Welcome to SPIT Journal 2020. And what a year it has been! Worldwide travel is paused inde nitely. And the enduring haze of a global pandemic is having an enormous impact on tourism and F&B, creating a tidal wave of restaurant closures and leaving chaos in its wake.

To the city’s credit, Hong Kong’s dedicated wine professionals, salespeople, industry and trade have not given up hope. Instead you pivoted into areas such as online sales platforms to support people’s newfound love of buying and drinking wine at home, the growth of which have been a silver lining.

In this issue, we take a look at our post-pandemic future by featuring the results of the 12th Cathay Paci c Hong Kong International Wine & Spirit Competition (HK IWSC).

Judging for the competition was delayed until 5 October to ensure the safety of sta and judges, but the team worked hard to ensure the competition went ahead, integrating a revised format and a host of increased safety measures.

This year, 48 Hong Kong-based judges were charged with tripleblind tasting of entries, with an additional layer of “blindness” from judge to judge due to strict distancing measures. usually our international judging panel comprises experts from across Asia, but with travel bans in place, this year’s panels were Hong Kongcentric. Read on to discover how that avoured the selection of 49 trophy, 115 gold, 472 silver, 503 bronze and 13 green winners.

The HK IWSC found other ways to support hard-hit regions by o ering more than 50 free entries to South African wineries in partnership with Wines of South Africa (WOSA). Find out more in Tersina Shieh’s feature article on page 18.

While Covid-19 has dominated the news globally, one of the other dramatic stories we watched with intensity was the wild res across the USA’s Paci c west coast. Napa was one of the hardest hit, with several of the Valley’s wineries su ering severe damage. But what we’ve also seen emerge is an inspirational spirit of community, relisiance and grit determination to rebuild. Andrew Dembina shares more on this, as well as exploring the diversity of terroir that sees the region produce its array of world-class wines that we all love.

HK IWSC judging was a little di erent this year. Condensed judging panels were kept physically-distanced in separate rooms, and Master of Wine Debra Meiburg’s brie ng was held online over Zoom. But despite the enforced distance, judges’ camaraderie was tighter than ever.

This year, judging took place at Hong Kong’s iconic Ocean Park, a theme park that holds a special place in Hongkongers’ hearts. The Marriott Ocean Park Hotel, situated on Hong Kong Island’s picturesque southern coast, proved perfect for judging purposes — both spacious and bathed in abundant natural light. The HK IWSC team, led once again by project manager David Li, established smaller panels of four judges per table in separate executive suites. David’s team meticulously managed judging panels across eight hotel suites, while juggling a deluge of COVID-related challenges. At the eleventh hour, judging for the food and wine pairing awards was relocated due to a con rmed case at the Kowloon-based restaurant venue which was due to host this portion of the awards. Within 24 hours of being informed, judging was re-established at the Marriott and all relevant cuisines had been sourced from alternative speciality restaurants in Hong Kong — a judging week miracle.

Despite the many hurdles, stopping judging week was not an option. The HK IWSC is more important than ever this year given the widespread cancellation of trade fairs and wine events, people’s reduced travel and the lack of promotional sales activity. Now more than ever, Asia’s top beverage professionals rely on the results of the HK IWSC to guide their drinks lists.

ADVANCING ASIA'S WINE WISDOM

Year after year our high international standards advance the region’s wine and spirit culture, with HK IWSC award winners renowned for representing distinctly Asian tastes. While there are many competitions globally, the HK IWSC is the only competition committed to delivering culturally relevant guidance on international wine, sake, spirits and beer to Asian buyers and drinkers — proudly ’Asia’s choice, Asia’s voice’.

Among this year’s trophy winners, there are ve double-winners who were each awarded two trophies, highlighting both the quality of entries and the consistency of judging standards. While judging panels were made up solely of Hong Kong-based experts due to travel restrictions, competition entries were more international than ever; judges assessed a wine from Romania, vodkas from Ukraine and Denmark, gin from Croatia and a spirit from Martinique.

