MISO BROTH WITH PAK CHOI AND TOFU Miso paste is made from fermented soya beans and is a staple in Japanese cooking. Look out for jars in Oriental stores or the World Food sections of large supermarkets. It’s perfect for making a quick and tasty soup or broth.

Serves 4 Ready in 15 minutes • • • • • • •

2 tbsp vegetable oil 2 garlic cloves, crushed 200g shiitake mushrooms, sliced 2 x 225g packs smoked tofu, cubed 2 tbsp miso paste 2 tbsp light soy sauce 400g pak choi, roughly chopped

1. Heat the vegetable oil in a large deep frying pan over a high heat. Add the garlic and sliced mushrooms and stir-fry for 2-3 minutes until the mushrooms are just tender and golden.

Remove with a slotted spoon and set aside.

2. Add the tofu to the pan and stir-fry for 1-2 minutes until just browned. Reduce the heat and stir in the miso paste, soy sauce and 1 litre of boiling water. Slowly bring to the boil then add the pak choi and simmer for 2-3 minutes until just softened.

3. Return the mushrooms to the pan and heat through for a further minute. Divide the broth between four warmed bowls and serve immediately.

TIP For a heartier dish cook some thread egg or rice noodles following the pack instructions and divide between the serving bowls before spooning over the broth.

May is my favourite month of the year as trees and shrubs are in leaf, the foliage is young and looking at its best and there are flowers everywhere.

Trees with blossom in May include Crataegus laevigata Paul’s Scarlet, a Hawthorn. This is for larger spaces as it can get up to 8m tall and wide.

In spring, the blossom is a rich deep pink and will cover the tree then you get red haws in autumn.

Beware the sharp thorns though!

Many shrubs flower in May including scented Azaleas. The latter are deciduous medium sized shrubs with gorgeous flowers and a heady scent.

They need shade and an acidic soil, well drained but moist – so sandy soils are out. For a hot sunny space, try Ceanothus Puget Blue. It is often seen with many blue powder puff flowers smothering the shrub in May. They will get to about 2.5m tall and wide and need a sunny place out of the wind with light well drained soil. The leaves are evergreen in winter.

Those with boggy gardens or ponds can try the perennial March Marigold or Caltha palustris with its buttercup yellow flowers in May. They get to about 30cms tall. If you have soil which is light and free draining in full sun, why not try the Bearded Irises? They do not flower for long but the flowers can be exotic on stems 80cm tall. Colours range from white, cream, blue, plum, yellow or bronze.

They grow from thick rhizomes which have to be in sun with the top showing on the soil. Also try perennials for their foliage only. Heuchera Creme Brulee or Marmalade with their orangy amber leaves. Heuchera have a range of foliage from lime green to deep purple growing to 45cms tall and good in pots or in the garden. Like a moist soil in the sun.

Plant out runner beans grown in pots into their final positions. Sow seeds of courgettes, cucumber, squashes, cabbages and broccoli for cropping later in the year. Plant up your pots with annuals for a good display throughout the summer. Prune shrubs that have just finished flowering.

A pop of colour Bold colours are on trend this spring, often quite dark and moody, and where better than a bedroom to go for this dark décor? Use fuchsia, turquoise, emerald, orange, mustard or deep blue in arresting combinations or perhaps just cover one wall with a strong shade. Even the addition of a bright headboard, rug, throw or group of cushions can make a difference.

On the walls Experiment with paint colours by using a tester pot to cover a large sheet of card, then stick it to different walls at various times of the day so you can see how the colour changes. Alternatively use patterned wallpaper, all over or just on a feature wall. Or opt for a wall-sized mural of, for example, a wooded glade, tropical palms, a cityscape, oversized flowers or a starry night sky.

Lighting should be subtle and flattering. Make it adaptable with table or floor lamps in corners and fitting a dimmer switch to the central pendant.
