Let’s Meat Up! Strip property restaurant serves up a lunch menu that’s friendly on your wallet One of the best lunches on the Las Vegas Strip just got a whole lot better. Brooklyn transplant Peter Luger Steak House, which opened its Las Vegas Strip outpost a few years ago, recently updated its menu with not only some great new additions, but a great new price.

Called the Luger Power Lunch, this offering (available 11 a.m.-4 p.m.

Wednesdays through Fridays and Sundays) features four courses for only $45.95, including: Appetizer. Your choice between: a Caesar salad smothered with grated pecorino Romano; two pieces of Luger’s Sizzling Bacon (a true customer favorite, served extra-thick, juicy and beyond satisfying); and sliced tomatoes and onions, a “salad” that’s been a staple of the chain since day one, served with a gravy boat full of Luger’s Own Sauce (which you can use with other food items throughout the experience).

Main course. There are too many wonderful choices here, highlighted by the Luger Burger, easily this editor’s favorite sandwich on the entire Strip. It’s so simple: just a bun, more than a half-pound of premium beef and onions (cheese and bacon optional). But one bite and you’ll wonder why you ever put condiments on your burgers.

If you’re more in a seafood mood, enjoy a crab cake sandwich, served on a brioche bun with tartar sauce, lettuce and tomato for the lightest bite imaginable, Maine lobster on a toasted New England roll with mayo (and a lemon wedge for squeezing), or grilled Atlantic salmon.

For a higher price, opt for the Maine lobster tail or a 1-inch-thick, prime, dry-aged steak.

Sides. Your choice of creamed spinach or french fries. The latter is highly recommended with the burger, thick-cut, lengthy, and enough for two people. And don’t worry, condiment lovers—you get ketchup with this one.

Dessert. The Peter Luger “Holy Cow” hot fudge sundae is a great way to experience the restaurant’s delicious “schlag” product, whipped cream created in-house. –Ken Miller Caesars Palace. caesars.com

Brunch, Italian Style Mid-morning comfort foods are served with simple elegance at celebrity chef’s Strip restaurant Giada De Laurentis fans can’t help smiling upon arriving inside her eponymous restaurant on the Las Vegas Strip. “We get a lot of regular clientele that come here because of her,” says brunch shift restaurant manager Josh Sreden. “One recent guest was so happy he booked a party of 12 for his next visit.”

Come by when Giada first opens at 9 a.m. Fridays through Sundays and things are likely to be quiet enough for Sreden to give a tour of the second-level establishment. As dealers, bartenders and sportsbook attendees prepare for the first rush of early morning traffic, diners enter a different world once they reach the top of the escalator and enter Giada’s environment.

The main dining room accommodates large parties, but patrons can enjoy exquisitely prepared comfort foods in booths that ring the perimeter overlooking the Strip.

Window-side tables provide incomparable views of the cityscape as the sun rises. Light pop music plays at a volume that allows easily heard conversation about the menu.

While selections of shared bites and entrées may take some discussion, the eye-opening Bellissimo makes ordering a first cocktail an

easy choice. The mix of Bacardi, Aperol, muddled strawberries and basil shakes away weariness, so focus can be on Giada’s fresh pastry assortment: banana muffin, raspberry cheesecake Danish, vanilla custard chocolate croissant and rosemary-Parmesan scone that tastes like cornbread made in heaven’s kitchen.

A Giada-rita made with Patron silver provides a pleasing palate cleanser before perusing appetizers such as orzo meatballs made with Parmesan pomodoro and served in a tangy tomato sauce. Oyster crudo, shrimp cocktail, and salumi and formaggi plates are available as well, but room must be saved for signature entrées.

One can’t miss with Giada’s takes on perfectly poached eggs Benedict, blueberry pancakes with whipped lemon mascarpone or avocado toast, but her polenta waffle, topped with two sunny-side up eggs and maple-pancetta gastrique, is a rare opportunity, as is the contorni frittata.

They complete a brunch experience like no other on the Strip that keeps Giada fans smiling and coming back for more. –Matt Kelemen

Sports lounge provides living room viewing for beer-loving fans As Las Vegas continues its rise as a professional sports city with people visiting for the primary purpose of attending events in person, the need for go-to sports bars is higher than ever.

