Dear Neighbours,

By crackie, it’s been a busy month. Not only in the magazine, which has an extra eight pages this month, but also because of rehearsals for the July production at the Helmsley Arts Centre of “Out of Order”, a farce by Ray Cooney. Another (rare) chance to see the editor of Go Local making a complete article of himself in a very funny play, directed by my old mate, David (Dominic) Goodwin. When I tell you that the cast have great difficulty keeping straight faces at each rehearsal you’ll appreciate just how side-splittingly funny this play is. Details in Helmsley Arts Centre’s and 1812’s ads . Tickets are selling fast, so book now or regret it forever when people tell you what you missed!

Another thing that made it busier than usual was that I pulled my finger out and wrote you an article. Well, when I say wrote, it’s more of a lengthy moan about how technology can produce some wonderful things and then along come all the gadgets that ride the wave. One particular gadget caught my eye recently, which prompted me to put pen to paper - or keyboard to screen, if that’s what you should say now!

Back in the dim and distant past I included an article about the possibility of owning some chickens, but I have to say that for one reason and another, nothing came of it. However, for those of you that have them I include a jolly article called The Zen of Chickens; I think it speaks for itself. And as we have a bit of summer (with high winds forecast as I write this) a timely article on the joys of kite-flying. No, not as in the passing of bad cheques (for those of you who remember the Sweeney) but the real thing!

And finally, folks, if you contact any of the traders in these pages, don’t forget to tell them where you saw their ad. You’ll make my day - and theirs!

T

here’s no doubt that the speed of modern life is getting faster. What was once considered ludicrous, like the possibility of having a computer in every home, is now taken for granted. I was very lucky to be in almost at the ground floor of this technological revolution in the late 80’s, a time when the latest IBM computer cost over £1000 and had a massive 20MB hard drive. For the nontechnological among you, that’s equivalent now perhaps to a millionaire saying “Look, I’ve got a penny in my pocket”.

For many years, because of my previous g a i n f u l employment in computing and video, I either had one of the latest phones or worked with the newest cameras and was aware of all the exciting new “stuff ” that was guaranteed to be the next big thing to make our lives easier. Then, in 2005, we decided to give up the jetset lifestyle and move back to Yorkshire.

I don’t know if it’s a result of country living after many years of working “down south, or whether my deeply-ingrained northern cynicism just cranked up yet another notch, but I’ve recently come to the conclusion that technology has

now officially passed me by and I am in danger of becoming a “Grumpy Old Man” When I left work all those years ago, I handed over my Blackberry without a pang. No more calls at eleven at night or six in the morning.

Sheer bliss! And as Gilling is a dead spot for mobiles I never really use one anymore, except for emergencies when I’m out. I’ve got an old Nokia and I’ve bought about £20 worth of topups since being here.

I’ve managed to ignore the Facebook revolution - I know exactly who my friends are already and if I want to get in touch with them I’ll (gasp!) pick up a phone. Twitter is a closed book, I don’t have a games console or an i- anything and I don’t particularly feel as though I’m missing out.

My only real concession to modernity in the last eight years or so is my music system, which plays all my music from a hard drive. But it’s not the mainstream advances that have got me thinking that I’m getting a bit too old for all this lark, it’s the gadgets that go with them.

So what was it, you may ask, that finally caused me to drop off the cliff of thinking I was ever going to be slap bang up-to-date ever again?

I’ll tell you. It was reading a review in one of continued on page 12

12 the weekend papers about a gadget that was termed “indispensible” to modern living. Is it an app that attaches to a barrel of beer that sends out a text message to tell you when said barrel is at it’s peak? No. Is it then, a scruffler, that goes around your veg garden, extracting only weeds and leaving your greens to get bigger and healthier? No. It’s a watch that will let you know when your i-phone has received a message.

I’ll let that sink in for a few seconds, shall I, so that the full implications of this can settle in and see if it has the same effect on you as it did on me. A watch that lets you know what your smartphone is doing. And yours for only £100.

Unbelievable.

You see, the first thing that occured to me when I read that article was that almost everyone I know who has a smartphone is practically welded to it. If they’re not texting on it, they’re watching a film or playing a game or listening to music. Some people even use it to make

phone calls! So what are the chances that said smartphone is ever going to be more than a couple of feet away from them at any given moment? Don’t panic, here’s a watch that can alert you to the fact that your smartphone needs your attention, just in case it happens to be on the other side of the room. It’s even recommended that you wear it in bed and it will wake you up to make sure you know that some all-important text message has just come in! Like I said, unbelievable.

