2/General Manager's Letter Members: It was a chilly and wet week but the course received some much-needed rain. The weekend forecast looks great. Congratulations to our first Employee of the Month for 2024, Ma-lia Perez for January. Be sure and get your Super Bowl To Go items ordered by Feb. 7 at noon and don’t forget Valentine’s Day Dinner/Dance is coming up so please get your reservations in by Feb. 8.

3/Employee of the Month

Multitasker Ma-lia Perez is January Employee of Month Ma-lia has been a server in the Grill and Pub, but over the last few months has also worked as the Club receptionist when the receptionist left for maternity leave. Ma-lia jumped right in and started helping. She’s always in a good mood and has done a great job. Ma-lia would come and work days as receptionist and evenings as a server ... always with a positive attitude. Thank you, Ma-lia!

Béarnaise Sauce ... makes 1 3/4 cup INGREDIENTS ½ cup dry white wine ¼ cup white wine vinegar 4 sprigs tarragon, leaves finely minced, stems reserved separately 1 small shallot, roughly chopped ½ tsp. whole black peppercorns 2 egg yolks Kosher salt 1½ sticks (12 tbsp.) unsalted butter

DIRECTIONS In a small saucepan over medium heat combine wine, vinegar, herb stems, shallots & black peppercorns. Bring to a simmer & lower heat to maintain a gentle simmer. Cook until reduced to about 1½ tablespoons of liquid remain. Carefully strain liquid through a fine-mesh strainer into a small bowl, pressing on the solids with the back of a spoon to extract as much liquid as possible. Combine wine reduction, egg yolk & a pinch of salt in the bottom of a cup that barely fits the head of an immersion blender. Melt butter in a small saucepan over high heat, swirling constantly, until foaming subsides. Place head of immersion blender into the bottom of the cup with the wine reduction and turn it on. With the blender constantly running, slowly pour hot butter into cup. It should emulsify with the egg yolk & wine reduction. Continue pouring until all butter is added. Season to taste with salt. Whisk in chopped tarragon.

SETH SMITH/ GROUNDS SUPERINTENDENT

The golf course received 3.2 inches of rain over the last week. The drainage installation process was stalled but will continue next week. We were able to start trimming smaller palm trees this week and will continue with larger ones next month.

Here's how to make online court reservations using our website or app Step 1: Login to the Club's website. You'll come to the member home page. Put your cursor on tennis and the drop-down menu will appear. Click on Tennis Reservations.

Step 3: Fill out the form, click on Make Reservation.

Step 2: Go to the day you want, find the court and time you want, then click on it.

On the app: Open our app, click on Tennis Reservations, find your date, court, fill out the info and click on Make Reservations. You'll get a notification on the app confirming your reservation.
