Now to business! We’ve got so much packed into this week’s issue of Las Vegas Magazine. This week marks the beginning of Wrangler National Finals Rodeo, a sprawling event that includes the event itself and plenty of country music all over town. One of the highlights is Lainey Wilson, a country superstar who brings her award-winning catalog to T-Mobile Arena (“Still Riding the Whirlwind,” p. 34). Fans will also want to catch Old Dominion at Planet Hollywood, which will be performing its new album, Barbara, in its entirety (“A Match Made in Country,” p. 16 ).

A New Home

This Las Vegas favorite moves to elegant new digs in the center

One of the most respected restaurants in Las Vegas, Bazaar Meat by José Andrés, recently opened its doors in an elegant new environment in The Venetian Resort. Just before the opening, Andrés shared his vision for the new restaurant in a news release: “Since Day 1, Bazaar Meat has been one of my favorite restaurants to send friends to—it’s dinner and a show, an incredible celebration of the carnivorous. It’s larger than life, and the new opening at ... The Venetian Resort will be even larger… it’s almost more Vegas than Vegas!”

And at a huge grand opening party this fall, the chef presided over a party introducing all the new aspects of the restaurant, like an open kitchen that juts into both bar and dining room. Off the large bar is an incredible private dining room with plush burgundy appointments. Along the kitchen wall in the dining room, opposite a secluded Stripside patio, are several refrigerators with meat and fish. The beverage program is exemplary and features several tableside cocktail experiences like the Nitro Caipirinha, whipped up as you watch, and the martini service, where you can customize your drink.

You’ll find Andrés’ classics on the menu like beefsteak tomato tartare, the famous jamón de Ibérico de bellota and Stemple Creek black Angus vaca vieja. “For me, introducing dishes and ideas from my home in Spain—like vaca vieja, the cows who live long happy lives before giving us super-flavorful juicy ribeyes; or our beefsteak tomato tartare, inspired by a mind-blowing dish from the legendary elBulli—to the people of Vegas brings me so much happiness,” said Andres.

You can also order the quarter suckling pig, roasted in a wood-fired oven, seafood like fire-roasted king crab, or newer items like live scallop ceviche, beef tenderloin Rossini, Ibérico pork chops and Basque-style pork sausage. One of the best ways to experience the fullness of the experience is through a tasting menu, and José’s Ultimate Tasting will give you so many classic bites to enjoy that it’s hard not to go for it.

This multilevel Las Vegas Strip hot spot offers great adults-only cuisine, cocktails and entertainment

Cool cocktails, cool views and cool vibes make Bottled Blonde Las Vegas the new exciting hot spot for visitors looking for a good time. Situated right along Las Vegas Boulevard and anchored by the Grand Bazaar Shops, this multilevel venue is a welcoming environment for people looking for that nightlife alternative. Cool vibes. No matter the time of day, Bottled Blonde Las Vegas is a strictly 21-and-over nightlife experience. “Bottled Blonde Las Vegas is a hybrid venue that is built around fun—food, beverage and entertainment,” said Bryan Bass, chief marketing officer. “We like to say from lunch to late night. As the sun goes down and the neon turns on, it gets more of a high-energy bar environment—something that is more approachable and casual than the typical Vegas nightclub but still all based around a fun experience.” Cool bites. The food menu spans lunch to dinner. Highlights include the Basic Blonde Burger, a classic with classic toppings like lettuce, American cheese, tomato, red onion and pickle, and the Jackpot Tower, a beast containing 10 chicken tenders, 12 chicken wings, 10 shrimp cocktail,

seven mac and cheese bites, seven tempura cauliflower and a large cup of truffle fries.

Cool cocktails. Two large 360-degree bars (one on the ground floor, one on the rooftop) are where the bartenders are whipping up tasty cocktails. The list of cocktail names lets guests know this venue is meant for good-time drinking—Sip Happens (vodka and Red Bull), Emotional Damage (bourbon and passion fruit) ... the list goes on. But overthe-top fun lies in the large-format cocktails, a definite must if you’re with a group of peeps.

Go for the Strawberry Pump, made with Tito’s vodka, strawberry syrup, lemon juice and lemonade, served in a vessel shaped like a gas pump. The Capri Sin is a throwback to the childhood favorite drink Capri Sun, but this is an adult version with its blend of Casamigos blanco tequila, Aperol, lemonade, prickly pear syrup and lemon juice served in that classic pouch with a straw. A Match Made in Country

Band partners with Caesars Entertainment to launch its newest album

In what is truly a first for Caesars Entertainment, the company is partnering with a musical act for a devoted album launch activation—specifically Old Dominion and its album Barbara. Not only will the band perform that album in its entirety at Planet Hollywood, but Caesars Entertainment will be giving Old Dominion and the album placement across its eight Las Vegas resorts, including Caesars Palace, Flamingo, Paris Las Vegas and more.

