Spring is here, and it all feels possible.

How is it spring already? I could’ve sworn I was just writing about chunky knits and winter hibernation. And yet here we are, shedding layers, opening windows, and swapping our hot coffees for iced lattes. Well, that’s not entirely true, but the sentiment is.

There’s something about spring that hits different. It’s not just the sunshine, though let’s be honest, that alone is enough to put the figurative and literal spring in everyone’s step.

When the sun is out, people smile more, they walk slower. It’s like the whole world collectively exhales.

And me? I do what I always do this time of year — an actual spring clean. I’m talking cupboards, inboxes, and if possible, emotions too. No item is safe. If I haven’t used it, worn it, or thought kindly of it in six months, out it goes.

There’s something deeply satisfying about making space — physically and mentally — before the end-of-year madness begins. And with the Christmas holidays on the horizon (my absolute favourite season), now feels like the perfect time to reset.

Spring is like a soft launch into the joy that’s coming. It reminds you that change doesn’t have to be hard. Sometimes it’s as simple as letting the light in, taking a deep breath, and deciding to begin again. That thing you put off? Start now. The person you miss? Text them. The plan you shelved back in July? Maybe it’s time to dust it off.

Because if winter is for rest, spring is for hope. For shaking off the heavy and leaning into the light.

So here’s to the season of Queensland sun, warm mornings, and that restless urge to open every window in the house.

The year may have flown, but spring offers a pause — a chance to reset, clear out, and make space for what’s next.

And with the holidays just around the corner, I’m leaning in. Clean slate. Fresh air. Let’s go.

Spring isn’t just about cleaning out cupboards or swapping jumpers for lighter clothes. It’s a reminder that our mental and emotional wellbeing also deserves a seasonal reset. Just as the world blooms around us, we too can take small steps to refresh and recreate from within.

As a counsellor, I often remind people: self-care isn’t selfish; it’s survival. It’s saying, ‘I deserve to flourish, not just get by.’ Spring is the perfect season to recommit to that truth.

The Third Drawer:

WHERE GOOD INTENTIONS GO TO HIDE

Every home has one – that drawer where scissors lose their partners, batteries play possum, and instruction manuals for appliances you binned in 2019 live in denial.

The third drawer is less storage solution, more domestic Bermuda Triangle. It’s where you’ll find seventeen pens (none work), mysterious keys (“Maybe it’s for the shed?” You don’t have a shed), and enough random screws to build something impressive if only you knew what.

Opening it requires commitment. And tetanus shots. That tangle of charging cables? It’s achieved sentience and possibly learned macramé. The rubber bands have formed their own ecosystem. There’s a loyalty card for a shop that closed during the Howard era, and yes, you were only two stamps away from a free coffee.

“It’s not hoarding if it’s all in one drawer.”

We keep telling ourselves we’ll sort it out. We won’t. That single battery rolling around? It’s been there since 2015, existing in a quantum state of charged and flat until observed (spoiler: it’s flat). The superglue sealed itself before you opened it. The tape measure gave up measuring and chose violence instead.

“Marie Kondo took one look at my third drawer and switched careers.”

Yet we defend it fiercely. “I might need that!” we cry, clutching a phone charger for a Nokia 3310. Because deep down, we know the third drawer isn’t about organization – it’s about hope. Hope that someday, somehow, we’ll need that Allen key. We won’t. But maybe.

“IF MY CHILDREN CAN HAVE EVERYTHING THEY NEED, WHY CAN’T ALL BABIES?”

In late 2016, Carly Fradgley was feeding her one-year-old son Noah when a thought struck her. Her children — Noah and threeyear-old Isla — had everything they needed: nappies, clothes, a safe place to sleep. But what about the families who didn’t?

That same day, she came across a Melbourne-based charity on Instagram that collected and redistributed baby items to families in crisis. Carly loved the idea, but there was no such service in Queensland. She could have left it at that, but the thought wouldn’t go away.

“I didn’t know how to start a charity,” Carly says. “But I kept thinking, what if it works? What if I can do it?”

With a few friends and a Facebook page, she launched Baby Give Back. The idea was simple: collect good quality, nolonger-needed baby items and pass them on to families in need. The response was immediate. Spare rooms and garages began filling with donations. But as Carly began speaking to frontline support workers, the true scale of the need became clear — women fleeing violence with only the clothes on their backs, parents skipping meals to afford nappies or formula.

“We quickly realised this was about more than just stuff,” Carly says. “This was about dignity, support, and making sure children have a fair start.”

