I have been waiting nearly three years to write a truly positive, hope-fueled Editor’s letter. That day has finally arrived, with the Covid-19 barriers currently crumbling down around us. So, rather than reflect here on the challenges that we’ve faced (well – we have shared a round-up of Hong Kong’s recovery in a feature article inside!) – because we have done enough of that to cover a lifetime – I am excited about the broad and bright horizons that we are all racing towards.
In this issue we venture into some new territory – across the South China Sea, to the Little Red Dot, Singapore. While Singapore and Hong Kong have long had a friendly rivalry, things have heated up recently with the divergent Covid-19 policies meaning the cities took vastly different paths out of the pandemic. This has unsurprisingly had an impact on the wine scene. And now, with Vinexpo Asia jumping ship to Singapore in 2023, we have dug deeper into the wine scene to see what is making it tick and what is trending these days.
Speaking of trending, orange wine has seen immense growth globally in the past few years. Now, it seems our Asian shores are opening their glasses to this old-but-new phenomenon. There is much confusion around this category though, so I thought I’d take the chance to mythbust and define some of the key characteristics of the International Organisation for Vine and Wine (OIV)’s 8th and latest category in its official list of Special Wines.
As always, the results of the Cathay HK IWSC form a large and exciting part of this magazine. I hope you will enjoy meeting our new judges, as well as getting reacquainted with our immensely experienced long-serving veterans. Judging Week 2022 was a true celebration of our local spirit and the huge talent pool that exists in our city! With every passing year, we come to admire and respect the deep wisdom and honed judgement of our “family” of judges even more.
Again, we were fortunate to welcome sommeliers, wine and spirit writers, educators and critics, importers and F&B professionals. What a wonderfully diverse cross-section of voices and expertise to crown the best global wine, spirits, sake and beer for the Asian market. Asian beverage professionals rely on the Cathay Hong Kong International Wine & Spirit Competition’s (HK IWSC) guidance to choose the best beverages for their wine lists. It is the only competition dedicated to finding the best drinks to suit Asian tastes.
Judging for the 14th edition of HK IWSC, sister competition to London’s IWSC, was conducted in September at Arca Hotel Hong Kong. There, 56 of the world’s most respected beverage experts carefully considered hundreds of competition entrants to deliver their special brand of culturally appropriate advice for drinks lists.
Assembling these doyens of drinks is Debra Meiburg MW, the first Asian-based Master of Wine, Wine Consultant for Cathay Pacific Airways and Chair Emeritus of the Education Committee for the Institute of Masters of Wine. Debra was joined by award-
winning sommeliers, esteemed spirit experts, importers and industry leaders in the search for the best bottles and latest trends in wine, beer and spirits.
Entries were submitted from all over the world and tasted first on their own, and then in the competition’s famous food and wine pairing category. The mouthwatering dishes for this year’s food and wine pairing competition were prepared by the talented chefs at Hong Kong Parkview. The winning drinks, embellished with a new sticker design, will guide buying decisions at top restaurants, hotels, bars and wine stores across Asia.
Only the best products pass the HK IWSC’s stringent judging process. All Gold winners require 95 points or above and are accompanied by tasting notes to help wineries market their wines in Asia. Gold and Silver winners have their scores published on electronic stickers.
The highly experienced team prepared and poured thousands of drinks for double-blind tasting and compiled and organised judges’ scores. For the first time, Repour was used to preserve the wines’ freshness for the evening’s Test Your Palate event, which invites drinks enthusiasts to taste the wines that were judged earlier that day.

Wine with friends is one thing. Wine judging with friends is another level entirely. That’s what it feels like when the talented tasters gather at the Cathay Hong Kong International Wine & Spirit Competition (HK IWSC).
At this year’s judging, 56 local and international experts met at The Arca Hotel Hong Kong to deliberate on the best beverages for Asian drink lists.
Some judges are regulars who return year after year. Then, each year the HK IWSC welcomes new judges who bring fresh perspectives and different ideas.
HKIWSC boosted the number of importers and sommeliers this year. Pierre Brunelli MS, from Roganic joined the judging panel for the first time and local importers and top management of Enoteca, Liquid Gold, Berry Bros. & Rudd and Ginsberg + Chan came on board.
Like friendships, judges don’t always see eye to eye. Their differing opinions make the competition’s rigorous double-blind judging process even more thorough and the winning wines so deserving. Read on to discover their recommendations.