It’s also a first for Old Dominion, a country quartet consisting of vocalist

Matthew Ramsey, rhythm guitarist Trevor Rosen, drummer Whit Sellers, bass guitarist Geoff Sprung and lead guitarist Brad Tursi. As part of the special partnership, the band will be creating a show specifically for PH Live: BARBARA. HITS. VEGAS. It’s truly a one-of-a-kind event—in more ways than one.

“Old Dominion loves working with Caesars, and we were thrilled to partner with them to bring BARBARA. HITS. VEGAS to life,” Ramsey said in a statement. “We always have a great time in Las Vegas—

maybe too great a time, as it goes. I can’t wait to bring Barbara to our fans at Planet Hollywood.”

If you haven’t yet caught the Nashville-based band in concert, this will be a fantastic introduction to its sound— very accessible and relatable, regardless of whether you’re a country fan or not. –Ken Miller

It’s Party Time, Country Style

With the rodeo in town, nightlife goes honky-tonk

Listen up country fans! For those who are in town for Wrangler National Finals Rodeo and those who feel like going country for the week, we lassoed together some hot spots around the city.

It’s Music City meets Sin City at Jason Aldean’s Kitchen + Bar, located in the heart of the Las Vegas Strip at 63 CityCenter. The country music star brings his Nashville aesthetic to this two-level restaurant and bar, with an incredible rooftop space that overlooks bustling Las Vegas Boulevard. This week, the hot spot welcomes NFR meet and greets with Crown Royal bull riders including Wesley Silcox on Dec. 5 and Tory Johnson on Dec. 11. When not vying for autographs, enjoy live country music bands, down-home Southern eats and a menu of delicious, handcrafted cocktails.

For years, Gilley’s at Treasure Island has been a go-to spot for NFR, so definitely put this on your party list. Throughout the rodeo, guests can line dance to live bands every night and cheer on the bull riders at the Official NFR Watch Party starting at 5:45 p.m.

This multilevel country playground packs in the good eats and drinks, but the real star here is the rooftop, where a stage lights up with the Strip as its backdrop. At night, it’s a rager on the roof, especially during NFR, where you never know who might stop by for an impromptu performance—check Ole Red Las Vegas socials for some big reveals during the week. Special for NFR, Ole Red Las Vegas is also adding to its venue Dec. 4-14 with The Backyard, right outside the building—the special area will feature an outdoor stage for live bands and DJs. If watching sexy ladies in cowboy boots and Daisy Dukes are your thing, then don’t pass up a chance to party at long-running Coyote Ugly at New York-New York. Here, the movie comes to life with bartenders that jump on the bar for some line dancing and shot pouring, and if you’re brave enough, you’ll get the chance to hang your bra from the ceiling where hundreds of past partiers have left theirs. If you like to drink water, this may not be the bar for you!

A totally happenin’ honky-tonk hot spot resides in Town Square Las Vegas. Stoney’s Rockin’ Country is home to the famed Ladies Night every Thursday at 7 p.m. with $3 well cocktails, wines and Miller High Life drafts—and don’t miss the after-hours line-dancing parties throughout the week. There’s also a stage that welcomes live bands nearly every evening. Finding any spot in Las Vegas that has continued success after two decades is a rare feat. Enter Tao Asian Bistro at The Venetian Resort. Part nightclub, part lounge and part restaurant, the Asian-driven aesthetic and cuisine was introduced to Las Vegas in 2005, and the trinity of offerings haven’t lost one ounce of glitz and glamour or any of its delectable food.

“Tao’s success comes down to consistency and flavor,” said chef Ralph Scamardella, chief culinary officer for Tao Group Hospitality. “The food has always been bold, balanced, and high quality. We focus on dishes that taste as good as they look, served with energy and precision. That combination keeps people coming back. As true

as we are to classic, we are constantly trying to innovate and evolve and keep up with trends. That’s what makes us the great experience.”

That experience starts inside the lounge, where we suggest chilling until your table is ready and ordering up the lychee martini (ahead of its time 20 years ago, the lychee martini has become all the rage on menus across the city). It’s been on the menu since Tao opened its doors, and the simple blend of Grey Goose vodka, lychee liqueur and citrus is a divine combination full of refreshing flavor.

When the dinner bell rings, continue to the main dining room, where you’ll spot the ginormous Buddha that presides over diners (be mesmer

ized by the koi fish that swim around him). What’s also ginormous is the menu, tempting in all categories.