The breadth of expertise and talent we have right here in Hong Kong came into its own this year, as travel restrictions closed international borders and the HK IWSC had to look locally for skilled wine and spirit judges. Thankfully the SAR boasts an incredible array of world-class wine professionals, enabling the HK IWSC to feature two Master Sommeliers and two Masters of Wine, numerous wine and spirit educators, writers, critics, knowledgeable importers, F&B professionals, brewers and distillers.

The number of judges was reduced to 48 this year — from 74 local and international judges last year — but the cross-section of voices is just as varied and diverse. Our panels of skillful Hong Kong-based judges used their unbiased expertise to cast judgement on a wide selection of wine, spirits, sake and beer from around the world.

Despite the best of intentions, even professionals nd it challenging to be completely impartial. Double-blind tasting removes prejudice, favourable or unfavourable, making it the most honest form of tasting. If, for example, a wine was identi ed as a bordeaux rst growth, or served from a clearly de ned bottle shape, even the most practised judge might be swayed.

HK IWSC prevents bias by pouring wines in the back room, which is o limits to judges during judging. The only identifying feature on the glass is a number. The wine is what it is—

nothing more, nothing less — judges do not know its name or brand, just its context (region, grape, and vintage). This context is important, so judges are comparing like with like and not a French burgundy against a Californian zinfandel.

With judges left using only their palates as a guide, HK IWSC entries receive a fair critique. This creates opportunities for amazing wines, sakes, spirits and beers to shine, and for some surprising award winners to emerge.

Trophy 2020 Winners

The Judges are rst separated into panels and are then presented with ights of wine organised by region, area, variety, style, type, vintage, age and so on. All wines are blind -tasted to ensure impartiality and judges are not permitted in the preparation area at any point during the tasting. Judges are provided with score sheets on which they mark their respective samples individually without comment.

Once all judges have nished tasting and scoring their ight, the panel and panel chair congregate to discuss the scores. If there is any signi cant disagreement over one particular sample, it may be referred to another panel for a second tasting. Gold, silver and bronze awards are then allocated depending on the product's score out of 100. The highest marks in each category are passed on for a second tasting to compete for the national and international trophies.

There are a few options open to international distilleries to maintain their presence in the region: the main one is to embrace virtual tastings and virtual distillery tours. They could also consider developing geo-based limited edition products that are exclusive to each market. And when local events are up and running, distillers will need to place resources on the ground.

With more than 360 years of winemaking history, South Africa is the oldest of the New World. The industry has gone through ups and downs, but it has now rmly crafted a place in the international wine world. South African wine thrives on diversity, individuality and togetherness.

Diversity is in our nature

The Cape Winelands are located in the Cape Floral Kingdom, one of six such plant kingdoms in the world, and it is the smallest yet richest with over 10,000 plant species – more than in the whole of the northern hemisphere. The combination of soil, climate, geography, grape varieties and winemakers’ creativity makes it all possible to produce wine of many faces. Grape varieties are not con ned to particular regions, and regions are not con ned to particular wine styles. Diversity is the strength of South African wine.

Individuality matters

In the past decade, South Africa’s reputation for trailblazing unusual and individualist winemaking has captured the wider public imagination. These free-spirited winemakers, what wine professionals refer to as the new-generation or new-wave winemakers, are passionate. Craig Hawkins from Testalonga experiments with various grape varieties including Harslevelü and Muscat d’Alexandrie in the remote north of Swartland. He uses powerful images and distinctive names that re ect the personality of the wine. Take ’I wish I was a Ninja’ as an example, the label is his friend dipping in a pool with a glass of wine in hand. The wine is a "Pet Nat" and it is all about having a good time. David Sadie from David & Nadia makes the most Pinot Noir-like Pinotage and two creative blends - Aristargos is Chenin Blanc based white blend with ve other varieties; and Elpidios is the red blend of ve varieties including Carignan, Syrah and Pinotage. Peter-Allen Finlayson from Crystallum, on the other hand, focuses only on Pinot Noir and Chardonnay, and sources grapes from Hemelen-Aarde, Overberg and Elandskloof to make both multivineyards blends and single-vineyard wines.

