Generally, teachers, have large classrooms and they have a lot to do so it’s hard for the students to get a lot of individual attention.” She said the one-on-one attention she provides through the reading mentoring helps the children and herself. “You really get a lot out of it,” Ms. Colilns said. “It makes you feel needed. They look forward to seeing you every week. They have so much stimulation for TV that I don’t think

In St. Lucie County, few organizations have as much impact on human services as United Way. Most of the success of the United Way is due in part to the volunteers who sign up for events, help organize and raise money for organizations in the county. “We have a small staff at United Way,” said Cris Adams, vice president of community impact at United Way of St. Lucie County. “There would be no way we could do what we do in the community without our volunteers.” For those looking for opportunities to volunteers the United Way prides itself on matching volunteers to their opportunities.

“We’re sort of a clearing house for volunteers,” Ms. Adams said. “We have a program called Volunteer St. Lucie and a website where people can go on and register and see the volunteer opportunities that organizations have posted on the site.” The United Way also uses more than 70 volunteers to serve as an advisory board to help decide where the r a i s e d m o n e y

should be used and spent. All the money raised in St. Lucie County is granted to organizations within the county. “It’s part of the United Way philosophy that people in the community provide funding to the United Way and we think that volunteers should have a say in how the money is put back into the community,” Ms. Adams said. interested in volunteering, the United Way is happy to channel them to the organization that would best fit their interests. Each organization requires a different application process, from helping with the Boy Scouts to working with disaster response. Market at the Landing at Tradition takes place Sundays from 10 a.m. to 2 p.m. This one is not as large, but still worth checking out. There is plenty of parking, as it is set up in the shopping center. There are so many nature preserves in the area that offer hiking, canoe access, bird-watching and then some. There are self-guided trails, and you can go at your own pace. Some of the most visited are the Oxbow Eco-Center, the Savannas Park and Blind Creek Riverside North. Along similar lines of the beautiful outdoors, the Port St. Lucie Botanical Gardens has a lake with a fountain, paved public paths, beautiful gardens, a pavilion, a gift shop and a special place for weddings. This beautiful sanctuary includes a butterfly garden, orchid room and rose garden. The gardens also hosts a variety of children's programs, plant sales and the popular Fort Pierce Jazz and Blues Society concerts. The Heathcote Botanical Garden features, among other things, a beautiful bonsai garden, an herb garden and a reflection garden. They offer fun programs for children and adults. Many weddings take place here, and it is a lovely place to spend a peaceful afternoon. Tradition's Food Truck Invasion takes place the first and third Wednesday of the month from 5 to 9:30 p.m. in Tradition Square in Port St. Lucie. It is an outdoor picnic, where food trucks of different origins, cuisine and menus prepare food that is cooked to order. The See TRAVEL, Page 10

any people ask me why my husband and I picked the Treasure Coast when we moved to Florida. The answer is simple: it’s two hours to Disney World and two hours to Miami! I feel that we have the best of both worlds, with many wonderful stops in between. There is such an assortment of things to do here. You have farmers markets, nature preserves, beaches, theater, shopping, dining and sports. As a former New Yorker, what could be better than living near Tradition Field, home to the New York Mets’ Spring Training, and the St. Lucie Mets Minor League Team? Minutes off of I-95 in Port St. Lucie, this is a great place to spend an afternoon or evening. During the summer, Thursday night is $1 hot dog and $1 beer night. You can't beat that for an inexpensive form of entertainment. Parking is free, and the open seating tickets are very affordable. One of my absolute favorite ways to spend a Saturday morning is at the Downtown Fort Pierce Farmers Market from 8 a.m. to noon. We grab a danish and a cup of coffee and sit by the water before we explore all of the booths. Choose from pickles, produce, spices, danish, bread and multiple options for breakfast and lunch. Enjoy the music, as a local band plays, and walk across to the other side to check out all of the booths of crafts, jewelry, books and home furnishings. After the farmers market, it is fun to walk around downtown Fort Pierce, or take a ride to one of the beaches on Hutchinson Island. Saturday also brings a farmers market to the Civic Center in Port St. Lucie. As many as 50 vendors sell their items at this location from 8 a.m. to 3 p.m. The Tradition Green

Authentic cuisine waits at new restaurant

FORT PIERCE — The buzz about El Patron and their authentic Mexican cuisine was starting to make its way around town, so when I was asked to stop in and sample some of their dishes, I was anxious to see if what I’d heard was true. The outside of the restaurant, which sits on U.S. 1 in Fort Pierce, looks festive and inviting with a touch of South American charm played out on well-manicured grounds. But, it was the cactus served inside the restaurant that had my curiosity piqued. My dining companion and I were greeted by Michael Osborn, the restaurant’s manager. He sat us in the spacious dining area, where genuine Mexican music could be heard and over the chatter of the full seating area. Mr. Osborn suggested we begin our meal with the Mexican fondue, a mix of poblano peppers and melted cheeses. The fresh chips that were served with the fondue added a savory bite to the wonderful starter. The next dish Mr. Osborn sent out was a homemade soup full of vegetables and chicken. “We buy all of our produce and meats locally,” said Mr. Osborn. “We shop at the Farmer’s Market for our vegetables and use a local butcher for the meat. We want things to be as fresh as they can be when we serve it to our customers.” The fresh ingredients were obvious in every bite. From the crunch of the vegetables to the tender quality of the meat, every bite of each dish was incredible. Mr. Osborn suggested we try several dishes to get a taste of the quality of food they serve. Each dish brought out accentuated a different area of expertise that the