Location, atmosphere, access, menu and service are primary qualifiers, all of which RedTail fulfills enough to earn it a place at the top of any list of Strip environs that are ideal for watching this week’s NFL wild card games.

Nightclub, with a Stripside stop for double-decker Deuce buses right out front. It’s a Zouk venue decked out like a large living room with upholstered seating in front of multiple multipanel jumbo screens, tables behind them for sit-down meals and booths to accommodate small fan sections.

Those sections lean toward drinking beer; choices range from a handful of domestics to more adventurous drafts such as Elysian Space Dust, Kona Big Wave and Mother Earth Cali Creamin. They can

be served in a beer tower with self-service tap, adding fun to function.

RedTail’s most popular mixed drinks are fueled by Red Bull, but server Justice swears by the Slick Rick combination of Bombay Sapphire, lime, cucumber and elderflower. Fast-Paced Fun and Wild Acts

Have a blast at this distinct downtown romp There’s variety and then there’s Miss Behave’s Mavericks. This boundary-testing, edgy downtown production takes vaudeville entertainment to a whole new level with its unpredictable mix of burlesque, comedy, dance, singing and so much more.

Better yet, the cast rotates each night, which means no two shows are ever the same, but every showing guarantees to leave audiences amused and bemused.

Leading the chaotic display is none other than the sarcastic, sword-swallowing Amy Saunders, who keeps the show moving with the kind of wit and charm only a cabaret star with a lifetime in entertainment could muster. Seriously, she’s so likable yet so unafraid to break boundaries; you have to witness her emceeing abilities in person.

Then come the acts. You may see one of the bendiest drag queens in town as she contorts her body in ways you didn’t know were possible.

Or perhaps you may see a nonsensical Hula-Hooping chicken (or two).

Maybe a skilled (and adorable) juggler will stop in. Absolutely hilarious donut-enthusiast cops might burst into the showroom. An unhinged

ballet dancer could even appear to not only show off her incredible technique, but also make you question reality. Particularly lucky crowds will get to see one of the only water dump closing sequences in town, courtesy of an electrifying dancer.

No matter who’s in the cast when you attend, one thing remains consistent: talent (and maybe a bit of mayhem). After all, Saunders’ roots sit firmly planted in the underground entertainment scene, known for embracing the kooky and questionable. That’s so much of what gives this show its charm. It’s so authentic to its roots and unlike anything currently showing anywhere else in town.

Plus, in the true spirit of downtown, anyone with a ticket stub from Miss Behave’s Maverick’s may have their parking validated, and the drinks in the showroom are easily some of the most affordable you’ll find anywhere in town (think in the range of $10-$12 affordable).

For anyone who remembers what Las Vegas used to be like, this is a welcome addition to the city’s entertainment scene. –Em Jurbala

Too Much Good Stuff

This Italian eatery offers incredible bakery items and entrées as well If you are looking for a sweet place to sneak away to for brunch (or a picturesque dinner), consider Zeppola Café in the Grand Canal Shoppes at The Venetian. This Italian bakery, found along St. Mark’s Square, offers plenty of pastries and coffees in a charming, Italian-style bakery. But ask to sit down for brunch and you’ll head upstairs to a secluded dining area that looks over the square. It’s super chill, and a great way to step away from the hustle and bustle of the Strip.

The brunch menu is expansive, with such items as the cremini mushroom omelet. It’s intensely flavorful, with creamy fontina and fried potatoes. The chicken pesto omelet also imparts that flavor, with grilled chicken, Parmesan and potatoes. And the Nutella French toast keep the flavor train rolling, with berries, maple syrup, Nutella and pistachio. It’s worth saving this one for dessert.

Speaking of rolling, and dessert, the Rolly and the Cube croissants are among

the striking pastries you will find. Both are huge, with their flaky goodness piped full of cream and half-coated in a colorful, flavorful icing.

Stop in for dinner and enjoy a variety of pizzas and decadent pastas, as well as entrées like branzino and filet mignon.

Do something your whole group will love at this firing range

Firearms owners see Las Vegas in a different light than the average visitor. The city provides an opportunity to spend a morning or afternoon brushing up on shooting skills and testing different weapons. The casual owner who doesn’t get much chance to handle their handguns at home can work target practice into a visit. Whatever skill level, it helps to be mindful of a destination with a landmark, like The Range 702’s shared latitude with the Welcome to Fabulous Las Vegas sign.