Together we are stronger

When South Africa reconnected with the world after apartheid, producers understood they had to improve quality and rebuild their reputation in order to compete in the international markets. Like-minded producers, therefore, got together to raise the industry standard. Cap Classique Association was the rst organised alliance founded by 14 producers in 1992. This was followed by the creation of the Pinotage Association in 1995 and later Chenin Blanc Association in 2000. Members share knowledge and support each other while the association teams communicate a bigger, more powerful message that successfully raises recognition of wines. The new generation winemakers with similar philosophy continue to form alliances - Swartland Independent Producers set up in 2011, The Zoo Cru in 2015 and The Whole Bunch in 2018 - are all making statements in the international world of wine.

The Rainbow Nation of Wine

Like its country, the South African wine scene is vibrant and colourful. Stellenbosch is renowned for its Cabernet Sauvignon and Bordeaux-style wine while Hemel-enAarde’s Chardonnay and Pinot Noir stand up high against their international counterparts. Winemakers are passionate and visionary, but down-to-earth. Established producers keep abreast of the latest technology while the young guns revive old vine vineyards. It is no wonder that international critics including Jancis Robinson, Tim Atkin and Neal Martin praise South Africa as the most dynamic and exciting New World wine country.

Over the Rainbow fundraising campaign

Covid-19 impacts everyone across the world, but South Africa is particularly hard hit. One of the measures that the South African government took to combat the pandemic was banning domestic alcohol sale. Some 50% of wine produced in South Africa is sold within the country. This ban has severely a ected wineries, their employees, and all associated industries from F&B and retail to logistics. Wine lovers from around the world are responding to the industry’s appeal by buying more South African wines. These export sales will help them sustain the businesses and keep workers and farmers employed.

Fourteen Hong Kong wine merchants and wine shops took one step further to help. From mid-August to end of October, they donated HK$10 per bottle of every South African wine sold to two charity organisations in South Africa. Pebbles Project helps children and their families by providing support and intervention in ve key areas: Education, Health, Nutrition, Community and Protection; while Anna Foundation addresses the educational and social needs of rural children, helps them to build positive self-worth and self-respect through its 3 Rs Programme: Reading, Running and Right-ing. The campaign is a good opportunity to introduce more exciting South African wines to consumers, and at the same time, bringing hope and smiles to South African children and their families.

WHAT INSPIRED YOU TO BECOME A GIN DISTILLER?

My pure love for the craft was what inspired me to become a gin distiller. After trying my rst sip of craft gin, I fell in love with the spirit and it drove me to dive deep into the intricacies of the world of distilling. Distilling gin is about nding the perfect balance between technical knowledge, extreme focus and creativity. Professionally, I knew that it was the career for me.

ANY WORDS OF ADVICE FOR ASPIRING GIN DISTILLERS?

I would say the most important thing is to stay curious and keep challenging yourself. Be open-minded and accept constructive criticism, but also be careful not to let others completely overrule your beliefs and ideas. Finally, experience is key so keep experimenting and don't be afraid to share the knowledge!

ANY FUNNY INCIDENCES DURING THIS YEAR'S JUDGING?

We were lucky enough to sample one of the winners from last year before judging started as part of the calibration process and we decided to save our calibration spirit by setting it aside to reward ourselves after the morning session ended. Unfortunately, our treats were mistakenly removed, except Victoria's as she (very cleverly) hid her glass in a discreet corner. We were all so envious!

If sugar is the ‘Beauty’ in the fairy-tale of winemaking, yeast is the ‘Beast’ that transforms grape juice into wine by converting sugar into alcohol and aroma compounds

If sugar is the 'Beauty' in the fairy-tale of winemaking, yeast is the 'Beast' that transforms grape juice into wine by converting sugar into alcohol and aroma compounds.

