PROPER CARE AND FEEDING OF YOUR SEPTIC TANK

To extend the life of your on-site sewage system, save on maintenance costs and protect water quality, make sure you, and people visiting or staying at your home, are aware of the care that goes into a septic system. DO: • Generally, septic tanks should be inspected at least every 5 years by a professional and pumped when required. A septic tank is a living filter that separates scum and solids before it flows into the drain field. Routine inspections can prevent system failures. • Keep accurate records in your house. A diagram of your system’s location and a record of system maintenance is key. • Practice water consumption. The less wastewater you produce, the less strain on your system. It can extend the life of your drain field. • Contact a certified septic technician for help with system problems.

DON’T: • Don’t put fats or grease, drain/toilet bowl cleaners, waxes, motor oils, disposable diapers, coffee grounds, egg/nut shells, filter tip cigarettes, sanitary napkins, paper towels, paints or chemicals into your septic system. They can destroy important bacteria and contaminate ground/ surface water. • Keep traffic off your drain field. The pressure from vehicles or heavy equipment can compact the soil or damage the system pipes. Do not plant trees or gardens near the system. • Grass is the best cover for your septic system. Placing impermeable materials like concrete or asphalt over your drain field prevents oxygen from getting into the soil. • Don’t use a garbage disposal. It adds solids/grease to the system. • Don’t dispose of water from hot tubs (spas) into the system. It can overload and destroy important bacteria in the system. Keep runoff from roofs, driveways and patios away from your system. It could flood the drain field, causing irreversible damage. • NEVER enter any septic tank. Poisonous gasses or lack of oxygen can be fatal. Any work on the septic tank should be done by a professional.

TIM KENNEDY Segmented Woodturner By Dawn Ritchie 16

After 35 years as a professional woodworker, Tim Kennedy is suddenly a phenom. A cabinetmaker by trade, it was in 2010 that Kennedy ventured out on an artisan’s studio tour and came across the segmented woodturning art of Nick Van Bakel in Minesing. “That’s awesome,” Kennedy said. “That’s what I want to do.” Segmented woodturning is an excruciatingly time-consuming art where hundreds to thousands of small pieces of wood are assembled in a pattern and glued up together in rings. The block is then placed on a lathe to form a vessel. It is a mathematical feat to create multicoloured geometric patterns once the excess material is carved away. Vessels are often bowls, urns, vases, candlesticks, spheres and other elaborate sculptures. “There’s zero margin for error in this art,” says Kennedy. “If your angles aren’t correct it doesn’t work.” Kennedy threw himself into research, reading every book and watching every video he could find on segmented woodturning. It took him four years to save up enough money to buy the caliber of lathe capable of the task and in 2014 he began turning out his own masterpieces on his new Oneway 2436 lathe. A natural virtuoso, Kennedy won first prize in his very first entry in a Simcoe Guild competition in the Advanced category. As Kennedy improved he began crafting urns and made a funereal urn for his second cousin who had passed away. When the family took the urn to the funeral home in Toronto, the Funeral Director, who services primarily higher end clientele, immediately contacted him with an order for more. He has since graduated from smaller vessels of 10 inches in height to large vases that are two feet in height and one foot wide and has been recognized by other masters in the art. Kennedy rev-

TRAVEL NEAR OR FAR els in the kinship among these artists, who share every new technique and masterful trick they’ve discovered to take the art form to new heights. Author Malcolm Tibbetts, who wrote a book on the subject, has been an idol of Kennedy’s from the start and now follows Kennedy’s work with great interest. Four and a half years in, Kennedy still rises at 4 a.m. each day and is in his studio in Wyevale by 4:30 devoting hours to his art before beginning his regular workday. And he continues to push the limits, just finishing work on a sculpture that took over 400 hundred hours to create. The sculpture contains 6816 individual pieces of wood, in twelve woodturnings that were then cut apart and reassembled to form a sphere sculpture with rope-like wood formations snaking around it. “There’s only three people in the world doing this sort of work right now,” says Kennedy, who plans to display the sculpture at an upcoming symposium in St. Louis. “What I like is the challenges it presents and the puzzles on how to make it work. How you get the pieces to fit to the visions you start with. It’s not a traditional clamping job, either. You’ve got angles, math, sizes, pentagons, circles.” In fact, so sophisticated was the glue up job, that Kennedy had to make his own special clamps and jigs to achieve the task. His next major goal is to seek a gallery to represent his work. Segmented woodturned sculptures and vases are pricey collectors’ items, favoured by international markets, given the skill and pure intensity of hours required to create them. He made The Iron Skillet a destination well before the recent influx of restaurants. What is the secret ingredient to the success? or style-savvy Wispy Boivin there’s nothing a can of white paint can’t solve. “My husband thinks it’s my fix-it for everything in life,” she laughs. From whitewashed floors to painted-out pianos to vintage white enameled doorknobs, it’s the defining palette of her life. When Christophe and Wispy Boivin bolted from Toronto to seize on their dream of living in the country, they headed north to Collingwood and found a quaint white country farmhouse in Nottawa on 23 acres of land that fit the bill. Chef Christophe opened the Tremont Café, and entrepreneur, Wispy, launched the Press Juice Co. and later, the Press Market, investing their fortunes in the Georgian Bay community. The three-bedroom farmhouse, constructed by Gerschwiler Building in 2009, sported reclaimed doors, vintage hardware, eight-foot ceilings, and a deep covered porch, elements all true to the style of an old farmhouse. But the overall footprint wasn’t sufficiently large enough for this family of five. Wispy especially wanted a space with higher ceilings for a more open experience and additional bedrooms to accommodate each child. An addition was the only answer. The one sticking point was the roof line. It could no longer be contiguous. A modification Wispy was willing to live with. While the main house was clad in wooden siding, the garage had vertical board and batten. Wispy chose to repeat that exterior look for the addition to address the variance in roofline. “It’s an addition. Let it be an addition,” she says. The original builders were brought in to construct the great room with eleven foot ceilings and wood burning fireplace plus three additional bedrooms on the second level. One of the smaller existing bedrooms was transformed into a walkthrough den for the children, bringing the bedroom tally to five.