Following up a morning trip to the sign with a visit to The Range 702 combines two places in Vegas that go together like tacos and Tuesdays. You don’t have to settle for one menu item at Range 702, though. Located west of the Strip and Bali High Golf Club, the venue has 16 shooting ranges and machine gun experiences for all levels.

Aspiring firearms owners can start out with the Suns Out, Guns Out package designed for beginners, while adrenaline-craving life partners have a tailor-made Couples Therapy

option. Things get more intriguing from there with Black Ops, Area 51 and Judgement Day themes providing exciting scenarios.

The Range 702 also offers a Femme Fatale designed to make women feel comfortable. People who never plan to own a gun can learn how to handle one. You never know when you may have to exercise a constitutional right.

Learn the art of crafting cocktails at this Strip destination Learn. Make. Drink. Easy peasy—not so fast, ya lemon squeezy! Just like a fine cocktail that should be savored, the Mixology Masterclass at The Cabinet of Curiosities at Horseshoe Las Vegas takes the time to be enjoyed.

It all begins inside The Cabinet of Curiosities, the main lounge where “students” gather before stepping through a giant door shaped like the entrance to a safe. Once inside the safe, as a team, you’ll solve the riddles to gain access to The Lock, the hidden speakeasy. Once inside The Lock—a dimly lit, beautifully decorated, intimate room

with Prohibition-era vibes—everyone will take a seat at the bar. You’ll put on your special apron, that you get to keep, and in front of each seat are all the tools you’ll need for class: shaker tin, jigger, muddler, Hawthorne strainer, bar spoon and more. Don’t worry, part of the class is being schooled on what each one is used for and how to properly use them.

Running the class is master mixologist Daniel Ponsky, pictured. He’s a teacher that deserves an apple, a big juicy apple! This man is overflowing with knowledge when it comes to all

This writer created the Strawberry Bright, a vodka-based cocktail with muddled strawberries, vanilla, basil, aquafaba and a little lemon squeezy.

New to the cocktail menu at The Tangier (where we met up with Koch) is The Fireside Fashioned. Created by Koch, the cocktail is a mix of Zacapa Solera 23 rum, Licor 43, Luxardo cherry syrup, orange bitters and a dash of allspice, which adds a warm, savory aftertaste. –KM

Hard work pays off for director of beverage Marc Koch’s downtime might seem more like hard work to someone else. “Jiu-jitsu, karate, kung fu, mixed martial arts, competitive pistol shooting, wilderness backpacking—that’s my downtime, my Zen time,” he says.

Bartenders, cocktail servers. That’s always been the favorite part of any of my jobs. We just jive.”

Unlike most directors of beverage who usually have a bartending background, Koch comes from the financial side. He spent years as an inventory controller and cost analyst for beverage in addition to

managing and directing beverage departments at properties including Bellagio, Mandalay Bay, Rio Las Vegas, Suncoast and MGM Grand. “I feel like it gave me an advantage, the financial side,” he says.

After all these years, Koch has come to love beverage, he says. Creating cocktails and menus, giving his staff the chance to show off their cocktail-making skills, giving guests memorable experiences—they all add up to a great career. “I love this industry,” he sums up. –Kiko Miyasato

Fantasy: The Strip’s Sexiest Tease dances into the new year with fresh steps

Change happens slowly at Fantasy: The Strip’s Sexiest Tease. The dancers like working there under the auspices of founder Anita Mann, the gig itself is a dream job for trained dancers, and the performers form bonds that last long after their lives move in different directions.

Eventually it’s time to change, though, and Mann decided that Fantasy was ready for some new dance numbers to go along with new faces.

Fans of alluring Abby, statuesque Ashton and magnetic Mariah can rest assured many of their favorite dancers are still part of the show, although zesty Yesi has moved on up to helm another dance-involving show.

That made room for some amazing new talent. Aerial silks artist Jenyne Butterfly performed a gravity-defying number to “Feeling Good” at the 25th anniversary performance in October set to The Pussycat Dolls’ “Buttons” and choreographed by Sierra Leone.

Pole dancer Yuliia Trushnya made midair magic during “I Put a Spell on You,” a vocal highlight by emcee Lorena Peril. Shealagh, the newest cast member, is a graceful and gracious featured solo dancer, trained aerialist and gymnast from Massachusetts who was Showgirl of the Month in August.