The vineyard endows grapes with nature's beauty, but microorganisms involved in wine fermentation are predominantly found in the winery. Yeasts love sugars so when sweet, ripe grapes are brought into the winery, yeasts gobble up the grapes' natural sugars metabolising them into alcohol. This process is called alcoholic fermentation. According to Sam Harrop MW and Lallemand Australia's Dr Eveline Bartowsky, we should all learn to love the beast, for without yeast there would be no wine.

Speaking at a WineSPIT Master Class on fermentation and microbiology at MWM Wine School, Harrop and Dr Bartowsky told members of the Hong Kong and Greater China wine trade that understanding yeast is critical to winemaking because yeast selection can in uence the style of a wine. In fact, if you used four di erent selected yeasts in the same grape juice, you would most likely have four distinctive wines. The wines would still respect the grape variety and the terroir - as yeast can't create avour - but yeasts will take what the grapes have to o er, and transform them into

perceivable aroma compounds. Each yeast has a di erent metabolism and via its unique metabolism will transform the grapes' non-aromatic compounds into aromatic ones. Yeast helps winemakers interpret the desired characteristics of terroir and grape variety and expresses this in their wines. It also helps to control other aspects of winemaking, such as regulating microorganisms, including those that cause spoilage and wine faults.

Harrop said it is important for a winemaker at the top of his/her game to really understand which selected wine yeast can provide the characteristics the winemaker is seeking, not just generally assuming one size ts all.

"The best winemakers are like the best architects – with just the right amount of intervention, they must accept a certain level of control is vital if their wines are to show a true sense of place. They must strike a balance between methodology and intuition if nature is to be re ected in their work," he said.

All yeast is natural, and is part of the winemaking process, Dr Bartowsky clari ed. Yeasts are selected from grape must and cultivated. These selected yeasts can impact wine technologically (less sulphur dioxide (SO2), for example) and winemakers can use di erent yeasts based on their wine conditions. Lallemand

Oenology, a Canadian-based producer, supplier, research and developer with regional o ces in most major wineproducing regions, including one in Australia where Bartowsky is based, select wine yeasts with desirable winemaking features from natural fermentations of grapes in renowned terroir. Yeast diversity in nature is huge. There are wine yeasts that produce less sulphur, and others that have an ability to produce more acidity. In the case of indigenous fermentation, however, the yeasts that are present in winemaking were present in the grape must itself and not inoculated. During fermentation, those rogue yeasts generate indigenous fermentations that are not really controlled. Many spoilage microorganisms can cause wine faults, leading to high volatile acidity, excessive sulphur compounds and/or o -odours from Brettanomyces or even allergens such as biogenic amines from spoilage lactic acid bacteria.

Relying on wild yeast might seem like making wine the way nature intended, but it is more an ideological and philosophical perspective as yeasts, good and bad do not know what kind of wine it 'should' make (rosé? white? premium? early release?)

and inoculating selected natural yeasts (and also bacteria) into winemaking, are done for excellent reasons by all manner of wineries, both commercial and premium, to prevent spoilage and protect their product, style and terroir.

"A winery with a quality mindset would lose money – down the drain or blended into a second wine – if they were to lose even one barrel due to poor fermentation, especially a small winery like mine that only produces 8,000 bottles per annum," Harrop said. "The technology exists to reduce risk and help the winemaker realise the full potential of their investment," he adds.

Yeast is a key area of control in winemaking. As a winemaker, if you want to re ect a place, you need to understand which yeast strains are likely to help you express your interpretation of that place and you must help them do their job. This is a vital step in making a great wine.

Winemaking yeasts are divided into two groups, Saccharomyces cerevisiae and nonSaccharomyces, which includes Lachancea thermotolerans, Metschniokowia pulcherrima, Metschnikowia fructicola, Torulaspora delbrueckii, which are now all available to winemakers. Saccharomyces cerevisiae is the one responsible for the alcoholic fermentation and the main agent for contribution of aroma compounds. The other non-Saccharomyces yeasts, all selected from must fermentations, can contribute aromatically and possibly technologically (encouraging lactic acid production as a natural solution to replace the use of chemicals in acidi cation) or strategically to reduce the use of SO2 as some will prevent the development of spoilage bugs. Those spoilage bugs found naturally in must and wine include Brettanomyces bruxellensis, the famous Brett yeast that gives some wines a horsey, barnyardlike character. In small amounts, Brett yeast can add complexity. But too much can make a wine defective. Other yeast characteristics vary from strain to strain, making it impossible to generalise and it also depends on precursors from the grapes, Harrop explained. Apart from fruit and aromas, there are huge textural di erences between yeasts depending on the yeast chosen.

