Welcome! Well, hello there sunshine! Summer is here and so are we, for every single moment of it! Days away from the ending of restrictions; moments away from gathering with all of our loved ones and seconds away from reading what this summer means for all of us at Hawkens Gingerbread and beyond! In this summer edition, we explore all of our summer loves; we bring you the tastiest ginger cheesecake recipe; we provide you with our summer must-bakes and we’ve even got something for the kids! Happy reading to all of our Gazette readers and we wish you the best summer you’ve ever had!

SUMMER LOVING, HAVING A BLAST! T
here’s so much to love about summer, there really is, but last year it wasn’t the same - let’s face it. This year however, summer of 2021 is looking brighter than ever! July 19th will see restrictions completely lifted, meaning more freedom and fun for us all with our family and friends. Surrounded by our loved ones, great people, great food and great times are to be had this summer; you better believe that summer loving is on the horizon and of course, we will be having a blast. To explore what the nation has to offer and for some of us, some time overseas will do us some good too! We anticipate the days we are able to set off for our travel, when we are able to plan a family outing with our immediate and extended family, regardless of the numbers. But most importantly, we are so looking forward to spending some quality time with those around us, worry-free (to an extent) and making those fond memories that we will forever cherish in our dear hearts. Gone are the days where only a handful of people could meet to sit down and natter, gone are the days where we ponder whether we are breaking the rules. Freedom at last; families and friends can now enjoy one another’s presence without the painful thought of ‘who have we missed out?’
Oh we’re excited, we’re excited indeed! Summer is officially here and we cannot wait to spend this season freely with our loved ones!

We can now breathe in the summer air with relief, with happiness and with such joy. No matter how big or small, businesses will boom this summer and welcome visitors from all over the country, doing what they do best - serving their customers, satisfying their desires and tending to their requirements. Although our gingerbread bakery doors have always stayed open throughout the pandemic, the summer of 2021 brings us significant opportunities with our stockists now being able to open their door completely. The term ‘busy’ has always been a part of our vocabulary, but now more so than ever. As the UK prepares

for its freedom, so do our gingerbread production team. From stocking the shelves of convenience stores, to ensuring attractions across the country are always ready to serve their visitors with a bite of quality gingerbread. Garden centre food pantries are preparing for customers who seek luxury, artisan foods for their family gatherings; we look forward to our gingerbread being chosen as a light lunch-time treat. Coffee shops are preparing for coffee connoisseurs to make an entrance; we look forward to our gingerbread being dunked into their chosen hot drinks. Independent retailers are hopeful of a successful summer of sales; we look forward to our gingerbread being placed into the baskets of foodies. What’s summer without picnics? Huge family outings are never complete without a picnic; who’s bringing the sandwiches; who’s bringing the savoury snacks; who’s bringing the fruit (fresh strawberries of course); who’s bringing the mouth watering lemon juice and last of all, who’s bringing the gingerbread to cleanse the palate? Picnic season beautifully coincides with the lifting of restrictions during summer of 2021, meaning that we can gather with all of our family and friends whilst enjoying the great outdoors. The greatest picnics have the most delicious foods, a mixture of savoury and sweet, finished off with a cold glass of your favourite. But one food choice that will always stand out for picnic lovers is our gingerbread, whether that be our Grantham Gingerbread or our Gingerbread Men. This summer, picnic lovers can now enjoy a carton or two of our Gingernuts, launched late last year. Picnics, you’ve got to love them, especially now that we have the freedom to enjoy them with whoever, no matter how small or big the size of the picnic party.
We can now pour those drinks (a flavoured gin for us) for our guests and truly immerse ourselves into an evening of joy and laughter. How about dining out with more than just six food lovers, never having to worry about who’s ‘missing out’ or longing for the company of your other family and friends? Booking a table as big as half of the restaurant; eating the foods we love the most and unbuttoning our buttons on our jeans to make room for pudding. How about the weddings of our loved ones? Watching true love blossom, smiling and shedding tears of happiness with our close ones. All of these summertime favourites are what we look forward to the most; the feeling of togetherness, the feeling of warmth and the feeling of being united for freedoms that we have longed for for many months. Whatever you’re doing this summer, we hope that you have the best time, make the fondest memories and truly have a blast! For us, it’s back to the bakery to ensure your taste buds are fulfilled throughout the summer months!
How about those garden parties? Those parties that we can now appreciate and finally use the outdoor bars we created during the first lockdown in 2020!

Tantalising Triple Ginger Cheesecake Recipe Summer without cheesecake is a summer not worth having!
Ingredients
Method
200g of our Hawkens Gingernuts
1. Whizz together the biscuits or crush in
100g unsalted butter
400g full-fat soft cheese e
50g icing sugar
bottomed round cake tin. Chill in the fridge
Juice of ½ a lemon
while you make the filling.
1 tsp ground ginger
100g greek yoghurt
50g of crystallized ginger, chopped
over the base, then smooth the top with a

Easy Peasy Gingerbread Men Recipe Summer holidays are around the corner, so let’s keep those kids occupied with a simple-to-follow gingerbread men recipe!
Ingredients
Method
350g plain flour
1. Preheat oven 190’C/Gas mark 5
2 tsp ginger, ground
2. Put the flour, ginger and soda into a bowl
1 tsp bicarbonate of soda
100g butter
175g soft light brown sugar
1 egg
4 tbsp golden syrup
and rub in the butter 3. Add sugar and stir in the syrup and egg to make a firm dough 4. Roll out to about 5mm thick and cut out your gingerbread men 5. If you don’t have a gingerbread man cutter then use whatever you have - stars and hearts are just as tasty 6. Put a sheet of baking paper on a tray and evenly space out the biscuits, bake for 1015 minutes until golden brown 7. Leave to firm up for a couple of minutes before placing on a wire rack to cool 8. Once cooled, decorate with icing if desired 9. Makes approximately 20 biscuits