Next Wispy attacked those pine floors. “They were quite orange,” she recalls. “And I wanted the home to have a few elements that carried throughout the main house.” Although the residence was only a few years old, the builders had installed antique floors upstairs and painted them solid white to deliver an authentic farmhouse ambiance. Aiming for continuity, Wispy decided to strip the main level floors and whitewash them. A week after she saw the finished results, she had the workmen back again to make them even whiter. “We whitewashed everything,” she says. “That’s sort of my thing.” With that clean Scandinavian appearance as a foundation, Wispy then incorporated salvage and vintage furnishings and accessories as her main design element. The builders had already installed salvaged doors throughout that she loved. “The doors are heavy and textured and paneled and it adds so much to the design,” she remarks. “And the antique hardware is phenomenal. They’re all vintage crystal glass, brass or white enamel handles.” Wispy’s favourite item, however, by far, was the unique pocket door in the master’s spa ensuite. “The builder acquired it from an old elementary school,” she says. “It’s got dimpled glass. Very old fashioned and so special.” Salvaged furnishings are a significant design trend today, popping up in pictorial spreads in all of the prestigious architectural and design magazines, but they are nothing new to Wispy. This has been her aesthetic for years. An old parson’s table and plank coffee table populate the great room. Wooden daybeds and benches are layered with hand-dyed Shibori textiles, pillows, and bedding. “I’ve always loved design,” says Wispy. “And had zero training and I’ve always done what I liked. That little farm has had so many admirers. People enjoy the décor.”

Keep your home fixtures looking new Part of her magic is her knack for evolving arrangements. The harvest dining table in the dining room is accessorized with bucket chairs in the winter and redressed with mismatched vintage chairs for the summer. In fact, Boivin admits she has purchased so many vintage chairs from the local salvage boutique that she’s been cut off. “No more chairs for you, I was told,” Wispy laughs. “I cleaned them out.” “Wispy has a great sense of style,” says Elaine Kettlewell of Kettlewells, a favourite haunt of Ms. Boivin’s. “She knows what she likes and knows how to put it together.” But with the new addition, not all are visions of the past. The great room is contemporary, with sharp, clean lines and modern black-framed fiberglass windows. It is the biggest departure from the existing structure and in direct contrast with the rest of the dwelling’s more traditional, smaller white framed windows. “Luckily, the builders had done a black metal front door and black metal garage door,” says Wispy. “So, there was that element and it carried through to the black windows. And it works. The kitchen is cozy, with a nestled in feel. It flows into the dining room and sitting room. It’s lovely and nice but it’s not too high because you can lose yourself in rooms when the ceiling is too high. But now we can retreat to the great room with its high ceilings and a fire roaring. There’s an eight by sixteen-foot window looking out for that big lofty feel.” The kitchen, albeit smaller in size, opens out onto the massive porch, where dinners are often held. “It’s just a great place to dine,” says Wispy. “With the chickens all running all over the backyard. You have a gorgeous view. We built in an Lbench seat for hanging out. It’s just brilliant, even

if it’s raining. And there’s 23 acres off the back. Beautiful walking trails. The great thing is no one can ever build anything behind you. That’s a comfort. The kids go tobogganing down the hills, cross-country skiing, skidooing. You relax, just watching the wildlife… the chickens, bunnies, paddocks, donkeys and horses.” To accommodate this menagerie there are numerous outbuildings. A red roofed two-story barn is so clean Wispy claims she could live in it. At one point, they temporarily installed a full commercial kitchen on the bottom floor with a plan of turning the upper floor into guest quarters. A second smaller barn, painted white with red doors was the original with horse stalls and a hayloft, but the Boivins found that the animals always wanted to be outside, so an exterior shelter was set up at a right angle where they’d be protected from the elements.

The Boivins have since purchased a second 50acre forested property on Pretty River Road and moved into it. They rented out the farmhouse and sold the Tremont Café and Press Juice Co. with the plan to create high-end boutique cabins on the new property. Unfortunately, after a pushback from the NEC (Niagara Escarpment Commission) that proposal was shelved and now they are plotting their next moves. Both the farmhouse and the Pretty River properties are on the market. “If we sell the Pretty River property we’ll move back into the farmhouse,” says Wispy. “If we sell both, we’ll build.” But then again there’s always that other fantasy percolating on the Boivin back burner. Wispy confides that it encompasses a secret yearning for a new adventure, living somewhere out of the country, maybe even in Costa Rica.

When you have eightytwo first cousins, you’re going to need a big dining room table. “My Mum was one of twelve and my Dad was one of six,” says Collingwood homeowner, Donna Gerrits. “I come from a very large family.” By Dawn Ritchie

So, when Gerrits finally decided to take the plunge and move from Aurora to Collingwood she purchased a 4100-square foot home as an empty nester and had a harvest table constructed by Mennonites that could seat eighteen. “It’s a four by nine-foot table but expands to four by fourteen feet,” she explains. “It was built explicitly for this house with chairs and a side hutch with steel hardware.” And a wise investment it turned out to be. The very first year Gerrits moved up, the home was hopping with non-stop visitors. Located a mere three kilometres from Osler Brook Golf and Country Club, on a quiet dead end street, the residence was turnkey when she bought it and required very few modifications. Built in 2012 by custom home builder Steve Young Construction and designed by Michael Brittell Design, it was the builder’s home, painted decorator grey throughout and embellished with architectural mouldings, glass inserts on stairwells, full-sized windows on the basement level and heated flooring. The main level offers handscraped maple hardwood, a wood burning fireplace ensconced within a modern grey brick surround, a spacious office, that could double as a den. A walkout from the dining room to a raised, covered deck overlooks the landscaped yard that even holds a large treehouse for children.

