EQUESTRIAN DREAM HOME Running a horse ranch doesn’t mean you must live in a household of muddy boots chucked in a heap at the door, as equestrian reining champion, Michelle Mailhiot, and her husband, Alfonse, have proven. Their pristine 45-acre ranch is a vision of meticulous impeccability, from fence line to the back forty.

“I

wanted a modern ranch with clean lines and minimalistic design,” Michelle explains. She tasked residential Architect, Catherine Lockhart, with that challenge. The 4,200-square foot contemporary residence was built at an obtuse angle with varying rooflines and a mix of exterior materials including stonework, wood, and stucco. Generous sidelights and multiple layers of windows and transoms punctuate the façade, bringing light inward and spilling it outward at twilight to produce a warm evening glow. It’s a sight that always welcomes Michelle home after her evening training sessions. The residence accommodates a heated four-car garage, extensive covered deck, and lounging area in the rear with a built-in outdoor kitchen. Additional living quarters over the garage were built for the resident ranch hand, or alternatively, as an in-law suite. When the couple originally purchased the property, the whole parcel was flat, vacant land. They had been looking for land around Blue Mountain when they learned that a friend was selling this spread in 2014. The arena and outbuildings went up first. Built by DBD Systems, Inc., who erect agricultural and commercial buildings, it is

perhaps the ranch’s most unique and outstanding feature. Superb in its functionality, the arena is a world class, 100 by 200-foot, indoor riding showground, complete with kitchen, gallery, and office. But Michelle’s resolution for clean lines extended even beyond this, to the attached 9000-square foot heated barn with 20 gorgeous stables, a tack room, hay storage area, laundry and horse wash bays that support their equine charges in style. There’s also a detached oversized shop, four grass pastures, three sand paddocks, an outdoor 190 by 280-foot riding ring, immaculately sculpted exterior landscaping and clean, windswept paved driveways that curl throughout the grounds making every inch of the property 100% accessible throughout the seasons. “The best part is I can go ride, whenever I want,” says Michelle. The property is accessed by two main roads on separate sides and a connecting driveway will take you from the outbuildings to the main living quarters which boasts a separate circular driveway out front. The residence which has an ICF foundation (Insulated Concrete Forms) is fully protected and equipped with a Control 4: Home Automation and Smart Home Control system. Enter the foyer of the residence through a cus-

tom white oak Brenlo double door and you are in the foyer. Ahead, soars a floor to ceiling seethrough Chantico Infinite Marquis linear gas fireplace lined with river rock. A rustic bench in front is the spot to shrug off your riding boots. But first your gaze pulls to the left, where a striking rectangular niche inset into the wall delights with a tiny backlit sculpture. The niche, constructed of wood laminate is the preamble to the vision of the great room’s warm cherry-coloured wood ceiling treatment. Look to your right, and contemporary barn doors with vertical and horizontal stainless steel inlays welcome you to a quiet den. Above, the Quoizel metal ribbon ball chandelier coordinates with the door’s inlays and sets the tone for what lies ahead. All these features are the work of designer, Trish Matthews, who came aboard mid-project and took on the interior elements. “The niche was because I wanted to create something unique in that space because otherwise it was just a high ceiling,” Matthews says. “It is stained the same as the ceiling. A custom mix of English Chestnut and Cherry. Many things are recessed into the walls. The client doesn’t like clutter. And the rectangular shape is derivative of the shape of the three large transoms 14

above the kitchen and the three in the loft. It is also the same as the linear fireplace. You see that long rectangular space several times throughout the house.” Since much of the shell of the home was already in progress when Matthews began work, dark engineered oak hardwood had already been purchased for the flooring. She chose to delineate between the main room and foyer by laying 12x24 Unitek tile in a herringbone pattern at the entry. “The homeowner didn’t want the upkeep of slate, but wanted something with character. We chose this. It matches the rest of the flooring, but looks like you sliced through a piece of the Canadian Shield,” she says. “Herringbone patterns also help to push the side walls out. It makes a space look grander and widens it but also takes care of all the different directions you can move from the foyer. To the right, left, down the hall, to the den and so on.” Travel that front hallway to the left to access the two cloakrooms or the powder room. Equinethemed art pieces tastefully dot this home, including within the powder room which offers unique diamond-shaped hide-textured wall paper that resembles horse hair.