“Spell” has been part of the show for a while now, but half of the production is now new. “It’s been a big undertaking,” says Mann. “Normally every year I change a number. We just want to keep the show kind of fresh and do whatever we can, but this year I said ‘Guys, are you ready?’”

They were, pulling double duty performing nightly while learning new numbers. The more iconic ones remain but have been refreshed from scratch, according to Mann. It’s not time to replace the act that features three ladies in one bed cavorting to Vanity 6’s “Nasty Girl,” cowgirl number “Man! I Feel Like a Woman!” or red-light fantasy “Roxanne,” for which Peril’s pipes go full throttle.

Mann enlisted choreographer Mandy Moore to create new opening and closing numbers. “She choreographed La La Land,” says Mann. “She just choreographed the Eras Tour. She’s Taylor Swift’s choreographer and di-

Other contributors include Cris Judd, Tiger Martina and Yesi, who directed the steps during country number “Here for the Party.” Mann herself collaborated with Peril for salsa-flavored “Hips Don’t Lie,” in which Brazilian singer-guitarist Thiago Gusi participated via jumbo screen during Fantasy’s 25th anniversary party.

“We’ve been busy,” says Mann. “I haven’t really sat down and thought about every single change, but the good news is we’re still keeping our brand (consistent) and dance is the key. Dance, entertainment, fun, party all night … just have an interactive, audience-friendly show. We’ve kept all that and, I think, made it more fun.

Before he came to Las Vegas, Benjamin “Bugsy” Siegel was known mainly for his mob ties, but once he bought up 95 shares of the Nevada Project Corporation (the company that built the Flamingo), he became associated with this city forever. Siegel came to Vegas in 1945 and took over the building of the Flamingo from businessman Billy Wilkerson, who ran out of money. So Siegel purchased the shares (seen here) for $250 apiece and opened the hotel in 1946. After the construction costs ballooned to more than $6 million, the hotel ended up closing only six months later and Siegel returned to L.A. Less than a year later, he was gunned down in his girlfriend Virginia Hill’s home—some say it was a hit ordered by the mob, revenge for losing all those millions they lent Siegel to build the Flamingo.

Dig up a treasure trove of gems at Nevada State Museum Step away from the Las Vegas Strip and step inside the history of the Silver

State at the Nevada State Museum. In the museum, spread across 70,000 square feet that includes two exhibits (one permanent and one changing), in addition to a library and public spaces, discover the state’s history, from the prehistoric era to the more recent one when showgirls shimmied across the stage.

Take a self-guided walk through the permanent exhibit, which houses a mix of real pieces and educational, hands-on props. Discover the period when dinosaurs dominated the desert and read about Nevada’s indigenous animals and flora and fauna. Learn about the early life of the Native American population as well as the first adventurers that sought out gold and silver in the Nevada mountains. The hands-on props of mining towns, wagons and settlers’ camps add to the experience, with actual personal effects lending a personal touch. The timeline of Nevada’s history leads all the way up to the more current way of life with displays about the city’s atomic history, the historic Westside, Helldorado Days and the building of the Las Vegas Strip over the decades.

Across from the permanent exhibit is the exhibit that changes periodically, currently hosting The Old Spanish Trail: Connecting a Network of Paths, presented by the Nevada Department of Tourism and Cultural Affairs.

Visually sift through wall panels, textiles and artifacts

that depict the arduous journey that many took to trade goods between what is now New Mexico and Los Angeles. The Old Spanish Trail was established in 1829, made up of crude mule paths and footpaths through what is now southwest Colorado, northwest New Mexico,

southern Utah, northern Arizona and southern Nevada.

The museum is filled with a treasure trove of pieces with interesting backstories, and here we’ve pulled just a few for you to peruse … but we suggest getting over to the museum yourself to discover all the gems it houses.

Before the crowded skyline of Las Vegas that you see today, the city was only mountains and valley as depicted here, in what is believed to be the first painting of Las Vegas from 1876. It was painted by Frederick Dellenbaugh, a young adventurer from Ohio who was on a mapping expedition and stopped by the Las Vegas ranch (seen in the painting) that was set up for travelers going to and from California.

Besides this artwork, Dellenbaugh would go on to write two books about the Colorado River and the American Southwest.