What is the role of a beer steward?
They are the gatekeepers of the competition. Beer stewards make sure the beer is served in the right condition, the correct temperature, in the right category and it’s the correct beer. They must be objective. In cases where there is physical damage to the bottle or can, they will ask the judge whether they would like to try another sample from a different bottle or can.
Beer has varied packaging and there are many different opening and pouring methods. Stewards must pour the beer to the same standard (head retention, with bubbles or no bubbles) no matter which format the beer comes in. Some Belgian beer is highly carbonated, therefore if all beers are poured the same the Belgian beer might overflow. Only a steward knows the best method to pour each and every beer.
How to become a beer steward at HK IWSC?
Studied Beer Judge Certification Program or Cicerone Certification Program. To become a Head Beer Steward at HK IWSC one must be a well-recognised Certified Cicerone, of which there are less than 10 in HK.

Despite the best of intentions, even professionals find it challenging to be completely impartial. Double-blind tasting removes prejudice, favourable or unfavourable, making it the most honest form of tasting. If, for example, a wine was identified as a bordeaux first growth, or served from a clearly defined bottle shape, even the most practised judge might be swayed.
HK IWSC prevents bias by pouring wines in the back room, which is offlimits to judges during judging. The only identifying feature on the glass is a number. The wine is what it is—nothing more, nothing less — judges do not know its name or brand, just its context (region, grape, and vintage). This context is important, so judges are comparing like with like and not a French burgundy against a Californian zinfandel.
With judges left using only their palates as a guide, HK IWSC entries receive a fair critique. This creates opportunities for amazing wines, sakes, spirits and beers to shine, and for some surprising award winners to emerge.

How do you 'promote' lesser known wines on your lists? The best way to promote lesser-known wines is with food and wine pairing sessions. A set dinner, for example, is a good way to showcase the potential of wines with food as well as the quality itself. The customer has a chance to try a lot of different wines at the same time and they will enjoy their dinner experience and remember the wines.
Food and wine matching is always a challenge at Cantonese tables. Do your guests decide on a wine based on the food selections or do they simply choose a wine they like (or want to try)?
When food and wine pairing, the first thing we do is try the wine. We also need to look at the style of the food. The flavour of the dish is key to a successful wine pairing. There are usually no wrong answers. The possibilities are endless, as long as there are no big flavour conflicts.
Most customers select wines based on their taste preference. Customers start by finding a wine that they’ve tasted before because it’s safer for them and they know what to expect. As people improve their knowledge of wines, they gain more confidence, read the label and look at the information on the bottle. Eventually, they get more adventurous and ask their trusted sommeliers and have faith in their own knowledge to help them choose new wines to pair with their food.

Gradually people have returned to the daily routines and rituals that pass for normal life in Hong Kong. Simple pleasures such as time with friends and dining out are high on post-pandemic to-do lists. But the world as we know it has changed.
While Covid-19 had our attention turned elsewhere, a reawakening occurred in Hong Kong. February’s lockdown of 23 business sectors was the nail in the coffin for many bars and restaurants but fresh new concepts have sprouted up in their place. Businesses that survived the lockdowns expanded and pivoted in creative ways. The city was knocked down, but it’s getting back up again.
After a dip in 2020, Hong Kong’s wine market rebounded in 2021. But despite the rally, imports and sales were slow in 2022. The Catering Business (Social Distancing) Subsidy Scheme provided relief to the hospitality sector from 2020, disbursing more than HKD13 billion (USD1.7 billion) to January 2022, with more measures announced in February 2022. The subsidies helped some businesses. Others took charge of their own destiny.

it faced. “Pizzerias sent out homemade pizza kits for people to make with their kids. At Pondi, we kitted out a basket with candles, wine glasses and picnic blankets to create a sense of closeness for people.”
The lockdown provided the impetus Side Note needed to open its own wine store. “When the government shut us down, we started selling our wines. I made home videos, speaking about the wines as if I were tableside … That success gave us the confidence to open Crushed Wines, our own little Covid baby, to continue the flow of wine, information and communication to our customers.”
Hong Kong’s never say die attitude has seen it weather many storms. The challenge posed by Covid-19 was immense, but the wine industry has a backbone of well-established infrastructure and resilient professionals and is a magnet for talented food and wine professionals.

