Hello lovely readers and welcome to the latest edition of our magazine, as ever packed full of lovely things to read and great suppliers on your doorstep!

So now we’re already hurtling through this year, how are your New Year’s resolutions faring? I have to say I’m having some moderate success - my running HAS started, albeit a tad behind schedule and I’m still to commit to a definite 10K. Hence the moderate success, my procrastination continues! I also wanted to try to challenge myself to doing something new, maybe not every month but at least a couple of times this year. So January saw me trying out the camera I bought myself last May. (No need to hurry these things) and undertake a half day beginners workshop. So now I know what the P, A and S buttons are on my camera and am off ‘Auto’. Maybe one day I could challenge myself to put one of my own images on the front of our lovely magazine?

Recipe

Caramelised Onion & Goats’ Cheese Pizza

3 tbsp olive oil, plus extra to drizzle d 2 large onions, peeled and thinly slice r 2 tsp brown suga 2 x 145g packets pizza base mix s, plus 2 tsp fresh chopped rosemary leave 1 tbsp small sprigs d 2 x 100g round goats’ cheeses, slice 5 cherry tomatoes, halved

TIP Instead of the caramelised onions spread, the pizza base with sun-dried tomato paste then top with some cooked and drained spinach. Scatter over diced mozzarella cheese, grated parmesan cheese and some fresh chopped oregano.

Makes 4 Ready in: 1 hour This is a tasty alternative to the classic cheese and tomato pizza. Serve with a simple mixed green salad dressed with balsamic vinegar and olive oil.

1. Heat the olive oil in a large frying pan and add the onions. Fry over a gentle heat for 15 minutes, stirring occasionally, until softened. Add the sugar and fry for a further 10 minutes until golden brown. Leave to cool.

2. Preheat the oven to 220C, Fan 200C, Gas Mark 7. Empty both sachets of the pizza base mix into a large bowl and stir in a large pinch of salt and the chopped rosemary leaves. Stir in 200ml hand-hot water and mix to a soft dough. Knead the dough on a lightly floured surface for 5 minutes until smooth and elastic.

3. Roll the dough out to a 30 x 45cm oblong. Place on a greased baking sheet and turn up the edges of the base. Spread the caramelised onions over the base, then top with the sliced goats’ cheese, cherry tomatoes and rosemary sprigs. Leave in a warm place for 10 minutes.

4. Drizzle with olive oil and season with a little salt and lots of freshly ground black pepper. Bake for 15-20 minutes until the base is golden brown.

Local News

The Moos Of The World Red Poll Cattle It always amazes me how quickly we seem to slide from Autumn into Winter, and the end of last year was no exception. Since I last wrote, the Red Poll cattle are now mostly housed at the farm for the Winter, living on a diet of silage (made from grass), and straw and supplemented by mineral licks. Because of the unusually dry weather late last year, they were able to stay out in the fields for longer than usual, with free access to silage before they were brought inside permanently. However, Twoby, three cows belonging to Rice Lane City Farm in Liverpool, and a group of our heifers are still grazing the fields along Picton Lane. There are another thirty animals grazing the sand dunes at Ainsdale and Birkdale and being looked after by Lancashire Wildlife Trust and Sefton Council. In addition, one of our heifers and her calf are spending the Winter at Rice Lane in company with a fourth cow belonging to the city farm. They are helping to manage two important nature reserves and were featured on BBC North West Tonight in early January. Our herd health plan has been reviewed and updated in conjunction with our vets and students at Liverpool University, and January and February will see the cattle being vaccinated against bovine illnesses in preparation for their return to the fields in the Spring.

Farm Visits As documented previously, our current Environmental Stewardship Agreement with Natural England ends on 31st October this year. As part of this agreement, we are able to offer free guided farm tours and educational access visits for groups of six or more people, lasting just over two hours. These visits must be booked in advance, and we can tailor them to suit your interests.

