hen you’re a child, you say to yourself, “When I grow up, I want to be…” and whether it’s an astronaut, firefighter or in my case, a journalist, those endeavors are usually set aside to make way for the real life. Well, what happens when you’re ‘grown up’ and those ambitions have been set so far on the backburner that you’re not quite sure you can reach them anymore? A few years ago, I was working in a retail store and had a manager I adored. She was smart and driven, but she always remained in retail, never got out of it. I had already earned a bachelor’s degree and was working in retail until I could find a career in my field. After some changes to management and other ups and downs, she

was faced with a career decision. When we were talking one day, I asked her what she wanted to do before she had a family. She replied, “I always wanted to do X-rays… like radiology.” That statement turned into ambition. Ambition turned into desire, which lead her back to college and applying for the radiology program at a local college. She only has one semester left before she graduates. I couldn’t be more proud of her. Soon after this, my mom decided she was bored. She signed up for a

Heading back to school program with the district attorney’s office to be a private investigator. She had a new passion, a new desire to help the justice system and learn new and exciting things. I’ve seen lots of different times where those people who have done something their whole lives turned around and said, “You know what? Let’s try something new, something different.” There is nothing wrong with deciding what you’ve done all your life is not the thing for you anymore. We all grow, whether it’s together, apart or up and in more aspects than just our desires and tastes. If you’ve always wanted to see if there was something beyond what you’re doing today, there are several places to go back to school. We live in an area that is full of

colleges and universities that cater to the younger and the “forever” young. In this issue, we talk to people, who changed their minds later in life, giving them a new outlook. We talked to the different schools in the area about programs and beating down the “But I’m too old to go back to school” thoughts. You’re not. You’re never too old or young to learn something new. It all starts with a little ambition. We here at Forever Young, hope that you enjoy this issue, but more so, that it may inspire you to learn something new or to take those first steps toward returning to college. TREASURE COAST — For more than 50 years, Indian River State College has helped students earn associates, bachelors and technical degrees. With classes and campuses from Vero Beach to Stuart and availability from in class to online, the college has great flexibility. When going back to school or starting for the first time, Michelle Abaldo, director of institutional advancement for Indian River State College, says that class sizes and program selections make the school an optimal choice. “We have small classes,” Ms. Albaldo said. “The student to teacher ratio is 24 to 1, so students are not lost in the crowd and professors make teaching, not research, their top priority. This makes for a comfortable environment

for students of all ages.” The college offers more than programs for degree seeking students and quick job training programs which offer preparation for a job in a year or less. Convenience is another factor. “There is an Indian River State College campus within 20 minutes of everyone on the Treasure Coast,” she said, “Including hundreds of online courses, this is especially helpful for those who live and work in the area.” The number of students over the age of 40 has grown in the last couple

of years. Currently, there are 4,838 students over the age of 40 enrolled at Indian River State College, the oldest student being 89 years old. “Job opportunities are changing and it’s necessary for [people] to update skills,” Ms. Albaldo said. “Indian River State College uses an applied approach, which means learning is linked to the real-world. Students participate in on-the-job internships, clinicals in hospitals, student teaching and other experiences that provide opportunities to apply what they’re learning. Many people over 40 appreciate this aspect.”

The college was recently named the fourth most affordable college in the U.S. by the U.S. Department of Education. “We combine quality and affordability,” she said. “The college is ranked in the top 10 of the best public regional colleges in the south by U.S. News and World Report.” The college also offers a wealth of assistance for those who have graduated or are soon to earn their degrees. “IRSC operates an active career and transition center,” Ms. Albaldo said. “Students get assistance in developing their resume with interviewing skills.” For more information on admissions, contact the main campus at (772) 462-7460 or visit www.irsc.edu.

Making a change of careers

VERO BEACH — Two years ago, as a dental assistant, Cheryl Zuppa made a life choice that she says she should have done 10 years ago. After taking classes at Indian River State College and hours of practice, she is now a licensed medical aesthetician at Gloss Salon in Vero Beach. The difference between what she had done to now are night and day. Not only is she able to have more flexibility in her schedule, she is helping people and seeing happy smiles and glowing skin as they leave the salon. Her decision to go back to school was a difficult one but because of self interest and wanting something different in life, she went for it. “I really wanted to learn about skin care for myself,” Ms. Zuppa said. “But when we were in school, working with clients, being there with 20 other ladies and seeing how they took care of their skin got me more interested.” It was a snowball effect that made her ravenous for more information on all skin types, treatments and creams that could be used. “Once we got into the skin and medical parts, it was fantastic learning how I could help someone fix their skn issues,” she said. Her class was comprised of students, ages 19 to 55 and the class became a tight knit group. For Ms. Zuppa, who hadn’t been in school for 30 years, learning to be back in the classroom wasn’t easy at first, but with help from her classmates, she thrived. “I had a friend or two in the class, and they had been in school and they knew techniques on how to study and we gave each other motivation,” she said. The biggest accomplishment was her license at the end of the course, and the gratifying sense behind it. Now, as a aesthetician at a up-andcoming salon in Vero Beach, even she finds relaxation in the job.

