ction Lock – South Georgian Bay is in their 3rd year of operation. What once started out as a part-time mobile business, has now grown to a shop in Wasaga Beach, which opened in April 2017 and is managed by Steve’s wife Kim. They recently acquired Mark, as their 1st employee and addition to the family. Steve, who started out as a mechanic and worked as a mechanical engineer for most of his adult life, loves to draw on his wealth of knowledge and skillset and put them to use in his new profession. The business started out by taking emergency calls for those locked out of their dwelling or vehicle, along with residential work that included door hardware, re-keying locks and installing safes. Kim has become adept in identifying keys, key cutting, and problem solving where key issues are a concern. Action Lock is seeing a considerable increase in commercial work. The business installs Commercial Doors and Locks, High Security

Locks and Key Systems, Keypads, Panic Hardware & Exit Devices, Pivots and Continuous Hinges, Door Closers, Automatic Door Openers including Handicap Access, Access Control and work needed for Fire and Life Safety Inspections. Steve acquired AAADM certification as an Automatic Door Operator Inspector which qualifies him to inspect, install or repair power-operated automatic pedestrian doors. ADA Compliance and access for the elderly and disabled is currently of great importance for Action Lock. By 2025, it will be law that powered door operators be required for barrier free washrooms and mandatory into areas of assembly. Action Lock has helped several businesses with this new legislation and looks forward to helping other businesses that still need to meet this challenge when it is time for them to move forward. Action Lock’s motto is “Customer Satisfaction is Key” and they rightly make every effort to hold this true. “If there is one thing both of us have

learned in life”, says Kim “is that every customer is special and so are their needs.” Steve believes that it doesn’t matter if his customer is young or old, a resident or business, a local or someone from out of town. Chalet Chic Blue Mountain renovation shortlisted for prestigious design award By Dawn Ritchie | Photos by Heather Goldsworthy

D

esigned by Janice King-Smith of White Elk Interiors and shortlisted for the 2019 International Design & Architectural Awards, this contemporary ski chalet at the foot of the Blue Mountains was transformed from dated and cluttered to fresh and functional over the course of two years. The story began when Chloe Greenhalgh knocked on Janice King-Smith’s front door. Chloe and her partner Darryl Hughes were thinking about renovating their chalet and word had traveled that the designer up the street performed a miracle on the neighbourhood eyesore. Formerly dubbed ‘the prison,’ the peculiar chalet was now a stun-

ning Scandinavian show house where the designer and her family lived. Since they were neighbours, Chloe took the chance on getting a tour. Janice invited her in for coffee and a renovation union was formed. As extremely active and sociable people, Chloe and Darryl needed a lot more storage and a better layout to accommodate their large social gatherings and regular weekend guests. They also needed a new space for an office where they could address the demands that arose on weekends from their high-profile jobs. They were ready for a style makeover. WHEN THEY PURCHASED THE CHALET, IT HAD COME WITH ALL THE BELLS AND WHISTLES INTACT, INCLUDING A FULL BAR, SERVING GLASSES AND EVEN THE ART ON THE WALL. But achieving all this without changing the chalet’s existing footprint would be a challenge, especially given that nearly every room was trapezoid in shape and the basement was designated as a tenant apartment—off limits. Janice attacked the storage issue as task #1, filling the home with walls of cabinets that blended in seamlessly with the chalet’s new black and white colour scheme. Benjamin Moore Chantilly Lace was the primary wall colour because it best matched the cabinetry, Janice explains. The entryway was really where the clutter explosion began. It had “zero storage” recalls Janice and no closet whatsoever. Not a great scenario for a dynamic, athletic household with a ton of gear. The couple had been making do with a series of hooks, so Janice bumped out a closet by biting into the garage, which too, was trapezoid shaped. Now there was a massive space for clothes, boots, bicycles, skis, snowboards and helmets. “And it still leaves the garage with space enough for a vehicle,” Janice assures. Janice used grey Montauk slate in a Chevron pattern for flooring and added a wide leather upholstered bench for kicking off boots and gear. The existing staircase up to the first level had dat-