Don’t get me wrong. I’m not against technology.

It’s very useful to be able to Skype my daughter at university for free, rather than paying to phone her mobile and I couldn’t produce this magazine without it. But there are limits, aren’t there?

Next time - a grumpy old rant against weather forecasting. How come the sun is always shining when they’re telling me its raining - and viceversa?

The Zen of Chickens You can learn a lot about life from a chicken.

Behind that beak and those golden eyes lies a creature bristling with poultry wisdom. Derek Thompson gives us a sample of what he’s picked up from his own chickens, Sweet Pea and Pepperoni.

Be in the moment. Chickens seem to have a very short attention span, unless they’re on the trail of a worm. However, they’re actually demonstrating an ability to detach from the superficial, which – to a chicken – is anything inedible.

Be curious about the world. Chickens are life’s little explorers. They can find that hole in the fence which I blocked with some feeble bamboo canes and never got round to repairing properly, the last wild strawberry, or a snail who thought hiding behind the coop was a foolproof survival strategy.

Celebrate your successes. The commotion a chicken makes before, while and after laying an egg is surely one of Nature’s cruellest jokes.

Short of ringing a dinner bell, it’s the most efficient way of summoning any fox within a two-mile radius. Despite that, I defy any smallholder not to be impressed at the ‘scraps, grain and grit in, followed by egg and fertiliser poop out’ magic trick performed most days.

Be how you feel. Our cat learned early on that it’s wise to keep out of the path of a broody, moody hen. She also discovered they can run surprisingly fast and launch themselves at unwitting felines. Me? I learned that the term ‘an affectionate peck’ doesn’t apply to poultry.

Make time to relax. When they’re not eating, advertising their egg-laying prowess, playing tug-of-war with snails or enjoying dirt baths, chickens like nothing better than sitting still and watching the world go by. Or, if it’s a sunny day, a spot of Chicken Yoga might be in order.

You can forget about downward dog, cat posture or doing the cobra. For chickens, the yogic routine is a few luxurious wing stretches, some flexing of the neck and then it’s time to sprawl out in the warm. And if it’s cold outside?

They snuggle up together in what I call the ‘tea cosies’ posture.

Eat your greens – and give peas a chance.

Impressionable children the world over would have no qualms about devouring chard, lettuce or spinach (to name but three) if they had a chicken for a role model. And, being life’s gourmet connoisseurs, chickens will also happily try tomatoes, grapes, porridge, roast potatoes, bananas, raisins and spaghetti.

Although someone we once met, who declared that she fed her hens leftover bacon and eggs did, I feel, overstep the mark a little.

The early bird really does get the worm.

Although the slightly delayed bird may succeed in taking it off you, if you don’t pay attention.

Opportunity not only knocks, it grabs too.

Care for your environment. Once again, chickens lead by example. Whether it’s pulling up the weeds*, providing some essential pest control or aerating the soil, chickens are constantly on the lookout for ways to contribute. * A word of caution - an unchecked chicken gets a little over enthusiastic in its garden duties!

Play to your strengths. Chickens don’t fly or glide and their singing isn’t up to much. But... they don’t waste food, or an opportunity, and they make eggcellent companions.

Nunnington Hall, Nr Helmsley There’s an extra special treat in store when you visit Nunnington Hall this summer. We’ll be hosting an exhibition by one of the world’s most popular children’s illustrators, Axel Scheffler.

Best known for drawing a crooked- toothed monster that meets a mouse in the woods, Axel Scheffler is the award-winning illustrator of The Gruffalo, which has sold over 3.5 million copies world-wide. Scheffler’s style is instantly recognisable and in this enchanting exhibition you can see a variety of original works spanning his fantastic career.

Let’s Go Fly a Kite

By Catherine Ryan If you’re looking for a fun, easy and inexpensive hobby this summer, why not consider kite flying? Not only will it mean that you’ll be spending more time outdoors in the sunshine, it’s a great way to meet new people as there are at least a dozen kite festivals a month in the summer all over the country (www.kitecalendar.co.uk).

W

e have two Chinese philosophers to thank for the invention of the kite more than 2000 years ago. They used readily available silk and bamboo, although legend suggests that a Chinese farmer beat them to it by tying a string to his hat to keep it from blowing away.

