Chef Ramos

Colombian Sofrito Yields one pint

INGREDIENTS 4 tbsp. olive oil 1 large onion, minced 3 cloves garlic, minced 4 green onions, finely sliced 1 green bell pepper, minced 3 ripe tomatoes, halved 1/4 cup chopped cilantro Juice of 1 lime 1 packet of Sazon Goya Salt & Pepper to taste

DIRECTIONS In a sauté pan over medium heat combine the onion, green onion & bell pepper. Cook for 5 minutes to soften but not color. Add the garlic & cook until fragrant. Take the halved tomatoes and grate them into a bowl with a box grater. Discard the skins. Add the grated tomato to the pan and continue to cook until the liquid has evaporated. Season with the Sazon Goya, salt & pepper. Remove from the heat & add the cilantro & lime juice. The sofrito is now ready to add flavor and depth to your soups, stews, beans & rice. The sofrito will hold in the refrigerator for 5 days. Or freeze it for up to three months.

Contrast between #1 fairway vs. driving range.

#10 fairway.

The golf course held up well to the freezing temperatures, and I am still impressed with the color retention of the TifTuf fairways compared to older bermudagrass varieties. The grounds team was able to complete a drainage project in #3 fairway, as well as one the right side of #2 fairway this week.