The lower living area of the chalet was already party central but the owners felt the space needed a major refresh. When they purchased the chalet, it had come with all the bells and whistles intact, including a full bar, serving glasses and even the art on the wall. The Santa Fe style was being kicked to the curb but it was important that a bar remain for the couple’s renowned parties. Janice’s marching orders were to give the area a cool downtown Toronto, Queen Street West vibe. For Janice that translated into a moody commercial bar that had a funky bistro/trendy café feel—espresso by day and whiskey by night. Janice also saw an opportunity to kill two birds with one stone. The couple had requested that new office space and there was a huge vacant ceiling space right above the bar that made the existing bar look unfinished and out of proportion.

She suggested they build a mezzanine level above the bar for the office. This would balance the soaring empty wall space, enclose the bar, giving it a roof, and afford that Queen Street West feel the couple was going for. This design would also provide an airy office level right above the main hangout, so they could work and still enjoy the fire without feeling locked away in a small office on chalet days. This inspired concept virtually added a new room to the building without changing the footprint, and allowed for an additional storage closet where the couple could now hide printers, fax machines, office supplies and cleaning equipment. The mezzanine office would also be filled with natural light from the ceiling level windows and it was mere steps away from the kitchen, so you could walk around, get a coffee but not be looking at dishes while you worked—the perfect location. With a glass knee wall (provided by Dennis Risk and Gil Letourneau of MCR Indus-

tries) and a three-and-a-half-meter long desk, the mezzanine became an inviting location to check emails, surf the net and survey the action below. Unfortunately, the view from the office would be the dated brick fireplace that covered the entire wall below. That had to go. Janice instead created a svelte modern fireplace using 2 x 4-foot floor-toceiling Montauk slate as the new focal point. Mick Vaclavik and his crew of Renovate Inc. hefted the exceedingly weighty tiles into place by hand, much to Janice’s astonishment. The fireplace deliberately has no mantle and houses a mounted Smart TV. Deep niches on either side stock plenty of firewood for the woodburning Regency Pro Series fireplace that was to remain. The cozy sectional chaise sofa here is from Rove Concepts, plush Moroccan carpet from Elte Market. For the bar, Janice tore out the existing oak counters and decided on colour blocking. She now had this “monolithic slab of tile on one side of the room” and wanted to balance it by making the bar wall black as well. For continuity, her choice again was Brazilian Montuck slate with a black tempered glass backsplash and black hexagon tile feature which ran up to the ceiling to draw the eye upward. The paint for the backsplash was formulated and supplied by Glass Paint Technology Inc. from Gormley, Ontario, and painted on by a local car sprayer. Chris Robertson of Extreme Linings and Coatings in Owen Sound poured a concrete bar counter and laid an epoxy finish on the concrete flooring as well. The exterior of the bar was finished in barn board to warm things up and underlit to offer mood lighting. Stools from UK District 8. H

ow designer Sarah Richardson gets so much done is a marvel. With a lengthy resume of half a dozen TV series, a handful of books, a very busy design firm, spokesperson duties for Monogram, and most recently, a fabulous new collection of wallpaper, this powerhouse designer’s creative juices are unstoppable. In 2017, she and husband, Alex Younger, built their off-grid forever home in Creemore, and now they’ve exercised the same principles of exceptional design and eco-consciousness in the renovation of a heritage home on Main Street in their new town. Richardson manages the interior design work. Alex Younger is the passionate force behind clean solar energy. HGTV chronicled the build of their dream home in season one of Sarah Off the Grid and has again filmed this latest project from purchase to final reveal in season two of the six-episode series, now airing.

