t is with great excitement and pride that we mark a significant milestone in Asia’s wine and spirits industry in 2023: the 15th Anniversary of the Cathay Hong Kong International Wine & Spirit Competition (HK IWSC). In this edition of SPIT Journal, we not only explore the HK IWSC’s decade-anda-half of excellence, but also the incredible journey it has taken in shaping and evolving Hong Kong’s (and wider Asia’s!) dynamic wine scene.

The evolution of the Hong Kong wine industry is a remarkable journey in itself. In just 15 years, Hong Kong has experienced a transformation that has thrust it to the centre of the global wine stage. Sarah Wong delves into the key milestones, innovations, and individuals who have shaped this incredible story.

Sarah also captures the excitement and shares the highlights of 2023 HK IWSC Judging Week. Back to its full glory in 2023 - welcoming judges from across Asia and International VIP Wine Judge, Craig Stansborough - the HK IWSC Judging Week is the most anticipated and highly-regarded event of its kind in Asia. Belle Leung Belle is a co-founder of HK Brewcraft, the pioneer of beer education in Hong Kong. Belle is a National BJCP (Beer Judge Certification Program) beer judge, an exam proctor and grader for BJCP in Asia. She has over 8 years' beer judging experience in Singapore, Taiwan, Thailand and multiple cities in China. As a board member of CBAHK (Craft Beer Association of Hong Kong), she proactively promotes the culture of HK craft beer in the region.

Davy Leung Davy Leung is an independent wine educator, sommelier and F&B consultant for private kitchens and groups in Hong Kong and Australia. Davy is a WSET Diploma holder and Certified Wine Educator (CWE), Italian Wine Ambassador & Educator by Vinitaly International Academy, a Certified Specialist of Wine & Spirits, Certified Spanish Wine Educator, Wines of Portugal Ambassador and KEC Koshu Expert. Since 2017, Davy has held the Chair of the Society of Wine Educators Hong Kong Chapter.

Sarah Wong Sarah Wong was born and educated in Hong Kong. Sarah’s knowledge and expertise in wine has been developed through extensive wine education, tastings, judging in competitions and via travelling to a broad spectrum of wine regions. She has worked in vineyards in Southern Australia and has travelled to wine regions in Argentina, Australia, Chile, Italy and Japan. She is a wine columnist for the South China Morning Post in Hong Kong.

Sustainability is an ever-pressing concern in the wine and spirits industry.

With Bordeaux considered the “spiritual heart” of the wine industry for many, Wendy Narby of Insider Tasting has contributed a fascinating article on behalf of the Sustainability Round Table, capturing a 360° view on the innovation, best practise, concerns and priorities for sustainability in this key French region.

Davy Leung spotlights Asia's ever-evolving world of sommeliers, taking us to the heart of an exciting cultural shift. Davy Leung delves into the growing influence of sommeliers in the region, their role in shaping the Asian wine and spirits landscape, and the challenges they face in navigating this complex and diverse market.

Switching gears, Belle Leung explores Hong Kong's craft beer scene, which has flourished in recent years. The city's craft breweries are making their mark, producing unique and delicious brews that have garnered recognition not only locally but also on the global stage. We dive into the stories behind some of the most exciting craft beer establishments in Hong Kong.

Last but certainly not least, Edison Chung explores spirits education, including its role in mixology with renowned spirits educator, Eddie Nara CSE. It is a blockbuster issue! Enjoy the insights, market trends and analysis, and a little nostalgia… as well as discovering this year’s winning HK IWSC wines, spirits, sake and beer, providing you with insights into the styles, regions and varieties that are capturing Asian palates.

Sipping and Spitting to Spot the Stars

By Sarah Wong There was an air of excitement and anticipation as the 2023 edition of the HK IWSC approached. 2023 marked some significant milestones, two of which were the 15th edition of the competition and the first judging week of the post-Covid-19 era!

HK IWSC returned to the Arca Hotel for its annual Judging Week to celebrate its 15th anniversary and with it came the return of Asian international judges from Japan, Malaysia, Singapore, and Taiwan as well as several Mainland cities.

