Cooking With Chef Ramos/9
SalsadeMolcajete
DIRECTIONS
INGREDIENTS
6 Roma tomatoes, whole, stems removed
2 tomatillos
1 medium onion halved, skin on
2 – 3 serrano chiles whole
3 cloves of garlic, skin on 8 sprigs of cilantro
juice of 1 lime
salt to taste, add more than you think you need
Heat a cast iron pan over medium-high heat. Add all the ingredients minus the lime and the cilantro. Char the vegetables on all sides, so you'll need to flip them constantly. The garlic and peppers will be done first. Remember to char, not burn them. Set them aside. Continue to cook the remaining ingredients until soft & pliable. When done, remove the skin from tomatoes, peppers, garlic and onions. Combine all ingredients including cilantro and lime juice in a blender or use a pestle and mortar Pulse the salsa to achieve a rustic texture. You can also do this in a blazing hot oven on a baking sheet. Just keep an eye on the smaller ingredients because they will burn

Suzanne Priest dropped a big birdie putt in her first WGA Scramble helping her team win with a 33 on August 17. Her teammates Jennifer Grove, Kristie Robson and Paige Sciantarelli edged Kay Hoffman, Alisa Kennedy, Carol Blackmar, Sarah Smith and Sacnicte Trevino by a stroke.
Priest recently joined CCCC after moving from Virginia. She works for the Department of Homeland Security following a military career.
Her birdie putt from 20 feet on #8 had about a 3-inch break left to right, she said.
"The ladies are super sweet, welcoming and really nice to play with," Priest said. She's played tournaments with the Pinehurst, N.C.based Veteran Golfers Association. "They compete all over the country," Priest said, adding they've played courses like Baltusrol and Trump National in Washington D.C.

The golf course received almost 4.5 inches of rain from the tropical storm, ending a 77-day drought from the last measurable rainfall. No trees were lost and only a few large limbs were broken, with plenty of small debris cleaned up over the last few days. Most bunkers were able to be repaired by the end of day Wednesday and are back open for play.