nest | designer renovation GL: What made you decide to renovate a new property so soon after completing your house? Well, we finished the house from Season 1, Sarah Off the Grid, and I think it had been all of six weeks and I thought, what should we do next? And there’s this dangerous little creation called the Realtor app and suddenly I was looking at properties. GL: Is there a reason you chose Creemore again? Honestly, I just love the area. I love my town and I thought, well the first home was so much fun, what else could we do? The reasons I do things are not necessarily the reasons other people do things. I think the Georgian triangle is a beautiful place and I want to keep making sure the world knows that. It’s kind of like my current mission. GL: Why renovate a century home instead of building from scratch again? I love historical homes. I’m the daughter of an architectural historian, so it’s in my DNA. And I love the idea of a dramatic ‘before’ that leads to a magazine-worthy ‘after.’ I think we live in a culture where people treat too much as being disposable. Here it sits on the main street and I believe in doing what’s right for the town, for the house, and for history. So, I like the idea of going in and restoring it, to make it work for the next hundred years. And I think it’s really beautiful. GL: Do you encounter a lot of issues in older structures? Yes, but my favourite part of the challenge is, that they have certain architectural features to offer. It’s not a completely blank slate of ‘what shall we do?’ It’s actually, ‘what shall we do with this room that has two bay windows?’ It’s about embracing the best of what’s there and reinventing and reinvigorating what’s not working. Then reprogramming it for an entirely new future that speaks to the needs of contemporary lifestyle. GL: What role did Tommy Smythe play in this renovation? He’s my sounding board. He is always my collaborator. I always say, I’m the Department of Interiors, my husband is the Minister of Exteriors and Tommy is my Style Counsel. GL: A lot of renovators go on the cheap in renovations so they can maximize profits. How do you rein in your designer instincts? I don’t do anything on the cheap because my 28

name’s on it and my brand is too well known. I’d rather make no money than sacrifice my reputation. So that’s Rule #1. Integrity isn’t something you can buy. You either have it or you don’t. In terms of how to balance a budget, I’m very practical. I can save and I can splurge. One of the things I do well is take inexpensive and make it look fantastic. That’s a journey that I love to go on and it’s a game I love to play. I don’t believe that style and budget are mutually exclusive. The first piece of work of mine that was ever published, and it was on the cover of House and Home in 1998, was a rental loft apartment that I lived in. The cover image was a two-dollar lamp, a fivedollar chair, a twenty-dollar table and a ten-dollar mirror. And that has taught me that you don’t have to have money to have good style or to be successful. GL: Were there special appliances you had to choose to go off grid? No, this house is grid tied. We installed solar panels on the roof and a battery bank so that the solar panels can fill the batteries and run what needs to be run in the house. If you need more power than what you’re getting out of the panels and batteries you can buy energy from the grid. But the other thing is, when you’re not home and it’s a gorgeous sunny day and you’re not doing anything, you are winding the meter back. I’m calling it the energy piggy bank, so you can save it for a rainy day. GL: You took a vacation mid-renovation. What ideas did you come back with? Oh, my gosh, so many. In the third episode, which is the principle bedroom, I was inspired by a bathroom at a lodge we stayed at in Kenya. I brought back textiles and colours that inspired me. There was no shortage of inspiration. I think that you never regret traveling. Travel is the most incredible journey you can take for inspiration. There are

photographs in the bathroom, in the first episode, which I took while we were on safari. GL: What’s your favourite room in the house? The kitchen/dining room. It was the game changer in the house. Walls removed, spaces opened, complete redefinition of how it was used and how it looks and still completely contemporary, while being sympathetic to the original architecture. Tommy has this game called Keep or Toss, and so the keep was: keep the original stair, keep the gorgeous handrail, keep the trim, keep the baseboard. Toss: the walls, the original floors, which were all a disaster, the popcorn ceiling, the leaking stack coming through the corner of the kitchen. You know, toss what’s not working. Keep what’s awesome. GL: What was your biggest challenge in this project? When I bought it, it had a little addition on the back and what looked like a perfect foundation and I thought we could literally put a two-story addition on top of the original foundation and be good to go and spend the $400,000 that I had allocated at the outset. But the foundation was three rows of concrete block sitting on absolutely nothing. So, we ended up with a house that was useless because the addition was garbage. The foundation was non-existent. And we had less than 1000 square feet of living space. I had no choice but to dig, and essentially, I had to double my original budget to pull it off. I thought I’d spend four hundred and I had to spend eight hundred. GL: What was your high point? I think my high point to this day is driving down and passing my house and having it look so pretty and proud. It makes me smile. I mean, for me it was about saving a piece of local history.

