We have a lot of exciting things planned for the new year, with the possible highlight being the welcome addition of the new heated Instruction Pool in Q1. Not only will this allow us to offer more swimming classes but by doing so we will free up space in the main swimming pool for our members to enjoy their leisure time.

I love to travel around the world. It’s a great learning experience where I get to understand other cultures and beliefs. I challenge myself to travel alone and step out of my comfort zone. This makes me become more independent and helps me to broaden my mind to be more open to other people and the world around me. When I travelled to Seoul, South Korea on a group tour last November, I met a Filipino lady from London, UK. She was a solo traveller too and we instantly became buddies. We went everywhere together and shared our travel stories. We are still in touch with each other and share our new adventures on social media. They say that no matter how old I am, I will always be their daughter. It is also a way of giving me luck. I also get to reunite with my daughter who is staying with my parents. I miss her very much but we video call each other almost every night.

Sometimes when the Puppy Room gets too busy during the weekends, our General Manager asks her twin daughters to help me with the kids. Petra, our Membership Director, also takes great care of me and ensures that I get enough support. On my birthday, everyone wished me the best, and hugged me. Jacky even surprised me with a cake at the Staff Room and everyone sang “Happy Birthday”. I cried tears of joy because I was deeply moved by everyone’s sincerity.

SPRING SKIING IN N I S E KO BY ANNABELLE LIM

Confession: I am terrified of skiing, and must be one of the slowest people on the slopes. I picked it up four years ago, when I was about to turn 49, and have been trying to master the skill of controlled falling downhill ever since, with the assistance of private ski instructors. Yet every year, I have planned our family week of skiing in Niseko, in Japan’s northern island of Hokkaido, with utmost relish and dedication. Our ski-in, ski-out apartment in the main village of Hirafu is booked at least six months ahead (once I booked the week we came home), favourite restaurants are reserved as soon as bookings open, and new shops, cafes and

restaurants are carefully researched. There is an ongoing list of “to dos” I add to. Consistently on the list is buying Japanese whisky at Lucky’s supermarket, and a reminder to stock up on the “two cows” yoghurt drink (The picture on the bottle). In the run up to ski season, I compulsively check the Niseko App for snow reports, and to look at the web cameras to see how the runs are doing.

The area has, I’ve been told, some of the best powder snow in the world. And there is heaps of it. Last season, it was about 15m in total. And there is still plenty about when we go in March. Down South in Tokyo or Osaka, it will be sakura, or cherry blossom season, but in Niseko, the white stuff still abounds. The town is just 260m above sea level, but its position opposite Siberia, keeps it colder for longer. At that time of year, it is less crowded, with a minimal wait at the chairlifts, and the slopes are gorgeous, with clear, blue skies above you. The temperatures are also mild, although there have also been years where we get a late snowfall, to the delight of the kids. In March, there are great bargains to be had. Dear Members, We wish you all a very happy New Year and a splashing good 2019! Last year was an exciting one for aquaDucks, with many events taking place for our swimmers in the past three months. S W I M M I N G T E A M D U TC H D O L P H I N S

We organised three Neptune Leagues in 2018: At the Swiss Club, British Club and the Hollandse Club. The aquaDucks’ swimmers won many medals and reached the top three in almost all heats (races). Also, in November, triple Olympic Champion swimmer Ranomi Kromowidjojo gave a special swim clinic at the Hollandse Club and taught the Dutch Dolphins some secret swimming skills. We are looking forward to seeing her later this year again.

JUNIOR INTER-CLUB TEAM TENNIS CUP, NOVEMBER 25 AND DECEMBER 2 Twenty-five juniors aged under 10, 12 and 14 represented the Hollandse Club. We had tough competition against Singapore’s best junior players representing the Swiss Club, British Club and Tanglin Club. This year, the Tanglin Club won the cup but the HC juniors played great tennis and won a number of close matches. More importantly, the kids enjoyed their time on the court playing tennis and making some new friends.

PEPERNOTEN TOURNAMENT, NOVEMBER 16 AND 30 This year’s tournament was a big success, with 40 juniors signing up. We had players from 5 to under-12 players. We had great tennis over the two evenings and eating lots of pepernoten (biscuits) .

The new 2019 season will start on February 15, where we will be using the FAST4 format to give juniors more tennis matches. Players can join as part of a team of three players or register individually, and we will find a team for you where available. Age categories will include under 10s and 12s. Minimum standard is able to serve and rally from the baseline. Registrations close on February 1 or when player quotas are filled, so register early to avoid disappointment. Hollandse Club tennis camps are a great way for players to learn new skills and meet new friends. This camp runs for two days from Thursday to Friday after the Chinese New Year Holidays. Gosh where to start? 2018 was a big year… We got upgraded courts, we finally got our own internal account which enables us to fund the tournaments and other events that we organise, we are truly masters of our own destiny now. We were considering a reverse take-over of the Club but felt that we might receive a bit of resistance from the tennis chaps and chapesses.

