hen you live in paradise, it’s hard to imagine living anywhere else. The beaches, sand, palm trees and our own little slice of sunshine makes going outdoors a love for many of us. In the month of July, cookouts and barbecuing for Independence Day is a time-honored tradition, paired with fireworks and the gathering of family and friends. Each year, I go out to the river and watch the fireworks. The sounds of the children, spectators and visitors saying ‘ooooh’ and ‘aaaah’ as each firework lights up the night sky is heartwarming and makes me enjoy the beauty of a Florida summer. Then I swat a mosquito. Yes, our slice of heaven has its drawbacks, but we’ve learned to make the best of it.

The amount of outdoor activities is bountiful for those of us in Florida. We have the extra added bonus of water and inland activities that give you every excuse to get off the couch and spend some time in the sun. On the water, fishing, kayaking, paddle boarding, surfing, snorkeling and scuba diving are some of the favorite activities. If you’ve never tried any of these activities on the water or are thinking of trying a new one, it may be the time to get out and try something new (Remember? It’s one of our New Year’s resolutions).

You don’t need to buy a ton of equipment; in fact, most of the experts say you should rent before you buy to make sure you like the activity first. If you’re looking for activities on the mainland, golfing happens to be one of the most popular things to do. In Florida, there are 1,481 golf courses and ranges. So, there is likely one right around

the corner from you, no matter where you live. Take a lesson and hit the course, again, not buying until you’ve tried out the sport. This issue of Forever Young was inspired by the sun, the wonderful summer weather and the fun of Independence Day. Make sure you’re prepared for the outdoors, and we’ve even included a small cooking guide and tips on what to bring and use when you’re picnicking or having a cookout. STUART — About five years ago, Sebastian Lahara and his partner Ed Cagliano had the thought to open a shop featuring a Mr. Lahara’s lifelong love: Kayaking. Riverfront Kayaking in Stuart has since expanded to include bicycling and running. For people who enjoy the outdoors, this is a one-stop shop. “We’re really a place for everyone, not one specific type of person,” Mr. Lahara said. “We’ve had all kinds of people from newbie fisherman come out on the kayaks and paddle boarders. We’ve had 70- and 80-year-old people paddle boarding and kayaking.”

If you have your eyes set on getting into the water and kayaking, there are several locations through the Martin County area to kayak, but start with a lesson. “We give everyone a lesson when they come out,” Mr. Lahara said. “When they come out we ask what they want to do with the kayak, whether it is fishing, touring, just wanting to do some recreational kayaking or more. The second question is how big of a kayak they can commit to due to space restrictions at their residence.” Before buying anything, Mr. Lahara suggests trying it out to make sure it is

something you enjoy. “We really wouldn’t want anyone to buy a kayak and go,” he said. “You wouldn’t buy a car without going on a test drive. You can rent a kayak or go on a tour.” For those wanting to go on a tour, be sure to come prepared. Sunscreen is always recommended for any outdoor activity. Also, bring extra water and snacks. The tour guides bring something for everyone but if you want extra, bring extra. Bring a camera and hats. On a Riverfront Kayak tour, it is mandatory that you wear a life vest. Under Florida law, a life vest just

needs to be accessible on the boat or kayak. When paddling around the river, Mr. Lahara says that it is where he is at peace. “I base the benefits of kayaking on relaxation,” he said. “It’s very serene. Everything that you do when paddling is in your core. You’re working your stomach, shoulder and back muscles. You work your upper body. Buffalo chicken dip Courtesy of Anna-Marie Menhenott 2 lbs. chicken breast 1 package of cream cheese(reduced fat) 1 bottle blue cheese dressing 16 oz. cheddar cheese 1 bottle hot sauce, any brand Boil chicken seasoned with salt and pepper, shred. Combine cream cheese, blue cheese dressing and hot sauce into saucepan; blend together until cream cheese is melted. (The amount of hot sauce will vary according to taste). Once those ingredients are melted and combined, add 3/4 of the cheddar cheese, about 10 oz., and mix well. Add the shredded chicken to the cheese mixture, mix and spread into a square glass pan. Sprinkle the rest of the cheese over the mixture, and place under broiler until cheese is slightly browned. Serve with tortilla chips.

