STROGANOFF STEAKS

COOK: Easy READY IN: 25 mins SERVES: 2

Ingredients

Method

1 onion, sliced

Fry the onion in the butter in a large frying pan until soft. Stir in the garlic and mushrooms and fry over high heat until browned.

25g butter 1 garlic clove, chopped 200g chestnut mushroom, sliced ½ tsp paprika 1 tbsp vegetable oil 2 x 175-200g/6-8oz sirloin steak 150ml beef stock 142ml carton soured cream

Add the paprika, fry for 30 seconds, then tip into a bowl. Heat the vegetable oil in the same pan, and cook the steaks for 2-3 minutes each side; keep warm. Return mushrooms to pan, pour in the beef stock and bubble fiercely to reduce by two-thirds.

a handful of chopped parsley tagliatelle, to serve

Take off the heat and stir in a the soured cream, parsley and salt and pepper. Serve with tagliatelle.

What inspired you to work in this area? Ever since myself and my husband Tom moved here, I have loved the fact that Wetherby had such interesting independent shops and always thought it was such a lovely place to work. I have always tried to shop and support the local businesses in the area in most things but always struggled to find good quality, individual clothing locally for my son Henry. I had worked for my previous business for 19 years and was juggling my job as a Regional Operations Director and being a mummy to my now 5 year old. I was travelling all over the country, often staying away and working ridiculous hours. I was offered the opportunity to take Voluntary Redundancy last March and after a big soul search decided to leave. I took the summer off and began to structure my plan to bring quality, affordable clothing for children to the area in an environment that works for modern families. We found the unit, met the suppliers and got the ball rolling back in September and haven't looked back since.

'The first time I saw a little girl in the street wearing a dress from doodlebug was a real poignant moment for me.' What sort of challenges do you face? As any new retailer, I need to get the message out about our lovely shop. Customer feedback has been fantastic so far however we need to increase our footfall dramatically! I also need to encourage people to shop locally for children clothes and not just reach to order online. The brands I stock are priced well, are fantastic quality and we have designed the shop with a breastfeeding area, small play area and a little changing room to be able to try on clothing and help select what they like/don' like! Decoporium welcomed TV presenter, designer and entrepreneur Max McMurdo as they marked their first year of trading. Designed to suit all styles and budgets, Decoporium provides a vast range of interior design ideas sold by individual traders and craftspeople. Honouring their first full year in business, the Thorp Arch-based emporium welcomed families for a day of entertainment and shopping, and an opportunity to meet upcycler Max McMurdo. Armed with a mug of Yorkshire tea, Max spent the afternoon chatting with a variety of traders and exploring their individual work. Speaking to the audience of traders and shoppers, Max was full of praise for Decoporium’s concept.

etherby Farmers’ Market is part of the Yorkshire Farmers’ Market Group which also includes the very popular markets at Otley and Harrogate. All these markets are widely recognised by stallholders and visitors for the variety and quality of their produce. Stalls at Wetherby include jams, honey and preserves, cakes, cheeses, plants, home-made pies, fresh beef, pork & bacon products, chocolates, fruit and vegetables, fish, and an award-winning Indian sauce producer.

For customers who prefer their food to be Gluten free we have a stallholder selling a range of sweet and savoury produce.

Wetherby Farmers’ Market is held on Wetherby Market Place on the second Sunday of every month from 9.00 am to 1.00 pm.

The stallholders are always happy to discuss their products and to help visitors with their choice of purchases. There are lots of opportunities to sample the delicious food on offer.

The next market will be held on Sunday 8 May.

If all that mention of wonderful food leaves you feeling hungry there is a stallholder selling hot hog roast sandwiches or, if you prefer a good old fashioned sausage or bacon butty.

MADÂ ABOUT MACARONS With York Cookery School Challenge was the order of the weekend and there is no greater challenge for me than cooking! Don't get me wrong, whipping up a main course seems to be more in style with my capabilities but throw anything sweet or savory in the oven and well, knocking nails in is the only use for the end result,,,, until now! Invited by York Cookery School to attend their French Macaron class, my first thought was to have York Fire Brigade on standby and B&Q ready to stock my creations. At York Cookery School however, you can indulge in your love of cooking, pick up new recipes and techniques or in my case simply learn how to do it. From stepping in the doors at 9:40am the atmosphere was fun and relaxed. Over a coffee, I was introduced to my 9 fellow student chefs. There was a wide age range and skill set around the table but quickly we all got to know each other before our session started. Our instructor for the day was the lovely Kate Clarkson, who is right at home creating all things sweet, being York Cookery Schools resident cake designer. After a method demonstration by Kate to the class, we were put into pairs. Armed with an apron and instructions it was our turn to cook and we headed to our areas. The process was brilliant with Kate popping round everyone to lend assistance, where necessary, and answer questions.

As the day continued and our French Macarons started to take shape, and after a few 'Bake Off' glances around the room at what everyone else was doing, I can't describe the feeling of self achievement as our shells and ganache actually looked like that of our professional instructor. It was a real moment for me and I didn't hesitate telling my fellow students! Our delicate (yes I made delicate) light, airy, meringue based confectioneries looked outstanding, with an array of rainbow colours fit for any sky. Of course, the proof they say is in the pudding. Rubbish, the proof is in the tasting and 'my oh my' I was in Macaron Heaven. Well done to everyone who attended on the day. I can say without a shadow of a doubt that every flavour was my favourite flavour! Thank you to York Cookery School and especially Kate for turning a 'Can't Cook' into a 'Can Cook'. In fact I had so much fun I will be back to another master class soon.