ward-winning Collingwood designer, Marylyn Joel, has been reconfiguring homes in the Georgian Triangle since 1997. A graduate of Ryerson University’s Interior Design program, she is a member of the Association of Registered Interior Designers of Ontario and Interior Designers of Canada and a three-time recipient of the Best Houzz Service Award (in 2018, 2017 and 2014.) Her design work, featured in magazines, has spanned commercial design in Toronto to residential renovations in Collingwood, Creemore, Wasaga, Thornbury and Barrie. Her specialized skills include drawing and documenting design details for construction management and assessing a clients’ needs to make their homes best fit their shifting lifestyles. GL: What kind of services do you provide as a designer? I’m not a decorator. I do the architectural finishing on the interiors. I tweak the floorplan, the layout, I’ll design all the millwork, the kitchen layout, bathroom vanities, all the finishing, everything that the contractor needs to finish off the renovation. Basically, I provide the drawings and the specs in order for the client themselves to follow through with it or give it to their contractor to follow through with getting the design done. GL: How do you approach each new project with a client? I walk through the place and listen to their expectations first. Start asking questions and try to get a breakdown of more information and discover issues that they’ve had before. I also ask them to go through magazines and Houzz, etc. to flag images that they like. They can say, I like this desk, I like this flooring or I like this drapery, and when I go through enough of it, I start picking up consistencies and get a feeling about what their taste is and what they’re expecting. If they’re loosey goosey, up in the air, “you figure it out,” I could give them where I would want to go, not where they want. GL: Have Georgian Bay residences changed much since so many are moving up here permanently from the city? It’s more of a city residence now. Basically, they want to move their Toronto amenities up here. If they’re going to keep their weekend retreat, there’s never enough storage, ever. You can get away with it on a weekend basis but when you live here on a permanent basis things have got to change. So, it’s more of a space planning, what are your needs and let’s plan the space to make it work for you. Then we follow through with the finishes and the look, the feel, the flavour of what you want in that

space, and then you get to the furnishings part of it. GL: Do you supply that service as well? Some of it, it depends how far we go, but I also work with others. I just worked with F.A.D. on refurbishing somebody’s cottage. I will do that, it depends on the client’s needs. GL: Are you renovating more cottages or new developments? Both. But I’d say I’m mostly renovating existing spaces. GL: Are the needs of homeowners changing? It’s still pretty family oriented, but accommodating the grandchildren is important. You want your family around, but not underfoot all the time. Giving them a separate space, that’s a key one. It’s

funny, people are still going for these big homes. They’re expensive to heat and maintain and one of the issues that parents don’t realize is, it’s great to have your family come up, but your family wants their friends with them and they can’t have their friends in your space. GL: What other trends are you noticing in design? Pine is out. That country look, pine hutches, it’s hard to sell them. It’s like the old mahogany, traditional furniture style, the Duncan Phyfe look, English traditional. People are into a more contemporary look. Especially if it’s a smaller space. You need built-ins as much as possible and the colour of the cabinets are the colour of the walls. Visually you’re not seeing this bulky area of wood furniture. A nice clean, open look. All your stuff is behind doors. I think a nice clean environment is keeping it simple. And mud rooms are key. Very important. Storage, especially for up here. All the extra coats and boots you need up here. Storage is vital, especially if there is no basement or locker room. This is a four-season location. Golf clubs, bikes, skis, tennis rackets… where do you put that stuff when you start moving up here? Mud rooms. GL: What about home offices? They don’t ask for it but you need to accommodate it. There has to be one area where you accommodate a desk and chair. And I always do a filing cabinet. GL: Do you have a lot of storage in your own home? I’m in a condo. I have no front closets so I changed the basement layout to accommodate closets and one of the first things the kids wanted was a workbench to tune skis and maintain bikes, so that was done. And a recreation area for the kids, a ping pong table. GL: What is your favourite room in your home? The living room. It’s my chill out area. I sit down and the brain stops. Tune out. The fireplace is going, I watch some TV. To me it has a good feeling. Nothing fancy, I like the colours in the room. Off white. There are prints that I like with pillows to complement. I have dogs in the house so I don’t have carpet anywhere. I have tiled floor in the living room. And I don’t have an area rug. I don’t have one anywhere. I wear shoes all the time. But that’s just me. I have corked floors, laminated flooring, and tile. Good, clean washable. I live simply. I like the simple, clean uncluttered look. And everything has to have its spot.