Debra Meiburg MW, educator, Wine Consultant for Cathay Pacific, Chair of the Education Committee for the Institute of Masters of Wine and recipient of the Chevalier de l’Ordre du Merite Agricole presided over the competition, as she has done for the past 15 years.

For 2023, VIP International Wine Judge Craig Stansborough, the Group Premium Winemaker at Accolade Wines and longtime Chief Winemaker for Grant Burge flew in for this milestone week.

It is a tradition for the competition to welcome a VIP International Wine judge – and always a highlight for the judging panel. This year, the HK IWSC was also excited to welcome new judges Pierre Marie Pattieu MS, Terence Wong, Sebastian Chevalier, Mike Tse and Carlito Chiu into the HK IWSC family.

Craig Stansborough commented: “I could not have enjoyed the HK IWSC more. The opportunity to taste so many wines with such an amazing group of like-minded people was incredible.”

Long-time spirits judge Ron Taylor said that the competition is “about meeting people from around the world and learning from their experience, knowledge and the importance of keeping an open mind to new ideas”. Ron adds that an important aim is

to “educate new judges that this is not about personal likes and dislikes but an analytical approach to the liquids.”

New wine discoveries are constantly being made. For Ron Khoo, it is always intriguing to judge “categories off-the-beaten-track like Georgia and India.” Even for seasoned wine judges, tasting an Egyptian Viognier was a first-time experience.

Another Judging Week highlight was the Food and Wine pairing segment of the competition, hosted this year at Hong Kong Parkview. Judges are required to recalibrate their mindsets about wine and be open to making new discoveries. Debra encouraged the judges: “do not assess the wine on its own. Think of it just as a pairing!”.

For Philip Wong, the "wow" factor was “the perfect pairing of Thai Green Curry with a Muscat and Chenin Blanc Blend from Indonesia”.

Billy Yeung’s advice to food and wine pairing is to “rethink the definition of high- and low-end wines”.

Judging Week also saw a select group of Cathay Pacific clients join as Judge Apprentices. They spent a morning shadowing Debra Meiburg MW and were able to experience the judging experience first hand. Debra gave them an in-depth introduction to tasting wine like a professional, explained the factors to look for and assess when judging in a competition, and tips on how to allocate points and medals. Debra then introduced them to their judging panels where they joined the tasting, discussion and assessment of the wines with the judges. It was an eye-opening experience and the apprentice judges thoroughly enjoyed the feedback, questions and points shared by their mentors on selecting winners for “everyday consumers”.

2023 was not only HK IWSC’s 15th anniversary, but it also marked the return of the competition’s Asian judges after a 3-year hiatus.

Wine Judges

The judging teams were excited to welcome VIP International Wine Judge, Craig Stansborough. Craig is the Group Premium Winemaker for Accolade Wines in Australia and New Zealand. With over 35 years of winemaking experience, his insights and knowledge were highly valued and appreciated.

The HK IWSC also saw the return of its Asian judges including: Joao Pires MS (Macau), Kenichi Ohashi MW (Japan), Della Tang (Shanghai), Gerald Lu (Singapore), Thomas Ho (Taiwan), Stephen Notman (Shanghai), Thomas Ling (Malaysia), and Xiao Pi (Shanghai).

Born in Gawler, on the edge of the Barossa Valley, Craig grew up with the wine industry all around him. He started as a cellar hand with B Seppelt & Sons in 1983, firstly at Chateau Tanunda and then later at historic Seppeltsfield Winery.

Craig is highly regarded for his talent, strong leadership, inquisitive mind, and unrelenting passion for winemaking.

Craig is renowned for his contribution to some of Australia’s most respected wines – Meshach, The Holy Trinity, Shadrach, and the highly regarded Filsell. He is justifiably proud of their development and has crafted a solid reputation for excellence and conveying the true values of the Barossa.

A passionate ambassador for the Barossa, craig is proud to serve on the Barossa Wine Show Committee for 10 years as well as being a part of the inaugural Barossa Technical committee. He also had the honour of being named Barossa Winemaker of the year in 2014.

