I

do not have a typical father in any aspect. My Dad, Nestor, was not home every night, because he was a pilot and flew for days and weeks at a time. When I was younger, I hated it. I never understood why he had to leave as much as he did. I dreaded seeing him pack up his suitcase and would cry when he would leave. I remember walking my dad out of the house when he left when I was young, and I would stand there trying to choke back tears. He would look at me and say, “Honey, don’t cry. You’ll make me sad.” As I grew older, I understood why he did it and grew to admire him for it. He would leave, even when he didn’t want to or when he didn’t have the energy. He wanted to make sure we had food on the table, that my brother and I could go on field trips and that

he could help me pay for school. When I was born, my parents drove a Ford Bronco II. It was the car that they picked me up in when I came home from the hospital. When I was learning to drive, I also learned how to drive stick shift. Not something most women, or even a lot of guys, know how to do. Thanks to my mom and dad, I learned how to drive with a stick shift, and I learned on that very same Ford Bronco II that brought me home from the hospital. I love that car. Everything about it reminds me of my childhood when I think of it and when I see it, I feel an

instant pang of nostalgia. I remember my dad driving it all the time when I was little, and one of my favorite pictures of the two of us is with the Bronco. Recently, I found out that my dad is fixing up the Bronco and having it restored to look like new. Why? Because he had this idea that the first car I ever rode in, the first car I learned to drive manually, should be the car that he would drive to bring me to the church on the day that I get married. When I was told this, I got tearyeyed. I have no current plans of getting married, but just the thought of the scenario and that he thought of it, made my heart stop for a moment. No matter how old I get, how

far away we live or how far away he is at the moment, I know my dad is there for me. I know that if my car breaks down, he is there to help me fix it, and I will be there with a cold beverage looking on and hoping to learn from him as I’ve done all my life. I’m lucky to have his love. I hope everyone takes the time on Father’s Day to talk to their father, have a dinner with them or share a memory of their father. We hope we enjoy this edition of Forever Young and the stories of lives touched by a father’s love and those who stepped up to the plate to be a father or a father figure to those who needed one. Being more than a traditional family

FELLSMERE - Their ambition was to fill a home so full of love that it could heal. A few years ago, Seth Goldsmith, pastor of Coastal Community Church, attended a conference that focused on adoption. When he returned home, he said to his wife, Christa, “I think God wants us to adopt.” Already having three children, Seth Jr., Samantha and Kyle, Ms. Goldsmith was well within her rights to look at her husband as if he was crazy. She prayed and said that if that was what God wanted them to do, they would. After praying and a few unsuccessful attempts of adopting children, they were sent on a different route. “There are more 100,000 children in

foster homes in this country,” said Mr. Goldsmith. “There are more than 300,000 churches in the U.S., and I figured if one of every three churches adopted a child we could wipe out that statistic altogether.” The couple was on the list to adopt for two years. When they received their license to become foster parents, they received their first two foster children within 12 hours. Since then, the family has been foster parents for nine children. Currently, the family has three foster children. Though it can be stressful and the trips to the grocery store are either frequent or require multiple baskets, the experience is one that they wouldn’t trade. “It is amazing watching these chil-

I have seen love transform children who are withdrawn and hurting into children who are openly loving, smiling, and laughing.” Every child who walks through the

door of the Goldsmith house is treated like one of their own and showed the same love and respect as their own children. For every child that enters the home as a foster child, a sticker is placed on the Goldsmiths’ van, so the child knows they’ve entered their lives, and See ADOPTION, Page 6

VERO BEACH – Cap’s Pizza Parlor has been a small shop in a plaza since 1987. The pizzeria is most famous for its spinach pizza, boxing, Dodger memorabilia and fun-loving owner, John ‘Cap’ Capobianco. It is a place to eat some delicious pizza and talk to people. When the city was smaller and the Dodgers were here, Cap’s was a hot spot for them. “I remember when the Dodgers were here and they used to come in and eat our pizza,” Mr. Capobianco said. “They had us run out 10 spinach pizzas to them on the runway and waited for us before they took off.” The family business has grown and maintained, not only as a staple in the community, but also as a place where Mr. Capobianco watched his family grow. “Everybody knows us, and it has

kind of been like a reality show,” he said. “We are right with the homes and the everyday people. The public likes us.” Watching his daughter grow up in the restaurant has been an experience for him, as she took over the business and made it her own, but still leaving the original concept. His daughter, Niki Capobianco, has been in the shop since it first opened, answering the phones when she was a child, and then bussing tables and waitressing when she was in her teens. She agreed with her father, saying that it was like an old-school diner. “People come in and their children even come back and run into the kitchen to say ‘hi’ to us,” she said. Now that Ms. Capobianco has become a manager there, they have been expanding and will soon open a pub together called ‘The Pickled Pub,’