Continue into the residence proper, past the fireplace, and you’ll find yourself in the main living area. On your left lies the kitchen and dining area. To your right, the great room with vaulted ceiling and 60-inch Monte Carlo Maverick fan overhead. The warmth of the cherry laminate follows you into the kitchen and main living area. Cabinets are by David Baden and extend beyond shelving to conceal a huge beam and the 12-inch pipe for the large vent hood. The stainless-steel countertop here, with generous, deep sink is one continuous custom piece that wraps up the backsplash to meet the thick oak breakfast bar. Fabri-

cated in Kitchener and sourced through Georgian Design Centre, it has no edges to collect food or dirt. A darker walnut veneer cabinetry behind provides contrast around the built-in Jenn Air appliances. Due to the high ceilings Matthews has also added a custom-built drop down Tech Lighting system to light the area. The great room is flooded with additional light from a multitude of windows, all with clean, crisp drywall returns. The space is overseen by a raised loft that serves as the home’s workout area, and leads off to the two upper bedrooms, each with their own private ensuite. The staircase leading up to it was another feat of mathematical calculation, Matthews explains. Engineered out of stainless steel and topped with white oak treads, it has shadow moulding that follows the stairs up the length of the wall to the second level. The built-in cabinet beneath with recessed insets was the main stumbling block, because wiring was hidden behind the stairs, which would need access points. The steel staircase and the insets in the cabinet were painstakingly calculated to elicit the seam-

Underneath the loft, behind the staircase is the entry point to the primary bedroom, a spacious sanctuary with a Chantico Skyline fireplace by Marquis with a concrete hearth and glazed venetian plaster finish above. Spring has sprung and it’s that time again when spring cleaning ignites the desire for a home refresh. Eager to tackle those pesky house issues that arose during the lockdowns? We asked six of the top local designers which trends they saw coming for the new year. Here’s what they said to look for. Warmer Paint Tones “We are seeing a dramatic shift from the greys to a much warmer palette. People want comfort and warmth in their homes. The cooler grey palettes ran their course for the past ten years. Now we are headed into warmer territory with some hits of colour. Green is back and is super-hot right now. Stacking multiple books in piles with large wooden chain links while incorporating decorative objects, are always good and easy to do for styling built-ins, or console tables. Viticultural intelligence Winegrowing beyond organics and sustainability

Regenerative viticulture has become a buzz word in the wine world recently, yet there’s still some confusion as to what specific practices set the philosophy apart from organic or sustainable grape growing. Based on the idea that soil, and the environmental and cultural elements that rely on its health, can be improved by farming it responsibly, regenerative agriculture doesn’t seek to simply maintain the status quo but offer rehabilitation. Broadly defined as principles and practices that enhance ecosystems, the basics of regenerative agriculture include minimal soil disturbance, keeping soil covered and integrating livestock. The practices improve watersheds, enhance biodiversity and improve the soil. Among a small handful of Canadian wineries and wine growers that follow this viticultural ethos is CedarCreek Estate Winery set within

British Columbia’s Okanagan Valley. Having released its first wines in 1987, CedarCreek is one of the eight original BC wineries and is known for producing exceptional, quality-driven wines with each vintage. Their penchant for high-end consistency is traced back to how they interpret the land that provides the fruit of their labours – a philosophy that stretches beyond the practice of organics and other sustainable methods. Recently registered as a Regenerative Farm with Regeneration Canada, CedarCreek is now part of a national community that supports these concepts and openly shares ideas and innovations that are poised to remain focused on improving farming practices and care of their biggest asset – the land. “A lot of the principles of organics complement regenerative practices but we can always do better,” says Kurt Simcic, CedarCreek senior

viticulturist. “We hope to enhance our soil’s nutritional activity, improve the water cycle, and in turn we hope to see resilience to future droughts and floods.” This puts farmers at the centre of mitigating any future climate catastrophes. But consumers can also play a part by supporting wineries that are thinking about how to best grow their grapes, in addition to how they’ll taste in the bottle. “Regenerative Agriculture is a hot topic at the moment, and I can attest to the fact that over the last five years, we have seen dramatic increases in soil quality and health and corresponding improvements in vine health and fruit quality,” says CedarCreek winemaker Taylor Whelan. “Our goal is to farm and manage the property in an ecologically sound and responsible manner and we have identified (regenerative viticulture)

