STEAK AU POIVRE Ingredients Steak au poivre

Press the cracked peppercorns onto both sides of each steak. Put a baking tray or large plate in the oven and turn it to a very low setting ready to keep the cooked steaks warm later

4 fillet steaks, each weighing 175g 2 tbsp of black peppercorns 2 tbsp of green peppercorns 3 tbsp of sunflower oil 75g of unsalted butter 1ml of brandy 1 tbsp of double cream 8 tbsp of stock salt

- 4 fillet steaks, each weighing 175g

Method

- 3 tbsp of sunflower oil - salt

Crush the peppercorns together using a pestle and mortar or a coffee grinder. Tip the pepper into a sieve set over a bowl and shake well to remove all the powdered pepper. In this recipe you want to use the cracked pepper left in the sieve; save the powdered pepper for seasoning other dishes - 2 tbsp of black peppercorns - 2 tbsp of green peppercorns

Heat the oil in a thick-bottomed frying pan over a medium heat. Season Once it is hot, season the steaks with salt and pace in the pan until a golden crust is formed. Turn the steaks and cook for a further 2 minutes. If you require your meat cooked further, turn the steaks and continue cooking but resist turning them too often

Remove the steaks to the warm baking tray or plate and place in the oven Add two-thirds of the butter to the frying pan and allow it to melt and turn nut brown in colour. Add the brandy, being careful in case it ignites. Bring to the boil and deglaze the pan, stirring to scrape up any bits from the bottom. Add the cream, plus the stock and bring to the boil - 50g of unsalted butter - 1ml of brandy

- 1 tbsp of double cream - 8 tbsp of stock Place the steaks on warm serving plates. Add the remaining butter to the sauce and whisk to combine. Strain the sauce if you wish. Pour it over the steaks and serve with a side of your choice 25g of unsalted butter BUY FROM YOUR LOCAL BUTCHER

Remembrance Parade, Wetherby The Wetherby community will join forces on 13th November to pay their respects to the country's fallen heroes.

The traditional parade, lead by Wetherby Silver Band, will march from Wetherby Town Hall around 10:30am collecting at Bridge Foot for a two minute silence at 11am.

There will be a service held at St James Church following the parade.

When a person goes missing there are huge repercussions for the family and friends left behind. Where are they? Has anything happened to them? Why would they do this? Could I have done more? The unanswered questions place a huge burden on loved ones. In addition to the emotional upheaval, there are legal and practical issues which need to be resolved at a time when sitting down and raking through paperwork is almost inconceivable. Many people are placed in the terrible position of having to explain to banks, mortgage providers, utility companies and the like that their loved one has gone missing only to find that, whilst the institution may have huge sympathy for them, legallyspeaking, their hands are tied and the finances and affairs of the missing person enter a strange period of limbo. Family and friends are faced with watching their loved one’s life unravelling in their absence, with direct debit payments continuing for unused mobile phones, houses standing empty, possessions gathering dust and are powerless to stop it. The current law, the Presumption of Death Act, allows the High Court to grant a Certificate of Presumed Death but the burden

of proof on an applicant to prove that their missing loved one is likely to be dead is high. The missing person must have been missing for in excess of 7 years, or for less than 7 years if there are extenuating circumstance, such as if they went missing during a natural disaster or inside a burning building. Various bodies, in particular the charity Missing People, have recognised the intolerable strain that the current law places on those left behind and have lobbied tirelessly for the introduction of new laws to allow a relative to step in when a person goes missing. Under the proposed new laws a relative, or a person with ‘a sufficient interest’ in the missing person’s Estate, will be able to apply to be appointed as the missing person’s Guardian. They will have the power to manage the finances and affairs of the missing person, with a view To safeguarding the life that they hope their loved one will soon return to.

Peter Lawrence, the father of missing York chef Claudia Lawrence, welcomed the announcement in 2015 by the MoJ and said: “I am pleased that the government supports the role of guardian and will now start to prepare legislation to introduce it. I trust that the next Parliament will prioritise this new legislation so that families who have been waiting for so long for this new law will be able to look after their missing loved one’s financial and practical affairs.” Here at Hartlaw we hope that the government will take notice of Mr Lawrence’s words, and those of the families and friends of the hundreds of missing people across the UK, and move to enact these new laws to give vital assistance to people facing an uncertain future without their loved one.

Principal Fitness talks fat loss I wanted to talk a little bit about training and what is the best method of training for fat loss. Now if you have heard me talk before or have seen some of my previous blogs you will know that I am a big fan of resistance training for fat loss. The main reason for this is that it is much more effective at burning calories in the long run. By building lean mass we are going to create a body that is much more efficient at burning energy at rest. This is because muscle mass needs more calories to maintain. In short you are going to increase your metabolism every day even when you are at rest. If we are talking about the actual session what we are looking at is not so much how many you calories you burn during the session but at how much you burn after the session. This is what we refer to as the after burn effect. A lot of people when they go to the gym will focus on what the machine says they have burned during the session, what will get us the best results will be focusing on what

we can burn after the session as your body recovers. A well planned resistance session is much more effective at creating an after burn effect than some other forms of exercise. This means that you will be burning calories for up to 48 hours after exercise. Of course you’re not going to get this is you casually perform a few bicep curls every now and again. The training has to be intense enough to force your body to adapt and change. Don’t get me wrong cardio is still a good way to burn off some excess storage but a combination of resistance and cardio is a must for fat loss.

PLASTERBOARD

Lath and plaster is a building process used to finish mainly interior walls and ceilings in Canada and the United States until the late 1950s. After the 1950s, drywall began to replace the lath and plaster process in the United States. In the United Kingdom and its colonies, lath and plaster was often used for interior partition walls and the construction of ceilings, before the introduction of plasterboard in the 1930s.[1] In the U.K.

Photos of a ceiling we have just completed in leeds city centre are now on the website. Due to a water damage from the leaking roof the ceiling was damaged and not safe. Instructed by the client to keep as much distruption and mess down to a minium the decision was made to plasterboard over the existing lath and plaster. All the loose plaster was removed and the lath and plaster was then allowed to dry out and checked for further leaks. The job was then completed using scaffolding towers due to the working height on this building.


Not just ballet Yes, we have ballet shoes. Ballet is probably the style of dance most people (young girls at least) start with and, from what I have seen, pick up again as an adult. Ballet is on people's radar as we all seem to know at least one person who does, or used to do, ballet. If you ask anyone to do a ballet

move, most would give it a go; arms up around their head, hands clasped together, reaching up onto their tiptoes. Wrong, but at least it shows an awareness of the style of sorts. Thing is, there is so much more to dance than ballet, and lots more to dancewear than ballet shoes and tutus. Here in Wetherby we are blessed to have so many styles of dance taught both in the town and the surrounding villages, with both children and adults getting involved in the dance scene.

There is almost no excuse not to dance in Wetherby. In Footloose dance was forbidden. Here, dance is positively encouraged. And so I would like to remind everyone that we cater for many different styles of dance. So whether you do social dancing, tap dancing, modern jazz, highland dance, line dancing or even Zumba, chances are we have something for you.
