ith as much time as we all spend running around, doing errands, working and taking care of those we love, spare time doesn’t usually come into play. For those who need help, whether it is an animal, child or the elderly, the few moments of your day that you spare to help them are priceless. Sometimes, what you get back, though not monetary, can be more rewarding than any dollar amount. The sense of being able to help someone other than your self can be incredible. A few years ago, at the Youth Volunteer Corps in Vero Beach, I spent some time helping children paint. There were those who weren’t interested, some who didn’t see the point in learning, but some stuck

around… even those who originally shook their head at the idea. The project was a simple one, but it gave the teenagers I worked with a sense of accomplishment. They were able to finish the works of art in a very short amount of time. The works were displayed in the Vero Beach Museum of Art. As the parents

Putting idle hands to work were guided down the halls of the museum to see the works, some dragged to the art pieces, it gave me a moment to step back and see what had happened. I had been a part of it. Some of them won awards, some didn’t, but each was proud of their works that they accomplished individually and together. Some of those works hang in the Vero Beach Boys and Girls Club to this day. I still see some of the teens, much older now, getting married and working jobs to pay rent. When they see

me they wave, talk to me and say, “Remember that art that I did?” I blush, laugh, nod and say “Yes.” Again reminded and flooded with a warmth that I had touched their life in some way or another. That feeling… that warmth is the reward for hours spent with them. It continues to this day. In our community there are so many opportunities to volunteer time to help someone. This issue of Forever Young gives a few ideas of places that would be a great place to volunteer. We here at Forever Young encourage all of you to spend some time out in the community to make an impact and leave your mark on a life. When the four-legged friends need help

STUART — Every dog, cat and animal at the Humane Society of The Treasure Coast perks up at the sight of a volunteer approaching their kennel. For them, the volunteers are more than just someone who takes them for a walk. The volunteers are their friend. For the volunteers, there is a sense of enjoyment when an animal jumps up and barks in greeting. Bitsy McKay, volunteer and foster coordinator at the shelter said that volunteers are invaluable. “We can’t run our business with-

out our volunteers,” she said. “We couldn’t save as many lives without our foster families. The volunteers help in the cat area and feed the cats. In the dog area they get the dogs out to walk them and get them used to being around people.” A more sociable dog is closer to finding a forever home. Those interested in volunteering first fill out an application. After the application process they are invited to the once a month class where the staff explains who they are as a shelter, what volunteer opportunities exist and what type of training is needed.

Anyone interested in volunteering should wear proper attire. Sensible clothing would include long shorts or pants, because sometimes the dogs jump. Wearing closed toed shoes is important as is not wearing a lot of jewelry. The shelter currently has more than 600, volunteers and on a daily basis, including the foster families, about 100 volunteers help with the animals. For those who wish to help the society away from the shelter, there are volunteer opportunities at the two thrift stores, The North Thrift Store, located at 1099 N.W. 21st

Street, Stuart and the Thrift Store Central, located at 2585 S.E. Federal Highway, Stuart. They also have a need for foster families to take animals home with them. The commitment is for two weeks to two months. “There are currently more than 90 families fostering about 200 animals,” Ms. McKay said. Helping those who need guidance By Brittany Llorente

Indiantown – When helping children and teens is your call in life, there is no better place than to turn to the Boys and Girls clubs. In 1991, the Boys and Girls Clubs of Martin County was formed. Now, consisting of five branches, the program is able to assist more than 3,000 youth from ages six to 18 years. Alex Soares, the Boys and Girls Club of Martin County’s Indiantown operations director, is a father and a mentor to not only his children, but the many in his club. Mr. Soares said it was a humbling experience knowing that the children look up to him. Most of all, he knows he is helping them grow both academically and in life.

