Tepache

INGREDIENTS

4½cupswater

½cuppiloncillo,orbrown sugar

1ripefreshpineapple 1cinnamonstick

DIRECTIONS

Combine the water & piloncillo or brown sugar in a pot or 2-quart mason jar

Stir to dissolve the sugar or piloncillo with a wooden spoon. Break the piloncillo up as it softens.

Remove the crown from the pineapple & discard it

Rinse the outside of the pineapple & peel off the skin. Place the peeled pieces of skin in the pot with the sugar & add in the cinnamon stick. Dice up the pineapple into large cubes & reserve them for another use. Reserve the fibrous core & add it to the pot with the pineapple peels. Stir to combine & then cover with a clean dish towel.

Set it on the kitchen counter at room temperature. Check the tepache after 24-36 hours. You should see some activity A frothy white foam on the surface If there Is no activity let it sit for another day. Strain the tepache through a fine strainer or cheesecloth. Dilute & sweeten the tepache as you like. The result is a slightly effervescent & 2-3 percent abv (alcohol by volume) beverage.