“The way it’s laid out is incredible,” says Gerrits. “It’s truly an entertainers home. The grey palette means you’re not limited to your décor. It flows. The entire main floor is open all the way up to the second floor. And the great room, with its wide-open space is perfect to entertain guests. There are lots of bedrooms. Family and friends come up and everyone has their own space and their own bathroom, in a town where there’s lots to do.” As a highly active person who enjoys biking, hiking, snowboarding and golf, Gerrits praises the prime location of her home. “It’s five minutes to every location. Five minutes to downtown, five minutes to the ski hills, five minutes to the waterfront, golf course and hiking trails. It’s so convenient to do anything you want.” A fully insulated three-car garage with extensive shelving was an important feature for Gerrits to house all the gear required for her guests’ sporting activities. “The whole family, including me, snowboards,” she reports. Gerrits also keeps four extra bikes in there just for guests so they can hit Collingwood’s spectacular trail system, accessible directly across the street. “We can ride to town or the farmers market or to the water. And there’s a large mudroom inside the house to collect coats, boots and hats. My dog’s bed and food bowls are in there too.” To accommodate all this guest action, a sizable kitchen with Bosch appliances was required. The kitchen contains a deep square architectural sink, plenty of easy-maintenance quartz countertops and a blingy backsplash of stainless steel, glass, and ceramic to keep things efficient. A walk-in pantry also offers added storage and an island seats an additional three people. Four things Gerrits did change in the house were the lighting, the great room’s cabinetry, an addition to the exterior deck, and the children’s treehouse. “The treehouse was a bit of an eyesore with plywood siding,” says Gerrits, who had at first considered taking it down. Her children, however, urged her to keep it. “So, I added battens and painted it the same colour as the rest of the house, and agreed to save it,” she says. That minor makeover instantly made the visuals pleasing and complementary to the rest of the property. “There’s furniture in there now for my granddaughter. She uses it and quite loves it.” New fencing was also added by Peak Living and exterior decking off the kitchen was extended across the breadth of the house, enabling a portion to remain covered with hot tub and lounges and the new section uncovered for times when they wanted a little sun. “Peak Living did a fantastic job,” praises Gerrits.

Inside the great room, built-in cabinetry was added on either side of the wood burning fireplace by Premier Kitchens in Collingwood. The wood burning fireplace was another must for Gerrits when she was property-shopping. “I really prefer a natural wood fire,” she says. “I like the smell and the sound.” On the left side of the fireplace you’ll find a handy bar with two beverage fridges underneath with cabinet storage above. The right-side houses firewood storage and all entertainment equipment. Georgian Audio was brought in to install a Sonos Surround System that services both the interior and exterior of the residence so music can be enjoyed while outside on the deck or in the hot tub. Gerrits also took on the lighting, changing the fixtures throughout, including the exterior lighting under the covered deck. Only the fans remained original, which Gerrits appreciated for how quiet they were. The new lighting, which has a slightly more rustic tenor, was sourced from the Georgian Design Centre, the same supplier from where the fans had originated. “I have an eclectic style when it comes to furnishings,” says Gerrits. “I’m a little traditional mixed with modern. People say it’s a Restoration Hardware look.” Artwork throughout the home are treasured original pieces from her family. “I come from a family of artisans,” Gerrits explains. “There’re oils, pottery and wood turnings. Many functional pieces. People often ask me where I got my art. ‘Where can I find that?’ I tell them, My mother, cousin, aunt, sister, uncle, dad,” she laughs. “They were made for me and given to me by my family. I brag about them all the time. They’re a sense of pride.”

Four are located here, but the master takes up the lion’s share of the footprint, with enough floor space to support a king-sized bed, lounging TV area and separate hideaway den for reading, which could in future be transformed into a walk-in wardrobe area. The master’s ensuite is equally impressive with spa shower, deep designer soaker tub and double sinks. “The vanity is enormous,” Gerrits says. “So much storage.” Gerrits asked Scott Hundermund of At Home interiors in Collingwood to come in for a consultation and assist her with bedding, mirrors, lamps, and art for the space. “I had the furniture already, but he was really helpful in pulling together the look,” she says. The home’s lower level is fully finished with an additional bedroom, three-piece bath, and enormous family lounge area for TV viewing to complete the picture. It’s a large house for one person, and as much as she loves it, Gerrits now feels she must downsize, given the amount of travel she has assumed for a new position at work. “I’ll probably get a townhouse and spend weekends at the cottage in Muskoka,” she says. “I’m away so much now. But I’ll miss it. It’s been a great entertainer’s house.”

at home GL/ Have you done much commercial or corporate work? Yes, my favourite project was the Georgian Bay Club. It launched me into everything else. It was interesting work for a design student. They normally do interior work and I got to do architecture. My love is architecture. I was only six months out of design school and my client, Larry Dunn, asked me to do the Gate House for the Georgian Bay Club. He liked what he saw, then asked me to try the Range Building. Then the Club House. He trusted me. I had to get an architect to take my ideas and drawings and put them on paper. Juergen Rust’s firm put an architectural set of drawings together and Anna and I did all the interior elements from furnishings to lighting. That’s how my world started. You meet people along the way who shape your life. That project got me the Muskoka Bay Club. From there, it was a lot of word of mouth. Real estate, clubs, homes. I did a lot of homes, eight Georgian Bay Club Villas from semis to two million dollar estates. We also did the model. I’ve been with that client for fourteen years now and I’m still working on private residences there.