Another mini beast that aids in winemaking is wine bacteria (lactic acid bacteria) whose role in winemaking is often under-estimated. The most important work done by wine bacteria is called malolactic fermentation, even though it's not strictly fermentation at all, but rather a conversion or decarboxylation (the chemical reaction that removes a carboxyl group and releases carbon dioxide) of malic acid to lactic acid. Think of malic acid as the tart acid that imparts harsh green apple acid characters in wine, and lactic acid bacteria convert it to the softer, rounder characters we can taste and enjoy. Dr Bartowsky explained that during malolactic fermentation, bacterial

yeast can’t create favour but will take what the grape has to ofer, and transform them into perceivable aroma compounds.

compounds leave their mark in the form of various avours and provide microbial stability to wine. Wine bacteria are vital in winemaking because as they metabolise, they reveal compounds such as esters (fruity characters) and diacetyl which is responsible for the buttery avour and volume in Chardonnay. Bacteria also have glycosidic activity, which will release the aromatic compound from a bound non-aromatic moiety imparting oral characteristics to the wine.

While yeasts are inoculated at the beginning of fermentation to transform the sugar into alcohol, bacteria can be inoculated at various stages throughout fermentation at the winemaker's discretion, depending on how they want to in uence the wine's characteristics and aromas.

Harrop argues that the species, strain and management of bacteria in winemaking (red and white) is both an important and underrated aspect of winemaking. "Often when I'm tasting ne wine, with experienced tasters, some of the qualities being attributed to terroir by the group, come from the bacteriaeither directly or indirectly," he explained.

"An example of this can be seen in the spontaneous malolactic fermentations in white and red Burgundy. At low bacteria population levels (often a characteristic of the spontaneous approach) the process is long and challenging; pH can be low in white and reds and acidity can be higher than in other regions. With alcohol, the conditions for malolactic are far from ideal. Consequently, often the bacteria struggle. Diacetyl, volatile acidity, and aldehydes are produced, often in abundance. These qualities are often directly linked to a 'struggling' microorganism of indigenous origins. The funk that results can create a certain imbalance in the wine's sensory pro le," Harrop continued.

In Harrop's mind, a smarter approach is to inoculate with a selected yeast strain and then to co-inoculate with a desired strain of bacterium 24 hours later. Controlling these species provides a stronger platform for the vineyard to truly express itself in the bottle.

"So, is it really the terroir limestone quality in the soil that creates Burgundy wine's characteristics? Or is it the perfect marriage of the region's beauty and the beast?" he challenged.

HAVE YOU SEEN ANY CHANGES IN WINE CHOICE IN ASIA IN RECENT YEARS?

I think Hong Kong is a pretty stable market with the advantage that you can nd almost everything. Two major things I have noticed is an incremental increase in demand for Burgundy Premier Cru 1er appellation and another is higher demand for natural, biodynamic wines.

WHAT "SILVER LININGS" HAVE YOU FOUND IN THE WINE INDUSTRY AMONGST ALL THE DISRUPTIONS OF THE PANDEMIC?

Because consumers stayed at home during lockdown, they had the chance to explore wine regions and grapes that are not popular at restaurants and bars, but are widely available at wine shops.

SINCE WINERY REPRESENTATIVES CANNOT TRAVEL RIGHT NOW, WHAT CAN THEY DO TO KEEP THEIR BRANDS "TOP OF MIND" IN ASIA?

Work closely with their distributors to create special promotions, zoom tastings, educational activities and stay active on social media. These suggestions are nothing new and most wineries are already doing them. As much as winemakers are missing travelling to our markets, everyone is missing them more.