I

t’s exciting to get assigned a story about a restaurant just weeks away from opening. That’s why this reporter jumped at the chance to write about The Grey, a new eatery overlooking the Thornbury Harbour and Georgian Bay. Set to open in mid-May, (the interview was conducted in late April) I arrived to plenty of construction hustle and bustle and a busy kitchen brigade working out the final kinks of its menu. “Come on in,” said Chef de Cuisine, Amber Plourde, who cheerfully greeted me at the kitchen door. “We’re in full menu testing mode. Right now, we’re working on a pork Milanese and it’s fantastic.” After saying hello to the culinary team and receiving a brief dining room tour, I sat down with Amber and managing owner, Spencer Sgro. With the hum of saws in the background, together they discussed their vision, food philosophy, future plans for The Grey and more.

COUNTRY FLAX BISCUITS (recipe by chef Amber Plourde, The Grey Thornbury)

This recipe is fun because the biscuits don’t need to be shaped perfectly and the flavour profiles can be switched to whatever is in season. I enjoy making biscuits by hand and I also grate and freeze my butter rather than using cold and cubed butter.

1/3 cup charred spring onions 4 cups unbleached all-purpose flour 1-1/2 Tbsp baking powder 1 tsp salt 1 tsp baking soda 1 Tbsp flax seed (since I love flax, I tend to go heavier. I use Good’s Family Farm Flax Seed) 1 cup frozen grated butter 2 cups buttermilk 1/3 cup grated Amazing Grey goat cheese (this is my fave, but any sharp cheese works) PREPARATION: Charred Onions: I like to just throw them on the grill after a quick water rinse and oil rub and a dash of salt. Let them cool on some paper towel to remove as much excess liquid as possible, then a good chop. If getting the grill going isn’t in the biscuit timeline, a fresh spring onion would be just as nice. Using a large bowl, combine flour, baking powder, salt, baking soda and flax. Add the grated frozen butter and fold it into the flour mixture. Be sure to keep this part gentle and quick ensuring you’re not melting the butter. Add the charred spring onions and goat cheese. With everything but the buttermilk, make a small well. Add the buttermilk to the flour well and with your clean, and I suggest jewellery-free hands, start to mix the flour mixture with the buttermilk. Try to keep the mixing minimal to avoid over working the gluten and melting the butter. Once combined, wrap in plastic and refrigerate for 30 minutes. Next, we roll and fold the dough four times. Let it rest for 10 minutes covered. Then cut into 1.5-2-inch squares and brush with 35% cream or milk and sprinkle with some sea salt, if available. Place on parchment paper lined baking sheet. Pre-heat oven to 400F. Place biscuits in the 400F oven, and then immediately turn down to 325F degrees and bake for 15-20 minutes. Makes 9-10 biscuits Serve warm with room temperature local Emerald butter!

Spencer, with several years of restaurant management skills under your belt (his resume includes a long stint in London, England at various notable dining rooms) you purchased the property (the former home of Maiolo’s Restaurant) last year with two silent partners. With renovations on going since January, the goal is to breathe new life into this landmark building. Can you expand? Spencer Sgro: Overlooking the harbour, it’s a stunning location that really needed a massive overhaul. Previous restaurants have struggled with this space because it’s so large. Our design ensures that the space feels cozy and intimate. Once completed, the property will feature a 60-seat dining room, bar area, and 120-seat waterfront patio. What’s your driving vision for The Grey? SS: Along with being a farm-to-table restaurant, that serves up simple and consistent dishes, our goal is to be a vibrant, community-focused restaurant that adds value to the already impressive Thornbury dining scene. It will take on different faces over the seasons. In the summer, it will be very drink forward with plenty of appetizers and sharing plates that appeal to the patio crowd. During the cooler months, it will be more of a cozy, après ski kind of place. I hear the concept and design of The Grey was inspired by the Catskills resort area located in southeastern New York. Over the past few decades, that mountainous region has become known for its hip boutique hotels and country chic farm-to-table eateries. Can you expand? SS: We were inspired by the Catskills because it’s kind of similar to this region. Located in a rural area a few hours drive from New York City, the Catskills offers skiing in the winter, but in recent years it has attracted creative New York City chefs and restaurateurs looking to escape the city for more of a country pace of life. Because these chefs bring a bit of New York City swagger, the restaurants are countrified, yet sophisticated. That’s what inspired us, and that’s what we’re going for with The Grey. We want people to come here feeling comfortable in whatever they want to wear, and enjoy really great food.