”The children are our responsibility whether or not they have a solid family structure at home or not,” said Mr. Soares. “When I allow myself to speak about it, it’s touching to know that these kids are looking up to me for the right advice or the right decisions. Just to be there and for me to help them whether they are having a good day or a bad day makes a difference.” Especially during their high school years, where peer pressure is prevalent, it is important for children to have someone to talk to, a place to do their homework and socialize in a healthy environment. “It has become vital more than ever,” Mr. Soares said. “Parents are working now more than ever and

some are working two jobs. There are a lot of organized events on the weekends but afterschool it is important because when they do their homework and there is no one at home to help them, we are here to help them and work with the kids.” The Boys and Girls Clubs also form strong relationships with the schools and school system to help the children academically. Other areas of impact include good character, citizenship and helping around the club and community, building character traits and maintaining a healthy lifestyle. “All of these things are now very important for a child to succeed in life and more and more they’re not having adult role models in their life

or If they do, they’re working,” Mr. Soares said. “We help to serve that role in school and life.” While with children all daylong, from the club to home, Mr. Soares has learned from the children as well. “It is always a challenge and an opportunity for me to learn how I can help them with their homework or just life in general,” he said. “Being a father and learning from my kids what I’m doing right or wrong does help, and kids will not hesitate to let you know.” There are lots of volunteer opportunities to help mentor. Works of the Red Cross By American Red Cross Special to Forever Young

When more than 4 million people needed help following Hurricanes Katrina, Rita and Wilma in 2005, millions of people, foundations and corporations rose to the occasion and helped through the American Red Cross. In the immediate aftermath of the storms, the Red Cross and its partners provided: • 1,400 evacuation shelters for survivors across three states and the District of Columbia – serving nearly 450,000 evacuees • More than 68 million hot meals and snacks • Direct assistance that allowed more than 1.4 million families to purchase groceries,

clothing, diapers and other basic needs. After the initial phase of the emergency response ended, the long-term work of helping devastated families and communities began. The Red Cross created the Hurricane Recovery Program to address the long-term needs of survivors. With what the Red Cross accomplished, together with the help of partners, donors and volunteers, the Hurricane Recovery Program was able to help tens of thousands of individuals and families who needed help over the longer term. Emotional support and behavioral health initiatives enabled approximately 187,500 individuals to enroll in personalized local mental health services.

Additionally, more than 200 community organizations received funding to provide recovery-related services. Case management services provided more than 13,200 households with services, such as assistance in developing personal recovery plans and obtaining local recovery information, access to partner resources and direct financial assistance toward home or employment-related recovery. Partnerships also played a pivotal role in the Hurricane Recovery Program, with more than 3,400 documented partnerships and outreach activities with nonprofit, local, state, governmental and faith-based organizations nationwide. Additionally, nearly 75 long-term recovery committees across the

a.m. to 3 p.m. The Tradition Green Market at the Landing at Tradition takes place Sundays from 10 a.m. to 2 p.m. This one is not as large, but still worth checking out. There is plenty of parking, as it is set up in the shopping center. There are so many nature preserves in the area that offer hiking, canoe access, bird-watching and then some. There are self-guided trails, and you can go at your own pace. Some of the most visited are the Oxbow Eco-Center, the Savannas Park and Blind Creek Riverside North. Along similar lines of the beautiful outdoors, the Port St. Lucie Botanical Gardens has a lake with a fountain, paved public paths, beautiful gardens, a pavilion, a gift shop and a special place for weddings. This beautiful sanctuary includes a butterfly garden, orchid room and rose garden. The gardens also hosts a variety of children's programs, plant sales and the popular Fort Pierce Jazz and Blues Society concerts. The Heathcote Botanical Garden features, among other things, a beautiful bonsai garden, an herb garden and a reflection garden. They offer fun programs for children and adults. Many weddings take place here, and it is a lovely place to spend a peaceful afternoon. Tradition's Food Truck Invasion takes place the first and third Wednesday of the month from 5 to 9:30 p.m. in Tradition Square in Port St. Lucie. any people ask me why my husband and I picked the Treasure Coast when we moved to Florida. The answer is simple: it’s two hours to Disney World and two hours to Miami! I feel that we have the best of both worlds, with many wonderful stops in between. There is such an assortment of things to do here. You have farmers markets, nature preserves, beaches, theater, shopping, dining and sports. As a former New Yorker, what could be better than living near Tradition Field, home to the New York Mets’ Spring Training, and the St. Lucie Mets Minor League Team? Minutes off of I-95 in Port St. Lucie, this is a great place to spend an afternoon or evening. During the summer, Thursday night is $1 hot dog and $1 beer night. You can't beat that for an inexpensive form of entertainment. Parking is free, and the open seating tickets are very affordable. One of my absolute favorite ways to spend a Saturday morning is at the Downtown Fort Pierce Farmers Market from 8 a.m. to noon. We grab a danish and a cup of coffee and sit by the water before we explore all of the booths. Choose from pickles, produce, spices, danish, bread and multiple options for breakfast and lunch. Enjoy the music, as a local band plays, and walk across to the other side to check out all of the booths of crafts, jewelry, books and home furnishings. After the farmers market, it is fun to walk around downtown Fort Pierce, or take a ride to one of the beaches on Hutchinson Island. Saturday also brings a farmers market to the Civic Center in Port St. Lucie. As many as 50 vendors sell their items at this location from 8