as one way for us to reduce our impact and ‘leave our land better than we found it.” Farming in such a way does result in lower crop yields, but quality is much higher. For CedarCreek, the elevated condition of fruit has allowed the winery to not only grow their premium tiers – offering better quality than ever before – but to also create the ‘Aspect Collection’, which is the culmination of the winery’s commitment to high-quality, terroir-driven wine. These single block wines stand apart and now compete with the best Canada has to offer. “The connection between the land we farm and wines we make has strengthened and we are tailoring our viticultural approaches to best fit each individual block of fruit and maximize its true potential,” says Whelan. “It’s more work for the teams in the vineyard, but the results in the bottle are hard to argue with.” If regenerative agriculture has the potential to shift climate change and social welfare, not to mention make better tasting products, then it’s a practice worth consideration. “There is a quote from a very well-known organic/biodynamic winegrower in New Zealand, named James Milton, who says ‘We’re not standing on dirt, but the rooftop of another kingdom’,” says Simcic. “As farmers, it’s a statement that’s worth thinking about.”

1 CedarCreek 2018 Aspect ‘Block 2’ Pinot Noir

This wine is a tribute to the unique blend of clones planted on clay, silt, and stone and is fermented using wild yeasts. Winemaker Taylor Whelan says “Our Aspect Collection pinots best express the terroir we are working with. They’re made predominantly from clone 115 and are grown on distinct soils. Block 2 soils are heavier with the vines having more access to water – this leads to a more elegant and red-fruited profile.” French oak is used for aging (14 months) and this allows the wine to fully express itself and truly capture the character of the vineyard. Right now, expect fine, dusty tannins, red fruit flavours, clove and a mineral splash that leads to a long and excellent finish. ($75) 3 CedarCreek 2020 Platinum ‘Jagged Rock’ Chardonnay

According to winemaker Taylor Whelan: “Chardonnay is a winemaker’s wine, and we do push the style deliberately here. We are looking for mineral, seashell, crushed stone characters, and harvesting early, hoping for plenty of acidity. I love the complexity and elegance of the wine, and the fact that it is so identifiable.” This is super fresh tasting, with lean, focused flavours that are still very much trying to find their way through a tightly woven state. The wine’s lively acidity matches its expressive framework and I love the mineral salinity towards the finish. Built for the long haul, this is one we should all stand to be patient with – otherwise decanting is recommended. (Not yet released by the winery.) ($35)

CedarCreek 2020 Platinum ‘Jagged Rock’ Sparkling Rosé Fruit for this sparkling is sourced from the Jagged Rock vineyard – a noteworthy place that is surrounded by steep rocky cliffs at 1,400 feet elevation. The large cliffs reflect heat back on to the vineyard creating sparse sun scorched soils that are ideal for growing remarkable fruit that’s delicate, diverse and expressively rich. This bottling was aged four months on lees in stainless steel and comes across as an effervescent and lighter rosé, with brilliant aromas of strawberries and cream, as well as pink grapefruit that jump out of the glass. I love the fine-tuned acidity that allows this to really sing on the palate without overwhelming those characteristic fresh fruit flavours. ($35) 4

CedarCreek 2020 Sauvignon Blanc Grapes famously hold a mirror to their surroundings. The southern Okanagan has an herbal quality to the air at the height of growing season – sage and antelope brush warmed by the sun. So maybe it’s not surprising that there’s a tell-tale grassiness to this herbaceousby-nature sauvignon blanc. The fruit is picked early to retain the bright, fresh acidity that shows through on the palate. Bone dry, with electric acidity, this is somewhat of a textbook Marlborough, New Zealand-like sauvignon blanc, with its notes of lime, lemon grass and subtle green cooking herbs. ($21)

“We started making this delicious pie last season, and it has been a big hit,” said Michelle Linde of Valley Farm Market. Pick one up at the market, or make it at home. 1 9-inch unbaked pie crust Topping: 1/2 cup all-purpose flour 1/2 cup packed brown sugar 1/4 cup melted butter Filling: 4 cups chopped rhubarb 1 egg 3/4 cup granulated sugar 1 cup sour cream 1/3 cup all-purpose flour PREPARATION: Preheat oven to 450F. Topping: In a bowl, combine flour with sugar. Pour in melted butter and mix with a fork until crumbly. Set aside. Filling: Arrange rhubarb in the bottom of the unbaked pie crust. In a bowl, whisk together egg, sugar, sour cream and flour until smooth. Pour over fruit. Top pie with the crumble. Bake in preheated oven for 15 minutes. Reduce heat to 350F and continue to bake for about 40 minutes until pastry edge is puffed, and filling is slightly jiggly and topping is golden. Cool completely on a cooling rack before serving. Serves 8.