We had a very successful Open Veterans Tournament – many thanks to Daniel Gelinas for doing all the scheduling (and not losing it when folks tried to change times etc.) and to Kim Hine for making another great shirt (last year’s shirt was the best advertisement for this year’s comp). Out of a total of 32 entrants (and no untimely deaths), finals were: * Over 55: Brian MacDougall from Hong Kong beat Peter van Heiss from Germany 3-1 • Over 45: Jeremy Khoo beat Bill Hickling 3-2 • Over 35: Robbie Lyons beat James McCarthy 3-0 Many thanks to NZ Fresh, Wine Universe and Jaxs Bistro for the sponsorship. One of the competitors Andy Soh wrote in to say: “Guys, congratulations to a successful tournament over the weekend. It was competitive and yet friendly, played to the true spirit of the game, I thoroughly enjoyed it and I am sure for all that participated. Well done!”. I think this sums up squash at HC. We also had a very successful COSMO league team and as we go to press, we have just won by one point from the tournament organisers. Well played by all involved, a fantastic league and lots of fun. SCC are hosting the end of league dinner on December 7 so a goodly tranche of Orange Duivels will be heading down to the Padang to drain their beer tanks… (apart from Eugen who as an elite

MENS & LADIES HOCKEY The Hollandse Club men’s and women’s hockey teams are very much looking forward to another successful and active hockey season. Field hockey and the Dutch go very well together. With over 10,000 Dutchmen living in Singapore and having so many opportunies to play the game, it’s no wonder the Dutch hockey community is very much alive and kicking. For 2019 the Hollandse Club has two men’s- and two women’s hockey teams lined up to start playing in the National Hockey League as from January.

this year. On March 2nd and 3rd the Hockey 6s of SCC will take place at the Padang in Singapore. The second tournament is The Wooden Shoe in May. This is an annual charity tournament organized by the Dutch Hockey Community for the whole Singapore Hockey Community. For sure another highlight for 2019 will be the ZOAT (the south east Asian hockey tournament) in October in Hong Kong, organised for all Dutch hockey teams having their home base in Asia.

Apart from the weekly training at the CCAB Hockey Pitch, the Hollandse Club hockey teams will be represented in the three competitions organised by the Singapore Hockey Federation (SHF): the National League, the National Master League (men and women mixed teams) and the National Indoor League. Furthermore the teams join the Liga every year, a 9-a-side Social Hockey Tournament.

YOUTH HOCKEY Around 120 youth hockey players are playing hockey every Sunday morning. The younger ones play on the Club’s tennis courts, the older kids at the CCAB pitch on Evans Road, where they also train on Tuesday night. A mix of ages, nationalities and levels: everyone is welcome. The professional people of FTO make sure hockey skills are trained and fun to be had. During the year there are a few different tournaments, with the Kids ZOAT (Southeast tournament) as the highlight.

INGREDIENTS Roast duck

METHOD

1 duck breast to marinade

To make the marinade

1 tbsp five spice powder

Combine all the ingredients together and season to taste.

3 tbsp honey

To make the duck

2 tbsp light soy sauce

1. Clean the duck breast of sinew and score the duck fat in a

25g brown sugar Sea salt and cracked pepper to taste

crisscross pattern. 2. In a pot of boiling water, blanch the duck breast for 1 minute. 3. Remove and place on a tray, place the tray in the fridge to chill for 1 hour.

Chinese Pancakes 150g plain flour 100g water 10g grape seed oil

4. Brush with the marinade and leave to dry­­overnight in the fridge uncovered. 5. Pre-heat the oven to 170C. Brush the duck with the marinade and bake in the oven for 20 minutes. Turn the oven to grill and grill for 5 minutes.

À l’Orange sauce 240ml freshly squeezed orange juice 50g white sugar 30g light soy sauce 3 star anise 1 cinnamon stick 3 slices fresh ginger 3 tbsp Shaoxing cooking wine

6. Remove and let it rest for 10 minutes before carving.

To make the sauce 1. Place all the ingredients into a pot. Bring to a boil and simmer for 10 minutes till the sauce is reduced and has thickened. To make the pancakes 1. Bring the water to a boil. 2. Mix the boiling water with flour and knead it for 2 minutes till you have a smooth dough.

Garnishes

3. Let the dough rest for 30 minutes before rolling out.

4. Roll out the dough till it is 3mm flat. Using an 8cm ring cutter cut out discs of dough.

5. Brush one side with a bit of oil and stick to dough discs together. Roll flat out as thinly as possible with a rolling pin. 6. Brush pancake with oil and fry in a non-stick frying pan on medium heat till slightly brown on both sides. Repeat with the remaining pancakes. 7. Stack cooked pancakes between greaseproof paper. Prepare a steaming basket and steam pancakes for 5 minutes before serving.

To serve 1. Thinly slice the duck breast. 2. Place orange sauce, garnishes onto warm pancake, finishing with the duck breast on top.

METHOD To make the frittata 1. Whisk eggs and cream together, season to taste. 2. Add whatever cooked ingredients to the penne pasta and toss, for this we are using onions, mushrooms and some herbs. 3. Add the egg mixture and transfer to a container. 4. Bake for 40 minutes at 180°C/350°F or until the egg has set.

INGREDIENTS 50g unsalted butter, plus extra for greasing 2 tsp cocoa powder 50g dark chocolate, broken into pieces 1 egg 1 egg yolk 50g caster sugar 50g plain flour, sifted Vanilla ice-cream, to serve Icing sugar, to dust

METHOD 1. Preheat the oven to 160C. Butter 4 ramekins or a muffin tray and dust with cocoa powder. Melt the chocolate and butter in a bowl set over a pan of hot water till melted, stir until smooth. 2. Using an electric whisk, beat the whole egg, egg yolk and sugar together until pale and thick, then fold in the chocolate mixture. Fold in the flour once the chocolate is fully incorporated. 3. Divide the chocolate mixture among the ramekins and bake for 12 minutes. Turn the chocolate fondant out onto warm plates, dust with icing sugar and serve with a scoop of vanilla ice-cream.
