Enjoying the great outdoors

W

hen you live in paradise, it’s hard to imagine living anywhere else. The beaches, sand, palm trees and our own little slice of sunshine makes going outdoors a love for many of us. In the month of July, cookouts and barbecuing for Independence Day is a time-honored tradition, paired with fireworks and the gathering of family and friends. Each year, I go out to the river and watch the fireworks. The sounds of the children, spectators and visitors saying ‘ooooh’ and ‘aaaah’ as each firework lights up the night sky is heartwarming and makes me enjoy the beauty of a Florida summer. Then I swat a mosquito. Yes, our slice of heaven has its drawbacks, but we’ve learned to make the best of it.

The amount of outdoor activities is bountiful for those of us in Florida. We have the extra added bonus of water and inland activities that give you every excuse to get off the couch and spend some time in the sun. On the water, fishing, kayaking, paddle boarding, surfing, snorkeling and scuba diving are some of the favorite activities. If you’ve never tried any of these activities on the water or are thinking of trying a new one, it may be the time to get out and try something new (Remember? It’s one of our New Year’s resolutions).

You don’t need to buy a ton of equipment; in fact, most of the suppliers say you should rent before you buy to make sure you like the activity first. If you’re looking for activities on the mainland, golfing happens to be one of the most popular things to do. In Florida, there are 1,481 golf courses and ranges. So, there is likely one right around the

corner from you, no matter where you live. Take a lesson and hit the course, again, not buying until you’ve tried out the sport. This issue of Forever Young was inspired by the sun, the wonderful summer weather and the fun of Independence Day. Make sure you’re prepared for the outdoors, and we’ve even included a small cooking guide and tips on what to bring and use when you’re picnicking or having a cookout. During the summer months, leaving to go outside can be one of the best feelings — the beach cookouts, the afternoon barbeques and standing outside and watching the fireworks. But make sure you’re prepared when you’re out in the sun. Firstly, make sure you’re wearing sunscreen. According to skincancer.org, sunscreen should be applied every two hours and have an SPF of 15 or higher. The website also suggests to wear a wide-brimmed hat, ultraviolet blocking sunglasses and to seek shade whenever possible. Also, because of mosquitoes, use a mosquito repellent to keep yourself from getting bitten. Make sure you have a bottle of water with you and maybe even a

light snack, depending on how long you will be outside. Speaking of food, summer is always a great time for cooking and summer parties. Here are a few food recipes to help with the entertainment.

Buffalo chicken dip Courtesy of Anna-Marie Menhenott 2 lbs. chicken breast 1 package of cream cheese (reduced fat) 1 bottle blue cheese dressing 16 oz. cheddar cheese 1 bottle hot sauce, any brand Boil chicken seasoned with salt and pepper, shred. Combine cream cheese, blue cheese dressing and hot sauce into saucepan; blend together until cream cheese is melted. (The

amount of hot sauce will vary according to taste). Once those ingredients are melted and combined, add 3/4 of the cheddar cheese, about 10 oz., and mix well. Add the shredded chicken to the cheese mixture, mix and spread into a square glass pan. Sprinkle the rest of the cheese over the mixture, and place under broiler until cheese is slightly browned. Serve with tortilla chips.

Zesty Meat Marinade

Combine all ingredients, place over chicken, beef, fish or pork Cover and refrigerate for 2-3 hours Place meat or fish on grill then discard leftover marinade.

Red, White and Blueberries 1 cup of low-fat vanilla yogurt 1 cup of Cool Whip topping 4 cups sliced strawberries 3 cups fresh blueberries 1/2 tsp. vanilla

Combine yogurt and vanilla, immediately folding in the Cool Whip. Using a trifle bowl or Mason Jars, add blueberries to the bottom of the jar, then the yogurt mixture, then the strawberries, then the yogurt mixture again, and repeat to the top.

Shop helps swimmers dive deep

VERO BEACH — Just off the coast of Florida there are endless amount of reefs teeming with sea life and beautiful coral. The only way to see such wonders is to take a trip to the bottom of the ocean and scuba dive. Deep Six Dive and Watersports in Vero Beach is a one-stop shop for all things water related, including scuba gear and lessons. Jim McCann, a scuba instructor for Deep Six and has been scuba diving since 1983. “Scuba diving is awesome,” Mr. McCann said. “We have lots of classes here for beginners. We have two scheduled classes a month. Within one week, you can be certified to scuba

dive. There are three phases: the classroom, the pool and then open ocean.” There are several things that a diver needs, including fins, a mask and weights that are specifically tailored to each individual diver. It is also required that scuba divers use a safety sausage or safety buoy that inflates when a diver reaches the surface so that boats can see a diver when surfacing. Mr. McCann says if you’ve ever tried snorkeling then scuba diving is the next step. “You don’t have to hold your breath anymore,” he said. “You get to get right down where the fish are. Diving in the area is really good.” Anyone hesitant to try scuba diving

is advised to take the class and try it out. Each diver learns the ‘dos and donts’ of scuba diving and all the safety rules. “Awhile ago, the only warning you got was the warning on the side of the tank that said don’t hold your breath,” Mr. McCann said. “As long as you breathe normally while you’re diving and not hold your breath, you’ll be fine.” For those who are worried about their ears popping when getting lower to the ocean floor, the masks allow a diver to plug their nose to pop their ears, much like in an airplane to relieve the pressure. Scuba diving can be for any age from10 years old and up. For example,