It was a trip to the dump that ignited a passion for architecture in Jo Redman. At the tender age of five Redman’s father discovered a discarded architectural kit there and brought it home to his daughter. The fascinating implements of protractor and measure points housed in a metal case instantly piqued her fascination. It became her most treasured possession and was the inciting incident behind her career in interior design. Redman carried that kit around with her for decades and after many years of working as an educator finally decided to seize on her passion 46

and enrolled in Georgian College’s four-year Design Program. There she met Anna Watson, who would later become her partner in the Redman Watson design firm. After graduation in 2002, Redman joined Arido (The Association of Registered Interior Designers of Ontario), then wrote the challenging NCIDQ exams to become a certified member of the National Council for Interior Design Qualification. She’s been designing homes and commercial properties ever since.

GL/ Who is your favourite architect? I love Robert Stern, classic architecture. Richard Meier. The New York Five. I have hundreds of architecture books. Legorreta from Spain. So many that have influenced me. Frank Lloyd Wright affected me in Arizona. His principles are magnificent. Le Corbusier, the founding father. He started more modern concepts. Way ahead of our time. Clean lines. His furniture is incredible. GL/ When you design a space what is the first thing you do? How do you approach the blank canvas? I start with shapes and forms and volumes. Balance, design, lines, proportion. It’s all the same whether inside or out. There are principles for a reason, but if you understand the principles you can manipulate them and use them to your advantage. I’m not an architect, but I do a lot of things an architect can do. I look at the space and see how light works and reflects in the space. Then I listen. Listen to the client. The colours start forming on the walls. I don’t follow trends. I follow what people are telling me about their life, what is important to them. My motivation is not about ‘how do I get in House and Home,’ it’s about how they live and function in their space.

GL/ Do you see any movements happening in home design? I find people are so inundated these days, in constant motion, sounds, phones, emails, the immediacy of social media. Even listening to news is a lot. When they get home, they are done. They just want a place of refuge. People are longing for comfort, some solace. They are also embracing their natural surroundings. A harvest table represents the value we are all craving. I’m all for bringing back the table. The table is a place for us to gather and eat and hang around. GL/ Are there any decorating tips you think are noteworthy? I think for me, part of it is to go back into the past. We are moving so far forward. People feel that they are losing their core values, eroded by social media. Bringing back something eclectic or retro is interesting. Recycling something. Reuse stores, getting an old tool box, making it into an end table. The minimalist concept is growing. I grew up that way as an Italian immigrant. We didn’t have money or exquisite things. We had six plates, a cantina, but you could eat off the floor. Everything served a function. Some of the big massive homes today are not about function, they are really about aesthetic, not function. GL/ How did you approach feathering your own nest? Self-expression. What was important in my life. What I’m passionate about. My home is Transitional Country Chic. I do have a style but it is based on simplicity. Simplicity is elegance to me. I believe in a smaller footprint. My house is really about my life, my children and my memories. The local food scene just got even more delicious in Thornbury. This past August, celebrity chef Mark McEwan opened his third Fabbrica (the other two are in Toronto), a trendy and upbeat eatery specializing in rustic Italian fare. Take my word for it — pick up the phone and make a reservation. Not only does the atmosphere have a great buzz, the food is fabulous. I highly recommend the carpaccio, any of the mouthwatering wood fired pizzas, veal parmesan, the pickerel dish (served with Carnarolli risotto, sweet peas, and citrus butter sauce) and the chocolate torte (served with berries and salted caramel). Yum! To learn more about why the well known Toronto restaurateur behind such properties as One Restaurant, ByMark, North 44, North 44 Caters, McEwan, Diwan and Fabbrica, decided to open an eatery in Thornbury, I caught up with the 61-year-old culinary master, who responded to my questions via email. (Writer’s note: I did meet McEwan in person when dining at Thornbury’s Fabbrica. He’s a regular fixture there, and you will often see him eating at the bar with friends or graciously moving from table to table chatting with guests.)

I hear your schedule is pretty jammed packed these days with your current gig as head judge on the Food Network’s Top Chef Canada. How’s that going for you? MM: It’s a busy time, but I prefer to keep busy. Top Chef is extremely fun to shoot as we have such an incredible cast and crew, but it’s also amazing seeing new and exceptionally skilled chefs from all over Canada compete. We have such diverse culinary talent in this country and it’s a pleasure to celebrate that on Top Chef. What led you to bring your rustic Italian fare to Thornbury? I’ve heard from friends that you like to ski in the area — is that correct? MM: You’ve done your research! I love Thornbury and actually live here with my family. What I love most is the community. The people are so warm, inviting, and care about quality. As a result, it made perfect sense to open a restaurant here. The picturesque town is nestled on Georgian Bay and is a year-round culinary destination. We had the opportunity to take-over a space (the former Sisi’s) and are thrilled we did! On the website it states: “Fabbrica’s mission is to create the most authentic Italian cuisine we can from the finest possible ingredients — many sourced from Italy, like Roma tomatoes ripened in the San Marzano Valley for our sauces, and flour hand-milled in Naples for our pasta and pizza dough.” Is that about right?