Craig travels internationally for the company promoting the values and messages which have made Australian regions famous. Being a vineyard owner as well as winemaker, Craig knows the nuances of the region intimately, the seasons, the soil, the varieties and is committed to maintaining the healthy environment to hand to future generations. His involvement with the company’s viticultural team is greatly respected, where his knowledge transfers to influencing the management of each year’s harvest.

Craig’s discerning palate earned him a role as a panellist and judge on the Barossa Wine Show, National Wine Show, Australia Greatest Red and as a tasting panellist for the Australian Research Institute.

Craig joined Grant Burge Wines in 1993 as Assistant Winemaker, Winemaker in 1995 and Senior Winemaker in 1997 and continued that role until 2019. Ale Tales: The Ageing of Beer

Nothing beats a fresh pint, but did you know that beer ageing was a common practice in the past? Aged beers can develop oxidised qualities and enriched flavours, often with notes of dark fruit. Not saying that you should let the IPA in your fridge sit any longer than it has to, only certain profiles of beer are suitable for ageing — dark and sour beers in particular. The presence of hops and alcohol in hoppy and high ABV beers (the higher the better) also make them apt for ageing. Beer ageing can be unpredictable, but a dark cellar environment of around 15 degrees celsius will produce optimal results.

Test Your Palate

By Sarah Wong One of the most highly-anticipated events during the HK IWSC’s judging week is Test Your Palate, which was held on September 20 and 21 at the Arca Hotel. Wine lovers and aficionados were given the opportunity to taste competition wines and spirits, interact with judges and learn from their experience and expertise.

As Debra Meiburg MW said: "I think there is no better way to learn how to analyse a wine and get fascinating insights than to listen to judges discuss and compare the wines!”

As long-time judge Tersina Shieh commented: "the event brings wine closer to consumers.”

Now a beloved fixture on the calendar for Hong Kong’s wine lovers, many guests return every year to discover new wines – and meet up with their favourite judges for advice and guidance on wine trends, tasting tips and the best drops of the day.

This year, wine lovers were invited to test their wine-tasting skills at The Blind Tasting Challenge. Lucky winners won prizes ranging from a staycation at the Arca Hotel and other prizes to the value of over $5000.

There is no better way to learn how to analyse a wine, and get fascinating insights than to listen to judges discuss and compare the wines!

Test Your Palate opens the door to consumers and wine enthusiasts. It is the opportunity for the public to taste all the wines judged in the competition during judging. Hundreds of bottles from global wine regions were arranged by theme for curious consumers to explore, enjoy and judge for themselves.

It is an event like no other for the public and judges! Judges relish the chance to share their passion and knowledge in an open dialogue with wine lovers.

The event brings wine closer to consumers!

For wine lovers looking to do a deep dive into Austrian wines, there was ample opportunity to taste past Austrian HK IWSC wines as well as the large selection of Austrian wines available in Hong Kong.

Austrian wine importers: Wine Guru, VINPIT, ENOTECA, EMW, Bachmair & Wine Culture all joined Test Your Palate to share their selection of Austrian wines to Hong Kong wine lovers. Also present was Jennifer Veigel, Austrian Trade Commissioner to share her favourite Austrian wines and taste the winning Austrian wines from the last two years of HK IWSC.

Eyes Wide Shut

The Cathay HK IWSC is Asia's only double-blind tasting competition.

Despite the best of intentions, even professionals find it challenging to be completely impartial. Double-blind tasting removes prejudice, favourable or unfavourable, making it the most honest form of tasting. If, for example, a wine was identified as a Bordeaux first growth, or served from a clearly defined bottle shape, even the most practised judge might be swayed.

HK IWSC prevents bias by pouring wines in the back room, which is off-limits to judges during judging. The only identifying feature on the glass is a number. The wine is what it is—nothing more, nothing less — judges do not know its name or brand, just its context (region, grape, and vintage).

This context is important, so judges are comparing like with like and not a French burgundy against a Californian zinfandel.

With judges left using only their palates as a guide, HK IWSC entries receive a fair critique. This creates opportunities for amazing wines, sakes, spirits and beers to shine, and for some surprising award winners to emerge.