IT'S THE FIRST TIME YOU HAVE PARTICIPATED IN THE HK IWSC, HOW DO YOU FEEL AFTER A DAY OF JUDGING?

Although it can be a little repetitive trying so many samples, it's a great experience and discovering that I have a similar palate to other industry judges is always reassuring. Judging week has been a great experience and I can't wait to be a part of it again.

HOW HAS THE PANDEMIC EFFECTED THE WAY YOU WORK?

Of course, with Covid restrictions being placed on our industry, it's been a tough year. Luckily, our company has an online retail store which helped, and we have also been conducting live online tastings. Our company cleverly released a range of pre-batched cocktails, called "Cocktails at Home", which has performed well.

DO YOU FEEL YOU CHANGED YOUR DRINKING HABITS THIS YEAR?

Yes, since bars have been closed I've been drinking a lot more wine, and I've gained more appreciation for new world wines - they're fun, easygoing and taste great while working from home.

Traditionally, when we think of curry, we go straight to a cold beer. The Granmonte Syrah replete with delicious juicy concentrated fruit, soft unobtrusive tannins stood up to the test and complemented the complexity of spices and heat. It was a perfect partnership bringing out the best of avours in both the wine and curry.

Japanese deep-fried pork chop is enhanced by the Jackson Family Wines Capensis Chardonnay 2016 for a few simple reasons. Most importantly is the tactile synergy between the richness of the crisp-fried bread crumb crust and pork protein with the viscous weight of the chardonnay. Secondary lift of the wine's fresh apple-toned fruit further acts as a classic accompaniment to pork. The result is an uplifting e ect of ultimate enjoyment

The luscious minerality, invigorating acidity and complexity of this 2018 dry Riesling fuse well with the moistness and tenderness of the Japanese grilled cod sh. Love the silky texture and impressive mid-palate weight of this wine. An excellent match for the dish!

It was an absolutely fantastic experience! The judging panels ran smoothly, even with the challenges created by the government's Covid- restrictions. And I was happy to have the opportunity to judge wine with such an amazing group of professionals. I learnt so much from everybody.

HAVE YOU FOUND ANY "SILVER LININGS" IN THE WINE INDUSTRY AMID THE PANDEMIC?

The Stir-fried Preserved Vegetables with Green Peas and Bean Curd Sheets is a challenging dish for wine pairing as its delicate avour can be easily be overpowered by many wines and the umami and savoury characters of the dish may also highlight the phenolic bitterness in the wines. This Portada Winemaker’s Selection White is our best pick as it is soft, refreshing and fruity with delicate aromas, which match perfectly with dish in terms of avour intensity and texture. Both the dish and wine’s avours are greatly enhanced and there is no trace of bitterness at all. Very enjoyable pairing!

Distinct natural minerality and the precision of lemon, oral, dill and thyme notes marry perfectly with the light, refreshing and fragrant Vietnamese rice paper rolls (with a subtle hit of the sweet bean sauce). The palate is alive with the tangy acidity that lingers, resulting in a pleasant nish with great harmony.

I believe that no matter how bad the situation, people will nd ways to survive. I have seen many new business models in the market, plus new ways to host wine tastings and seminars. And many of these creative solutions are cheaper, easier, and more user-friendly. I believe patterns of consumption in the Hong Kong market will be di erent, even after we beat the virus.

WHAT WAS YOUR FAVOURITE WINE EXPERIENCE IN 2020?

The Charles Heidsieck 'Mise en Cave' vertical tasting of eight champagnes, hosted online by Mr. Stephan Leroux, Charles Heidsieck's chief executive director and Mr. Cyril Brun, Chef de Caves (cellarmaster). The master class was attended by professionals from 10 international cities - it was an amazing experience!

Tasting the Terroir

One of the best ways to obtain a true sense of the wine diversity made across the Napa Valley AVA (o cially-designated American Viticultural Area), is to pick a shortlist from across its 16 demarcated sub-region AVAs that best capture speci c terroir or winemaking in uences that will impress and possibly surprise on the nose and palate.

