2/General Manager's Letter

Members: We’ve had a very good holiday season. I wanted to celebrate our Employee of the Year, Raul Irujo. Raul is our House Maintenance Director and does an incredible job keeping the club running and everything in working order. He does so much behind-thescenes work that he truly deserves the award. We presented it to him at the Employee Appreciation Party Monday, December 11th. We have so many great staff members and greatly appreciate all their efforts. We also paid out the Employee Christmas Fund yesterday, contributed to by the Members. Congratulations again to Raul and thank you to all of the staff who make Corpus Christi Country Club special.

“Whenever you enter the kitchen Ruben will be one of the first people to greet you with a smile,” said Chef Harold Ramos. “He is always available to help and has proven to all what hard work and dedication amounts to. In a short period of time he has risen up the ranks to lead sauté cook.”

“Jay has been with us for more than two years now,” said Course Superintendent Seth Smith. “He quickly developed a passion for the golf course and presenting the best product for the members. Whenever you see Jay, he is quick to give you a smile and warm welcome to lighten up your day.”

Ruby Alfaro Ten years of service “We congratulate Ruby for ten years of service,” said Carlos Mendez, Food & Beverage Supervisor. “Ruby shows great leadership skills, high energy, never hesitates to go above and beyond expectations. When you feel times are a bit rough, visit her at our Pub Bar, she’s a great listener and problem solver. We enjoy having her as a co-worker, friend and a mother figure for some of our younger staff. We thank her for all her hard work!

Coquito — Puerto Rican Eggnog Coquito (little coconut) is a holiday tradition in Puerto Rico. Similar to egg nog, but with sweet coconut & rum, this recipe is straightforward & delicious. It does not require eggs. It’s a holiday favorite in my family & hopefully it will be one in yours. Yields about 50 ounces.

INGREDIENTS 15-oz. can coconut cream 14-oz. can sweetened condensed milk 12-oz. can evaporated milk 12-oz. white rum or to taste 1 tsp. coconut or vanilla extract 1/4 tsp. ground cinnamon 1/4 tsp. ground cloves 1/8 tsp. ground nutmeg Ground nutmeg, ground cinnamon or cinnamon sticks for garnish

DIRECTIONS Combine all ingredients — minus the garnish — into a blender & process until smooth. Refrigerate & allow the flavors to develop for an hour or more. Serve chilled & garnish with the nutmeg or cinnamon. Keeps in refrigerator for at least 5 days.

SETH SMITH/ GROUNDS SUPERINTENDENT More Traqmatz was installed at the fairway exit of Hole #1 this past week. It will remain roped off to allow the sod to establish. Many other Traqmatz areas around the course have now established and the rope has been removed to allow for cart traffic.

Step 3: Fill out the form, click on Make Reservation.

Step 2: Go to the day you want, find the court and time you want, then click on it.

On the app: Open our app, click on Tennis Reservations, find your date, court, fill out the info and click on Make Reservations. You'll get a notification on the app confirming your reservation.