With a spotlight on spring ingredients, the local farm market shared the following soup recipe featuring garlic scapes.

Potato Garlic Scape Soup “This is a wonderful, very fragrant recipe for a garlic scape soup. It’s so simple and perfect for early June,” said Debby Oakley of Goldsmith’s Farm Market & Bakery. 2 Tbsp butter 1-1/2 cups garlic scapes, chopped (about 20 to 25 scapes) 1 red onion, diced 4 cups white potatoes, diced 1/4 tsp salt 1/4 tsp black pepper 4 cups chicken broth Sour cream or table cream (to taste) PREPARATION: Heat butter in a large pot over medium heat. Add the garlic scapes and diced onion. Cook over medium heat until onions are translucent, about 10 to 15 minutes. Don’t rush this step! Add potatoes, salt, pepper, and chicken broth, and bring to a boil. Cover, then simmer for 20 minutes until the potatoes are tender. Turn off heat and use an immersion blender to blend the soup. Stir in a dollop of sour cream or table cream (if desired), and serve warm. Garnish with chives or more slices of the garlic scapes. Serves 4.

Simple Sauces to Dress Up Ontario Asparagus Ontario Asparagus is the first field crop of the season, signalling that winter is over and spring is here! Thankfully, this versatile vegetable is fast and easy to prepare. Try it grilled this year, either on its own or topped with a tasty dressing. To Grill: Preheat grill to medium heat. Trim 1 pound (454 grams) of Ontario asparagus and toss in a large bowl with 1 Tbsp olive oil, 1 clove of fresh minced garlic and season with salt and pepper. Carefully place asparagus spears on hot grill. Frequently rotate asparagus until tender. Depending on the thickness, barbeque for approximately 10 minutes. Then, add some pizzazz with one of these homemade dressings! Fresh Green Herb Dressing Mix 1/2 cup salad oil, 4 Tbsp white wine vinegar, 1/4 tsp salt, dash cayenne, 1/8 tsp pepper, 1 Tbsp each of the following fresh minced herbs: parsley, basil, chervil and oregano. Lemon Butter Sauce Combine 4 Tbsp melted butter, 2 Tbsp lemon juice, and 6 Tbsp liquid from cooked asparagus altogether and serve over hot cooked asparagus. Sour Cream Sauce Combine 1 cup sour cream, 1 tsp prepared mustard, 2 tsp lemon juice, and 1/4 tsp salt. Heat over very low heat, stirring occasionally until warm. For variation, 1 cup mayonnaise may be added, if

desired. Serve over hot cooked asparagus. Hollandaise Sauce In blender jar, combine 2 egg yolks and 3 tsp lemon juice and whirl at high speed until blended. Continue to blend, remove cover, and slowly add 1/2 cup melted butter and a dash of salt. Pour into serving dish and serve lukewarm. If made ahead, place dish in warm, not hot, water and stir occasionally to warm. Makes about 3/4 cup sauce. Dill Yogurt Sauce Mix ½ cup plain Greek yogurt with ¼ cup finely chopped fresh dill and a squeeze of fresh lemon. Garlic Sauce (Toum) Pulse peeled cloves from 2 bulbs garlic (raw or roasted) and 1 tsp salt in a food processor, occasionally scraping down sides of bowl, until it forms a paste. With motor running, very slowly drizzle in ½ cup oil, then ½ teaspoon lemon juice so mixture thickens and turns white and creamy. Repeat 3 times with additional amounts of the oil and lemon juice until well incorporated, 5 to 8 min. Add 2 Tbsp of ice water and blend until smooth.