MM: That’s the goal! Italian food is so diverse and varies from region to region that there is always new flavours and recipes to discover. I also love the ostensible simplicity of Italian food – it’s truly all about the ingredients. Our recipes are tested and re-tested using the best produce we can find – whether that means local, straight from Italy or grown in our very own garden at Fabbrica. On that note, I’ve heard you’ve always had a soft spot for Italian cuisine and that some of your famous early specialty items at Toronto restaurants were often risotto dishes or pasta? Is this correct? MM: That’s very true. Nothing beats fresh, handmade pasta. Beyond being extremely flavourful, I also love the way Italians approach food. I love eating family-style with big bowls of pasta, whole grilled fish and simple roasted vegetables set in the middle of the table for all guests to share. Chef Mark McEwan’s Classic Tomato Sauce A staple in Italian cuisine is a classic tomato sauce. A truly simple and delicious sauce takes patience and good ingredients. It's difficult to get really flavoursome tomatoes outside the Mediterranean; especially during the colder months, so our tip is: don't be afraid to make sauces using canned tomatoes instead! (chef Mark McEwan) Ingredients: 100oz whole canned tomatoes (Roma tomatoes ripened in the San Marzano Valley) 1 large Spanish onion 5 cloves local garlic ¼ cup good quality olive oil Pinch black pepper 1 bunch basil, picked and washed Finishing salt to taste, upon serving Preparation: 1. Begin by crushing the garlic cloves and finely dicing the onion. In large saucepan, add olive oil and begin to slowly sweat the diced onions and crushed garlic over low heat. Stir the garlic and onions until translucent to release their natural sweetness and aromas. Once gently and

fully cooked through, add all remaining ingredients. Cover the pan and let simmer for 2 to 3 hours. 2. Note: over time, the whole tomatoes should break down on their own (do not over-stir). 3. Once the tomatoes have broken down and basil is wilted, pass the mixture through a food mill. Using a food mill will maintain the natural flesh of the tomatoes ensuring a better texture and flavour. For this recipe, do not puree. 4. Serve over fresh-made pasta (gnocchi is our favourite!) and salt to taste upon serving. Simple, elegant and full of rich tomato flavour.

According to the Cambridge Italian-English Dictionary, fabbrica means factory or plant in Italian. Why did you decide to name your Italian restaurant Fabbrica? MM: Fabbrica simply means a place where you make things! That’s our restaurant. We make everything from scratch, seeing recipes through from first ingredient to final dish. We don’t cut corners. Fabbrica specializes in rustic Italian cuisine. What are some of the most popular menu items? MM: There’s really something for everyone on our menu. Fabbrica meatballs and the octopus are definitely favourites among the appetizers and the grilled branzino and porchetta are popular mains. The house-made pasta and wood-fired pizza are also huge hits.

Do you have any personal favourites? MM: I love the pappardelle with short rib. It’s my favourite pasta. I also can’t get enough of Chef Derek’s Roman pizza. It’s worth the trip! In 2011, you wrote Mark McEwan’s Fabbrica: Great Italian Recipes Made Easy For Home based on the recipes featured in your Fabbrica restaurants, and then in 2013, you wrote Mark McEwan’s Rustic Italian: Great Italian Recipes Made Easy for Home. Can diners buy these books and replicate their favourite restaurant dishes at home? MM: Of course! In Fabbrica’s cookbook, Rustic Italian we’ve made sure to cover the basics with recipes for sauces and doughs that are used in a multitude of dishes. We also separated the recipes into clear sections like antipasti, pizza, pasta, sides, fish, meat, dessert, etcetera to make everything very approachable. What about choices for folks with special dietary needs? MM: Our chefs at Fabbrica are extremely accommodating. Because the majority of our dishes are made to order, we can amend as needed. We currently have a vegan risotto as a special and have a wide range of gluten-free options. Any future plans you’d like to share about the Thornbury location? MM: We are a new restaurant and are just excited to test new and classic recipes for the Thornbury community. I also love the events happening in town, and plan on being very involved in these happenings. For example, we recently participated in Applelicious during the apple harvest with special dishes, cocktails and ciders. I’m also really looking forward to when we can really see the patio in full-swing. We have a very spacious terrace with a garden, barbecue and bar. It’s going to be amazing in the warmer months!

When you walk into downtown Barrie’s Bacio Trattoria, you are greeted with a smile and great food. “We want people to feel like they are eating at home with family,” explains William Ortiz, who owns and operates the 40-seat restaurant with his sister, Elizabeth Ortiz and his mother, Nancy Juarez. “We are a family run business — 100 percent.” I UNDERSTAND YOU RECOMMEND AT LEAST THREE HOURS FOR DINNER. Our goal is to offer a relaxed dining experience. We don’t want people to rush, but rather take their time. My brother comes to every table to find out what people want to eat and then goes back to the kitchen and prepares it. It’s a very personalized experience, and our customers love it. Before people leave, they often go up the kitchen and wave and say goodbye to William. WHAT ABOUT DINERS WITH SPECIAL DIETARY NEEDS? Since everything is made to order, we are very flexible and accommodating with our dishes. HOW WOULD YOU DESCRIBE THE MENU? We specialize in Italian cuisine and serve anything from seafood salad to tiramisu. Everything is made from scratch and cooked to order. I only use fresh high, quality ingredients and I cook with lots of alcohol which makes it even more tasty! Since we lived near Rome, we also serve up some Roman specialities like pasta carbonara and supli di chicca (pork and beef risotto cakes with mozzarella). Our Roman style pizza features a thin crust.