The first kites were generally rectangular and flat rather than bowed and were often decorated with symbols and pictures as well as whistles and strings. They had a number of uses including communication in military operations as well as testing wind speeds, measuring distances and even lifting men. Kite flying was then spread to Japan by Buddhist monks, onto India where they were used as ‘fighter kites’ in specific festivals and to Polynesia, by this time made from cloth and wood and used in religious ceremonies.

It was the famous traveller of the 13th century, Marco Polo, who first brought stories of kites to Europe but it wasn’t for another 300 years that kites were regularly brought back by sailors, returning from Japan and Malaysia. Eventually, scientists and researchers began to realise their potential for experiments – Benjamin Franklin, Alexander Wilson and Thomas-François Dalibard used kites to learn more about wind and the weather whilst Alexander Graham-Bell and the Wright Brothers used them to aid in the development of aeroplanes. In World Wars I and II, kites were used for observation and signalling. Nowadays, their use is mainly recreational. Kites are stronger, lighter and more colourfully decorated than ever before.

So, how do you become an expert kite flyer?

1. Learn the best wind conditions - most experienced fliers suggest between 5 – 25 miles per hour which means plants and leaves will be moving but not blowing about furiously. A flag or windsock is a useful guide.

2. Find a clear, open area such as a field or park – the bigger the space, the more line you can let out and the more fun you’ll have moving your kite across the sky. Make sure that you stay away from roads, power lines and airports and never fly in rain or lightning.

3. Lay out the kite and lines on the ground before you start - check all connectors and bridles and make sure there are no knots or tangles. Ensure you have around 20 to 35 metres of line and that they’re the same length on both sides.

4. Launch by stepping backwards and pulling both handles to your side and control the kite by pulling the lines – left will make the stunter turn left and vice versa, whilst holding them even will make them fly straight.

5. Be careful of other people – if you do tangle lines, walk slowly with the other flier to slide the tangle down the line of the kite where it can be more easily unwrapped.

You can spend as little as a few pounds on a kite or if the budget allows, as much as a couple of hundred. Who knows? With a little practice, you might develop a new talent this summer.

Sage and Pancetta Roast Chicken Serves 4

Ready in 2 hours 30 minutes Give classic roast chicken a tasty makeover with a handful of fresh sage and some delicious smoky flavoured Italian bacon called pancetta. Look out for thin rashers of pancetta in the deli section of your supermarket or buy freshly sliced from an Italian deli. Serve with roasted baby new potatoes and lightly steamed vegetables for a wonderful summer Sunday lunch.

Ingredients: • 1.3kg oven-ready chicken (preferably free range) • 55g butter, softened • Few fresh sage leaves • Salt and freshly ground black pepper • 1 onion, peeled and finely chopped • 85g smoked pancetta slices • 115g fresh white breadcrumbs • 1 medium egg, beaten • Fresh sage leaves, to garnish

Tip: To make light gravy to serve with the roast chicken, drain off any excess fat from the roasting tin then heat the pan juices until sizzling. Add a splash of dry white wine or sherry then stir in a little plain flour and 1 tsp wholegrain mustard. Cook for 1 minute then gradually pour in 400ml hot chicken or vegetable stock and slowly bring to the boil, stirring all the time. Simmer for 3-4 minutes until just thickened. Season to taste with freshly ground black pepper.

Preheat the oven to 190C, 375F, Gas Mark 5. Place the chicken in a foil-lined roasting tin. Smear half the softened butter over the chicken breast, legs and wings and scatter over the sage leaves. Season lightly with salt and freshly ground black pepper.

Cover the chicken loosely with foil and roast in the preheated oven for 1 hour 10 minutes. Uncover and baste the chicken with any juices twice during cooking.

Meanwhile, melt the rest of the butter in a frying pan, add the chopped onion and fry gently for 5 minutes. Chop half the pancetta and add to the pan, frying for a further 5 minutes until the onion is softened and golden. Remove from the heat. Finely chop the rest of the sage and add to the pan with the breadcrumbs and seasoning.

Leave to cool then stir in the beaten egg. Press the stuffing mixture into a greased 18cm round shallow cake tin.

Uncover the chicken and top with the rest of the pancetta slices. Return to the oven and roast, uncovered, for a further 25-35 minutes until the chicken is golden brown and cooked through – the juices should run clear with no sign of pinkness when the thickest part of the thigh is pierced. Cook the stuffing in the oven at the same time until set and pale golden.

Remove the chicken from the oven, cover and leave to rest for 10-15 minutes. Cut the stuffing into wedges and serve on a platter with the roast chicken, garnished with the fresh sage leaves.

