A Round Table of like minds, the conversion of ideas, a gathering of allies, a state of creativity. This is what we live for and we think in some sense what we all look for. That space. It’s what happens in that space that matters. We hope these next few issues will be a little reminder for you to create that space for yourself and those you love.

This is not really a recipe, more of a pictorial of ratios, leaving you to experiment for yourself. It’s a forgiving combo. And who doesn’t need that in the morning, when all your defenses are down?

1 -2 1 Tbsp 1 Tbsp stars of anise rooibos tea brown sugar

1 tsp caradmon

1/2 tsp pink peppercorns

1/4 tsp ginger

1/2 tsp pinch cinnamon of clove

Add all ingredients to 2 cups of hot water or milk. Steep for 2-3 minutes. Strain. Enjoy.  11

In the kitchen pantry at LiveWireFarm—a culinary temple stocked with staples and wares—Johanna, the wife of the resident beekeeper, keeps a homemade pancake mix in an airtight container ready to go. The pre-mixed dry ingredients keep things speedy and tidy for breakfast.

1 1/2 CUPS ALL-PURPOSE OR WHOLE WHEAT FLOUR 1/2 CUP ROLLED OATS 3 TBSP BROWN SUGAR 1 TBSP BAKING POWDER 1/2 TSP SALT 2 EGGS 1 1/2 CUPS MILK 1/4 CUP BUTTER, MELTED (OPTIONAL)

In a bowl, combine the flour, oats, sugar, baking powder and salt. In a separate bowl, beat together the eggs, milk and butter. Add the liquid ingredients to the dry, stirring until just combined. Heat a lightly oiled (we like to use real butter) griddle or skillet over medium heat. Scoop batter onto griddle (about 1/4 cup at a time) and cook 2-3 minutes per side until bubbles form. Gently flip and cook for approximately 2 minutes or until golden brown.

Dear Julie, If I were you, I would make avocado on toast with spicy eggs. It’s a little different, yet so simple, and on top of that, you’ll look like a pro. The key to this recipe is using the best ingredients possible: great bread, ripe avocados and fresh organic eggs with really bright orange yolks. Here’s what you’ll need to land your ‘Mr. Right’: 1 CIABATTA LOAF 2 RIPE AVOCADOS 1 LEMON 4 EGGS SEA SALT OLIVE OIL CHILI FLAKES Soft boil the eggs (See recipe on page 18) Peel and de-stone the avocados and place in a bowl. Add salt, a squeeze of lemon and chili flakes. Crush together lightly with the back of a fork. Toast or grill the bread, then drizzle with a little olive oil. Spoon the avocado mix on the toasted bread. Peel the perfectly soft boiled eggs. Lightly crush them and place them on the bread. Sprinkle with sea salt and chili. and there you have it, a husband [or wife].

DON’T BE AFRAID OF THE SOFT BOILED EGG. We combed through many variations and found that this one is truly fool proof.

Recipe from Cooks Illustrated Add ½ inch of water to a saucepan and bring the water to a boil. Take the eggs directly from the refrigerator (must be fridge cold) and gently lay them in the bottom of the pan with a slotted spoon. Cover and allow the eggs to steam for 6 minutes. Remove and dunk into cold water for 30 seconds. Peel and serve.

RADISHES BUTTER SALT

3-4 LB CHICKEN OLIVE OIL SEA SALT ESCAROLE LEMON

Wash and cut radishes. Give it a nice pat of good butter. Sprinkle with salt.

A F F O G ATO Yield: 2 servings

VANILLA ICE CREAM ESPRESSO Find your prettiest little glass. Scoop in vanilla ice cream. Pour espresso over it.

Pre heat oven to 425˚ Make a paste: Start with 1/4 cup olive oil, add salt one Tbsp at a time until you get the texture of gloppy wet sand. Rub every exposed part of the chicken with the paste. Roast 1-1½ hours. Chicken is done when juices run clear, or when you can jiggle the leg free, or when meat thermometer reads 165˚. Wash escarole and tear by hand. Lay on platter and dress with a squeeze of lemon. Place finished chicken on top. The juices from the chicken and the squeeze of the lemon will work as the dressing for your escarole.