THE HK IWSC FAMILY

Flashback to 2008... Hong Kong had just abolished its wine duty and held lofty ambitions of transforming itself into the wine hub of Asia. Debra Meiburg MW, one of Asia’s newest minted (and first!) Masters of Wine, shared the vision for Hong Kong to be a beacon in the regional and global wine scene, and as part of establishing its authority and expertise, saw the need to establish a professional competition with Asian judges to select the best wines suited for our markets. Thus, the HK IWSC was born – and it has had a transformative effect on the Hong Kong and the wider Asian wine market!

At the time, Asia lacked a pool of professional and experienced wine judges. There were wine competitions in existence, but they utilised international judges with little knowledge and firsthand experience of Asian tastes and consumption preferences.

Debra undertook the Herculean task of selecting, training, and mentoring some of Asia’s established professionals and rising stars. Fast-forward to 2023, HK IWSC has now trained 150 plus judges, many of whom are now senior judges in competitions around the world, giving a “voice" to Asia.

MILESTONES HK IWSC’s underlying spirit has always revolved around innovation and creativity. The Asian food and wine pairing awards are one of the highlights of the competition and was a ground-breaking concept at the time of inception.

As Debra says, “Having the opportunity to taste a diverse, international array of 40-50 wines per dish is a unique learning experience for our wine professionals, advancing wine culture onto Asian tables.” It has continued to evolve and incorporate new key dishes and regional cuisines from across Asia and bring the tastes of Asian consumers to the forefront. This has been aided by the inclusion of guest judges from the media and food and beverage sector, who have been invited to share the journey with the professional wine judges and spread the word about wine and dine culture in Asia.

The ability to stay innovative and be resilient was tested to the utmost during the Pandemic. With social distancing regulations in force, HK IWSC stayed calm and carried on. Ron Khoo recollects, “We were put into groups of four in hotel suites and communicated with other judges via Zoom.” Debra presided over staff meetings from her bathtub (dry and dressed, of course!) in the hotel suite.

Continuing the spirit of innovation, over the years spirits, sake, and beer categories have been added to the competition. Where it was felt to be relevant, price-focused award categories were introduced. HK IWSC also took great measures to recognised Asia-made wines, with award categories for “Best in Asia”. Evolving with the trends and reflecting Asia’s voice, in 2019 the Guest International Spirits Judge hailed from China – a leading producer of Baijiu.

As the competition grew, a range of events, seminars, and educational initiatives for wine professionals and consumers were devised. One of which is Test Your Palate - a unique event, inviting consumers to taste competition wines judged each day during Judging Week.

The HK IWSC is about fostering talent across the industry to create a deep, wide and professional beverage sectors and not just judges! As such, it awarded a “Young Communicator of the Year” annually for nearly a decade, recognising excellence in wine and spirits journalism by rising stars in Hong Kong and China.

Debra succinctly says that HK IWSC, is “a collective achievement” and ultimately it is about the people and the “enduring friendships forged within the HK IWSC community.” Or, as Rebecca Leung says, “You become part of the HK IWSC family”. These connections extend beyond the competition, and judges have organised wine trips to wine regions in Thailand, Japan, and Yunnan in China to learn about different wine styles and trends in Asian markets.

As HK IWSC enters its 15th anniversary, Debra sees the importance of aligning awards with concerns of the global beverage industry. HK IWSC was the first competition in Asia to award sustainability, including organic winemaking practices. This year, HK IWSC has formed a collaboration with Sustainable Wine Roundtable (SWR) to address key international issues in the industry and encourage global cooperation.

The HK IWSC has come a long way since its inception, establishing itself as the leading platform for global wine and spirit producers doing business in Asia. Its commitment to excellence, integrity, and an “Asia-first” outlook has made a lasting impact on the industry, fostering growth, and promoting Hong Kong as a global hub for wine and spirits. As the competition continues to evolve, it remains a vital catalyst for innovation, cultural exchange, and market development in the dynamic world of wine and spirits.

Sustainability in Bordeaux An article by the Sustainable Wine Roundtable

By Wendy Narby of Insider Tasting Organic and biodynamic wine might be familiar to wine consumers in Asia, but sustainable wine is a more nebulous term. As the largest vineyard region in France, Bordeaux is a great showcase for sustainable initiatives in the vines and cellars and the challenges facing winemakers looking to improve their environmental, social and economic credentials.