SS: We’re going for a very cozy, comfortable, rustic chic vibe. Along with a newly installed stone high-efficiency wood fireplace, the dining room features intimate booths, a bar area and banquet style seating. A large harvest table will be in front of the fireplace, allowing for larger groups or communal style seating, as well. What’s your food philosophy? Amber Plourde: The more local and farm fresh, the better. In order to create our menu, I visited several local farms and producers to check out the bounty of products this area has to offer. Along with seeing with my own eyes how local fruits and

vegetables are grown, or how the pigs are fed, I wanted to ensure I’m sourcing from farms with ethical and sustainable practices. What can diners expect from the menu? AP: Everything will be made from scratch with simple, high quality ingredients. We’re even making our own pasta in-house. Although, we still haven’t completely nailed down the menu, guests can expect both sharing and large plates, burgers, soups, fresh salads, fish tacos, brick chicken, whole grilled local trout and more. SS: The menu isn’t cuisine specific. Our goal is to feature a number of seasonal dishes made with locally sourced products.

Amber, you were born and raised in Niagara Falls. Let’s hear about your culinary journey and what led you to The Grey. AP: I started cooking at the age of 15 through a high school co-op cooking program, and then worked in the kitchens of Niagara-on-the-Lake. But everything really came together for me when I joined the culinary team at The Drake Hotel in Toronto. I worked there for five years and really honed my cooking skills. As for leaving Toronto? The Grey offered a wonderful opportunity for my partner and I to move to the country with our young son.

While working at the Drake, you won the coveted Ontario Hostelry Institute’s (OHI) Top 30 Under 30 Award. According to the OHI website, “the Top 30 Under 30 awards aim to recognize the people working hard to make significant changes in [the hospitality] industry. They are leaders who strive for excellence on a daily basis.” That must have been quite an honour. AP: The Drake really pushed me to explore my culinary boundaries and get involved in volunteer opportunities. I was truly honoured to receive the award. What three course meal would you recommend from the menu? SS: Start with devilled eggs as an appetizer, then have the Ontario whole grilled trout as your main. For dessert, try the dark chocolate and salted pumpkin seed layer cake — it’s to-die-for! You’re participating in the Apple Pie Trail applepietrail.com. What dishes will you be featuring? AP: We will be serving a seasonal menu of dishes that feature apples, based on product availability and the appetites of our diners as the seasons change. We will be serving a caramelized apple churro to start; we take beautiful local Red Prince apples and caramelize them in brown butter and sugar with a bit of maple syrup, that sits on delicious buttery fried pastry topped with some whipped yogurt and shaved hazelnuts . What about menu items for diners with special dietary needs? AP: There will be a few vegan dishes on the menu, including a hearty curry dish. We will also have gluten free offerings and options. Any future plans you want to mention? SS: Nothing is completely set in stone, but we are looking at ways to maximize the usage of the property. There’s an ice cream hut onsite, and we hope to have it operational at some point down the road. We’re also thinking of opening up a general store at the front of the building to help service the local yacht club. The idea is to provide provisions for boaters, such as salads, sandwiches, prepared meals, bakery items, fresh produce and grocery staples. Mini Pavlova with Whipped Cream & Fresh Berries Serves 8 Preparation time: 15 minutes Cook time: 1 hour

