1/4 cup dry white wine

2 tbsp. white wine vinegar, plus more if needed

One medium shallot, finely minced

1-1/2 sticks cold unsalted butter, cut into 1/2-inch pats

Kosher or sea salt

Freshly ground black or white pepper

DIRECTIONS

Inasmallsaucepanheatwine,vinegarandshallotovermediumheatuntilsimmering.Cookata simmer,swirlingandstirringoccasionally,untilliquidisalmostfullyevaporatedandonly1or2 tablespoonsremain.

Workingwithafewpatsofbutteratatime,whiskbutterintoreducedwinebase,whisking constantly,untiljustmeltedandamilkyemulsionforms.Immediatelyadd2or3morepatsof butterandcontinuetowhiskuntiljustmelted.Repeatthisprocessuntilalltheremainingbutter hasbeenmeltedintothesauceandastableemulsionhasformed.Seasonwithsaltandpepper. Serveimmediatelyorholdinawarmwaterbathforlaterusethesameday