During the summer months, leaving to go outside can be one of the best feelings — the beach cookouts, the afternoon barbeques and standing outside and watching the fireworks. But make sure you’re prepared when you’re out in the sun. Firstly, make sure you’re wearing sunscreen. According to skincancer.org, sunscreen should be applied every two hours and have an SPF of 15 or higher. Also, because of mosquitoes, use a mosquito repellent to keep yourself from getting bitten. STUART — When looking for an outdoor activity that is both fun and leisurely, golfing is a perfect solution. The Florida Club is the home of Stuart golf, a public golf course providing the feel of a private golf course but at affordable prices. The course is designed for both new and experienced golfers. Tom Welz, Florida Club’s General Manager and Director of Golf, said that the club prides itself on being the best value for the money. “It’s really a player-friendly course,” Mr. Welz said. “There are five sets of tees, so you have your forward tees for higher handicap players and the more experienced players play the back tees. It’s challenging, but nothing really difficult that the aver-

age player can’t overcome.” The spacious course, dunes and water hazards make the course not only fun but beautiful. As a beginner, Mr. Welz said that the staff will recommend what you should do as a new golfer and what you will need to begin playing this wonderful game. “We don’t recommend people go out and buy equipment because they don’t know what kind of golfer they’re going to be,” he said. “They need to experience the game first. The best way would be to take some golf lessons. This will help get you off to a good start.” Lessons allow a player to work through the simple process, whether you’re experienced or not.

“Some people are apprehensive about taking golf lessons because they don’t want to be embarrassed,” he said. “We will make those people feel comfortable and help get them started.” The staff is on hand to help with any questions that golfers of any experience level may have. “(The staff) helps people so that they can be comfortable enough to say, ‘listen, I’m new, I want to play, what do I do?’ We take the time to talk to them and help them.” There are many health benefits to golfing including exercise, burning calories and psychological benefits such as reduced stress and peace of mind. ey rock stars! Last month we started to get into home recording and how much fun it can be. This month, I’d like to breakdown the process of home recording, beginning with the “setup.” Let’s assume you have a computer. I’m going to keep this to PCs, running Windows. You can do the same with a Mac, but I’m not a Mac guy, so we’ll use my setup as an example. You’ll need a fairly decent computer, with at least 2 gigs of RAM. Of course, the more memory, the better. If you plan on recording vocal tracks in addition to a guitar and/or keyboard, you’ll need an audio interface that can accommodate both vocals and instruments. There are a few different variations of an audio interface, but we’ll use an “out-

board” scenario that plugs in via your USB ports. Even with this, there are many manufacturers for the gear as well. One recommendation is you do all the research prior to making your buying decision. Use the Internet, ask your music friends or stop by your local music retailer. Right here in Martin County, you have a fantastic music store at Schumachers Music & Entertainment in Stuart. The staff there really knows their stuff and won’t steer you wrong. As for specific products, I suggest visiting Presonus

(www.presonus.com). From entry level to “pro” gear, they can accommodate any skill level and even have a home recording bundle with everything you need to start home recording. I use their gear in my home studio, along with other fine makers of music software and hardware. Ultimately, you’ll decide what best suits your needs. A great Internet resource is Home Studio Corner (www.homestudiocorner.com). For the audio interface, my personal choice is Presonus AudioBox. It plugs into your USB port, so your computer will provide the power for the unit, and has two inputs and two outputs for vocals, guitars, keyboards and MIDI. This, regardless of brand, is your workhorse — the brains, so to speak. Plus, most manufacturers

include a version of their recording software to get you started! As with anything, take your time to do the research. I can’t stress that enough. The audio interface, also known as a recording interface, will allow you to record your music right into your computer. Because most, if not all, makers of this equipment also bundles in software, you’ll be able to plug in your guitar and use the onboard amp/simulators/emulators that may be pre-installed. Again, this is where knowledge is power. JENSEN BEACH — With the wind blowing through, the sea salt aroma in the air and the soft call of gulls in the background, it feels like paradise. Then, a smiling face and drinks brought to the table brings you back to the moment. Conchy Joe’s Seafood has successfully captured the essence of the Florida lifestyle in their décor, atmosphere and delightful dishes that are not only wonderful to look at, but an absolute pleasure to devour. The fresh catch fish list of grouper, mahi-mahi, salmon, Chilean sea bass, wahoo, hog snapper and sword fish is less than 36-hours off the boat. Though the fresh fish can be a little more pricy, the experience and freshness are well worth the additional cost. “I’m very proud of the fact that we don’t have frozen fish,” said Fritz Ayers, manager of Conchy Joes. “We are the exception to the rule and make a niche for ourselves that we have fresh fish. We do very high volumes of fresh fish. It sells, and everything that we can get fresh we do, because it will always be a better experience.” My companion and I started our dinner with Cangrejo Con Queso, Maryland blue crab pieces mixed with lightly seasoned creamy cheese sauce. The accompanying crispy tri-colored corn chips made this an instant favorite for the crab lover in me. As a recommendation from several people, the Conchy’s Conch Chowder was the next dish. This dish is a legend in itself. Served since 1979, this dish has won over the hearts of customers with its generous mixture of conch and spices. Served with a side of sherry, the soup is more than a dish, it’s an experience. I tried it without the sherry first and honestly didn’t think it could get any better. I was very wrong. Somehow, the sherry added a whole other side to the soup that had my spoon soon scraping the bottom of the bowl. My companion had the New England clam chowder. The creamy pota-