They are a great way to find out what goes on behind the hedgerows, how your food is produced, what wildlife abounds in the local area, why soil is so important to us all, and lots more. I could mention the highway robbery of 1796 at Morley Bridge, the shipwrecked fisherman in the fourth century, the mysterious corpse found on the railway line in 1924, or the anonymous Cheshire poet who rivals William McGonaghall. But you will have to book a visit to find out more. Visits are by arrangement up to 31st October, and all we ask for in return is a feedback form.

Public Access The permissive footpath network around the farm is funded through our Environmental Stewardship Agreement. We would like to keep this network of paths open after the agreement ends, and are in negotiation with various authorities and organisations with this aim in mind. There is the cost of maintaining the paths to be borne in mind, but the biggest issue is the cost of public liability insurance. We will do our level best to ensure that you can continue to use and enjoy these paths from November, but are unable to bear the costs associated with them. Please continue to use these footpaths throughout the Summer. Perhaps you might also like to raise this issue with local parish councillors, Cheshire West and Chester councillors and your Member of Parliament.

Playtime If you have space for a dedicated playroom, or can allocate a section of another room, you can keep toys contained and your children happy – and it’s a great opportunity for some imaginative decorating, says Katherine Sorrell.

The key to designing a playroom is flexibility. Keep the basics plain and simple – neutral walls, floor and major items of furniture, with only the less expensive and easily changed items (such as blinds, cushions or storage boxes) themed to colours or characters.

Start by considering the major factors. Is the room just going to be a playroom, or will it double as another, such as a child’s bedroom? How much space do you have and who will use it? How old are your children? What is your budget? Sketching a floor plan on graph paper will help, as you may need to include one or more beds, a desk, seating, a music system and clothes storage, as well as space for books and toys, plus free floor space in which to play.

Place and space The more space you can allocate to a playroom the better, not to mention the storage requirements (see below). A light, bright room is ideal, preferably not far from a toilet or from the kitchen or living room, so you know what they’re up to. Direct access to outside space would, again, be ideal. A space with interesting nooks and crannies, perhaps even different floor levels (within reason), will feed the imagination.

Design basics Floors should be non-slip, easily cleanable, hard-wearing and not too hard underfoot. Wooden or laminate boards plus a soft rug (with an anti-slip mat beneath), vinyl or linoleum are all ideal. If you must choose carpet, go for an inexpensive one and have a stain-resistant treatment applied before installation.

Inset ceiling lights and high-up wall lights are better than floor or table lamps that could be knocked over.

That said, decorative lighting looks lovely, but choose one designed for children and position it so that there are no trailing flexes.

You may choose to keep walls plain, or make them the focal point of the room in the form of a specially painted mural - an internet search will produce plenty of companies that will create one for you, but be careful that it won’t date. Alternatively, use framed pictures, removable stickers, artists’ canvases painted in bright blocks of colour, a camouflage net, flags, maps, blackboard or magnetic paint, or an entire wall of goodlooking storage.

Colour in the Cold February holds the promise of spring in often in cold and frozen conditions so plants have to be tough to flower.

February is known as the snowdrop season so try and take time out to visit local woodland or some of the gardens with drifts of snowdrops and other early flowering bulbs. Rode Hall in Cheshire has snowdrop walks from 4th February to 5th March, Dunham Massey has a large winter garden with snowdrops and is open daily then there is Chirk Castle with the display of drifts of snowdrops in the woodland.

Other bulbs to look out for are the tiny Scilla or Chionodoxa with their dark to light blue star shaped flowers. They would do well planted with snowdrops and the winter aconite Eranthis hyemalis with their rich buttercup yellow flowers. Dunham Massey gardens plant drifts of the bulbs mentioned above and add the short Iris reticulata varieties. The blue Chionodoxa with the Iris Katharine Hodgkin peeping over the dead leaves makes a lovely show for early spring.

