A Message From Our Care Manager by Carly-Jane Mattiske I would like to take this opportunity to introduce myself. My name is Carly-Jane Mattiske (everyone calls me “CJ”) and I have been extremely fortunate to be appointed as your new Care Manager at HillView Aged Care. As a Registered Nurse I have many years Aged Care and Acute Care Nursing experience, including working as a Clinical Care Manager and recently as an Infection Control Coordinator in the hospital during the COVID pandemic, bringing extensive knowledge and understanding to this role. I am now excited and proud to be a part of the Management Team at HillView Aged Care. I am passionate about providing holistic health care to residents and assisting staff to improve quality of life for our residents. In this current world of global pandemic “COVID” I understand it has had a profound impact on the residents and their families. I sincerely thank you all for your understanding and patience during this difficult time. I am extremely appreciative with the care and dedication of staff during constantly changing times and their adaptability to change to keep our residents safe. Booster vaccinations have been offered to the residents and with high vaccination rates we should be able to approach the next chapter with confidence. I look forward to getting to meet the residents and families as I continue to support our wonderful nursing team to provide optimal clinical care. Hope to meet you soon! CJ

Whilst food for many is a simple everyday staple, HillView Care take it extremely seriously. Dining at HillView should be a pleasurable and nourishing experience. It is our belief that every Resident be served only the very finest food, using the freshest ingredients at all times.

Well I did promise you some new additions to our menu for Autumn! Following resident feedback at our Food Focus meetings, we are introducing no fewer than ten new dishes to our regular menu! Prawns being a resident favourite, we are introducing a tasty prawn curry, and a pasta served with chorizo. Other dishes include Pan Fried Plum Pork; Chicken Laksa; Savory Chicken Meatloaf; Braised Lamb Shanks; Veal Scallopini; and Grilled Ham Steaks, all served with the freshest seasonal vegetables. Fresh vegetable preferences include broccolini, cauliflower, beans and parsnips, with asparagus, snow peas, rocket and spinach thrown in to tempt our residents' taste buds! We'll be catering for upcoming events, including the much anticipated Mad Hatter's Tea Party, Easter Sunday, and the annual Mothers' Day High Tea. Yours in cooking,

Learning his trade at sea Warwick became an Able Seaman and then an Able Bodied Seaman before moving to Australia, which he had fallen in love with on his earlier visit to find work. Earning his ranks in Australia, Warwick began work on Scandinavian owned ships, allowing him to see the world, travelling to ports all over Europe and the US. Working on these ships became a life long job for Wazza and allowed more than just round the world travel. It also came with some very interesting sea tales, including tales of piracy. Wazza remembers protecting his vessel from pirates in waters off the Philippines, using hoses to stop them coming close to the ship and attempting to board. They were put on round-the-clock watch until the pirates finally gave up. This was along with many taniles of exploding tankers and fights at sea. Wazza relocated back to NZ where he was able to travel the South Pacific islands, Fiji, Papua New

Once again on the large tankers Wazza travelled back and forth from Singapore as well as many other smaller Asian port cities. He worked on the large tankers for another 13 years before finally retiring. Warwick and his wife Charlene have spent their retirement years enjoying the sunny Queensland lifestyle, catching up with old friends and making new ones. Wazza is now a popular character in our Ashmore home, always willing to share a beer and a chinwag.

STAFF FEATURE: JULIE CARDLE, HAIR & BEAUTY Our very lovable Hairdresser Julie has been a familiar face around HillView Care for over 12 years! Julie and her family, husband Spencer and children Ellie and Regan arrived in Australia from England in September 2009. Their intention was to live in Adelaide, but after sampling the Gold Coast and all it had to offer, especially the weather (having 2 keen swimmers in the family), the Cardles settled for the latter. Julie was born and raised in Kent, UK, where she became a hairdresser upon leaving school. Some 34 years later, Julie believes she was destined to always be a hairdresser, as she loves to chat! Julie worked in the same salon until she met and married Spencer, who was serving in the Army. The couple moved to Aldershot, where Spencer was based, but returned to Kent when Spencer left the Army to join the Fire Brigade. On returning to Kent, Julie recommenced her hairdressing role at the same salon. In 1999 Julie decided to start her own mobile hairdressing business, and built up a healthy clientele. Upon moving to Australia in 2009, Julie found leaving her clients, some of whom had known her since she started hairdressing the age of 16, to be the most difficult aspect of leaving her home country. At this point, Spencer left the Fire Brigade and joined the Police. The Cardles embarked on a return visit to the UK in 2012, with the motive of deciding whether to move back home or stay in Australia. As soon as the plane touched British soil, the Cardles had already realised that Australia was now home! Upon their return to the Gold Coast, they purchased their home. Ask Julie what her favourite pastimes might be, she’ll smile coyly and tell you shopping and social lunches! Being vegetarian, Julie and Spencer enjoy sampling the yummy plant based restaurants littered around the Gold Coast. Jules also relishes cooking and baking up a storm in the kitchen! Most residents and families would be familiar with Julie’s happy face around HillView Care, and she’s always ready for a chat!

SIMPLE EVERYDAY EXERCISES

You’ve heard it time and again: physical activity and exercise are good for you, and you should aim to make it part of your daily routine. There are countless studies that prove the important health benefits associated with exercise, and it becomes more important as we age. Below are a series of simple exercises you can try safely from the comfort of your own room.