File photo toes mixed with large pieces of clams was finished quickly and described as ‘delicious.’ During the love-affair with our soups, we were delivered an assortment of breads. Banana bread, cornbread and dinner rolls arrived warm and topped with butter, a wonderful addition. When our entrees arrived, I wasn’t sure if I had any room left, but I found a way. The coconut fried shrimp was simply amazing, with perfectly crunchy coconut batter over large shrimp. The accompanying sauce was tangy with house pineapple coconut mango chutney. My companion had the crunchy grouper; a lightly fried, corn-flake breaded, large grouper filet served with Conchy’s famous tartar sauce. For dessert, the Key lime pie was the

perfect ending to the meal, with the graham cracker crust paired with a smooth textured filling. As I looked out on the water and the bridge, finishing my glass of sweet tea, I recalled what it said on the back of the menu: True old Florida hospitality cannot be copied or mass produced. A statement has never been so true and is the reason why Conchy Joe’s is the unique and a go-to for every resident or tourist searching for that restaurant that embodies the Florida lifestyle. often hear talk about tannins in wine, but many people don’t know what they really are. Tannin is a natural compound found in plants, seeds, bark, wood, leaves and fruit skins. As a characteristic of wine, tannin adds bitterness and astringency as well as complexity. Simply, it gives wine its’ dry taste. Wine tannins are most commonly found in red wine; although white wines have tannin from being aged in wooden barrels. Tannin is what gives a red wine pigment, bitterness and that mouth-drying reaction. It also is what makes red wines last a long time during the aging process. Generally, tannin is more dominate in younger red wines that haven’t had the time to soften up with age. A wine with well- balanced tannins, (where there is a balance between ‘grape tannin’ and ‘wood tannin,’) will slowly “smooth out” over time as the tannins break down. Despite the fact that tannins can help make a wine age well, if the wine is not well balanced to begin with, it will never improve over time. There are many long-lived white wines and white wines do not need tannin to age well. Some wines with high amounts of tannin include cabernet sauvignon, petite sirah, petit virdot, tempranillo

and sangiovese. Other reds such as grenache, pinot noir, zinfandel and merlot are actually very low in tannin. Of course, tannins are found in other foods as well. Tea leaves, walnuts, almonds, soy, dark chocolate, cinnamon, pomegranates, grapes, açaí berries, red beans, clove and other spices all have significant amounts of tannin. Brew a very strong cup of tea and take a sip before adding any cream or sugar to soften it up. The dry, astringent taste you may notice is from tannin. Some believe that tannin causes headaches or migraines, keeping many from drinking red wine. The jury is still out on the connection between tannin and headaches. The problem with this belief is that if so many other foods are so high in tannin wouldn’t you had an adverse reaction to those things as well? On the other hand, there are studies that suggest tannin may be good for you. Either way, tannin is a natural and important ingredient to great red wines. When indulging in summer barbecue fun, there are a few tips from the experienced grilling masters at Brandt’s. First, when you’re turning on your gas grill, make sure that you click your igniter, then turn on your gas. Make sure that the hood on the grill is open. Never have the grill hood closed while trying to ignite the grill. It will basically turn an ordinary grill into a dangerous situation. If your grill has not started within 15 seconds, turn the grill off and wait for about five minutes. The liquefied petroleum gas that is in your tanks is heavier than air and sits in the bottom of your grill. If you try to immediately light your grill again, you’re going to get a big ‘woof’ of fire which could be harmful to your skin and eyebrows. We will have cooking classes to be offered over the summer for those who wish to learn to cook on our grills. This would be a good time to test out our grills and get a feel for them.