Of course it’s not possible for most domestic or commercial cellars to stock up from all sub-regions, so listed below are half a dozen respected producers, selected for both thoughtful wellnessed bottlings and for accessible pricing. Many other worthy wineries are, of course, available – including the well storied toptier collectable and ‘cult’ wines.

Schramsberg Vineyards

From Calistoga AVA, in the far north-western mountainside of Napa Valley, both its nonvintage J. Schram brut and the Prestige Cuveé vintage bruts show elevated renditions of traditional-method wines in this region. The 2009, 2010 and 2011 releases have achieved very notable accolades. J. Schram Rosé, vintage blanc de blancs and blanc de noirs also receive acclaim, proving that Jamie and Jack Davies were right to aim for star-quality sparkling wine when, from 1965, the couple built a facility in the site of the abandoned winery founded by Jacob Schram in 1862. Note: some grapes are sourced from three neighbouring counties.

Raymond Vineyards

This ‘valley- oor’ estate in St. Helena, with vineyards that overlap adjacent Rutherford AVA, produces several labels largely with biodynamic and sustainable practises. Raymond is run by Jean-Charles Boisset, under Boisset – La Famille des Grands Vins: a maker of wines across its France base and globally. Raymond Vineyards’ awarded mid-range St. Helena Cabernet Sauvignon, with its intensity and structure, re ects small-berried fruit from the two main gravelly low-yield vineyards just north of the winery.

Viader Estate

Howell Mountain, up in Napa’s inland northeast reaches, is home to Viader Estate. Its 11plus hectares of Bordeaux-blend variety vineyards – some more than three decades old –are on a west-facing slope that tops out at 400 metres. Its Proprietary Red, which primarily features the estate Cabernet Sauvignon with Cabernet Franc, is a go-to for many within the realm of elegant Napa Cabernet blends.

Hyde Vineyard

In Los Carneros AVA to the south of Napa town, straddling Sonoma AVA in part, lies Hyde Estate, amid undulating hills kept cool by western ocean breezes and fog. The focus is Chardonnay and Pinot Noir, with Merlot also produced. Owned by Larry Hyde and in part by Burgundy legend Aubert de Villaine of Domaine de la Romanée-Conti, all Hyde Estate Winery varietals drink with a little minerality, freshness and acidity that bodes well for ageing.

Silverado Vineyards

Situated in Stags Leap valley- oor AVA, although Silverado expanded its vineyards to include Chardonnay, Sauvignon Blanc, Merlot and Sangiovese since Diane and Ron Miller bought the property in 1971, it’s the Cabernet Sauvignon that is the star here. And particularly, the Solo label Cabernet Sauvignon, made from heritage clone 30 which was born among existing vines that date back to the 1960s; this premium wine embodies Stags Leap terroir well.

Cakebread Cellars

In Rutherford, where the Cakebread family built its estate and then a solid reputation for its Chardonnay, Sauvignon Blanc and Cabernet Sauvignon wines from the early 1970s, organic and sustainable practises are used – including the use of birds of prey to deter vine pests. Further wine varietals were successively produced, the rst being pinot noir from vines in the Anderson Valley, 135 kilometres north of the estate. Syrah and Merlot, both made from fruit grown in Suscol Springs, on the hills above the south-eastern edge of Napa town have complexity and balance.

F&B Alliance rescues HK’s ailing industry

The Cathay Paci c HK IWSC recognised a new category of industry advocate this year, bestowing the Save Hong Kong F&B Alliance with its inaugural F&B Industry Leadership & Advocacy Award.

Restaurants and bars recorded an almost 50 per cent drop in both volume of receipts and value in 2020’s second quarter, with even greater pain expected in third quarter gures, due to ongoing travel restrictions and cautious reemergence by local diners.