The flat iron beef was tender and nearly melted in my mouth. The accompanying rice and pinto beans were outstanding and were a perfect complement to the beef. My dining companion couldn’t stop raving about the chicken

milanez that he was served. The lightly breaded chicken was flavored just right with a hint of white wine in the butter garlic sauce. The al dente’ bowtie pasta was cooked to perfection, making this meal one that stands out above the rest. See DINING, page 10

M

ixing music is the process of meshing individually recorded tracks into a song. This is where your creativity really comes into play, and you'll find that no two people will mix exactly the same way. It is possible, though, to be too creative and end up with something that sounds completely different than what you originally intended. I have laid out 10 tips to use as a guideline when you're mixing your songs. I go back to theses tips when I get stuck during the mixing process, and they are a great reference. The most important tool is one you already have: your ears! Listen, listen and listen some more. Compare your mix to a similar genre song, ideally one you really like. The following are a few simple tips to get the best results from your mix: 1. Understand the software. Read the documentation. Practice. Read the online user forums, if there are any available. Youtube is also a great source for tips & tricks for mixing. 2. Just make good recordings first. Don't worry about adding effects at this point. Be sure each track sounds the way you want it, so record and rerecord until it does. You're putting a lot of effort into the recording process, so be sure you keep a copy of each of the tracks backed up somewhere on your hard disk or on a CD. 3. Make sure you're using a good

set of speakers. If you put together a mix by listening through some cheap computer speakers, you'll likely find that you've ended up with way too much bass and who knows what else, when you play the finished song on a good system. If you're really interested in doing high-quality work, you'll want a set of studio monitors. A pair if good-quality headphones are just as important, especially if you're doing your mixes at home. 4. Start with the rhythm section, the "body" of the song. You may want to use a click track to keep proper timing. Then add vocals, using as many tracks as you want, i.e., lead vocals on one track, all background vocals on another. Or ideally, each background vocal recorded on its own individual track. Next, add in the other individual instrument parts, using separate tracks for each. 5. Stereo positioning is critical. It's OK to put almost all of the sound of one instrument on the right and another instrument almost all on the left. However, main vocals, bass guitar and bass drums should be centered in the mix. Other drums can be on one side or the other, but don't go too far. Background vocals can be

off-centered also. 6.When two instruments seem to cancel each other out, use the EQ (equalizer) to bump up the high-end on one and the low-end on the other. This will give them some separation from one another. 7. Don't overdo the reverb. It's OK to use some reverb with instruments, but don't go crazy with it. And don't try to fill in a void with reverb. If it sounds like you need another instrument to provide "fill,” add one. As far as vocals go, try using delay instead of reverb. 8. Use compression. The peak volumes of most of the instruments and voices you'll record simply get too loud at different points. Compression will help even things out, but since it does lower the volume, you'll need to raise it in the compressor. Remember this increases the volume levels for all the parts, so

again, things will be evened out. 9. Mixdown the tracks. Once you have all of the individual tracks sounding the way you want them, mix them down (combine them) into a single stereo track (actually this is two tracks: a left and a right). 10. Audio mastering is the final step. Add any overall effects, compression, etc., necessary to your final mix. Just don't over-tweak. When you think it sounds good, it probably does, but play the song on several different systems just to be sure. I still use the car test. As were enjoying our entrée, Mr. Osborn brought out shrimp diablo, an incredible seafood dish that isn’t for the faint of heart. The heat from the homemade sauce builds bite after bite. The spiciness can be turned down for those who don’t like their food too hot, but for me, it was perfect. The sauce is made with white wine and pomegranate, and is really an incredibly unique taste that must be tried. And finally, the cactus... Mr. Osborn brought out his pork, chicken and cactus meal and I was taken aback. Not only did the meal look out of this world, the idea that a spiny plant could be turned into such an incredible dish blew me away. The braised meats were tender and red onions, crushed tomatoes and poblano peppers that made

the sauce that the meat and cactus were in combined for a taste that is second to none. The cactus does have a distinct flavor, a little bitter, but in combination with the spices of the sauce, the tenderness of the meat and the perfect rice and beans, the plant now has a new meaning to me. Each of the dishes prepared for us brought out the authenticity of homemade Mexican cuisine. From sangria with fresh fruit that only Mr. Osborn makes to the creamy flan for dessert, a meal at El Patron is well worth it. But, I warn you; take your appetite. The portions are large and you really won’t want to leave anything on your plate. El Patron is located at 1006 South U.S. 1 in Fort Pierce. They are opened for lunch and dinner seven days a week.