Maple Glazed Salmon with Asparagus (or fiddleheads) “Spring always has us excited about new crop maple syrup and asparagus,” said Lynda Van Casteren of Nicholyn Farms. And this recipe makes great use of these tasty ingredients. You can also use fiddleheads (in place of asparagus). Maple Glaze: 1/4 cup soy sauce 2 Tbsp maple syrup 2 Tbsp fresh cilantro, chopped 2 Tbsp sweet chili sauce Salmon: 2-6 oz salmon portions 1/4 cup maple glaze 1/2 cup asparagus tips (or fiddleheads), rinsed well 1 tomato, diced with seeds and pulp removed 1 shallot, finely chopped 1 clove garlic, finely chopped 2 Tbsp olive oil 2 Tbsp parsley, chopped

PREPARATION: Maple Glaze: In small bowl, mix all ingredients together. Salmon: Preheat oven to 400F (190C). Marinate salmon in glaze for 10 minutes. Remove salmon from marinade and place on a baking sheet lined with parchment paper. Bake at 400F for 10 to 12 minutes. While salmon is cooking, blanch asparagus (or fiddleheads) in salted boiling water for 30 seconds. Remove, drain excess water, and place them in a warm sauté pan. Lightly sauté the fiddleheads with all the remaining ingredients for 2 minutes, or until heated through. Remove salmon from the oven and allow to rest for 3 to 4 minutes. To serve, arrange the sautéed vegetables onto two plates and place the salmon on top. Serves 2.

TO CRUISE OR NOT TO CRUISE What you need to know today

by Barbara Ramsay-Orr I am a big fan of cruising. Over the years I have written about my experiences on every kind of ship, from two-cabin barges that ply the canals of France, to river boats, to yachts - and right on up to the mega cruise ships. Though I have my personal favourite kind of voyage, I can honestly say that every cruise has had its pleasures, some addictively so. My last cruise was in December 2019, shortly before the pandemic ramped up and my next will be, hopefully, late August of this year. Today the decision to cruise has taken on new layers of difficulty. It’s paramount to be aware of the pros and cons of sailing in these constantly changing 48

times, and the implications of our decisions, both morally and practically. Here’s the latest information from industry experts and frequent cruisers to help you decide if, or when, you will book a cruise.

Safety Concerns on a cruise Cruising has taken a bruising during the pandemic, perhaps receiving more damage than any other segment of the travel industry. Some would argue unjustly so. Cruise ships are required by the CDC (US Centre for Disease Control) to report all incidents of Covid, while hotels and attractions are not, so it is understandable that it seems that outbreaks happen more on ships than elsewhere. But recovery is happening. Cruise Lines International Association (CLIA) reports that “ocean-going cruise lines have welcomed more than six million guests onboard since resuming operations in July 2020.” One of the reasons that cruisers are getting back on ships is the enhanced Covid protocols that have been instituted by many of the cruise lines. Most ships require all passengers and crew to be vaccinated. I personally would not sail on a ship that did not require proof of vaccination and not all of them have instituted that requirement. That’s something that should be verified before you book. Erik Elvejord, director of public relations for Holland America Line, sees cruising as the safe choice for these times. “Cruise ships offer a highly controlled environment with science-backed measures, known testing and vaccination levels far above other venues or modes of transportation and travel, and significantly lower incidence rates than land. We know our protocols are working to protect our guests, our crew, and the communities we

tion. It may not happen. Golden completed only half of a circumnavigation of Iceland when the ship was forced to return to Reykjavik because of an outbreak. “It was still a remarkable and enjoyable cruise, but it was not the itinerary that we had expected.” Beach BBQ, Chrishi Beach, Nevis

For us, it means preparing to have our entire fleet return to service by June 2022.” This includes ships in Alaska, Europe and Canada/New England that offers guests options to cancel and rebook at a later date if they are more comfortable with this option. David Swanson, an award-winning travel and cruise writer, has been on five cruises since July 2021 and, on most of the cruises, felt safer than he did in his hometown of San Diego. “Everyone on board had been vaccinated, the ships sailed at about 60 per cent capacity and there was the option of outdoor dining.” There were ports on one of his Caribbean cruises where the passengers were limited to ship-organized excursions, with no interaction with the population. “But we did visit lovely places in our ‘bubble’” he explains. “If you are willing to go along with the protocols, a cruise can be a safer option than independent travel. There is a sense of security when you put travel arrangements in the hands of someone you trust.” A cruise can make moving from one country to the next less fraught, as Swanson discovered. “For those who wish to visit multiple countries while Covid still lurks, protocols for transiting from one country to another are still evolving and may involve looking for test sites and keeping track of changing protocols.” While traveling via Heathrow to Athens last summer, he was misinformed by airlines on what was required. Meanwhile, on a ship, Swanson advises, “The cruise line manages entry requirements and protocols which can make multi-country travel easier than independent travel right now.”