“We respect traditional Asian flavors but present them with a modern edge,” Scamardella said. “Every dish is built on the balance of spice, acid, texture and presentation. Tao’s food is designed for impact, both in taste and experience.” Start with more day-one offerings: the satay of Chilean sea bass with a miso glaze that is shiny,

sweet and seriously addictive and the pad Thai noodles with peanuts, mushrooms and tofu—add chicken or shrimp for more protein. “They’re guest favorites that define the brand: flavorful, approachable and consistently executed,” Scamardella said.

Don’t skip out on the steamed dumplings, available in veggie, carnivore and pescatarian—crispy shrimp dumplings are new to the menu and already a hit! Also new to the menu are the cutesy Tokyo tacos, onebite, handheld flavor bombs in recipes like sweet soy salmon, BBQ eel and toro caviar.

Round out the meal with a noodle dish. We suggest the chow fun stir fry and, one of chef’s favorite dishes, the crispy snapper in the “sand,” based on a traditional Chinese garlic salt-andpepper dish that’s done with a whole fish and served with crispy minced garlic and Chinese dried olives.

End the symphony of dishes with dessert. The showstopper here is the giant fortune cookie, filled with a decadent white and dark chocolate mousse and surrounded

with sliced fresh fruit. For that cutesy dessert photo, order the potted carrot cake—looks like the real thing you’d find in your garden, but it’s made with vanilla cream, miso caramel and candied micro carrots.

Barry Manilow delivers a holiday show for the ages

There aren’t many 82-year-olds who can make a crowd jump to its feet, sing its lungs out and maybe even tear up a little, but Barry Manilow isn’t most people. For over half a century, he’s been the man behind the moments: love songs, heartbreak ballads, that drama-filled night at the Copa with Rico and Lola.

This December, he’s gifting us once more with A Very Barry Christmas, a show that’s equal parts concert, celebration and a spin through pop music’s most memorable hits. Manilow weaves his classics with holiday standards, turning “White Christmas” into a slow-burn emotional power ballad. Along with holiday classics (expect a rockin’ “Jingle Bell Rock” and perhaps a mention of a certain red-nosed reindeer), the beloved Manilow hits will be there. When the audience stands for “Weekend in New England,” half of them will be mouthing the words through tears. In between, there will be anecdotes from an extraordinary life and career, stories that remind you why this man’s music has soundtracked so

Country superstar Lainey Wilson brings her hits to Vegas

Lainey Wilson doesn’t really walk into a room so much as she owns it. Big hat, even bigger voice. The country superstar, fresh off another armful of awards and a world tour that’s selling out faster than barstools on a Friday night, is bringing her annual Wildflowers and Wild Horses show (now in its third year) back to Las Vegas. On Dec. 7, she’ll headline T-Mobile Arena during National Finals Rodeo, joined by Shane Smith & The Saints and Gabriella Rose.

It’s a fitting stop for Wilson, who’s built a career by turning every stage into her own kind of rodeo ring. The Louisiana native is having what can only be described as a full-blown takeover moment: back-to-back ACM Entertainer of the Year wins, a new single (“Somewhere Over Laredo”) that smashed her own streaming records and a deluxe edition of her Whirlwind album that dropped in August. She’s collecting trophies at a rate that would make all the country legends nod in approval. What makes Wilson different is simple: She’s the real deal. She’ll cite Dolly Parton and Post Malone as inspirations without missing a beat, and she can pivot from honky-tonk heartbreak to arena-ready anthems without losing her authenticity. Songs like “Heart Like A Truck” and “Watermelon Moonshine” aren’t trying to be something they’re not—they’re simply Wilson. Her voice

sounds like it’s lived a few lifetimes and has stories left to tell.

The Vegas show’s title, Wildflowers and Wild Horses, could double as her mission statement: Wilson is both beauty and backbone. Her concerts are a gathering for fans who’ve followed her ascent in the music business. They show up in boots and fringe, but what they’re really there for is Wilson’s mix of vulnerability and star power. When she sings, there’s no separation between the performer and the person. She even has an acting career in motion, with roles in Yellowstone and Reminders of Him. Most artists dream about this kind of range. Wilson just takes it all in s tride.

The night will probably end the way most Lainey Wilson shows do: the crowd on its feet, full-throated sing-alongs echoing through the arena, and Wilson reining it all in.

Her fans totally get what she represents: Country music that honors where it came from without getting stuck there. She remembers the dirt roads but isn’t afraid to build new highways. She’s not trying to be the future of country, because she’s very much of this moment.

When Wilson takes the T-Mobile stage, it won’t be just another night in Vegas. It’ll be one more reminder that this whirlwind isn’t slowing down.