WHAT LED YOU TO OPEN AN ITALIAN RESTAURANT IN BARRIE? We were born in Peru, but then moved to Italy when we were quite young. We settled in a town just outside of Rome called Ostia Lido, and took in the Italian culture and cuisine. We eventually moved to Canada (William was 15 and Elizabeth was 17) and have lived here for more than 20 years. We decided to open a restaurant in Barrie because my sister has lived here for the past 10 years and thought it would be fun to have a business together. My mom and I moved up from Toronto and the rest is history.

WHAT ARE SOME OF YOUR MOST POPULAR DISHES? Everything sells really well, but guests really seem to like our antipasto, supli di chicca, pasta puttanesca, gnocchi, Bacio pizza, costata di manzo, and our risotto. For dessert, our tiramisu and homemade gelato are popular. DO YOU MAKE DISHES THAT AREN’T ON THE MENU? Absolutely! Pasta Carbonara isn’t on the menu, but I make it frequently for people. A LOT OF RESTAURANTS OFFER A PAD THAI DISH, CAN YOU EXPLAIN WHAT MAKE YOURS UNIQUE? Unlike the traditional method of cooking Pad Thai, we stir fry vegetables first then add the rice noodles and cook them to perfection until done. This means we don’t use pre-soaked noodles, instead, we cook our noodles raw in the wok! Our non-spicy Pad Thai sauce is sweet and has a special fish sauce added to it and our Spicy Pad Thai has no fish sauce but we add in special spices for a perfect medium spicy dish. Both are made with a tomato sauce base and topped with nuts which we can leave off in case of any allergies. This is a dish that our clients can’t seem to live without. CAN YOU TELL ME WHAT ALL GOES INTO YOUR DELICIOUS SHREDDED CRISPY BEEF DISH? That’s why we have sourced some holiday meal and entertaining ideas that are so easy to make that you will have plenty of time to enjoy the great outdoors, or stay cosy indoors by the fire as you binge watch your favourite holiday movies!

Dreaming of a White Christmas Serves 8 An oaky, buttery Chardonnay is a nice alternative to the traditional reds of the season and will bring out the nuttiness of the creamy Bries. Ingredients Green grapes, 3 cups Green apple, 1 Red apple, 1 Garlic, 3 bulbs Extra virgin olive oil, 2 tbsp Parmesan-rind salami, 24 slices Chorizo salami, 16 slices Double-crème Brie, 10 oz Pecans, 12 Cranberries, 12 Blackberries, 8 Fresh thyme, 2 sprigs Bloomy-rind Brie, 7 oz Pistachios, shelled, ½ cup Pomegranate arils, ¼ cup Fresh rosemary, chopped, 2 tbsp Baguette, 1

Method 1. Prepare the fruit: Snip the grapes into clusters of 4 to 6. Last minute: Core the apples and use a mandoline or sharp knife to slice them. 2. Prepare the roast garlic: Preheat the oven to 375 F. Slice the top off each garlic bulb so the tips of the cloves are visible. Drizzle the tops of the cloves with the olive oil, wrap each bulb tightly in aluminum foil and roast for about 40 mins. Bulbs can be served warm or cold. 3. Prepare the two different Bries. Top each Brie with its respective flavours and place each in an ovenproof serving dish (see tip). Just before serving, place in a 375 F oven and warm for about 15 mins. You could also add them to the oven when the garlic is baking for the final 15 mins. If you like, reserve some of each of the nuts to serve on their own in a small bowl. 4. Slice the baguette into ¼-inch slices and toast it.

TIP

A small cast-iron pa n is perfect for baking a Brie an d looks great on a board. Just remem ber to put a trivet or coaster underneath if the pan is still ho t. Some Bries come in their own baking dish, which can go directly onto the board.

Ree Drummond, best-selling cookbook author and TV host of The Pioneer Woman cooking show on Food Network isn’t kidding when she says Come and Get It! has “Simple, scrumptious Recipes for Crazy Busy Lives.” This book can help relieve the stress of figuring out what to serve when company comes for the holidays. First, we likely need a yummy appetizer to serve with pre-dinner drinks. Enter Drummond’s Stuffed Pizza Crust (it even looks like a holiday wreath due to its round shape with a bowl of Marinara Sauce in the middle); while the Tortilla Pinwheels are filled with festive red and green bell peppers and cream cheese and you can even serve them on a platter in the shape of a Christmas tree!

This is one of the best things I’ve ever seen. It’s a cross between stromboli and calzone, but really, it’s cheese baked inside of bread. And the fact that it’s thrown together with frozen bread dough and string cheese makes it even more delightful. This is a super-fun thing to serve at parties. Impress your friends! (Or, better yet, impress yourself.) Ingredients One 1-lb loaf frozen bread dough 2 tbsp olive oil, plus more for greasing the pan Kosher salt and black pepper ⁄ cup marinara sauce, plus more

for serving 10 pieces string cheese 1 egg Fresh basil leaves, for serving Method 1. Set the loaf of frozen dough on the counter and cover it with a dish towel. Let it thaw according to package directions, usually around 3 to 4 hours. (You can also set the loaf in a plastic bag in the fridge and thaw it over a 24-hour period!) 2. When it’s totally soft and just starting to rise, ’tis ready! Preheat the oven to 475 F. 3. On the countertop or large board, roll out the dough to about 30 inches long, keeping it as narrow as possible. (Go long, not wide, in other words!)