You get to talk to the client for a bit, then let them relax.”

Ms. Zuppa couldn’t thank the college or her teacher, Lisa Long, for the patience and understanding that was given to every student. “It was an awesome experience,” she said, “I was able to do online classes, so if you didn’t have the chance to do anything until 10 p.m. at night, you were OK. We were able to

tions that they need answered, they come to me,” she said. “We are open year-round and people come right in to the school and we help register them for classes. We discuss with them their concerns and whether the classes are an appropriate fit.” Daily, Ms. Shields works with those who come in asking ‘I need to do something, but I don’t know what I want to do.’ Those students range from as young as 16-years-old getting their general education diploma, to the oldest of 70, learning a new trade. “I’ve had several people in the phlebotomy classes in their 40s and late 50s,” she said. “We really

see all ages and both sexes and all diversity, cultural as well.” To register for classes, an applicant will need to bring two forms of identification that proves they are a Florida resident. The applicants fill out the forms and the counselors and Ms. Shields provide any help they can, even financial guidance including payment plans if needed. Because of the diversity of the students, the teachers are well versed in the capabilities and

strengths of their students, no matter what age. “Our teachers are very good with people who are returning to school,” Ms. Shields said. “We’ve always had a variety of ages. Some people are switching careers because they’re looking to do something else, they were laid off or just wanting to learn something See EDUCATION, Page 9

The Adult and Community Education School is operated by the county school system with a central location in Vero Beach. T

he ubiquitous pinot noir is, bar none, my favorite wine.

It's everywhere, yet strangely enigmatic, with its many hues of red and variations in flavor. No matter, it is an easy-to-drink wine and goes with many dishes, making it a popular, and often affordable, table wine. Appreciating it and enjoying it are two different beasts, though, and one will do well to understand the intricacies behind this drink before really tucking into it. The flavors are frequently inconsistent because the grapes of pinot are so easily manipulated. They require cool pockets of weather and, until recently, were limited primarily to Burgundy, France. However, California,

Oregon and New Zealand have had great successes. Even a limited African showing has appeared on the market, alongside other unusual geographies. Although the history involved in the French rendering of wine is a tough beat to match, Russian Valley wines (Sonoma) has made a great showing in particular. The skins of pinot grapes are especially thin and susceptible to alteration (think Pinot Gris and Pinot Blanc), making them versatile, but difficult to maintain. Even the vines themselves are prone to

disease. However, if grown in a cool climate and given time to ripen slowly, the grapes develop the complexities and deep ruby color that give pinot a good name. When it comes time to ferment, purists use whole grapes, in addition to crushed grapes to maintain a fruity and balanced flavor. As to the flavor- well, this is what often confuses the wine-taster. The color can be misleading, as lighter reds can pack a fruity punch. Young

reds have a rich spectrum, lending hints of raspberry, plum and black cherries. Aging extends from two to eight years, depending on the wine; my husband prefers the older and deeper reds, which bare forth a heavier body and an earthy wine. The drink is reminiscent of an autumn walk through a heavily wooded forest. The words pinot (pine) and noir (black) are fitting to this drink. It's thicker, softer and deeper than the bottle from two years ago, with a long, blanketing finish that stays on your tongue. Now, you recall, I said it pairs will with many foods... The Botanical Gardens at Sanibel Moorings Resort is overflowing with many native, tropical and unusual flora and fauna and offers a two-hour walking tour every Wednesday at 9 a.m. A reservation must be made, and the cost is $5 per person. Old Town Sanibel encircles the east end of the island, near the

Sanibel Lighthouse. It's a place to stroll through the quaint village shops, inns and restaurants. The Bailey Matthews Shell Museum offers everything from free walks, where you will learn to find and identify shells, to a museum filled with anything and everything you have ever wanted to know about shells. The Naples Zoo and Caribbean Gardens are two attractions in one. Lions, tigers and bears are all here along with giraffes, hyenas, and the newest addition, cheetahs. The historic botanical gardens started as a result of the botanist Dr. Henry Nehrling, who had a vision in the early 1900s of how to preserve and protect plant life. It has been an ongoing project through the years to make it what it is today.

