bout 26 years ago while working in a sales role for News Limited, our team was offered the opportunity to take part in a Speechcraft course to teach us the art of public speaking. My initial response was that I would prefer to be doused in petrol and set alight. Such was my fear of standing in front of a group of strangers and attempting to string more than two words together – other than ‘umm’! Being pregnant at the time was definitely a bonus as most of the class felt sorry for me. I had complete ‘baby brain’ and my hormones were telling me that every word coming out of my mouth was a mistake. For my initial three minute speech (which went on for 25 minutes) I decided to speak on the subject of, ‘What makes you a good person’. It was interesting to speak to friends and colleagues about what they considered a ‘good person’ to be.

GET IT I PROFILE How has COVID impacted this year’s event? We’ve had to make lots of adjustments: from the artistic program due to border closures, to capacity across all the sites, to developing and implementing a COVID safe plan for festival delivery, updated communications… the list goes on. Overall, though, we’re in a good place to deliver a wonderful festival this year. What time does your alarm go off…what’s your morning routine? 5am. I catch the sunrise on a morning walk. Weekdays I wrangle two kids for primary school – including breakfast, violin practice, school lunches etc. I try to be out the door by 8:30am for school drop off. What’s a typical day look like? The days I enjoy most are the days without deadlines. Who do you work with to ensure a smooth and successful event? My team are all terrific at what they do and passionate about bringing contemporary arts experiences to the Gold Coast. And the artists, who have something to say, and whose work reflects contemporary culture. How has the festival grown? Bleach* started as a small fringe festival alongside the World Championship Tour Quiksilver Pro surfing event, held on the southern Gold Coast. Launching in 2012 as a pilot project with a budget of $40,000 we attracted an audience of 30,000 over a 16-day duration. It has become one of Australia’s leading and most exciting place-based contemporary arts festivals and has attracted close to one million people (including Festival 2018, the Commonwealth Games cultural festival). We were formerly known as Bleached Arts Ltd founded in 2015 to facilitate the growth of the festival and broader Gold Coast arts section. This year we rebranded to Placemakers* Gold Coast. What is your key role? For Bleach*, overall artistic vision and program of the festival. What are your goals for 2020 and beyond? I’d love to keep growing our audience and eventually attract a bigger audience from interstate to experience the Gold Coast through the eyes of Bleach* artists.

Race days, Christmas parties, spring drinks with the girls. I guess it will all be a little different this year. Social distancing, sign in with the QR code, sanitise, sanitise, sanitise and NO dancing unless the rules change in time for the festive season. For me, this is the issue. I love dancing. I love to be a couple of drinks in, pumping music, girlfriends (or husband) and space and time to just dance like no one is watching. I don’t even care if someone is watching, because having a boogie for me is all about me! I’ve gotten to the age where I’m not trying to impress or seduce. I don’t need an approving male gaze to feel beautiful, and honestly if you get into ‘my dance space’ (unless you’re Patrick Swayze) you are just going to cramp my style.

My formative dance years were the early 90s and my dance music of choice is still sexy, base heavy techno. What I don’t miss is being covered in spilt bourbon and coke (not mine), grabby drunken boys (not mine) and having clothes and hair that reeked of cigarette smoke (also not mine). But I would really like the opportunity to go out and dance with my friends, to my music without feeling constantly like I’m a little out of place. The club scene is really not me, the music is mostly crap (showing my age); the beautiful people dancing are all young enough to be my children and as a woman over forty I seem to have become completely invisible to bartenders. So, I’m starting a protest movement #playmymusic #letmedance #icanaffordtobuycocktails!

Give a little it’s good

u o y r fo November 13 is World Kindness Day. Introduced in 1998 by the World Kindness Movement, a coalition of kindness nations’ non-government organisations (NGOs), aimed at highlighting good deeds and the positive power of kindness. It’s a fundamental human condition that bridges race, religion, politics, gender and what suburb you live in. Snezana Dudic looks at what it means to be kind and why giving gives us a natural high.

You only need to think back to what your mother used to say: ‘It’s better to give than to receive’, ‘Kindness costs nothing’, and ‘You get more from giving than receiving’. If you don’t believe me, just google to find a million proverbs about kindness and giving: ‘One kind

Giving makes us feel good According to research, the brain becomes more active when giving to charity, friends, or family. It makes us happy, connected, and gives us purpose, which as humans we need to thrive.