The Bordeaux wine region has 5,000 estates covering 108,000 hectares. This size and reputation carries a responsibility to be a leader in sustainability and Bordeaux is rising to the challenge.

Bordeaux has the highest area of certified organic vines in France (20% of the surface area), the highest number of growers certified HVE (Government certification Haute Valeur Environnementale) and the highest number of Demeter biodynamic labels.

Bordeaux has the highest area of certified organic vines in France Family friendly Close to 60% of Bordeaux properties are family owned, this implies stewardship; land to be protected and passed down to the next generation. These winemakers are particularly aware of the importance of sustainability, both environmental and financial.

There’s a heightened sensitivity to toxicity when it’s your family that is out in the vineyard.

Micro climate Bordeaux has its challenges, the oceanic climate makes it susceptible to mildew, oidium and botrytis. Fungicides are vital.

The traditional Bordeaux mixture of copper and sulphur is permitted in organic agriculture (in limited amounts), but, like other organic treatments, it's easily washed off by rain and needs re-applying more regularly than systemic (non-organic) treatments. As well as being cash and labour-intensive, sending a tractor through the vines more often increases the carbon footprint of the vineyard. It’s a trade-off.

Sustainability in the vineyard Practically sustainable solutions work towards protecting the natural environment by reducing and controlling inputs, by better disease modelling, soil and canopy management, increasing biodiversity through agroforestry and the more controversial initiatives such as introducing more heat resistant grape varieties on an experimental basis.

As opposed to organic farming, in sustainable viticulture certain synthetic inputs are permitted, in a controlled, limited and measurable way. Bio control is part of the solution, protecting crops using mechanisms and substances found in nature or synthesised to be identical to those naturally produced. This includes introducing macro organisms like insects and nematodes to prey on pests, or micro-organisms like fungi and bacteria, using pheromones in sexual confusion to repel bugs and products that naturally stimulate the plant to protect itself. These are used alongside agroecology practices like cover crops, ploughing, tilling and agroforestry (hedge and tree planting).

To till or not to till Ploughing and tilling the soil between rows of vines reduces the need for herbicides but can encourage erosion, damage the soil structure, dry out the soil, release carbon stored therein (producing more carbon emissions) and kill valuable microbiological life.

Again, it’s complicated. Planting green cover crops between vines increases the life of the soil, ploughing them back in acts as green fertiliser. Some plants, however, such as couch grass, are invasive and ploughing can spread them rather than reduce them – see, not easy!

Diversity of Certifications You’ll see many environmental certifications on French wine labels, but this diversity is confusing for consumers and the trade. ISO, HVE, Terra Vitis, Bio (organic), Biodynamic, organisations and initiatives that cover biodiversity, agroforestry, etc., not forgetting the social and diversity implications of sustainability. How do growers decide which ones to sign up to and what do they mean for the consumer?

Carbon footprint and Carbon capture In 2010, Bordeaux was the first vineyard region to measure their carbon footprint. An online carbon footprint calculator, available for all producers and merchants, allows them to understand exactly where and how carbon economies can be made. Tree-planting and increasing biodiversity capture carbon, but fermentation is a big carbon dioxide producer. Both Château Smith Haut Lafitte, in their carbon neutral cellar, and Château Montrose, have pioneered capturing the carbon produced during fermentation.

The Challenges Fear of Failure Winemakers fear losing a crop if they are unable to aggressively treat a vineyard hit by fungus; they are reluctant to sign up for certification if it stops them saving their crop. 2023 is a perfect example, the vintage has been hard hit by mildew, many organic vineyards have been hardest hit. Some independent wine growers, although passionate about the environment, prefer to hold themselves accountable rather than defer to a great power via certification.

Whereas those who have signed up to a certification hold a cynical view of others that use the term ‘sustainable’ with no accountability.

You’ll see many environmental certifications on French wine labels, but this diversity is confusing for consumers and the trade.

