Moules Marinières Rope-grown mussels steamed in a white wine, onion, parsley, thyme, and fresh cream sauce

Ingredients 3.5kg Fresh mussels 200g Unsalted butter 500ml Whipping cream 400g Onion 500ml Dry white wine 60g Flat leaf parsley 1 Bay leaf 10g Fresh thyme

1. Clean the mussels and place in a heavy based pot.
Ensure the small piece of rope is removed from each mussel and the shells are clean of sand and crustaceons.
2. Add the white wine, onions, butter, thyme and bay leaf. Cover with the lid and steam the mussels until they have all half opened (about 1 to 2 minutes). 3. Add the cream and lemon wedge; give it another boil until all the mussels are fully opened. Then shake the pot. 4. Sprinkle with chopped parsley and serve in hot bowls.
Only cook mussels that are closed and live, whilst discarding any that remain closed after cooking.
Fact The term ‘mariniere’ means in ‘mariners style’ and refers to the cooking of fish and shellfish with white wine and herbs.

Rivington Pike Rivington Pike is one of the north of England's best viewpoints. The historic tower is reputed to date as far back as far as 1138 and boasts breath-taking views of Rivington and beyond. A walk along the Anglezarke Reservoir is an easy ramble along the shore. The Rivington Reservoirs are manmade (built between 1852 - 1857). Remains of buildings covered by water can still be seen when water levels are low. Explore the area around the reservoir by foot or bike and even through the treetops at Go Ape: Rivington. Rivington Pike and the surrounding landscape provided a suitably dramatic location for A Monster Calls, released in 2017, staring Sigourney Weaver and Liam Neason as the voice of the monster.
Gisburn Forest Hub All year round, Gisburn Forest offers different experiences for different people. Explore on foot, on horseback, by bike. Find popular trails and quiet glades. The largest forest in Lancashire, Gisburn Forest has a network of waymarked forest walks and a cycle trail. These are based on existing forest roads offering a variety of routes, with the total length of the cycle newtork at 16km. Cycle hire and group tours are available (by prior arrangement) from Cycle Bowland and Cycle Adventure. Gisburn Forest has two fantastic mountain bike trails, the moderate graded Bottoms Beck for younger or novice riders and the red graded 18km "The 8" for those with a higher level of experience and skill. At Gisburn Forest Hub you'll find a new Skills Loop to practice riding mountain bike trail features.

BEN’S BACON & SPROUT SOUP
Ben Cunningham is a team leader at Media City Booths and his bacon and sprout soup is a festive warmer in the run up to Christmas.

2 Peel and chop the potatoes into small cubes and shred the sprouts.
1 bag of Booths prepared sprouts 1 Kallo organic vegetable stock cube Bacon lardons 1 slice of bread, cubed for frying Butter for croutons Pepper for tasting

1 Dissolve the stock cube in a litre of water.
3 Place the stock and veg in a pan and bring to the boil, cook on a gentle heat until soft. 4 Place the butter in a frying pan and gently melt, add the lardons and cubed bread and cook until golden and crispy. 5 Blend the soup to the desired consistency and add pepper to taste. 6 Add the lardons and croutons to serve.

JILL’S BALLOTINE OF TURKEY
Jill Dobson works at Booths Hale Barns and her ballotine of turkey is a real centrepiece and a cinch to carve.
INGREDIENTS
I boneless crown of turkey approx. 2kg/4.5 lbs 24-32 slices of prosciutto 2oz / 50g softened butter 1 tsp each of sea salt and freshly ground black pepper 12 fresh sage leaves 3 fresh bay leaves 3 tbsp of fresh flat leaf parsley 3 sprigs of fresh rosemary – strip the leaves from their stalks 2 tsp dried oregano 3 cloves of garlic, skinned
METHOD
1 Lay out the turkey crown skin side down in front of you. Cut down the breast bone of each side, ensuring you don’t cut all the way through to the bottom. Lift out bone and remove the wings (if still attached). Slash the meat in a criss-cross pattern. 2 Blend the salt, pepper, herbs and garlic in a blender to make a rough paste. Rub this all over the meat pushing it into the slits. 3 Lay out a piece of baking paper bigger than the turkey onto the work surface. Place the prosciutto slices onto the paper, overlapping them to make a rectangle which is longer and wider than the turkey crown. 4 Sit the turkey skin side down on top of the prosciutto. Roll the turkey and prosciutto up from the side closest to you using the baking paper to keep it all together. Fold the prosciutto in at the sides and then wrap the whole thing in cling film. Chill for up to 2 days.
5 Heat the oven to 320°F/160°C/140°C
(fan) gas mark 3. Peel the cling film away and turn the turkey so that the prosciutto is on the bottom and the meat looks like a long log. Sit this on a wire rack in a roasting tin, joint side down. Season the outside with salt and pepper and rub with the butter. Cover this with a tent of foil to keep it moist.
6 After 1¼ hours remove the foil and roast for another 45-75 mins. After 45 mins, using a meat thermometer, insert it into the thickest part of the turkey ensuring it reads 70°C. (If you don’t have a thermometer ensure that the juices run clear and that it is piping hot in the middle). Leave to rest for 30 minutes.

500g pork sausage meat 2 small onions, diced 2 eggs, beaten 200g fresh breadcrumbs 100g dried cranberries 100g dried apricots, chopped Bunch chopped fresh parsley Good grating of nutmeg Pinch salt & pepper

1 Pre-heat the oven to 180°C/350°F gas mark 4. 2 Simply mix everything in a big bowl, place into a roasting dish and roast for about 40 minutes until piping hot and cooked through with a nice crispy top.

The iconic waterfront location will be dramatically altered for the season, packed with family-friendly attractions including a large ice rink, ice-themed rides, a funfair and food stalls. The large outdoor rink returns to the Pier Head venue complete with a canopy for skating whatever the weather. Due to popular demand last year, the availability of penguin skate aids has been doubled and are available to book online now, along with ice skating tickets. After a turn out on the ice, festival goers can enjoy the thrills of the UK’s longest ice slide with three, 30-metre-long slides for an exhilarating ride and panoramic views of the iconic Three Graces due to its elevated position, six metres above the park. The Ice Jet ride – a firm favourite with visitors – is set to make its third appearance at the event, complete with a sound and light show as part of the immersive encounter to entertain the thrill seekers in the family. A fun day out for all, the pop-up food and drink stalls complete the experience, selling a variety of seasonal treats including traditional German bratwurst, mulled wine and hot chocolate. Special events and offers will take place throughout the season. These include Buy One Get One Free tickets for students during November off-peak skating sessions, plus 25 per cent off admission for Save The Children’s Christmas Jumper Day for those who wear a Christmas sweater on 13 December 2019.