Like Glass, Lo is proud of the way businesses adapted. “Restaurants have evolved. Adventurous products are being introduced. Young drinkers are being welcomed to wine categories they’ve never seen,” he said.
Cristobal Huneeus, Co-founder at La Cabane, said Covid accelerated demand for alternative wines. “The last four years have been stressful and complicated for importers, but as we return to normality I see people are more curious about other styles. Sick of drinking the same wine every day during lockdown, they were drawn to niche wines.”
Anty Fung believes experience is the key to enticing guests back to bars and restaurants. "People became used to hosting parties at home. There needs to be a better reason beyond just good food and wine to justify dining out, "Experiences have to become more dynamic and ambience-driven. Good vibes is something that's going to bring people back to the restaurant scene." It encompasses a more creative take on service style, a more engaging way to facilitate guest interactions, etc. Post-covid times restaurants and bars have to find a new way to attract winers and diners back with a stronger social offering.
In the process of rebuilding, Hong Kong’s wine market is being reshaped. There are chinks in its armor, sure, but there’s nothing quite like a few years of rolling lockdowns to invigorate people’s desire to explore and venture to new, unchartered corners of the wine scene.

Vinexpo’s announcement that it will revive its Asia event in Singapore in 2023 places the evergreen, cosmopolitan city in the limelight.
Confucius said, “The orchid grows where others cannot,” and it is fitting that Singapore was chosen as the location for Vinexpo Asia’s reincarnation in the region. Centrally situated and boasting some of the world’s best gastronomy, Singapore has a vibrant dining out culture. As the gateway for wines into Southeast Asia, South Korea, Japan and China, the city’s wine scene blossoms with engaged, erudite drinkers and F&B professionals.
“Singapore stands out as an obvious choice for serving the interests of the entire Asia-Pacific region,” said Rodolphe Lameyse, CEO of Vinexposium.
Vinexpo Asia will follow in the footsteps of another successful wine industry event. In October 2022, the Wine Pinnacle Awards kicked off at Resorts World Sentosa. In his opening speech at the event’s Wine Symposium, Mr. Augustin Missoffe, Managing Director Asia-Pacific for SOPEXA, said Singapore had attained a 25 percent share of the alcohol beverage market in 2022, with wine revenue reaching USD 643.8 million, and consumption volume climbing to 10 million litres. Research by the IWSR for Vinexposium forecasts an annual rate of volume growth in Singapore of 4 percent (2021-2025).
“There’s been a lot of buzz around Vinexpo,” said Matthew Lamb, Group Beverage Manager at Lo & Behold. “It shines an international spotlight on Singapore and its wine industry, which looks poised for continued growth.”
Geographically, Singapore is a small country, but it punches above its weight in almost every area. At the start of the millennium Singapore, like many countries in Asia, faced the issue of an ageing population. It turned this around through a range of investments and economic policies, including substantial immigration that grew its population from 1 million to 5.64 million people (3.6 million adults).
Hongkongers are heavily represented in the latest wave of immigrants, with many corporations and financial institutions consolidating their Asian headquarters in Singapore due to the
political and pandemic uncertainty overshadowing Hong Kong.
Singapore’s hospitality market really took off a decade ago thanks to major integrated resort openings that attracted visitors from all over Asia and abroad. In particular, Marina Bay Sands significantly expanded the wine trade by creating new restaurants and attracting Michelin-star chefs and sommeliers.
Annette Scarfe MW attributes much of the wine industry’s growth and success to the resort. “Singapore has become one of the most open wine markets in Asia,” she told Wine2Wine Verona (November 2019). “The breadth and depth of wine in Singapore is enormous.”
Singapore’s older generation is fixated on red wine and shares a mutual love of Burgundy with Hong Kong, but that’s where the similarities end. While Hong Kong is Bordeaux and Burgundycentric, Australia has 30 percent market share in Singapore, and Chile and France tousle for second and third positions.
Julien Drevon CEO and co-founder of Pivēne, told the Wine Symposium that 1.5 million Singaporeans drink wine monthly, consuming around 13 million litres annually. (Beer is more popular at 133 million litres per year.)
Singapore’s cost of living is high and wine’s expense is a factor in purchasing decisions. The average retail bottle costs $48 for French wine, $42 for New Zealand wine and $31 for Australian and Italian wines, Drevon said.
Taxes and duties compound high importation costs making premium wines better value for money. “Singapore is not a good market for entry level wines,” Scarfe affirmed.
While high alcohol taxation might suggest potential for lowno alcohol options, Singapore consumers are not ready yet, Scarfe remarked. The higher the alcohol content, the better the perceived value, she said.

