Servings: 4
Preheat the oven to 425 degrees Fahrenheit and line two baking trays with parchment paper. Slice the zucchini in half, then half again, then into quarters. You should have 16 slices per zucchini. Crack the egg in a small bowl or container and lightly beat it. Add the parmesan and spices to a separate bowl or container and stir to combine. Dip a slice of zucchini in the egg wash and transfer to the parmesan. Use your other hand to coat the zucchini in the cheese and transfer to the baking tray. Repeat this process until all zucchini are coated. Bake for 25-30 minutes, flipping halfway through on the cut side. Serve immediately. To make the optional lemon parsley aioli, add all ingredients to a small bowl and stir together.

LittleFire is a full-service video production and content strategy company that produces both commercial and narrative content in the digital space. Projects include fictional narratives, branded and animated content, docuseries, corporate video, and streaming originals. Beyond working with clients to sell products, LittleFire also aims to be a platform for companies to broadcast their social messages. Co-founders Raz Cunningham and Aidan Laliberte brought impressive portfolios of work to their new venture. They came to the RISBDC for guidance in launching their business. According to Cunningham, RISBDC has “helped LittleFire develop a business model that is more tailored to startups. [They have] also helped us prioritize several key elements in developing revenue streams that work best for our particular startup, leaving room for flexibility and growth.” Cunningham and Laliberte worked with Josh Daly, the RISBDC’s Southern Rhode Island Regional Director, to launch the company in September of 2018 and have continued to work with him as the company grows. Josh guided the owners through the process of completing a Lean Business Canvas, refining customer profiles, clarifying their value proposition, and strengthening start-up marketing plans. Rhode Island Monthly recently featured a piece on LittleFire’s “Gather” series. LittleFire’s owners call Gather “a playlist of social experiment videos with people talking

White Horse Tavern 26 Marlborough Street, New port, Rhode Island The White Horse Tavern is the oldest operating restaurant in the United States and is the 10th oldest restaurant in the entire world. The restaurant opened in 1673, and is now considered a famous National Historic Landmark. When walking into this Newport restaurant, you will find gorgeous architecture from the 17th century, with giant beams, cavernous fireplaces, clapboard walls, and a gambrel roof.

Mary Mayes Nichols, William’s sister, and her husband, also followed as innkeepers for the next 200 years. In 1703, Jonathan Nicholas became tavern keeper and gave the tavern its name. This was the spot the councilors came to to have a nice meal and charge it to the public treasury.
The White Horse Tavern was originally constructed as a home for Francis Brinley in 1652. William Mayes, Sr. then purchased it and turned it into the famous tavern like it is today. For almost 100 years, this was the meeting spot of the Colony’s General Assembly, Criminal Court and City Council.
Time went on, and the family finally moved out of the Tavern. Throughout the years, the building started to fall apart and was neglected. The Preservation Society of Newport Country acquired the building in the mid 1900’s and was able to restore it, and save the structure from demolition.
By the time the 1700’s came around, William Mayes succeeded his father as innkeeper and earned a license to
In 1981, O.L Pitts of Texas and three partners bought the Tavern. As sponsors of the famous America’s Cup, they continued to keep the restauraunt going and offered delicious food and drinks. However, as O.L Pitts aged, he turned ownership over to Paul Hogan, a man who was born and raised in Newport. There has been several different owners of the Tavern over the years, but it continues to stand strong today and offers one of the best dining experiences you will ever have!