The Opportunities Sustainable energy It’s not only about what’s happening in the vineyard. New cellar design with insulation and heat pumps (such as at Château Pontet Canet) reduces energy consumption. Solar panels produce green energy, Château Chasse-Spleen in Moulis is self-sufficient in energy thanks to solar panels and Château Lagrange has solar panels on the cellar roof, to name but two.

Agri Confiance The cooperative movement (25% of Bordeaux production) is a poster child for working together in agriculture and they have their own sustainable label, Agri Confiance. It guarantees that the grape growers of the co-op use sustainable practices: limiting chemical inputs, manageing waste and natural resources. It also ensures the cooperative wine-making facilities adhere to sustainable production conditions. In 2020, 485 Bordeaux growers, covering 18,743 ha were certified Agriconfiance.

Delivering Sustainability In 2008, CIVB research showed 20% of Bordeaux wineries’ carbon footprint was from transport. The lightest glass bottles (for still wine) are around 350g but can go up to a whopping 1,500g. Lighter bottles reduce this impact. In October, in a ground-breaking development, led by the Sustainable Wine Roundtable, leading wine retailers from around the world including Laithwaites Wine, Lidl GB, Naked Wines UK, Naked Wines USA, Systembolaget AB, The Wine Society, Waitrose, Virgin Wines and Whole Foods Market have reached an Accord to reduce the average weight of 750ml still wine bottles in their range.

The average 750ml still wine bottle weight today is approximately 550 grams. The ‘SWR Bottle Weight Accord’ will see the companies involved reduce their average bottle to weigh less than 420 grams by the end of 2026. Glass has the advantage of being recyclable, currently about 70% of glass is recycled, saving 12 million tons of raw material and 7m tons of CO2 pa uniquely in the EU, but it is still energy intensive to produce, recycle and dispose of.

ABOUT SWR The Sustainable Wine Roundtable (SWR) is a global platform for collaboration to advance sustainability across the wine industry.

The SWR is the only independent multi-stakeholder roundtable with over a hundred members to include the whole wine value chain. The SWR catalyses and drives collective action and knowledge sharing. Working together, the SWR is developing practical tools which include a Global Sustainability Reference Framework. This California pinot noir complements the dish in a myriad of ways. Most distinctively, its slightly weighted texture and gentle presence of tannin lifted the duck's smoky flavours, whilst also supplementing the hint of fat from its crispy skin. The oak and fruit properties that belong uniquely to this pinot noir added a riper and more present flavour to the wine that pairs extremely well with the smoked tea leaves of the duck. With the right texture and flavour, this pinot noir rounded things off beautifully with a perfect touch of acidity. Not to mention its trace of sugar, which went well with the dried chili powder dip for the duck. Overall, the aromatically inviting Chinese crispy smoked duck paired exceptionally well with the pinot noir, generating new dimensions of sour cherry, Chinese plum, and floral elements on its way.

This Portuguese red wine works very well with this very flavourful, spice filled savoury dish. The wine has a good fruitiness and body, but it's never over tannic, which allows the alcohol to compromise with the flavourful Nasi Goreng. It is also equipped with the right amount of acidity to cut through the oiliness of the dish. A surprising pairing, especially considering the pan fried egg, as eggs are notoriously difficult to pair with red wine, but this definitely works, and so deserves a shout out as an exceptional pairing.

The fermented flavours added an extra dimension to everything in this dish; the slightly charred tofu, the miasaki beef, the Inaniwa noodles' texture which wedded harmoniously with the rice wine. To top it all off, the miso soup that came with the dish was an amusing pairing that could only be described as simply "magical".

It has been more than 18 years since craft beers emerged in Hong Kong, with various related businesses blossoming over the last decade. Nowadays, craft beers are not uncommon in supermarkets and restaurants, while qualified beer judges are also widely present in the city.

Craft beers are just more expensive beers with pretty labels

beer as a major topic in their educational series “Tasting Theatre” for the first time in 20+ years!

Common misconception: in fact, craft beers are more expensive because of smaller (and limited) supply, in addition to the use of generally higher cost ingredients. “Cost” comes from creativity, mix of ingredients, time spent to make the beer (e.g. barrel ageing) and so forth. Craft beers are also defined by the ownership independence.