In addition there are some shrubs that have scented flowers. The small spidery flowers of Witch hazel or Hamamellis come in a number of different varieties.

Some are scented and I would recommend Hamamelis x intermedia Vesna with pale orange flowers. Another classic scented shrub is Daphne mezereum which needs some shelter and does well on any soil but heavy clay soil. The shrub will grow to 1.5 m tall, is evergreen and has heavily scented pink flowers from February onwards.

Lastly the winter honeysuckle, Lonicera fragrantissima smells like summer honeysuckle but the flowers are small. This shrub also likes a bit of shelter and also dislikes heavy clay soil. The shrub doesn’t look much in summer with its twiggy stems but earns a place in any garden with winter scent. Run a summer flowering clematis through it in summer to add colour.

Late February into March is the time to prune dogwood grown for their stems. If your soil is rich and the plants are growing well, you can cut the stems down to a stump about 30 cms tall and new shoots should be produced.

If the plants are spindly, then give them a good feed in March and cut back stems every couple of years.

Lasting Power of Attorney - Fact & Fiction Lynette Viney-Passig – Director and Head of Private Client at Swayne Johnson Solicitors tells us why we’re putting ourselves at risk by not preparing Lasting Powers of Attorney sooner and dispels some myths surrounding the topic.

Many of us think a Lasting Power of Attorney is something that should be done for someone else, whose health and mental capacities have started to fail or, if absolutely pushed on the matter, something we might consider for ourselves, a very long way down the line…

So what is actually fact and what’s fiction?

1. Mental incapacity only affects older people if they have Alzheimer’s disease.

Fact: Accident or illness can affect anyone at any age. Not having a contingency plan for this can have significant consequences for ourselves, our businesses and our loved ones.

2. If there’s an accident or illness, my spouse or children will be able to take over the running of my affairs as they are my next of kin.

Fact: Not automatically. They will need to apply to the Court of Protection and this can be a long and expensive process and certainly far more expensive than setting up Lasting Powers of Attorney.

3. An easy way around this issue would be to add my spouse or children to my bank accounts.

Fact: Banks will often freeze an account (even a joint account) if a person does not have the mental capacity to deal with their finances unless legal authority has been granted through a Lasting (or Enduring) Power of

Attorney or an order from the Court of Protection.

All adults should have Lasting powers of Attorney but you are even more at risk if you have assets (houses, land, accounts, investments) in your sole name or if you own a business.

The truth is, accident or illness can strike at any time and we need to be prepared. If we are not, it will be left to our family and loved ones to pick up the pieces at what will already be a very distressing and difficult time.

You can make Lasting Powers of Attorney now – just speak with a qualified legal advisor. Joint pain can cause severe mobility problems that take away your pet’s joy for life, but it’s not just older animals that suffer in this way. Genetic issues such as hip or elbow dysplasia in dogs, or an old injury, increase the risk of them suffering from arthritis.

What to look out for It’s fairly easy to spot the signs of arthritis in dogs, simply because they are in your company more than a rabbit or a cat, for example. These are some of the indicators to watch out for: • • • •

Stiffness when your dog gets up, or after a walk.

They walk with a limp.

Your cat’s reluctance to jump on your knee.

Your rabbit being less inclined to run around its cage.

It can be particularly difficult to notice the signs of arthritis in a rabbit, as one of the ways they survive in the wild is to move less when they’re injured, so as not to appear vulnerable.

Is there anything you can do to prevent joint problems in your pet?

As far as puppies are concerned, it’s important not to over-exercise them while their bodies are still developing. Being overweight will also have a huge impact on your pet’s joints, so watching food intake is a key factor.

The vet may prescribe an antiinflammatory if your pet has severe joint pain, or glucosamine and chondroitin, as these are supplements known to help with mobility.

Jaguar I-Pace all-electric 2018 car ELECTRIC cars have been held back by miserable 100 mile limits but that’s all about to change next year with a Jag that can fully charge in 90 minutes and travel 310 miles on just a two hour burst.