They must travel in refrigerated shipping containers, be stored in purpose-built warehouses and remain in air conditioning all the way to their final destination, whether that’s Singapore, Malaysia, Indonesia or Thailand.
High prices are one driver of premiumisation; another is the calibre of customers. People know what they want and purchase at specialty stores. Twenty to thirty-somethings are drawn in by promotions and discounts, but lifestyle is a more prominent cue to buy. Singaporeans love to eat and love to shop and there is a strong demand for wine dinners and events that incorporate food and wine pairing.
“Singaporeans love the opportunity to sit down with a Master of Wine and discuss the wine. They want to come and learn,” Scarfe said, speaking from experience as an event host.
Lamb agrees. “Food and wine pairings are a gateway for lesserknown explorations … It used to be that people wanted parallels, for example, ‘This variety is somewhat like pinot noir.’ Now, people are more open to an array of expressions and keen to explore.”
Cathay HK IWSC judge and WSET Business Development Manager Asia-Pacific, Ling Cheong said Singapore’s WSET market saw impressive triple digit growth in the past three years as people used the lockdowns to scrub up on their wine knowledge. Even before the pandemic, Scarfe said there was greater demand from consumers for wine education than from the wine trade.
“A lot of people took the pandemic as a time to upskill their wine knowledge,” Lamb said. “That is evident in dining room conversations between our staff and guests.
“At the high end, people are receptive to recommendations and suggestions from staff, and there is growing interest from the midtier and casual dining crowd for something new.”
Peer reviews, educator recommendations and awards are another cue to buy wines both on- and off-premise. Convenience also plays a part. People don’t have cars so delivery is important if there’s no wine store close to home. Ecommerce is the largest retail growth area in Singapore as people seek the convenience of online stores and delivery services.
While the classics hold true among established drinkers, younger people are more adventurous. The sparkling wine category, while only representing a small proportion of the market (around 8-9 percent), is growing steadily. Prosecco alone is up 30 percent, driven by Singapore’s penchant for bottomless brunches, and champagne is on the rise.
“Over the last 6 months, demand for champagne has been incredible across both the Grand Marques and growers,” Lamb said.
Awareness of organic and biodynamic wines is rising, but Singapore’s take up lacks the fervour of South Korea’s. “There is interest in organic, biodynamic and natural wine styles along with a general sense of exploration and wanting to try a new variety, region or style people haven’t previously heard of,” Lamb said.
“In the past three years, even amid ever-changing restriction measures, there has been incredible growth of sommelier talent and professionalism in the industry, coupled with a growing range of wines and customer interest.
“The support Singaporeans have shown to F&B has been energising and a great push forward to the industry as a whole.”
Singapore is Asia’s good news story, unfolding like an orchid with just the right amount of caution to enable the wine industry to get back to work safely. Greater things are coming as it establishes itself further within the context of Southeast Asia and globally.