In April, Alan Lo, Gigi Ng, May Chow, Agung Prabowo and others teamed up to found the Save Hong Kong F&B Alliance. “Our industry is su ering and on the verge of collapse. With inadequate support from our government, the industry and its livelihoods are being severely impacted with no end in sight,” the Alliance posted on Instagram (@savehkfnb).

The Alliance launched its 2020 Wipeout e-voucher initiative in May to encourage diners to support restaurants and help proprietors with cash ow. The campaign generated more than HK$1.5 million in revenue for participating restaurants in 30 days.

“The 2020 Wipeout campaign was a simple proposition: support your favourite restaurants by purchasing a voucher to use at a later date, and in return the cash value of your voucher will be 20-50 per cent more than what you paid,” a Tatler article explained.

More recently, the new Wipeout 2.0 campaign ran from August to September in an e ort to arrest the industry’s freefall after a third wave of infections.

The Alliance also lobbied Chief Executive Carrie Lam and Chief Secretary Matthew Cheung Kin-Chung to help save the industry by, among other things, incentivising landlords to grant rent relief or reductions.

Encompassing 600 restaurants that employ around 10,000 people, the Save Hong Kong F&B Alliance is improving prospects for the venues and people that make Hong Kong a foodies’ paradise.

Rejuvenation: Community-mindedness Shines

Napa Valley AVA had su ered a handful of times in the past decade from threats of re as annual drought conditions in the autumn months around crucial harvest time cause hardship that does not seem to have been eased by attempts at better irrigation, water conservation at wineries and the tightening up of safety around all public and private electrical installations.

This year, Napa Valley was a ected by what has been named the Glass Fire, as it originated – from causes uncon rmed – in the Glass Mountain Road vicinity of Deer Park, eastcentral of Napa County, just outside St. Helena AVA. The wild re burned from September 27 until October 20. ABC7 News online reported that 67,000 acres (27,114 hectares) throughout California’s wine country – comprising both Napa Valley and Sonoma AVAs fell victim. In Calistoga AVA in the Valley’s far north-west, much of the ornate Castello di Amorosa estate was razed. Newton Vineyard in Spring Mountain AVA was partially destroyed, and establishments along the Silverado Trail were impacted, among many others a ected.

“We are living in the worst year of drought since the late 1970s,” says Julie Johnson, winemaker-owner of Tres Sabores certi ed organic winery in St. Helena. “Climate change and the consequences have been devastating.

I have to say that the folks at Long Meadow Ranch [neighbouring winery and restaurant] and the intrepid and indefatigable members of the Rutherford Volunteer Fire Department are to thank for keeping the Glass Fire from sweeping into [adjoining AVA] Rutherford.

“We’ve been asking our customers to support the Napa Valley Community Foundation and Puertas Abiertas, as these organisations have been doing a particularly wonderful job identifying and acting on housing, food and other needs among our community members.”

Other wineries and those in the industry have also been helping neighbours when they could. Napa’s David Abreu Vineyard Management team helped stop Sodhani Vineyards property in St. Helena from burning, and cleared roads to allow water trucks access to Stony Hill Vineyard in Spring Mountain. Amizetta Vineyards and Winery is donating 10 percent of every bottle of 2018 Cabernet Sauvignon it sells on its website to the Napa Valley Community Foundation. Clif Family Winey in St. Helena, with its farmstead in Calistoga badly damaged itself, is working with the Napa County Farm Bureau to distribute food to the worst a ected. The Regusci Winery team – of Stags Leap AVA – used their farm equipment and a new re truck bought by their owner Jim Regusci to protect a few properties in nearby Pope Valley from burning.

It has certainly been heart-warming to learn of people in all areas of the wine community in Napa Valley pitching in to help those who need it. This is an AVA that is, unfortunately, all too familiar with re damage and smoke taint – not to mention occasional earthquake damage. And perhaps it’s precisely the possibility of disaster that any winery or vineyard can su er which prompts those in the industry to count their blessings and lend a hand when it happens to someone else’s operation. They would count on the same if the situation was reversed.

Meanwhile, consumers and those in the food and beverage industry can best help by championing the increasingly diverse selection of wines from this region.