Home Grown Herbs

T

here’s a really reliable, easy, low-cost and low-effort way to add some zing to your meals; home-grown herbs. Many herbs are simple to raise from seed and if you start sowing now you should be able to have a plentiful supply of fresh, tasty herbs to add to salads, sandwiches, stews and stir-fries for months to come. All you need is a sunny window sill or balcony, or a welldrained, sunny spot in your garden, so why not sow a few pots and brighten up your cooking?

First, find some good quality multi-purpose compost, your chosen herb seeds and some pots.

Good-quality compost is well worth the little bit extra you need to pay. The style of pot is up to you – you may want to choose a classic Mediterranean feel with terracotta, or a stylish modern look, or perhaps a good-looking plastic planter for longevity and light-weight characteristics that make it better for a balcony and easier to move about too. Whatever style you choose, bear in mind that plenty of drainage is essential, and that the smaller herbs do not need a deep root run, so there is no need for a very tall planter or pot. It is best to grow each type of herb in its own individual pot, so buy a selection of pots with a minimum diameter of 8cm.

Once you have your pot to hand, put a broken flower pot or other drainage material in the base and then fill with good quality compost to within 1cm of the rim of the pot and firm it down, not too aggressively, but enough to ensure that there’s no subsidence later on. With large seeds such as coriander, position the seeds evenly on

the compost surface. Sprinkle smaller seed thinly.

The seeds need to be covered with compost so use your finger or a dibber (an old ballpoint pen or pencil will do) to gently press the seed in to the very surface of the compost and then drizzle more compost on top to the depth stated on the packet of seed. Water the compost thoroughly either carefully from above using a watering can with rose attached, or by standing the pot in a saucer of water for a few minutes until the compost surface is just moist. The advantage of watering from below is that you are less likely to disturb the seeds.

The seeds generally germinate quite quickly and often within just a week or two you’ll have lots of tiny herbs. For shorter-lived herbs, such as coriander and basil it’s worth sowing in succession. All this means is that you need to use a small pot full of seed every few weeks, rather than sowing the whole packet in one go. This will give you a near constant supply of herbs and if you look at the number of seeds per packet you will soon see what amazing value they are.

Once the herbs are up and growing strongly you can start to harvest them. Use sharp scissors or a sharp knife to cut off what you need; this way you’ll minimise damage to the growing plants and so help to keep them cropping for longer.

As long as you keep the pots adequately watered, ideally by watering from the base, they should last for several weeks or months but make sure that the compost is not too wet or else your herb

55 pots won’t last long. These plants are mostly of Mediterranean origin and hate wet feet.

If at any stage you find that you’re not eating them fast enough and have an excess of herby foliage, store some for later use. Ice cubes give you a really great fresh-herb taste off-season. Just half fill the sections in an ice-cube tray with water.

Add chopped fresh herbs to each section and top up with water. Label the tray as chopped herbs in ice can be difficult to identify. The attractive herbfilled ice cubes can then simply be popped whole in to stews and casseroles as and when you need them.

St Hilda’s Church in Ampleforth is holding a cream tea in church on Saturday 13 July and another on Saturday 27 July, from 2 - 4.00pm, in aid of church funds.

Age UK in Kirkbymoorside has plenty of summer things in stock; dresses, tops, bags, shoes, and lots of new items like socks and ladies and mens underwear so come along and pick up a bargain. Lots of information leaflets are available to take away free of charge so pop in, our volunteers are always available to help with any queries. We would like to thank all our customers for their continued support. We are now open 7 days a week for you to shop and donate your goods with us, and don’t forget to gift aid your donations if you can. Thanks Carol,Tracy, Margaret and all the volunteers.

Attractions include Birds of Prey, Crazy Fun Bus, Dancing, BBQ, Duck Race, Inflatables, stalls and many more. Money raised goes towards activities/equipment for the pupils of Slingsby Primary School.

The event is a fun afternoon for all, so we hope you can come along and join us.

Ampleforth in Flower - the weekend of 29 and 30 June. The church will be decorated with flower arrangements donated by village businesses and organisations. St Benedict’s and St Hilda’s schools are taking part.There will be a cream tea during Saturday afternoon and a village ‘Songs of Praise’ on Sunday evening. Monies raised will be divided between St Hilda’s Church and the Yorkshire Air Ambulance.

Beck Isle Museum. We are running a special promotion this year for ALL Ryedale residents that allows them entry to Beck Isle Museum at half normal price on production of proof of residency, e.g. utility bill or such.