Giving is good for business The same DNA applies to businesses who give a little. Donations and promoting work fundraisers and volunteer days equals good vibes and happy employees who can volunteer and make a difference in the community. A happy workforce makes for a happy life all round.

Keep it simple and cohesive with what you’ve already got. Create little moments of impact in your home by grouping festive decorations together. This can be on a sideboard in your dining area, on the dining table or in your open storage. If a Christmas tree is the centre piece for your family, make sure its colours

and theme complement the rest of your space. If a tree isn’t your thing, you can incorporate greenery or tree branches and put them in vases placed around your home. Decorate them with baubles and seasonal ornaments; and don’t forget fairy lights – they add to the overall festive vibe in any home.

Queenslanders Jimmy and Tam have been favourites on televisions The Block since the 2020 series began. Tam’s taken five minutes out of their hectic schedule to share some inspiration with us in time for summer renovations. What’s been the biggest learning from your experience on The Block in 2020? To believe in myself. Quite often we question ourselves, and wonder are we good enough? Are we making the right decision? What will others think? The Block has taught me so much about myself and for that I am so grateful. I think it’s ok to be confident, it’s an amazing quality to have. Creatively, what did you discover about yourself through The Block experience that you did not realise you had in you? Going into this I had an idea in my head of what I wanted to do with styling, but that was thrown out the window when we got told we’d be working with homes built in different eras. So, this Block experience taught me that I can blend my own style with a design style I’m not familiar with. Working with colour took me out of my element, and I’m so excited that I got the chance to be creative with it.

Easy tips for someone who wants to refresh their home spaces for summer? 1. Indoor plants are a must; they bring life to a space. 2. Lighting is important! It’s crazy how much difference a light fitting can make, whether it be a pendant, wall sconce, floor lamp or natural lighting. 3. Injecting colour through cushions and throws is easy. It’s also simple to swap over when you want a change. What are you most looking forward to over the coming year? I love interior design, it’s something I have been passionate about for years now. Pursuing something in the industry would be an absolute DREAM!

What home styles and trends have you identified that you think will be big over the coming year, and how can we adapt for Queensland living? Mid-century modern is quite popular. I think we will see terrazzo, rattan furniture, wooden feature walls, arches and soft colour palettes trending in 2020-21. Also, open plan houses bringing the outside in, which is perfect for the Queensland lifestyle.

In Happy & Whole, media personality, meteorologist and new mum Magdalena Roze shares her favourite wholefood recipes inspired by her love of the weather and a sea change to Byron Bay

Lamb Shanks with Sweet Potato Mash Serves: 4 Ingredients 4 lamb shanks 3 tablespoons olive oil Flour for dusting 4 garlic cloves, crushed 1 brown onion, diced 1 leek, finely sliced 1 carrot, chopped roughly 2 celery stalks, chopped roughly 2 teaspoons smoked paprika 2 tablespoons tomato paste 1 cup red wine, optional 2 cans of whole or diced tomatoes 1 litre beef stock or water 1 bouquet garni*, plus extra herbs to garnish Mash 2 medium sweet potatoes or 500g, peeled and diced into 2cm squares 1/4 of a pumpkin or 500g, peeled, deseeded and diced into 2cm squares 1 tablespoon ghee Pinch of nutmeg Salt and pepper Method Season the lamb shanks in sea salt and dust in flour. Heat 2 tablespoons of olive oil in a large pot and fry the lamb shanks two at a time until golden brown on all sides, then set aside. In the same pot, add another tablespoon of oil and fry the garlic, onion, leek, carrot, celery, smoked paprika and a couple of pinches of salt and fresh cracked pepper until soft. Next add the tomato paste and cook for another minute. Pour in the wine (if using) and bring to the boil, cooking for another couple of minutes. When most of the alcohol has evaporated it will smell divine and then it’s time to add the canned tomatoes, stock, bouquet garni and lamb shanks. Bring it to the boil and then reduce to a low heat and simmer for at least 4-5 hours. You just want it bubbling away ever so slightly at the surface of the sauce. By the time it’s ready, the sauce will have reduced and thickened and the meat will be gorgeous, tender and wanting to fall off the bone. The mash is super easy so you can make it just before serving. Just add the sweet potato to a pot of salted boiling water and cook for about ten minutes or until you can put a fork in the potato with ease. Drain the potatoes in a colander and then return them to the pot for another 30 seconds to cook out any remaining moisture. Add your ghee and nutmeg to the potatoes and puree with a stick blender until it reaches a smooth and velvety consistency. Serve the mash in shallow bowls, topped with a lamb shank and ladle of red sauce over the top, garnished with fresh thyme and parsley, and fresh sourdough on the side. There’s no need for butter as it’s best used to scoop and soak up any leftover juices. *Notes: A bouquet garni is a lovely little bunch of herbs tied with kitchen string. I use 2 bay leaves, 2 thyme sprigs, 1 rosemary spring and 3 parsley stalks.