American actress Clara Bow was Hollywood’s “It Girl” of the 1920s silent film era, but by the mid-’30s she would call Nevada home. In 1931, she married fellow actor Rex Bell, and together they moved to Searchlight, Nev., to open a working ranch. Hollywood wasn’t left too far behind, though, as seen here in her personal address book, where she kept many a famous name and their contacts, including Gone With the Wind director Victor Fleming and some of the bigwigs at Fox Studios.

In the 1870s, many Chinese immigrants settled in Nevada to help work the mines and build the railroads.

Being so far away from their country, many of the Chinese re-created their homeland in segregated areas often called Chinatowns. An important part of daily Chinese life included religion; houses of worship were built and called Joss Houses.

The man who helped build Las Vegas, Howard Hughes first visited the city in the spring of 1953 and took up residence in The Little Green House that now stands on the property of local news station KLAS Channel 8.

While Hughes only lived in the house for a year, he left behind many of his personal items, like the ones seen here (even his enema bag!). The items were recently donated to the museum. And, fun fact, you can see the inside of the house if you watch the movie Casino (it’s the actor James Woods’ home)!

This year, Bellagio will celebrate its 27th year on the Las Vegas Strip. In anticipation of that momentous occasion, Las Vegas Magazine highlights one of the resort’s most iconic offerings, the Fountains of Bellagio. It’s one of the most stunning attractions on the Strip, but it doesn’t just happen. The fountains have a crackerjack team working behind the scenes, 365 days a year, to ensure that the watery spectacle continues to flow beautifully after more than two decades. We went beyond the façade and captured the inner workings of the fountains—an operation that few are privy

to. Dozens of employees work on the fountains, including engineers, pool specialists and maintenance divers—and each employee is scuba-certified and holds Open Water Diver or Rescue Diver certifications. Get to know three of those employees, who have all been with the Bellagio since day one. You’ll also get a peek of the support area, where the equipment and mechanics for the fountains are stored.

It’s a cavernous space just off the 8.5-acre Lake Bellagio that continues underneath the hotel. The inside look continues with the bat cave, compression room and the control tower.

No, I started in construction security at Bellagio. I did that until June of 1998

and then I got into engineering and began working on the fountains.

What was it like when Bellagio first opened?

It was great. I loved working during the construction of Bellagio, especially when they filled the lake with water. I used to drive my personal vehicle in the lake before they filled it up, which is such an awesome memory to have.

What does your current job entail?

I handle daily fountain maintenance. I do everything from working on lights to diving and repairing pipes and structures. I also rig and drive a forklift, booms and scissor lifts for the Conservatory.

It takes WET (the company behind the design and choreography of the fountain performances) several months to develop, design and perfect a new song for the catalog.

The main computers that control the lighting, sound and performance numbers are located in this tower. Here is also where you’ll find the “famous” green button. At the top of the tower, accessible only by ladder, workstations command awesome views overlooking the lake. Each choreographed show is stored on computers. To start a new show, the file is uploaded and the green button initiates the fountains—a button only a handful of people have pushed, including this writer!

I work to maintain the tens of thousands of components that are in the lake. I handle proactive maintenance—fi x it before it breaks. I adjust and calibrate the devices that you see during a show.

How many dives would you say you’ve done?

Well, I dive every day and I’ve been doing this for close to 20 years, so I have done a lot of dives!

I love the heat and how I don’t have to wear a raincoat or shovel snow or

It’s so loud inside the compressor room that one is advised to wear industrial-strength earmuffs. Inside this room sits two of the large compressors (of 10 total) used in the show. The compressors operate at about 3,000 horsepower and push through approximately 9,000 cubic feet of air per minute. Large storage tanks of soft water, used for the fog that drifts across the lake, are also in this room. The ground fault circuit interrupter (GFCI) panel that protects people and equipment is also here. The panel shuts down all the electricity on the lake in the event of an emergency or electrocution, reacting faster than the blink of an eye.

Inside the bat cave, located in the front features support area, is where you’ll find the water-emitting devices. Workers clean and repair all of them in-house.

The devices include three shooters of different sizes that push water straight into the air at varying heights. The mini shooter (798 total) goes 100 feet up, the super shooter (192 total) goes 240 feet up and the extreme shooter (16 total) goes 460 feet up. The oarsmen (at top of photo column) spray water—this is where the “dancing fountains” come into play.

There are 208 in the lake and 13 spares.