JENSEN BEACH — The famous Dolphin Bar & Shrimp House is under new management, but the same great taste and historic feel live on. The history of the Dolphin Bar goes back to the early 1960s, when Francis Langford, an actress and celebrity, opened Outrigger Restaurant and Resort. When Fred Ayres, the owner of Conchy Joe’s Restaurant, visited the place while still under Ms. Langford’s ownership, he fell in love with the place. When the place closed down, Mr. Ayers purchased it in the 1990s, fixed up the place, sanded down the painted mahogany and restored the genuine look that Ms. Langford had made. “My father had a soft spot for Ms. Langford. He was in the Navy in World War II and was able to see her in the USO tours,” said Fritz Ayers, the son and current owner and manager of Conchy Joes. “It was a Polynesian themed restaurant. It was a two year restoration and a major undertaking.” The restaurant opened in June of 2000, using a lot of the memorabilia that made the place a nostalgic memory for those who visited then and now. Brad Latif has been the Chef at Conchy Joe’s for the past year and a half and was entrusted by Fritz Ayers to breathe new life into the restaurant. Mr. Latif has made the happiness of people his motivation in the business. “I love seeing people’s smiling faces,” he said. “I like making sure everyone is happy. I make sure the food is perfect before it goes out of the kitchen.” Taking the wheel, so to say, of the restaurant and the 65 member staff, he is ready to continue the tradition

M

ixing music is the process of meshing individually recorded tracks into a song. This is where your creativity really comes into play, and you'll find that no two people will mix exactly the same way. It is possible, though, to be too creative and end up with something that sounds completely different than what you originally intended. I have laid out 10 tips to use as a guideline when you're mixing your songs. I go back to theses tips when I get stuck during the mixing process, and they are a great reference. The most important tool is one you already have: your ears! Listen, listen and listen some more. Compare your mix to a similar genre song, ideally one you really like. The following are a few simple tips to get the best results from your mix:

1. Understand the software. Read the documentation. Practice. Read the online user forums, if there are any available. Youtube is also a great source for tips & tricks for mixing. 2. Just make good recordings first. Don't worry about adding effects at this point. Be sure each track sounds the way you want it, so record and re-record until it does. You're putting a lot of effort into the recording process, so be sure you keep a copy of each of the tracks backed up somewhere on your hard disk or on a CD. 3. Make sure you're using a good set of speakers. If you put together a

mix by listening through some cheap computer speakers, you'll likely find that you've ended up with way too much bass and who knows what else, when you play the finished song on a good system. If you're really interested in doing high-quality work, you'll want a set of studio monitors. A pair if goodquality headphones are just as important, especially if you're doing your mixes at home. 4. Start with the rhythm section, the "body" of the song. You may want to use a click track to keep proper timing. Then add vocals, using as many tracks as you want, i.e., lead vocals on one track, all background vocals on another. Or ideally, each background vocal recorded on its own individual track. Next, add in the other individual instrument parts, using separate