My Go-to Spanakopita Serves: 6 Ingredients 1 tablespoon olive oil, plus extra for greasing 375 g filo pastry, fresh or thawed 500 g spinach, chopped 6 kale leaves, stems removed, chopped 1 onion, finely chopped 250 g feta 2 garlic cloves, crushed 2 spring onions, finely sliced 150 g (¾ cup) ricotta (for a recipe see page 86 in Happy & Whole) ½ teaspoon ground nutmeg 2 tablespoons breadcrumbs Zest of ½ lemon ¼ cup mint leaves, chopped ¼ cup flat-leaf parsley leaves, chopped 2 eggs, beaten 100 g butter, melted 2 tablespoons sesame seeds Lemon wedges, to serve Method Preheat the oven to 180°C and grease a 20 cm x 30 cm baking dish or tray with olive oil. (Don’t worry if your tray is smaller, it just means that your filling will be a bit thicker.) Place the filo sheets on a work surface and cover with a damp tea towel to prevent them from drying out. Place the spinach and kale in a steamer over a large saucepan of boiling water and steam for 1–2 minutes or until the leaves wilt (you may need to work in batches). Set aside in a colander to drain and cool. Once cool, press the spinach and kale against the colander to squeeze out the excess water then chop into smaller pieces. (This step prevents the crust from getting soggy.) Meanwhile, heat the olive oil in a frying pan over medium heat and cook the onion until soft and lightly golden. Set aside to cool. Place the feta in a large bowl and rub it between your fingers to create a coarse crumb. Add the cooled onion, garlic, spring onion, ricotta, nutmeg, breadcrumbs, lemon zest, mint and parsley and mix well. (I like to do this with my hands to get a nice even texture without overmixing.) Add the spinach and kale followed by the eggs and mix again until well combined. Using a sharp knife, halve the sheets of filo pastry. Place two sheets on a work surface and brush the top one with melted butter. Top with another two sheets of filo and again brush with butter, continuing until around half of the filo pastry has been used. Don’t worry if some of the sheets tear a little as this won’t matter once they’re cooked. Now place the buttered sheets of filo in the tray, gently pressing them into the corners. Spoon the spinach and cheese mixture over the filo, spreading it out evenly. Butter the remaining filo sheets two sheets at a time and place them on top. Tuck in any overhanging pastry, then brush the top with butter and sprinkle with the sesame seeds. Bake for 45 minutes or until the pastry is golden brown and crisp. If the pastry is browning too quickly, turn the heat down to 160°C and continue cooking for the remaining time. Allow the spanakopita to cool for 10 minutes before serving with lemon wedges for squeezing over. How we express love to others and how we accept it, differs from person to person. While you’d think displays of affection were universal, or at least generally consistent within a culture, you’d be wrong. Every single person communicates love differently. When your love language is different to your partner’s, you must learn to speak each other’s so you both feel truly loved. There are five types of love languages and we use different combinations. Words of affirmation A few examples of words of affirmation are: ‘Thank you for doing the dishes, cleaning, taking out the rubbish’; ‘You are so beautiful/my big hot spunk’; ‘You’re doing so great – don’t give up’. The next step is to think further about

how you want to hear it. Is it through handwritten notes, lipstick on the mirror, SnapChat or text message? Acts of service The desire of people whose love language is acts of service is, to quote the iconic Elvis Presley, “A little less conversation and a little more action”. They place great value in doing something that needs to be done without being asked. Acts of service are often about small gestures. Gifts When it comes to the gifts love language, it’s important to try to get away from the mindset that the person is materialistic. For the ‘gift person’, it’s more the time, thought and effort that goes into the gift that truly expresses the love than the thing itself. Simply surprise and delight at random unexpected times or when they might need a lift the most.