located in the same strip as Cap’s with access to the restaurant from the pub. In her time at Cap’s, Ms. Capobianco has watched her father interact with the diners. “I always admired him,” she said. “I don’t think I’ve ever met someone who didn’t love him. People would come in just to see him and I’ve tried to carry that on. People come in here to talk to you and they spill their guts about their lives, and you learn to listen.” Ms. Capobianco also, along with everything else on the menu, makes

the pizza. It’s something she can’t even remember learning because she was so young when it happened, but knew that it was her father that taught her. “Having to work here when I was a kid, knowing that I had to work, and then was the only kid who had money. I worked for it,” she said. “I think having that experience, it taught me a lot, and I can only hope that it’s something that my daughter can learn too.” Cap’s Pizza Parlor is located at 725 27th Ave S.W. in Vero Beach. hat time of year is among us: Hurricane season.

The season begins in May and runs through November. There’s no need to panic, but early preparation of your trees and palms will save you stress, damage and money. Before you begin, remember that safety should be your first priority. If you can’t reach branches from the safety of the ground, consider hiring a licensed, professional treetrimming service, preferably one that is a certified arborist. Trimming should be done to hurricane-proof large trees like oaks and pines. Strong winds can easily blow these trees over or blow weak branches loose, causing damage to your home or vehicles. It’s best to thin the tree out by removing cross-

over branches, allowing the wind to pass more easily through the tree. Be sure to remove any dead branches as well. Palm trees need to be thinned out, too. Be sure not to “summer cut” and remove too many fronds. Doing this may make the tree susceptible to borers. Fruits should be removed from all trees and palms. With coconut palms, the nuts must be removed. Strong winds can turn coconuts into dangerous missiles. If a hurricane comes near, be sure to move lawn chairs, bird baths,

trash cans or any other loose items into the garage. The objective is to minimize the amount of debris that could become airborne and cause damage to property or persons. Hurricane season is can be difficult time for Florida. Fortunately, we live in an area where hurricane impacts are rare, as they tend to track into the Gulf of Mexico. However, many storms are predicted for this coming season and it is better to be prepared than to wait until the last minute and risk unnecessary damage and expense. The two acknowledge that people think they’re a little crazy, but they accept it and know they’re doing right by the children. “Some people look at us like we’re super parents, but we’re not,” Mr. Goldsmith said. “We are not, but when we see what results and how we change them, it really kind of spurs us forward.” Ms. Goldsmith agrees. “If a child showed up at your doorstep hungry, you wouldn’t shut the door on that child,” she said. “You would let them in, feed them, clothe them and let them know that you care. We are choosing to do this and be a home for those children.”

WINES OF THE WORLD It can be difficult for many people to get into wine. Typically, firsttime wine drinkers begin with an inexpensive wine which can be too bitter, too sour or too earthy. This first experience can often turn them off to wine. Therefore, it can be better to start with softer, sweeter wines, like White Zinfandel, to get their toes wet. Everyone likes sweet things and this is a great way to ease into the complex world of wine. With that in mind, there are few wines as sweet as Moscato. Moscato is a white wine made from the Muscat grape. While there are a few dry variations, most Moscato wine is very sweet. The Muscat grape is thought to be the oldest domesticated variety in the world. Their color ranges from white to near black. They are grown on

every continent with the exception of Antarctica. There are hundreds of varieties Muscat and are used for table grapes, raisins, table wines, sparkling wines, dessert wines and aperitifs. In 2012, it was reported that Moscato became the third most popular wine consumed within the United States after chardonnay and Pinot Grigio. As a table wine, Moscato is very sweet with lush fruity aromas of peach, apricot and apple in addition to honeysuckle and orange blossom. Often Moscato has a light body, but sometimes has a texture that is

slightly thicker than most Chardonnays. It is almost always aged in stainless steel vats, not oak barrels, so that the natural sweetness and citrus flavors shine through. So, what foods pair well with Moscato? Well, fruits and mild cheeses like Brie, Havarti, Fontina, Camembert are perfect for Moscato. Also, antipasto and summer salads are a great match. But let’s not forget fruit pies and desserts such as apple pie, peach cobbler, meringue pie and lemon cake. Because of the slight syrup like texture of Moscato, many find it to be a great pairing for

spicy seafood or pasta dishes, coating the mouth after each spicy bite. For those who don’t like Brut Champagne or Brut sparkling wine, there’s Asti Spumante, which is a sparkling wine made from Moscato. It is a bubbly version of the wine that goes great with the same fruit and dessert pairings as Moscato. While too sweet for many experienced wine drinkers, Moscato is a great introductory wine for beginners to get acclimated to the nuances of wine before moving on to more complex, full-bodied varietals. DINING Where good friends meet for great food