Beer has historically been understood as a male-dominated industry. Ironically, historical belief is that the first brewers were actually female, with tales of brewing going as far back as 7,000 BC. However, the industry evolved into a seemingly “malefocused beverage”, which might not be a true representation of the appreciation that beer has gained in the female space.

Down The Memory Lane…

I discovered my connection with beer in 2012 when one of my friends gave me a beer he brewed as a “hopefully mind-changing bottle”. The fact that a bubbly, yet hoppy drink with foam can taste completely different from my usual perception of beers (obviously much better!) inspired me to believe that education is the key reason behind under-appreciation. As a beer educator, judge and exam proctor in APAC, I have witnessed a significant increase in the female ratio of my students, exam candidates and returning customers for beer purchase, which reaffirmed my belief in education. The proportion of females working in the industry is also steadily increasing - because of the limitation in physical fitness, women will play more client-facing roles within the industry that requires less (literally) heavy lifting - like branding, sales or marketing. Oh, and calories have not stopped women’s passion in this space. Until this day, I have yet to see a lady walking around with a beer and a big beer belly!

Despite having the first craft brewery, the Hong Kong Beer Co., since 1995, craft beers did not get much attention until 2012, when the craft-beer only festival Beertopia landed in the city. This was followed by the establishment of HK Brewcraft, the first one-stop beer store in Hong Kong, and pioneer of beer education, knowledge-sharing of homebrewing, beer tasting and professional exam techniques through periodic workshops.

A wave of micro-breweries, notably Young Master, then started to brew beers locally, formulating proper craft beers within Hong Kong - the true Hong Kong beer! Believe it or not, at peak there were 40+ operating breweries! Stabilisation of this booming trend came in right before Covid-19 where around 20 breweries were in operation, and this number has remained unchanged.

Craft beer penetration in restaurants and bars also saw a similar trend, receiving sideway growth after booming in 2014-2018.

The rapid decline in industry players has motivated the government to promote craft beers locally, as the craft beer industry in Mainland China, Japan, Thailand, Vietnam has not stopped growing in the past 5 years. Through close cooperation with the Craft Beer Association in Hong Kong (CBAHK), 2023 has seen beer competitions resuming, and craft beer-focused beer festivals blossoming. This trend is expected to continue as craft beer is now recogonised as an important element of Hong Kong culture for both locals and tourists. This has been widely demonstrated through the strong presence of craft beers in major events e.g HOFEX, RBHK, Clockenflap, Wine & Dine and more. To highlight this, major annual food and drinks industry shows, Restaurant & Bar Hong Kong Kong, has also included

Women in Beer

As the industry continues to evolve, it is exciting to see creative collaborations e.g. music x beer pairing, wine x beer hybrids (e.g. grape ale), non-alcoholic (ie pregnancy-friendly!) beers, cocktailinspired beers etc., tapping into an audience beyond the crowd you will meet in Oktoberfests. Afterall, beer is just a drink, that goes with everything in your life from dusk till dawn.

The Evolving World of Sommeliers:

A Look at Singapore, Japan, Hong Kong, and China

The role of the sommelier is ever revolving. As trained professionals armed with supreme knowledge in alcoholic beverages, wine services, and food & wine pairing experiences, the services of contemporary sommeliers are no longer traditionally privileged to only hotels and restaurants.

The role of the sommelier is continuously redefined by market trends driven by consumer demands and preferences.

Sommeliers wishing to succeed in such an environment must accept and overcome new challenges brought forth upon by such market dynamics. While opinions on the food, wine and the beverage industry may be vast and subjective, among them exists a few whose opinions are shared by several working and ex-sommeliers across Asia, including Japan, Singapore, China, and Hong Kong. These individuals share their views, challenges, and steps on becoming the leading sommeliers in their regions.