tracks for each. 5. Stereo positioning is critical. It's OK to put almost all of the sound of one instrument on the right and another instrument almost all on the left. However, main vocals, bass guitar and bass drums should be centered in the mix. Other drums can be on one side or the other, but don't go too far. Background vocals can be off-centered also. 6. When two instruments seem to cancel each other out, use the EQ (equalizer) to bump up the high-end on one and the low-end on the other. This will give them some separation from one another. 7. Don't overdo the reverb. It's OK to use some reverb with instruments, but don't go crazy with it. And don't try to fill in a void with reverb. If it sounds like you need See ROCK, Page 11

tell you exactly how it was made but it got to be pretty darn good. When it says ‘Incredible’, it’s incredible.” As I enjoyed the water side table, the fresh breeze blowing through the deck, I was immediately amazed at the place. I sipped my sweet tea, enjoyed the low sounds of the ocean water and

birds as I looked over the freshly printed menu. The menu featured the freshly caught fish, the weekly specials and the favorites that were mainstays for the restaurant. I started my meal with the Lobster Bisque soup, served with a side of Sherry. The soup was creamy with perfectly shaved bits of lobster swimming in the blend of cheeses. Fortunately, I had so much lined up ahead of me. I was then given a tour of the salad bar by my companion, who did nothing but rant and rave over it, and I was not disappointed by my expectations. Everything on the salad bar was fresh as could possibly be. The salad was nice and crisp. Each topping including bacon, ham, cheeses, sunflower seeds, carrots, radishes, onions, garbanzo beans and many others were a wonderful addition to the greens. Each of the salad dressings are

made in house, dressings from ranch, bleu cheese and Fritz Ayers’ favorite, Thousand Island. The appetizer was the delectable mozzarella shrimp. The medium shrimp were baked with spinach and topped in mozzarella and a fresh garlic scampy sauce. It was the perfect start to the meal without being too heavy. My companion ordered the Dolphin a la Dolphin as her entrée. The entrée was a generous portion of dolphin filet, dipped in parmesan cheese egg wash, sautéed, giving it a nice crust and then topped with a lemon butter caper sauce. Our entrées were served with a bread basket; the rolls were tasty with a dab of butter. I ordered the Shrimp Spin and Arty. The large amount of shrimp was served on a bed of spinach, artichokes and orzo. Everything was drizzled with a Hollandaise sauce that brought each flavor together.

The artichoke was cooked to a perfect tenderness, each bite was better than the last. As the executive chef came out to inquire over our meals, he suggested the house made crème brulee for dessert. The creaminess of the dessert was scorched perfectly on top. I was surprised most by the fresh whipped cream and strawberries served with it. The combination was delightful and a blissful end to the meal. On Sunday’s, the Dolphin Bars has a Bloody Mary bar, where diners are able to make their own Bloody Mary’s. The Dolphin Bar is open Monday through Saturday, 11:30 a.m. to 2:30 p.m. for lunch, 4- 10 p.m. for dinner, with early bird specials from 4- 5:30 p.m. and happy hour from 3- 7 p.m. and 9- 11 p.m. They are open Sunday’s from 11 a.m. to 2:30 p.m. for brunch. origins, cuisine and menus prepare food that is cooked to order. The prices are very reasonable, and I assure you that you will not leave hungry! Be sure to bring your folding chairs or blankets to have a picnic on the lawn in front of Tradition Town Hall. After you have sampled the food trucks, take a walk around the lake. It is a very peaceful path and a great way to exercise. The Vero Beach Theatre Guild in Vero Beach and The Sunrise Theatre in Fort Pierce offer wonderful options when it comes to community theatre. another instrument to provide "fill,” add one. As far as vocals go, try using delay instead of reverb. 8. Use compression. The peak volumes of most of the instruments and voices you'll record simply get too loud at different points. Compression will help even things out, but since it does lower the volume, you'll need to raise it in the compressor. Remember this increases the volume levels for all the parts, so again, things will be evened out. 9. Mixdown the tracks. Once you have all of the individual tracks sounding the way you want them,

mix them down (combine them) into a single stereo track (actually this is two tracks: a left and a right). 10. Audio mastering is the final step. Add any overall effects, compression, etc., necessary to your final mix. Just don't overtweak. When you think it sounds good, it probably does, but play the song on several different systems just to be sure. I still use the car test.