4. Drizzle the dough with the olive oil and sprinkle it with salt and pepper. Spread on the marinara sauce, leaving a clear ¼-inch rim around the edge. 5. Lay the string cheese, 2 pieces at a time, all the way down the dough, leaving a small edge at either end. 6. Gather the two sides together pinching the seam to seal it well. Grabbing the center of the rope with two hands, carefully transfer it to a baking sheet, placing the seam side down. Bring both ends around to connect, pinching the ends together. Make sure the seam stays underneath. 7. Make an egg wash by lightly whisking the egg and a couple of tablespoons of water. Brush the egg wash generously over the crust, making sure to get the seal holding the two ends together. 8. Bake for 13 mins, or until it’s dark golden brown. 9. Transfer to a serving platter ... or just serve it right on the baking sheet! Place a dish of marinara sauce garnished with basil in the center of the crust. 10. Use a small serrated knife to cut slices then dig right in. This won’t last long at all!

Mini Tourtières Makes 4 dozen mini tarts Tourtière at Christmas is a Canadian tradition of French-Canadian origin. In Quebec this meat pie is often served at réveillon, a big, lively party among friends and family to welcome in Christmas or the New Year. However, tourtière is now a winter staple beyond the holidays. This recipe makes mini tarts ideal for a cocktail party, but I have also included instructions for a whole tourtière baked in a pie pan.

Set for the Holidays with Anna Olson is coffee-table-worthy book, brimming with stunning photos and equally fantastic recipes. Chapters begin with Menus and Meals for the Holidays (and Almost Every Day) and take you through occasions like hosting a Festive Brunch to The Main Event (holiday dinner) including Dessert.

Ingredients - filling 1 tbsp (15 ml) vegetable oil 1½ lb (675 g) mixed ground veal, pork, beef 1 medium onion, diced 1 medium carrot, peeled and coarsely grated 1 medium russet potato, peeled and coarsely grated 1 apple, peeled and coarsely grated 2 cloves garlic, minced 2 bay leaves 1 tsp celery salt ½ tsp ground allspice ¼ tsp ground cloves 1 ½ cups (375 ml) chicken stock Dash of Worcestershire sauce Coarse sea salt and black pepper 1 egg, whisked with 2 tbsp (30 ml) water, for egg wash Ingredients - pastry 1 recipe basic pie dough, shaped into 2 discs and chilled Method 1. For the filling, heat a large sauté pan over medium heat and add the oil. Add the ground meat and the onion and stir until the meat has almost cooked through, about 7 mins. 2. Stir in the carrot, potato, apple, garlic, bay leaves, celery salt, allspice and cloves. Add the stock and Worcestershire sauce and bring to a simmer, still on medium heat. Cook, uncovered, stir-

ring occasionally, until most of the liquid has evaporated, about 30 minutes. 3. Season to taste, remove the pan from the heat and let cool to room temperature. 4. Preheat the oven to 400 F (200 C) and grease your mini-muffin pans. 5. To assemble the pies, lightly dust a work surface with flour. Roll out the first disc of dough into a circle just under ¼ inch (0.5 cm) thick. 6. Using a round cookie cutter, typically 3 inches (7.5 cm), cut out pastry circles large enough to line the bottom and sides of the cups of the mini-muffin pan. Gently press the pastry into the cups. 7. Spoon the cool filling into the muffin pans, filling each cup right to the top of the pastry and pressing the meat mixture in firmly. 8. Roll out the second disc of dough to a circle just under ¼ inch (0.5 cm) thick. Use a smaller cookie cutter, typically 2 inches (5 cm), to cut pastry circles that cover the filling completely. 9. Dock each pastry circle once or twice with a fork or make a criss-cross mark with a paring knife, then set it on top of the filling. There is no need to crimp the edges or seal them – just press them gently into place. 10. Brush the tops of the tarts with the egg wash and put them in the oven. Immediately reduce the temperature to 375 F (190 C) and bake for about 30 minutes, until the pastry is a rich golden brown and a paring knife inserted in the centre of the tourtières feels warm to the touch. 11. Let the tarts cool in the pans for 10 minutes and then either serve warm or transfer to a wire rack to cool completely.

A D V E N T U R E S Exploring possibilities for curated experiences around the corner, around the country & around the world By Barbara Ramsay Orr

Punta Mita, Mexico The chef scoops up a handful of large pink shrimp, caught recently in nearby Mazatlan, and dumps them into a sizzling hot molcajete. I had no idea that this stone mortar used in every Mexican household to grind spices, and make salsas and guacamole, could also be used as a cooking vessel. She squeezes fresh lime juice over the shrimp and the smell of citrus and seafood, garlic and cilantro rises in an aromatic cloud. It’s irresistible. But then so is the view from the outdoor kitchen where the cooking class is happening. In front of me is the Bay of Banderas and a white sand beach featuring private cabanas with white curtains and cushions — on my list for the afternoon. There’s a thatched roof beach shack where guests can order hamburgers and shakes to be delivered to their beach chairs. highly placed politicians. Charlie Sheen, Lady Gaga, Gwyneth Paltrow and Mexican presidents have all vacationed on the Gold Coast of Riviera Nayarit. Set in a secure private reserve at the tip of the Bay, and about 45 minutes from the Puerto Vallarta airport, the resort sits along 9.5 miles of pristine coastline. At one of the four pools, I am coddled with drinks, snacks, mist sprays and cold facecloths as the temps reach 30 degrees. The resort sprawls over acres of jungle and beach so it never feels crowded. Later in the dining room, the guests have exchanged beachwear for casually elegant attire. The food is remarkable, as you would expect at a Four Seasons, partly Mexican in style, locally sourced, with lobster, tuna, those Mazatlan shrimp, as well as European dishes. There’s an excellent wine cellar. The resort has two Jack Nicklaus-designed golf courses. Its most famous hole is the Tail of the Whale, 194 yards across water to a black lava is-