Do your Research Before any booking, know exactly how the cruise line will take care of its passengers should problems happen. While it is important to know the vaccination proof and testing of a cruise, it is equally important to research what the cruise line will do if you or other passengers test positive for Covid. Not all cruise lines are equal. SilverSeas, for example, chartered a jet to fly positive-testing passengers to the embarkation port

and put them up in the Ritz Carlton. No one wants to be left in a port to stay in a youth hostel or worse, be left to make their own arrangements. Cruisers should also research cancellation policies should they test positive after booking, but before embarking. Most cruise lines are offering credits for future cruises if Covid disrupts your plans. Fran Golden, a prodigious cruiser and award winning travel and cruise writer, reminds us that there is also a degree of personal responsibility. During a cruise to Antarctica with Abercrombie & Kent, she kept to her own personal ‘bubble’, even though most passengers were very good at social distancing. “I loved the cruise. They did so many things right. The mask requirements were rigidly enforced and we were updated every morning about port information and Covid status.” Some cruise passengers, who tested positive after they arrived at the port in South America, were even turned away while one passenger, who tested positive after leaving port, spent ten days quarantined in the cabin. Golden advises, “Do your homework before you book. Ask all the questions. What happens if you get sick? What is the vaccine/mask/social distancing policy? What are the rules at the destinations? Every cruise line has their Covid policies on their websites, so have a close look at them. You can also check your ship’s status on the CDC website.”

Choose to Cruise Small Smaller means that fewer passengers allows for more careful control of mask wearing, social distancing and testing procedures. On a Viking ship, Golden reports that they were tested daily. The large numbers of passengers on mass market ships means a lot more exposure. “The mega ships are often the choice for passengers who are looking forward to partying and dancing, but that party ship thing may be drastically curtailed now.” Smaller also means that the ships are more agile and have more choices of smaller ports that can be substitutes. Adrienne D’Annuncio, manager of the SeaDream Yacht Club, Charity & PR tells me that small yachts are a popular choice for hesitant cruisers. “SeaDream Yacht Club resumed sailing in late June 2021. We are currently successfully sailing both yachts in the Caribbean. Indeed, some guests have been hesitant to travel, and we have been flexible with changes & cancellations, while others are anxious to sail and just want to enjoy a holiday.” The small size of its twin yachts appeals to those who are uncomfortable with crowds.

Cruise Bargains Both Swanson and Golden think there are some good cruise prices if you book soon, but cruise analysts predict a price surge and increased demand in the second half of 2022. If Covid conditions continue to improve, those who love to cruise will be anxious to set sail again.

Be Flexible Both Swanson and Golden have one mutual piece of advice: “Don’t fall in love with your itinerary!” The Covid sands can shift in a second, and ports of call can change pretty quickly if there are cases on board or if the conditions in the port have worsened. Don’t book your cruise because it visits St. Barts, your dream destina-

Golden points out that there are also a huge number of future cruise credits out there, issued to those who had to cancel, with passengers will be eager to use them.

Moral and Ethical considerations Pandemic worries aside, there are other issues to consider. The cruise industry has been criticized in recent years for its negative impact on the environment. The industry has, however, implemented changes, with more on the horizon, that minimize the environmental effects of cruise ships. Many ships have banned single use plastic, and most lines are investing in new technologies to re-

duce their footprint. Hurtigruten, the world’s largest expedition cruise operator, has invested heavily in green technology, and is considered the world’s greenest cruise company. Its next step involves powering its ships with liquefied biogas – a fossilfree, renewable gas produced from dead fish and other organic waste. Cruise lines are also paying attention to destination stewardship. Continued collaboration with local communities in the destinations that cruise ships visit remains a critical focus for the cruise industry.

Bottom Line If you decide to cruise, be cautious. Do your

research. Read about other cruisers’ experiences (AllThingsCruise.com has passenger reviews and reports). Choose small ships, like the SeaDream yachts, Windstar’s small ships or Scenic’s new exploration yachts, over big ones. A river cruise is also a good option. Be prepared for last minute changes. You might also opt to stay closer to home - Viking is launching its Great Lakes Expeditions for Curious Explorers cruise in Spring of 2023. “If your heart is set on visiting a specific port or country, a cruise may not be the best option for this moment,” says Swanson. “But if you’re fully vaxxed and you can go with the flow when plans evolve, cruising seems like one of the safest, least stressful travel options available as we ease our way out of the pandemic.”