It is only a decade ago that sommeliers have since been considered wine experts and had considerable impact on the respective academia, and furthermore to act as a “love bridge between the consumer and the winery” (Yonex Zhang, Suzie co-founder and Wine Director of the VOS group, China). As suggested by Reeze Choi, the second runner up of the world’s Best Sommelier Competition of 2023, the more controversial role of a sommelier includes beverage upselling, discovery of new wine possibilities, and back office book keeping, and procurement. An ex-sommelier now, the founder of a professional consultancy firm, Somm’s Philosophy, Reeze described these roles as analogous to working between the front and back of the house. These individuals and their mentioned roles serve as the backbone and workhorse, taking part of a larger profitdriving machine of the western food and beverage industry, while elevating the dining experience for their customers. In the advent of smartphone technology becoming ubiquitous, consumers grow more scrupulous towards wine choices partly due to the availability of up-to-date information on wine prices, reviews, and tasting notes. Such tools have increased consumers’ scepticisms towards sommeliers. Thus, understanding consumer needs is more important than ever before.

Today, many factors challenge the demands on sommeliers. Price transparency acts as a double-edge knife to a modern sommelier. The increased cost, limited availability has complicated wine businesses. With the ability to compare market to restaurant wine prices, more consumers have opted to bring their own (BYO) wines to restaurants. Finding the “sweet spot” for price mark-ups to encourage customers to order from the wine menu has become the survival necessity for many restaurants, Reeze Choi emphasised. Though, mainstream wine countries such as France and Italy remain strong, many old-school and educated wine drinkers in such regions only support brands that are familiar to them with little incentive for new wine or region explorations. Many have collections of wine purchased at a fraction of the restaurant prices. Also for this sector of consumers, with the recent decline of wine consumption and over collection, the demand for sommeliers is dwindling. Makoto Hashimoto of Kyoto also observed that an increasing trend of the younger generation is not to consume alcoholic beverage at all and that sommeliers must proactively offer low or non-alcoholic wine as this demographic becomes mainstream. A successful sommelier today must be profit-oriented, and as such must overcome modern challenges and changing consumer habits.

Success is dependent on individual definition and expectations. In closing, Reese Choi commented: “I think learning to be a better person with good attitude is the first key to being successful”. That being said, staying focused and performing one’s self best becomes utmost important to achieving success.

Get into the spirit An Interview with Eddie Nara CSE

By Edison Chung Since the WSET launched its new separate qualification for spirits, spirits can finally have their time in the spotlight. This renewed approach is a testament to the impressive diversity of spirits. Whisky, brandy, rum, vodka, gin, and tequila all boast distinctive characters that make up the familiar core of spirits, but there are other spirits such as Pisco, Grappa, Calvados, Pastis, Absinthe, Soju and the list goes on and on...

To better understand the latest trends in spirits education, we spoke with renowned spirits industry leader, Eddie Nara. Eddie is Asia’s first-ever Certified Spirits Educator accredited by the Society of Wine Educators. His experience as a bar professional and ambassador for many international spirit brands also lends a grounded approach to his teachings.

On the craft of mixology, Eddie believes spirit education provides an intimate understanding of each spirit’s character, and that allows bartenders to utilise spirits most prudently. Indeed, spirit education delves into the unique production process of each spirit, and more importantly, how each stage impacts the aroma, flavour, and texture of the spirit.

All this seemed abstract, but Eddie was kind enough to illustrate by using gin as an example: “Maceration tends to produce a richer, full-bodied gin. Whilst vapour infusion results in a lightbodied and delicate gin.” For bartenders, these differences

translate into the distinctive ingredients and methods that go into their cocktails. “Macerated gin is suitable for shaking and stirring, whilst vapour-infused gin is best made softly, with lighter ingredients,” Eddie added.

Spirit education also promotes eco-conscious practices in the industry. Like wines, the making of spirits presents ample opportunities for upcycling. Eddie explains with another example, this time with scotch whisky: “After the mashing process, leftover malt, also called draff, can be used as animal feed, and during fermentation, the CO2 produced during fermentation is captured and used for soft drinks or fire extinguishers.”

Not only can sustainable practices benefit the environment, but they can also enrich the spirit itself. Eddie adds: The staple wooden oak casks nowadays came to be when people realised the maturation benefits offered by re-used sherry transport casks.” That was more than a hundred years ago, but now more than ever, the world needs a dramatic shift in production, and education is always the first step in the right direction.