land. The world’s only natural island green, you reach it by using an amphibious cart. There are whale watching expeditions out to the Marieta Islands to see blue-footed boobies and visit Hidden Beach, only accessible by swimming through a cavern, but well worth it. Some of the best birding in North America is found just up the coast in San Blas. Scuba diving, paddle boarding, deep sea fishing and a chance to witness a turtle release all help pass the time. Of course there is also a spa, fitness centre, an art gallery and some exceptional shopping. Puerto Vallarta is an easy destination to get to for those of us fleeing the oncoming winter, with multiple daily flights from Toronto during the season. The hotel arranges airport pickup, and the careful security of this private reserve ensures that safety is not a concern. From Hot to Cool: The Christmas Market River Cruise Christmas cruises have become one of the most popular ways to see Europe at its very best — dressed for the season. Even if you’ve visited many European ports on other river cruises, you have never seen them like this: full of light, festive with music and bursting with Christmas fare. Along the Toronto waterfront, x now marks the spot for the latest in luxury accommodations. Hotel X opened its doors along Lakeshore Road earlier this year, offering a unique array of amenities ranging from a tri-level rooftop bar and pool to numerous indoor tennis and squash courts and a cinema. Part of the Library Hotel Collection, Toronto’s Hotel X joins the ranks of uniquely designed hotels in New York, Budapest and Prague, each featuring their own distinctive personality and charm. “It’s all about you. It’s all about the view,” boasts the hotel website, setting the stage for our recent stay there. With its prime location on the Exhibition Place grounds facing Lake Ontario, the vistas of the beautiful waterfront are undeniably awesome — something we were sure to savour upon arrival during our complimentary wine and cheese reception in the Library Club Lounge. As we settled into a comfy sofa on the deck, we took in the lovely views and soaked up the sun while enjoying an assortment of cheeses, breads, grilled and pickled veggies, crackers, salads and dessert squares. Touring through the hotel you’ll find yourself stop-

ping to take in the sights as well, such as in the lobby, with its impressive living garden wall that spans upwards almost to the top of the cathedral-like ceiling. The hotel offers 404 guest rooms and 39 suites, which are luxuriously appointed with unparalleled city or lake views. Upon entering our spacious one-bedroom suite, we were greeted by a plate of fresh fruit and dip, along with sparkling water and greetings from the hotel on the television screens in the sitting area and bedroom. Our corner unit also didn’t disappoint in the views department, with the city skyline, CN Tower and water front all clearly visible from our floor to ceiling windows. The room featured a comfortable sitting area outfitted with a sofa, chairs, desk, lovely nature photos, Nespresso coffee machine and powder room. A separate bedroom with a king size bed and adjacent bathroom with a shower and tub rounded out the suite’s amenities. After freshening up, we made our way to the ‘The Pond’ rooftop pool — a tranquil oasis that’s partially indoors and partially outdoors, and features plenty of

roam | weekender comfortable lounge chairs to relax. With Lake Ontario spanning for as far as the eye can see, you’d almost forget that you’re in the heart of Toronto! Come dinnertime, we decided to try out Maxx’s Kitchen, one of the on-site restaurants that features a selection of healthy options, comfort foods and a twist on everyday classic favourites. The smoked goat cheese gnocchi, which included mixed wild mushrooms, asparagus tips and pesto Genovese, was full of flavour, as was the dark Belgian chocolate mousse for dessert. Other restaurants on the premises include Pétros 82, which is opening soon with offerings of Mediterranean cuisine, and the Nespresso Café with its healthy options on the go. The lobby bar and rooftop bar also have appetizer offerings. We finished our evening with specialty cocktails at the tri-level rooftop bar. We were lucky enough to secure a coveted patio seat to once again take in the sights and sounds of the city that never sleeps, which included an impromptu acoustic show by some musically inclined customers sitting nearby.

THERE’S NO SHORTAGE OF THINGS TO DO NEARBY, FROM SHOPPING TO THEATRE, SPORTS TO CONCERTS, NOT TO MENTION THE CN TOWER AND RIPLEY’S AQUARIUM OF CANADA.

After a great night’s sleep in our comfortable suite, we were ready to take in more sights the next day. But first, we stopped for complimentary breakfast in the Library Club Lounge — an amenity offered to guests staying in rooms on the 24th, 25th and 26th floors, along with all hotel suites. The continental spread included hard-boiled eggs, oatmeal, fresh fruit, cereal, yogurt, bagels, pastries and more. There’s no shortage of things to do nearby, from shopping to theatre, sports to concerts, not to mention the CN Tower and Ripley’s Aquarium of Canada. But with the wide variety of services and amenities offered inside Hotel X, one doesn’t even have to leave the urban resort complex to stay entertained. You can take in a show on the big screen in Hotel X’s two-storey cinema with 250 stadiumstyle seats or have a more intimate gathering in the 60-seat screening room. The work of Canadian photographer Neil Dankoff is showcased in the new on-site Kandy Gallery. Admire a display that represents nearly three years of photography trips to destinations such as Italy, Israel, Namibia, South Africa, Bora Bora, China, Japan, Iceland, Bolivia, and France. If Pilates and hot yoga are more your speed, head on over to the on-site Ten X Toronto luxury sports club that offers 90,000 square feet of unbelievable fitness facilities. The massive space features nine glass back squash courts, four indoor tennis courts, over 50 Technogym machines, studio space for Pilates, group cycle, hot yoga and other group fitness classes. A spa will be added to the line up of features next year with 10 treatment rooms, including a spacious couple’s suite and lounges overlooking Lake Ontario. Our weekend away in the city drew to a close all too soon, leaving us wanting more of Toronto’s newest luxury getaway on the lake.