Red, white, pink and now orange—the four colours of wine. Orange wine expands the colour wheel in a fresh, vibrant expression of white wine grapes.
Orange wine has found its place in the sun and is lighting up the wine scene in spectacular fashion. When you’re in, you’re in, and there is barely a wine list around that doesn’t include orange. Orange wine successfully walks the line on the right side of trendy.
The name applies to whites that are deeper in colour than classic white wines and infused with more body, tannins and complexity. Their warmer colour and character comes from extensive skin contact during fermentation and maceration.
Juice is left in contact with grape pomace (skins, pulp, pips and stems) which transforms the wine into varying shades of orange from pale gold, amber and bronze to coral, copper and orange.
In conventional white wine production, grapes are crushed, and the juice quickly moved off the skins into the fermentation vessel. The pigment, phenols and tannins found in skins that
are vital in red winemaking are usually considered undesirable for white wines.
Orange wine is a maverick that flouts convention—white wine made from white grapes in the style of red wine! The Wine and Spirit Education Trust describes it as dryer than typical whites, with notable tannins, and nutty, dried fruit flavours.
There are many regions that produce orange wine, including northeastern Italy’s Friuli-Venezia Giulia (where the term ‘orange’ was first termed by British wine merchant David Harvey in 2004). Across the border, Slovenia also produces orange wine. But the country with most credibility in the category is Georgia, the birthplace of wine.
Although the term orange wine is relatively new, the style of wine production is ancient. Georgian winemakers have been producing skin contact wines for more than 8,000 years. The resurgence of Georgian wine on the global stage has seen interest intensify in skincontact wines, although Georgian winemakers eschew the term orange insisting amber is more accurate.
With its origins in the backyard maranis of Georgian farmers, traditional Georgian qvevri (clay vessel) wines have associations with the natural wine movement. Once the wild, untamed child of the wine world, Georgia’s amber wines are symbolic of returning to lighter-touch production methods.
In November 2020, the International Organisation for Vine and Wine (OIV) added an 8th category to its official list of Special Wines in acknowledgement of traditional Georgian winemaking: White wine with maceration. Criteria for this new class includes prolonged maceration with skins for a minimum of one month.
John Wurdeman from Pheasant’s Tears Winery in Georgia has been a qvevri wine disciple since before orange wine was cool, having moved from Santa Fe, USA to Georgia in 1996 to immerse himself in the country’s wine, art and culture. He says orange wines are a challenge to understand and appreciate. “Orange wines have the freshness of whites with the structure of reds. They can be compared to both white and red wines, but they are their own genre,” he said.
There are no strict rules that define what orange wine is. It rests comfortably alongside natural wine, although it’s a misconception that all orange wine is natural. Orange wines are often associated with natural wines because their high tannin levels mean the wine can be bottled without the addition of suplhur dioxide. Some orange wines fall under this umbrella, but not all. You can make orange wine with conventionally manipulated grapes too.
Passion for orange and amber wines is not universal. Orange is a perplexing pigment when it comes to wine and not all drinkers are fans from first sip. Even among professionals, the category is polarising.
“I see orange wine as an alternative wine trend, rather than mainstream,” said Anty Fung, general manager at Hip Cellar. “Some styles resemble artisanal craft beer profiles. For fine wine consumers, natural and orange wines will likely remain an exotic item. Cult wines like Radikon draw curiosity, yet I don’t see them becoming popular.
“These wines shine best when they are paired with food. Natural wines are driven by café vibes and food and wine pairing experiences … They hit a sweet spot among third wave cafes, gaining a following among young people who are looking for individualistic expressions.”

Take up has been slow in Hong Kong compared to other markets like South Korea which has seen an explosion of natural wines, said Cristobal Huneeus, who operates La Cabane natural wine bar. “Hong Kong is conservative … but it is changing. The younger generation under 40 are interested and curious and are demanding other styles. There is a growing local market in Hong Kong for our lowintervention wines.”
Huneeus has seen demand pick up for niche, natural and orange wines in the Covid years. “People want to try new things and that exploration is a good thing for us.”
Progressive sommeliers are educating their guests by serving orange and natural wines as part of set menus.
“With a pairing menu the customer has a chance to try a lot of different wines at the same time. It’s an enjoyable experience and makes the wines memorable,” said Jack Cheung, group beverage director at Hong Kong Parkview.
Once a farmer’s market fashion, orange wines have diverged off the hippy trail and are appearing on upscale wine lists everywhere. In Hong Kong, they’re a ray of sunshine peeking through a sea of red.