Called the Jaguar I-Pace, it can be ordered now and will be able to top 200mph as well as get to 60mph in a sizzling four seconds, and be in the showrooms by 2018, at a cost of £60,000 plus PLUG INTO 240V MAINS But what a radical vehicle it will be, with major cities considering banning diesels in the near future. And it will cause a governmental rethink at the massive revenue loss if long range plug into the mains, all electric cars catch on.

BUT IT’LL COST £60,000 The launch date puts Jaguar in direct competition with Audi that is planning a production version of its allelectric Q6 e-tron Quattro concept. Both vehicles are set to boast a rapid recharge and a range of above 300 miles at a cost of about £60,000.

Eating Disorder Eating disorders affect over 725,000 people in the UK and one in five of those most seriously affected die prematurely through suicide or physical consequences. That’s why it’s essential we’re all aware of the dangers of eating disorders and our susceptibility to them.

Forget the stereotypical teenage girl starving herself.

There are several different eating disorders that can affect people of any age, gender or ethnicity.

What Causes Eating Disorders?

Often, it’s a combination of genetic, psychological, environmental, social and biological factors. Risk factors are: • Bereavement or abuse.

• Being criticised about weight.

• Intense stress.

• Family history of addiction, depression or eating disorders.

• Pressure to be slim from themselves, society or a career/hobby, e.g. dancing, sports.

• Underlying issues such as anxiety, low self-esteem, perfectionism or obsessive personality.

• Relationship issues.

Types of Eating Disorder Anorexia Nervosa Around 1 in 250 women and 1 in 2,000 men will experience anorexia, becoming preoccupied with weighing as little as possible via excessive exercise and/ or starving themselves. It usually develops at age 16 or 17 but sometimes, as young as 7.

Bulimia Bulimia sufferers alternate between binge eating and purging by inducing vomiting or using laxatives, and 90% are female. It’s more common than anorexia and usually develops at around 18 or 19.

Binge eating disorder (BED) BED affects around 5% of adults, compelling them to eat large amounts of food very rapidly. It affects both sexes equally, usually developing between 30 and 40 years old.

Eating Disorder Not Otherwise Specified (EDNOS) Some people may have some but not all of the symptoms of a specific eating disorder, so they receive an EDNOS diagnosis.

Diagnosis and Treatment Doctors and healthcare professionals use internationally agreed criteria to diagnose eating disorders, normally

using the Diagnostic and Statistical Manual of Mental Disorders (DSM) or International Classification of Diseases (ICD). They ask patients about their weight, self-image and relationship with food.

But how do you know someone needs to be referred for diagnosis?

Often, people with eating disorders will be in denial or try to hide symptoms, but they may: • Skip meals or claim they’ve already eaten/will eat when they’re out.

• Only eat tiny/low-calorie meals.

• Claim they’re fat when they’re a healthy weight/ underweight.

• Repeatedly weigh themselves/study themselves in the mirror.

• Cook large family meals yet eat little themselves.

• Refuse to eat in public or become stressed when they do.

• Use ‘pro-anorexia’ websites.

If you suspect you or someone else has an eating disorder, get professional help immediately. Rapid treatment makes full recovery more likely and minimises the impact on the patient’s body and life.

However, recovery can be lengthy and, like the disorders themselves, complex.

Physical health is monitored while the disorder’s underlying causes are treated. This may involve: • Self-help books.

• Cognitive behavioural therapy (CBT), aiming to change thinking and in turn, behaviour.

• Interpersonal psychotherapy: a talking therapy focusing on relationship issues.

• Dietary counselling.

• Psychodynamic therapy or cognitive analytic therapy (CAT), focusing on how personality and life experiences influence thoughts and behaviour.

• Family therapy, considering the eating disorder’s effects on them and their family.

• Medication: often SSRI antidepressants (selective serotonin reuptake inhibitors).