Taking swings on the green

VERO BEACH — Going outside and enjoying the Florida sunshine can be as easy as donning your cap and hitting the green. Sandridge Golf Club in Vero Beach is a public course that offers two 18-hole championship courses for both beginners and the more experienced. There is also a putting green, a chipping and pitching area and a brand new driving range. One of the best assets to Sandridge Golf Club is Bella Nagy, the director of golf at Sandridge. His knowledge of the sport makes him a go-to guy for information, whether you’re new to the sport or are having issues with your clubs. “We have group lessons for ladies

and a mixed program for both men and women,” Mr. Nagy said. “I introduce the beginners to the fundamentals of the game.” When beginners attend a lesson, Mr. Nagy lets them borrow clubs to get a feel for the sport and what level they feel they’re going to get into it, leisurely or more involved. “I would say before you really get into it, borrow clubs,” he said. “I usually give beginners a couple clubs to take and practice with them.” For the more experienced golfer, the club has one of the toughest holes in South Florida with a parfour 14th hole with an island green. When getting more involved in

the sport, a golfer should be fit for a set of clubs. “For the clubs, the shaft of the club and the flex in the shaft is measured for each person,” Mr. Nagy said. “It is different for each person.” The flex of the shaft is the flexibility in the shaft as the golfer swings. The shaft actually bends with the force of the downward and upward swing. “Let’s say I had a club that was too flexible,” he said. “I would have a hard time hitting the ball where I wanted it to because it would flex too much for me. There is a lot of science and technology behind the making of golf clubs.”

For those ready to play, make sure you’re prepared. Bring sunscreen, a hat, sunglasses, a bottle of water and some snacks if you need them. There are several health benefits to golfing as well, more than just the exercise. “Even if you’re in a cart, you’re still swinging and turning your hips,” Mr. Nagy said. “Just being outdoors… the feelings you have when you’re playing are pretty valuable. often hear talk about tannins in wine, but many people don’t know what they really are. Tannin is a natural compound found in plants, seeds, bark, wood, leaves and fruit skins. As a characteristic of wine, tannin adds bitterness and astringency as well as complexity. Simply, it gives wine its’ dry taste. Wine tannins are most commonly found in red wine; although white wines have tannin from being aged in wooden barrels. Tannin is what gives a red wine pigment, bitterness and that mouth-drying reaction. It also is what makes red wines last a long time during the aging process. Generally, tannin is more dominate in younger red wines that haven’t had the time to soften up

with age. A wine with well- balanced tannins, (where there is a balance between ‘grape tannin’ and ‘wood tannin,’) will slowly “smooth out” over time as the tannins break down. Despite the fact that tannins can help make a wine age well, if the wine is not well balanced to begin with, it will never improve over time. There are many long-lived white wines and white wines do not need tannin to age well. Some wines with high amounts of tannin include cabernet sauvignon, petite sirah, petit virdot,

tempranillo and sangiovese. Other reds such as grenache, pinot noir, zinfandel and merlot are actually very low in tannin. Of course, tannins are found in other foods as well. Tea leaves, walnuts, almonds, soy, dark chocolate, cinnamon, pomegranates, grapes, açaí berries, red beans, clove and other spices all have significant amounts of tannin. Brew a very strong cup of tea and take a sip before adding any cream or sugar to soften it up. The dry, astringent taste you may notice is from tannin. Some believe that

tannin causes headaches or migraines, keeping many from drinking red wine. The jury is still out on the connection between tannin and headaches. The problem with this belief is that if so many other foods are so high in tannin wouldn’t you had an adverse reaction to those things as well? On the other hand, there are studies that suggest tannin may be good for you. Either way, tannin is a natural and important ingredient to great red wines. VERO BEACH — If a quick trip to Paris for a small cup of espresso and a curved butter croissant for breakfast is out of the budget, don’t worry, your cravings will now be satiated here in Vero Beach. Slice of Paris, a French bakery and pastry shop, opened this month and co-owners Salah Fekih and Jackie Dodgen have been pleasantly surprised with how enthusiastic their customers have responded to the breads and pastries imported from France. “We knew it was summer and not as many people are here, but we have had a lot of people come and try us,” Ms. Dodgen said. The kosher products such as raspberry tarts, coffee cake and apple and caramel pastries are imported from France by a vendor and prepared at the shop. “We have already had a lot of international visitors come, people that have been to France, and

they have given this a stamp of approval,” Mr. Fekih said. “We’re not going to create something and just call it French, it really is from France here,” Mr. Fekih said. The shop has a few seats for people to sit down and chat while they have some coffee or hot tea and nibble on some of the sweet treats at Slice of Paris. The menu includes baguettes, ciabattas, viennoiseries (baked goods such as croissants) tarts and patisseries, or pastries. “People get curious and they want to try things. We had one woman come in and try a croissant and the next day she called to order 15,” Ms. Dodgen said. Croissants are easy to fall in love with, Ms. Dodgen said, with a smile of experience. “The crushed almond croissant is where it all started. We were in Paris last year and it’s just some-

thing that is out of this world. It’s a sweet, but you can eat it for breakfast, dessert or a snack,” she said. Mr. Fekih has previously worked in the food industry in the U.S. and abroad, and is delighted to bring a bit of Europe to Vero Beach. The puff pastries have the perfect combination of flakiness and substance, and the fillings, whether chocolate or cheese or fruit, aren’t so sugary sweet that the pastry loses its original flavor. “In France, it’s not about size of something, it’s about the quality,” Mr. Fekih said. The liquefied petroleum gas that is in your tanks is heavier than air and sits in the bottom of your grill. If you try to immediately light your grill again, you’re going to get a big ‘woof’ of fire which could be harmful to your skin and eyebrows. We will have cooking classes to be offered over the summer for those who wish to learn to cook on our grills. This would be a good time to test out our grills and get a feel for them.