Ingredients 3 egg whites (at room temperature) 1/16 teaspoon cream of tartar (optional) 3/4 cup confectioners sugar plus 2 to 3 tablespoons for dusting 1/4 teaspoon vanilla extract 1Âź teaspoon cornstarch 2 cups fresh raspberries and blueberries (or fruit of your choice) 1/2 cup heavy whipping cream Instructions To make meringues: Preheat the oven to 250 F and line a baking sheet with parchment paper. Put the egg whites and cream of tartar into the bowl and beat on a medium speed until the mixture forms soft peaks. Increase the speed to high and start adding sugar, 1 tablespoon at a time. Add vanilla extract and beat until stiff and glossy peaks form. Take a rubber spatula, gently fold in cornstarch. Spoon 8 mounds on a prepared baking sheet and using a back of the spoon create a slight dip in the centre of each meringue. Bake one hour. Turn off the oven and let the meringues dry completely in the oven for about 45 min. To make cream: In a large mixing bowl, beat whipping cream until stiff peaks form. Spread about a tablespoon of cream into each meringue, garnish with berries and dust with confectioners sugar. Serve immediately. Note: Pavlovas (without cream or berries) can be baked the day before and stored in a sealed container at room temperature.

Basil Frittata with Smoked Salmon Makes 8 slices | Preparation time: 10 minutes | Cook time: 8 minutes Ingredients 1 to 2 tsp horseradish cream 250ml (1 cup) sour cream 6 eggs 1/3 cup cream 1/3 cup shredded fresh basil 1/2 cup grated parmesan cheese salt and freshly ground black pepper 2 tbsp canola oil 16 slices smoked salmon 100g arugula, baby spinach or pea shoots 44

Instructions In a small bowl, mix horseradish and sour cream. Add more horseradish if you like heat. Set aside. Preheat oven to broil. In a medium bowl lightly whisk the eggs, then add the cream, basil, cheese, salt and pepper. Heat oil in a 12â€? heavy-based, oven proof frying pan over a medium-high heat. Pour in the egg mix. Lower heat and cook for 4-5 minutes, or until the frittata is mostly set. Transfer pan to oven and ďŹ nish under a grill until slightly brown and set

in the centre. Remove from oven (careful, handle will be hot) and allow to cool slightly. Slide the frittata out of the pan while still warm. You may need to run a palette knife under the frittata to ease it out. Cut into eight wedges. To serve, top each slice with two slices of smoked salmon, arugula and a dollop of the horseradish cream, or serve whole with slices of salmon and arugula arranged on top, with horseradish cream in a bowl on the side.

hen Diane Sasek and Annie Auckbaraullee opened their first fashion boutique in Mansfield, Ontario six years ago, they made a crucial decision. Every item in the store for would be chosen for its ‘one-of-a-kind’ quality to give customers a unique shopping experience. Accordingly, they regularly travel to Europe, Britain, Turkey and beyond to hand pick top quality unique fashion accessories, shoes, boots and clothing. Their fresh approach to fashion caught on strong. Faithful customers return regularly to see what’s new. With the success of their Mansfield store, Diane and Annie opened a second shop, Sasek’s Jolie La Vie, in downtown Collingwood last year. The boutique, located at 33 Hurontario St., has

found its own fans by offering the same guarantee of unique fashion, superb accessories and enough cubic zirconia and crystal bling to brighten anyone’s wardrobe. “We think shopping should be more of an experience than just going through the racks,” says Diane. “I love fashion, especially purses and shoes. We have a boot now that is actually from a line out of Dubai. They are made of handcrafted leather and handmade tapestry. They are just beautiful.” Known as the shop “Wear Art Comes to Life”, Jolie La Vie carries elegant hand-painted clothing from Turkey, artistic footwear from Europe and handcrafted bags and wallets from Italy. “When we were in Italy, we started looking into leather goods