SEATED LEG EXTENSION The Seated Leg Extension exercise targets the front thigh muscles, or quadriceps and helps to strengthen the knee.

STARTING POSITION - Begin by sitting upright, comfortably, in a high back chair with feet positioned flat on the floor, keep your knees at a 90° angle. - Sit up tall with your arms resting on your thighs, or on the side and head looking directly forward in preparation for the exercise.

MOVEMENT Lifting one leg, extending at the knee, straighten leg as far as possible Pausing for 5 seconds with your leg parallel to the ground Slowly bring your leg back to the starting position Perform movement slowly and controlled Complete 10 repetitions with right leg, then switch legs and complete 10 repetitions with left leg.

Staff can be nominated via a yellow feedback form by residents, family members, colleagues or management. AO is a familiar face around HillView Care Merrimac. Part of our Environmental crew, AO has been nominated many times over by staff, commending her fabulous work ethic and attention to detail.

Tell us about yourself:I was born in Thailand and moved to Australia to be with my husband in 2009. I have two children and have worked multiple roles in aged care, and now call the Gold Coast and HillView Care home. Q: What do you enjoy most about working at HillView? A: My favourite thing about working at HillView Care is being able to talk with the residents and staff. Q: What do you enjoy doing when you're not working? A: When I am not at work I enjoy cooking up meals, tending to my garden at home and listening to some of my favourite music. Q: What is your favourite flower? A: My daughters name is Jasmine, so I would have to say this is my favourite flower. Q: What is your favourite food? A: It's tough to pick a favourite food but cooking with fresh fruits and vegetables is my absolute favourite. Q: Where would you like to be right now? A: Right now I would love to be able to go and visit my family back home in Thailand.


Hearts Of HillView Keesha is one of our amazing Registered Nurses, based at our Ashmore home. Keesha is a reliable, dedicated and most importantly an extremely caring Nurse. She has proven the ability to provide great support to all workers in the role as a team leader, and has the ability to adapt to changes in circumstances easily and support the team to achieve a shared goal. Keesha is a valuable member of the Clinical team and has received many compliments from fellow workers over the years.

KEESHA ALONSO REGISTERED NURSE

Tell us about yourself:I was born in the Philippines and moved to Australia in 2013. I am the second of 3 children - I have an older sister and a younger brother. My Dad is one of 2 sets of twins in his family and my Mom has a set of twin sisters too. I have around 80 first cousins, a few who live here in Australia but most of them are in the Philippines. I live with my husband whom is also a registered nurse and a Filipino. We are currently waiting to start building our own house and to start creating our little family. Q: What do you enjoy most about working at HillView Care? A: The best thing about working at HillView Care is the people I work alongside, our team is just awesome. I also love working with the elderly, I feel so fulfilled when I am able to help them in whatever way I can. Q: What do you enjoy doing when you're not working? A: I love cooking, exercising and going for drives. Q: What is your favourite flower? A: Sampaguita (Philippine Jasmine) is the Philippine national flower. It smells so good and is considered to be a symbol of fidelity, purity and hope. Q:What is your favourite food? A:My favourite food would be Filipino food such as Lechon (roasted whole pig with the crispiest skin), Karekare (a stew of different cuts of beef with a peanut sauce base) and Adobo (arguably the Philippine national dish - consists of meat marinated in soy and vinegar sauce and has heaps of different variations).


Director's Award The HillView Director's Award seeks to recognise an individual who has continually gone above and beyond to provide service and care to our residents. Lijo has recently stepped up to the role of Head Chef, a key position here at HillView Care. Lijo has brought enthusiasm and creativity to the role, meeting with residents to discuss menu preferences before introducing numerous new dishes to the menu.

LIJO MATTHEWS HEAD CHEF

Tell us about yourself:I am originally from India, and have been in Australia since 2009. I have completed a Bachelor’s degree in Commerce from India and a Diploma in Hospitality Management & Commercial Cookery in Australia in 2011. I've been working as a Chef ever since.

Q: What do you enjoy most about working at HillView Care? A: Being an employee of HillView Care, I get to experience the personal satisfaction that genuinely makes a difference in my life. Caring for elderly people makes me feel valued and honoured by providing quality care and love to our beautiful residents in their ADL’s and basic needs in life. My passion is cooking and inventing new recipes. I feel greatly satisfied by hearing the genuine compliments about the food that I have made. I have been working in HillView Care for the past 9 years. Continuing to work at the same place for many years proves that it’s a great workplace. HillView Care has very supportive management and a friendly team of staff to work with. Recently I had the opportunity to take up a challenging Lead role, which I enjoy everyday. It helps me to develop my managerial skills.

Q: What do you enjoy doing when you're not working? A: As most people, I also prefer to spend my spare time with family (wife and 2 young boys). I also like to be involved in social gatherings & sports. Cricket is my favourite sport. I always try my best to find time for playing cricket, even on our busy schedule. My favourite place to go will always be back home to South India, where I was born. Spending time with my parents & other relatives are the best memory ever. I also like to travel to other countries as well as within Australia for holidays. Travelling all Australia in a caravan remains in my bucket list for a long time. However, my all-time favourite place to spend my life is none other than Gold Coast.

Q: What is your favourite food? A: My favourite foods are spicy, coming from that spicy background. Mashed Tapioca with Beef Curry, and Lamb Biriyani are a few of them.