MICCO — My wife and I were excited to be going to a wine dinner at the Red Rooster Cafe in Micco. It was quickly becoming a favorite dining spot of ours. But our first visit almost didn’t happen. A few weeks ago I’d made reservations there for our anniversary. When I told her where we’d be dining, her response was, “A cafe? You’re taking me to a cafe for our anniversary?” Luckily for me, it was every bit as good as I’d heard and she went home with a smile! The restaurant is cozy. It seats less than 35, and is decorated in a rooster motif that reminds me of my grandmother’s kitchen in the country. But, there’s no “hash slinging” here. The menu was full of appetizers and entrees that you’d find at high-end restaurants. They also had an impressive wine list with some of the best labels. That night, my wife thoroughly enjoyed Salmon Wellington in a puffed pastry with a fantastic lemon-dill creme sauce. I was lucky enough to have ordered the Pork Osso Bucco. It was the size of a softball and smothered in a delicious balsamic glaze. The outer skin was crispy and the meat just melted off of the bone. We met three couples at the table next to us who raved about the Red Rooster. “It’s our favorite place,” one said. It turns out that the owner, Steve Hahn, and my wife are both from Wisconsin. In fact, Steve’s first restaurant job was at a place that my wife had frequented. The evening was a hit, and we were so amazed that there could be such a great restaurant off the beaten path. So when we heard that there would be a wine dinner a few weeks later, we knew we couldn’t miss it. When we arrived for the dinner,

She runs the front of the restaurant while Steve handles the kitchen. They had met while they both worked at the Yellow Dog Cafe in Malabar, where Steve had been the executive chef for many years. They married, started a family and six years ago decided to open their own place. The name ‘Hahn’ is German for rooster, so hence the Red Rooster was born. We enjoyed Caprese Salad, Prince Edward Island Mussels in a creamy pesto sauce and a fantastic Veal Saltimbocca. My wife only recently began eating mussels, but raved about these. The Saltimbocca consisted of veal scallopine layered with paper-thin prosciutto and fresh mozzarella, then finished with a delicious lemon-butter wine sauce. The veal was perfectly prepared and very tender. Jim and Sally from Vintage Selection provided the wines and one of the winemakers, Lee Skelton Venturini del Grecco, graced us with her presence. A former model, her estate in Italy, Castelnuovo Tancredi, pro-

duces some amazing wine. Their ‘06 L’Assedio DOC was very impressive. It’s a well-balanced blend of Sangiovese, Merlot and Colorino. It’s full-bodied with great structure and powerful tannins. So good, in fact, that we bought two bottles to enjoy at home. We topped off our meal with the most amazing Tiramisu that I’ve ever had. The ladyfingers soaked in the espresso with mascarpone and cocoa were out of this world. Once again, the Red Rooster Cafe lived up to its reputation as one of the area’s best-kept secrets. We left with the feeling that we dined with friends. My wife and I can’t wait until the next wine dinner on April 22. We hope that Steve and Joti save us a seat. The restaurant is open from 11 a.m. to 2 p.m. Tuesday through Saturday for lunch and from 4 to 8 p.m. for dinner. On Sundays, they are open from 4 to 8 p.m. They offer an Early Bird menu from 4 p.m. to 6 p.m. daily. They are closed on Mondays. Several times, he intercepted young men on their way up our front steps, and just happened to mention whichever one of you were going out that night had some exotic skin problem, causing your lips to turn bright purple if you got kissed. I often wondered if those poor boys ever talked to each other. The young man, who insisted on cutting our lawn free of charge for

months, had been told that one of you loved watching bare-chested boys working in the sun. I finally had to tell him you were working at that time of day before the boy dropped stone-dead of a heat stroke. Son, young ladies didn’t fare much better. I once walked into the end of a conversation between your father and your wide-eyed date, the final sentence being, “I have no doubt that when that baby’s blood test comes back, our son will be exonerated.” The fact that I received neither dinner nor flowers from the subject of these ‘exposes,’ on Mother’s Day, has absolutely no bearing on the timing of my slate-wiping, whatsoever. Happy Father’s Day, darling, by the way… all the children are coming for dinner.