and fashions,” recalls Diane. “We hand select all our leather bags in Italy. That means there are never two bags that are exactly the same. We hand pick everything, with much of our fashion coming from Europe. This year we went to Turkey, Austria, Switzerland and England and brought everything back with us.” Sasek will often walk into a store overseas and see something she knows her customers would love. However, she also knows the suppliers that carry items that are perfect for Jolie La Vie. She watches for fashions that will complement the store’s fabulous Italian purses. Among the store’s hallmark pieces are pants by Tyler Madison, a Canadian company based in Montreal, and jewellery by British company Shrieking Violet. The jewellery is created with tiny flowers set in resin within a sterling silver setting. Sasek’s also imports stunning hats from Kentucky during Derby season to wear for parties at race time or anytime. The glamorous yet whimsical look of the boutique is due to Diane’s instinctive flair for designing beautiful displays. As well as fashion, her displays feature art and home décor pieces from around Europe.

Portland: epicentre of cool culture It could almost be Canadian — environmentally conscious, liberal, outdoorsy and friendly. The idiosyncratic character of Portland, Oregan, though, makes it unique. I love the unpredictable funk of this city. Where else would the new trend in natural wine bars find such instant popularity? Natural wines are those that have been made from wild yeast, with no chemical intervention — a controversial but interesting new/old twist on wine. Bar Norman is just one of a clutch of new bars that focus on natural wine. It was here that I got hooked on Stumptown coffee, Voodoo Doughnut and food cart dining. Then I discovered there was more than Stumptown. The city has the highest concentration of independent coffee roasters in the US. Portland is also known for its experimental food scene and craft beers. Try a glass of Moon Pie, a dark stout from Great Notion Brewing. Walk through the Pearl District to enjoy galleries, shopping, brewpubs, coffee houses and restaurants. Fork-town Food Tours offers niche food tours, including a gluten-free one. Great restaurants are numerous. At Beast, award-winning chef Naomi Pomeroy serves produce-driven fine dining. Bullard, in the new Woodlark Hotel, is run by Top Chef alumnae Doug Adams. Visit the Portland Saturday Market where you can meet local makers, try out the food carts and indulge in some creative shopping. There are gorgeous gardens; outdoorsy types can enjoy a pedal boat tour on the Willamette River or take a hike or bike tour through urban neighbourhoods and the surrounding countryside to appreciate the scenery. The nearby Willamette Valley produces some of the best pinots in North America and a wine tour invites you try many of them. For a unique hotel stay, book a room at the new Hoxton Hotel, next to the gate to Old Town Chinatown, a historic space re-imagined with local designers.

Amsterdam: abundant arts At the beginning of Donna Tartt’s Pulitzer Prize winning novel, The Goldfinch, protagonist Theo Decker is sitting in a hotel room beside a Dutch canal, wondering when he will be arrested. I loved the novel, but the really captivating thing for me is the fact that Theo is sitting in my favourite hotel in Amsterdam, the Ambassade. It’s a treasure: a 56room, five-star hotel comprised of 10 different canal houses joined together. But the real attraction is the library, filled with over 5,000 books, all of them signed by their authors. Because the hotel is situated on the Herengracht, which is the location of many of the city’s publishing houses, visiting authors have been routinely booked into the Ambassade and have contributed copies of their books. Tartt’s stay at the hotel gave her the background for her opening chapter. Read the book, if you haven’t already, and visit Amsterdam before September when the film version of the novel, starring Nicole Kidman and Ansel Elgort as Theo, is due to be released. You will be primed to enter into the densely-plotted story about a famous painting, the importance of art and the role of fate in our lives. The painting in the book, a small portrait of a goldfinch chained to its perch, painted by Rembrandt’s student, Carel Fabritius, is an exquisite example of Dutch golden age painting, and that’s another important reason to visit this year — the city will be celebrating Rembrandt’s 350th anniversary. The Rijksmuseum as well as others will be highlighting Rembrandt in honour of the anniversary. Amsterdam’s Rembrandthuis, where the artist lived and worked for several years, celebrates the artist’s life with a recreation of his studios and living quarters. The Rijksmuseum will map out art trails through Amsterdam to places where the artist lived and worked. The trails can be accessed on foot, by bike and by boat on a canal cruise. Melodies From Peak to Shore

The King Returns to Collingwood