The Naples Museum of Art is a reflection of the unique spirit and generosity of southwest Florida. The visual arts center includes a three-story, 30,000-square-foot museum with 15 galleries. The museum is dedicated to displaying world-class paintings, sculpture, drawings and other art forms, while providing educational programs and lectures. The last Wednesday of each month, the museum offers “Art After Hours” from 6-9 p.m., with free admission. Downtown Naples offers everything from coffee shops to waterfront dining and everything in between. s a former New Yorker, when I hear the words “West Coast,” I immediately think of California. Now that I am a Floridian, I have come to learn that there is another “west coast” and that would be the west coast of Florida. Restaurant delights in a fresh new start

VERO BEACH — Standing out in the restaurant world of sushi and Thai food can be difficult. In the midst of competition, authenticity and creativity, Bangkok in Downtown stands out on all levels for its excellence. In May, the restaurant was purchased by Norraset ‘Nor’ Nareedokmai, an established chef and restaurateur in Thai cuisine. He owns restaurants in Pittsburgh and Fort Pierce, each priding themselves on quality and presentation. “I really want to bring Thai cuisine to the area,” Mr. Nareedokmai said. “I work with the Thai government to bring authentic Thai to the states. You have to be certified and my restaurants up north are.” Though the restaurant has been going through subtle changes, the heart of the restaurant still continues his craft of making sushi. Sushi Chef Damrong ‘Chef Damy’ Suniphon, has been at the restaurant for 10 years and calls the restaurant his home. The familiar faces of the patrons who visit the restaurant have not only seen him bloom into an accomplished chef, but also his family. “All of the customers here are like family to me,” Chef Suniphon said. “I take great care in all of the food, tasting everything that goes out to make sure it’s fresh and tastes how it’s supposed to taste.” Every dish that was placed before my companion and I was devoured in short time. After gazing at the workmanship and art that the dish truly was, we dove in. Chef Suniphon prepared a Spicy Tuna Tartar that only lasted long enough to enjoy the presentation. Marco Island has no shortage of beaches, and if you choose to visit for the weekend, there are many hotel options right on the water. The Marco Island Historical Society Museum is a combination of permanent and traveling exhibits. The museum explores southwest Florida's Calusa Indians and is in the ongoing process of developing colorful, exciting and informative displays to bring this vanished civilization to life.

For dining and shopping, Collier Boulevard offers everything from cupcakes to gift ideas. Esplanade is an Italian style retail and dining center that overlooks the Marina on Smokehouse Bay. Another great place to visit is Goodland, a quaint old fishing village, just minutes from Marco Island, offering a rare taste of Old Florida. There are obviously tons of choices when visiting this area, and I think a visit to this area is certainly worth the drive. This dish was incredible, honestly the only way to say it. I ate every last bit. The combination of flavors was masterful, providing a complex palate in such a simple dish. The next dish was roasted duck salad. For those who love duck and those who don’t know quite if they

will, this dish will delight. The salad has many components, from fresh salad, onions, cashews and peppers to red apple shavings and lime vinaigrette dressing. The medallions of duck, tossed in the salad burst through the ingredients that complimented the natural flavor of the duck. The Crispy Wahoo salad was next and only continued to confirm the restaurant’s dedication to serve only the best. The tempura battered Wahoo was perfectly fried, topped with a spicy mayo, rice vinegar and ponzu sauce. The Wahoo was served over a mixed green salad with shaved red apple. During these dishes I drank a Thai Tea, one of my favorites and this was one of the best Thai Teas I ever had. I finished off way more of the Thai Teas than I care to admit; they were that delicious. The entrée was a special for the week.

The crispy jump shrimp with eggplant was surprising and tasty. I have never had Asian eggplant before, and I have absolutely no regrets. The jumbo shrimp paired with the eggplant nicely, the basil sauce complementing each vegetable and component of the dish. The serving size was astonishing, the plate practically overflowed with shrimp and vegetables. I was so full at this point that I had to take my dessert home. The fried banana dessert that I enjoyed later that night was the perfect ending to the meal and the day. The fried banana wrapped in wonton is served with a sweet dipping sauce. Though my meal was done, it certainly won’t be the last time I visit. One, because of the food, but secondly to see the transformation the restaurant will take on in the coming months. “We want to let everyone know that it is a fresh new start,” Mr.

Nareedokmai said. The restaurant will be expanding with Mr. Nareedokmai’s vision, including aspirations of adding a wine and Thai Tapas area. Sushi lovers have no reason to fear the change. The sushi on the menu is an obvious favorite for the restaurant and Chef Damy will continue to make every dish with the care and artistry that he’s known for. Local residents will smile and feel at home over the names of a few of the rolls, including the Grand Harbor, John’s Island, Orchid Island, Indian River Club and Sandridge rolls from the ‘golfer meals’ section of the elaborate sushi menu.
