Welcome! Well, hello there gingerbread lovers from near, far and wide! Since we last met, a lot has changed in the outside world; restrictions seem to have almost eased completely, allowing businesses to open their doors and welcome their customers back again. Summer is around the corner, so we thought it’s only right to discuss summer preparations and what the preparations entail. For those of you who love to get your hands dirty, we also share a Gingerbread Scone recipe; divine, delicious and a true delight to devour. In this issue, we have featured something new and exciting; our Supplier Showcase, where we sit and talk to one of our fantastic friends about their business. Happy reading, folks!

Let the Preparations Begin! Who’s ready for summer 2021? We certainly are! It’s that time of year already; we’re here preparing for the summer months as the nights get much lighter and the days get satisfyingly warmer. We cannot wait for summer this year, particularly now that the outside world is beginning to resume back to some form of normality. From meeting more than six people to travelling abroad as the green light list begins to unfold, there is a sense of confidence, happiness and sheer excitement on the horizon - how truly wonderful is that? May and perhaps June too is a time for preparations (if we’re honest, we started preparing in April when we experienced that first spot of sunshine); a time for arranging what is yet to come for the months ahead. Most of us across the nation have visited garden centres galore to rejuvenate our outdoor spaces. Ornaments, plants, water features and dining sets; we’ve all prepared for those days and evenings in the great british outdoors. Whilst strolling through the aisles of the garden centres, socially distanced and wearing masks, we imagine the day that more than six people can mingle in our soon-to-be refreshed and reinstated gardens. We think about the warmth of not only the summer days, but the warmth of hugging our friends and families. As we decide between the bistro sets and the rattan sofas,

we ponder the moments of sharing great stories with those we haven’t seen in months. Laughter, smiles, tears of joy - those are the feelings that we cannot wait for. Preparations for the summer also include the planning of trips away, whether that be for a day out, a weekend getaway or a weeklong adventure. Many of us have developed a newfound sense of respect, admiration and appreciation for what the UK has to offer during the most unprecedented year or so of our lives. Whether it’s a hiking getaway, a coastal break or a beautiful break in a city; the restrictions and opening up of society has left us all planning our next adventure. Whilst we seek and search for secluded cottages, luxurious hotels and quaint homes, we also imagine the great times ahead - a summer to

remember, where fond memories are made with our loved ones. We look forward to getting away and walking through the doors of local cafes where the smoothest coffees are produced, accompanied by biscuits, cakes, pastries and all things scrumptious. For those independent shops, pantries and food halls, we are filled with excitement to take a tour of your stores, discovering what delicious delicacies can satisfy our taste buds and stomachs. From the freshly baked goods to the beautifully packaged hampers, please do await our arrival as we prepare for a summer celebrating the brilliance of what Britain has to offer. As people all around us prepare for a summer of antics and adventures, businesses across the country are preparing for their arrival. Air bnbs, coffee shops, cafes, restaurants, hotels, retailers, attractions and much, much more are longing to see your faces and experience your presence once again. For us at Hawkens Gingerbread, the summer months are easily one of our favourites for various reasons; one being that we are blessed with the opportunity to showcase our moreish gingerbread creations to millions of people across the UK’s most visited destinations. We are busy baking all-year-round and although nothing beats the exhilarating chaos of Christmas, summer is certainly up there with one of the busiest periods for the bakery…

without a snack for their adventures; we are all hands on deck (or shall we say the kitchen top) to bring biscuits lovers and foodies alike the real taste of gingerbread. Picnic season is also fast approaching, so we look forward to providing families and friends with a bite or two of our artisan biscuits. We may just be gingerbread bakers, but we like to think that we are memory makers too. This summer, we cannot wait to be a part of everyone’s memories and stories that will be talked about for many more years to come. So, let the preparations begin… ready, steady BAKE!

Gingerbread Scones Recipe Something light and delicious for your taste buds

Ingredients

Method

2 cups all-purpose flour

3 tablespoons brown sugar

2 teaspoons baking powder

1 teaspoon ground ginger

1/2 teaspoon salt

1. Preheat oven to 400°. In a large bowl, whisk the first 7 ingredients. Cut in butter until mixture resembles coarse crumbs. In another bowl, whisk treacle, milk and egg yolk until blended; stir into crumb mixture just until moistened.

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 cup cold butter, cubed

1/3 cup treacle

1/4 cup 2% milk

1 large egg, separated, room temperature

Coarse sugar

2. Turn onto a lightly floured surface; knead gently 6-8 times. Pat into an 8-in. circle. Cut into 12 wedges. Place wedges 1 in. apart on a greased baking sheet. 3. In a small bowl, beat egg white until frothy; brush over scones. Sprinkle with sugar. Bake golden brown, 12-15 minutes. Serve warm.

Tell us more about The Mouse House Cheese & Hamper Co., where are you located? How long have you been serving your community? Mouse House was formed in 2018 by Mother and Daughter team- Erika & Mollie. We produce and sell Lincolnshire cheeses produced on our family’s farm. We have over 30 different flavoured cheddars produced on our farm. We also have created a wide selection of gifts and hampers perfect for any cheese lover or food enthusiastic.

What do you love most about your customers?

however our customers always love the Traditional Grantham Gingerbread… you can’t really go wrong with any of Hawkens range.

We love the passion our customers have for great tasting produce. They support our small business as well as our suppliers, who are local or small business.

I love anything sweet- it is my biggest sin! Chocolate, Cake…. You name it, I eat it. Other than stocking our gorgeous gingerbread, what other delicious foods do you stock that our gingerbread lovers will enjoy?