When summer temperatures soar past 110 degrees in the valley, locals know exactly where to go: Mount Charleston. This high-elevation oasis boasts more than 60 miles of hiking trails winding through fragrant pine and aspen forests. Cathedral Rock is a must-do hike for all levels, but for those feeling ambitious, the 18-mile Charleston Peak—at 11,916 feet and the highest point in Southern Nevada—is a bucket-list feat. When the snow comes, these mountains are a sledding playground for kiddos and adults alike.

Speaking of snow: Lee Canyon, adjacent to Mount Charleston, serves as Nevada’s premier ski destination. During winter months, you can hit the slopes for skiing and snowboarding, then return during warmer seasons for world-class mountain biking trails and chairlift rides that offer awesome views.

Back in the valley, the Wetlands Nature Preserve is an unexpected urban oasis where boardwalks and trails wind through a thriving desert wetland ecosystem. It’s a birdwatcher’s paradise: Bring binoculars to spot herons, ducks and migratory birds—more than 200 species have been recorded. The miles of paved paths make it perfect for cycling, too.

For prehistory buffs, check out Sloan Canyon National Conservation Area, one of the Southwest’s most significant petroglyph sites. More than 300 panels contain thousands of ancient rock art images, and the easy 1.1-mile interpretive trail leads to spectacular red sandstone formations—all just a short drive from Las Vegas.

Water lovers should head to Willow Beach, where you can launch kayaks for a scenic paddle toward Hoover Dam or the stunning turquoise waters of Emerald Cove. The Colorado River here offers excellent rainbow trout fishing, while the beach area provides picnic spots and easy access for swimming.

Of course, no discussion of Las Vegas water recreation would be complete without mentioning Lake Mead America’s largest reservoir offers endless possibilities: Rent houseboats for multiday adventures from Callville Bay Marina; explore the lake by powerboat or jet ski from Las Vegas Boat Harbor at Hemenway Harbor; paddleboard in protected coves; swim at Boulder Beach; or explore hidden hot springs tucked into canyon walls. For a land-based adventure, hike or bike the Historic Railroad Trail. Five massive tunnels carved through the mountains in the 1930s during Hoover Dam’s construction now form a spectacular 3.7-mile trail with panoramic views of the lake below.

the adventures get even more spectacular. Valley of Fire State Park , Nevada’s oldest, showcases otherworldly landscapes of brilliant red sandstone formations and ancient petroglyphs. Key trails include Fire Wave for those Instagram-worthy shots, Mouse’s Tank for impressive rock art and White Domes for slot canyon exploration that feels like stepping onto another planet.

For a genuine Wild West experience, head to Nelson, a ghost town where original buildings, vintage cars and mining equipment lie scattered throughout the landscape. The nearby Techatticup Mine offers fascinating underground tours into the area’s mining past.

For art lovers, stop in Beatty to visit the outdoor Goldwell Open Air Museum, featuring large-scale installations including the famous “Last Supper” sculpture. The small town also serves as another gateway to Death Valley.

Road trip enthusiasts shouldn’t miss the ET Highway, Nevada’s most famous stretch of asphalt. This 98-mile section of Highway 375 cuts through desolate, weirdly beautiful desert landscape. Stop at the quirky Little A’Le’Inn in Rachel for a burger, keep your eyes peeled for UFOs and experience the vast, empty beauty of the Nevada desert. The highway runs along the infamous Area 51, the top-secret military installation that’s fueled decades of speculation and conspiracy theories. the lights of Las Vegas take on a different glow. Sure, the city knows how to put on a show, but the real spectacle lies just beyond the neon—in slot canyons and dark skies, ancient rock art and endless desert horizons.

Finally, there’s Great Basin National Park , arguably Nevada’s crown jewel. Yes, it’s a five-hour drive from Vegas, but experiencing some of the darkest skies in the continental U.S. makes every mile worthwhile. During the day, explore the otherworldly Lehman Caves, hike to pristine alpine lakes or summit Wheeler Peak, Nevada’s second-tallest mountain. Fair warning: It’s a butt-kicker. Pack a tent—Wheeler Campground might just be the most beautiful campground in the entire state.

The company procures the clearest ice possible, created by a special process that removes all air bubbles, and all the ice sculptures start off as 250-pound blocks of ice that are then carved by professional ice carvers. Return visits are a must, as all three locations refresh the sculptures and themes quarterly. Each Minus5 Icebar is designed with playful sculptures and interactive scenes; gloves will be hard to keep on because you’ll constantly want to conduct photo shoots so the folks back home can check out such a cool Las Vegas experience.