Carly had no formal background in the notfor-profit sector, but her legal experience helped her get the charity registered and operational quickly. From the beginning, Baby Give Back worked through social workers and support agencies to ensure the right help reached the right people.

“Every box we pack is done with care,” she says. “Clothes are folded neatly, items are checked for safety, and each box includes a note that reads, ‘With love from your community’.”

Since 2016, Baby Give Back has supported more than 50,000 children. In 2025, the

charity began its largest expansion to date, reaching communities in Townsville, Mount Isa, Doomadgee, and Saibai Island near Papua New Guinea. It’s part of a broader goal to support 50,000 children every year by 2030.

“Six of the ten most disadvantaged local government areas in Australia are in Queensland,” Carly says. “Our state has high levels of need and is also vulnerable to natural disasters. We have to be ready.”

The organisation’s Clothing Program is now central to its operations. By supplying nappies, wipes, and clothing, Baby Give Back helps families ease financial pressure. That, in turn, reduces stress and supports mental wellbeing.

“When a family’s basic needs are met, they can breathe again,” Carly says. “They can redirect money to food or rent. That changes lives.”

For Carly, the most memorable moments are the ones where the cycle comes full circle. One mother, who received support during a tough time, recently returned with a box of baby clothes to donate. “She said the donations had made a huge difference to her as a new mum. Now that her baby had outgrown the clothes, she wanted to help someone else.”

Support workers frequently share stories that reaffirm the impact. One wrote, “When I presented the box to the mother, she cried. She was so happy, relieved and grateful.

The kindness meant more than words can express.”

A typical day for Carly starts early with coffee and a walk around the warehouse to greet volunteers. Then come team huddles, meetings, deep work sessions, and policy and strategy planning. Fundraising, government engagement and expansion efforts all sit on her to-do list. “It’s a big job,” she says, “but I’m fuelled by a very real sense of hope.”

Volunteers remain central to the charity’s success. “They’re the heart of Baby Give Back,” Carly says. “They give their time generously and joyfully. The work we do wouldn’t be possible without them.”

Running a charity comes with challenges, and the COVID years were especially tough. Warehouse closures and growing demand made operations difficult. But the team adapted, knowing families needed them more than ever.

Looking ahead, Carly wants every child in Queensland — regardless of postcode — to have access to essentials in the earliest, most critical years of life. She also wants the broader community to understand that helping doesn’t have to be grand.

“There’s something everyone can give,” she says. “Time, items, money, skills — it all counts. I get to see how those contributions come together to create something so much bigger than any of us could do alone.”

Everybody loves a bargain, me especially. But let’s not sugar coat the fact that the cost-ofliving crisis is affecting Australian households. Rising interest rates, inflating grocery prices and unpredictable petrol costs are seeing our paychecks go faster than you can say “I’m trying to save!” It is no wonder many Aussies are struggling to boost their savings, with many just trying to stop it from shrinking. If you are able to integrate these habits into your ongoing purchases, I have no doubt you will come out the other side with more bang for your buck!

Groceries – one of the biggest necessary expenses for families and individuals. I regularly cut my grocery bill by more than 50%. The secret? Markdowns! Every supermarket has a routine for when they mark down produce, so get to know your local grocery stores’ markdown times and days. Usually, this is in the late afternoon or early evening. By shopping smart and being flexible with meal planning, you can slash your total cost in half and still eat well.

One of my biggest savings tips, which has allowed me to accrue over $15,000, is cashback! Everyone already shops online, so why not get some money back whilst doing so? Cashback sites like TopCashback have multiple retailer partners where you get a percentage of your purchases back –clothes, beauty, flights or even insurance. You can use it for regular grocery expenses like Woolies online and even boost your savings by using it during big sale periods like Black Friday, Click Frenzy and more.

When it comes to shopping, loyalty isn’t important anymore. You can shop around for the best deals across the big brands. Don’t be afraid to chase the deals, to politely ask for a cheaper price – this works well if you have done your research beforehand and have past or current sales to point to – and to buy from whichever shop has the best price on what you need. There are dedicated online forums and groups where everyday Aussies share their markdown finds and sales on at the time, so utilise that too.

It’s easy to fall into the trap of being financially overwhelmed and feel as though you can’t wrangle your savings, but by being strategic and shifting habits, it is possible! You don’t need to change your lifestyle, just approach it slightly differently.

Building these smart habits will pay off in the long run. Pairing markdown shopping, sales hunting and cashback opportunities will see you spending less and getting more value. That extra cash can go straight into your savings accounts!

From Rock Bottom to Incredible Heights: Meet Allie Pepper

Having recently turned 50, Allie Pepper is climbing stronger than ever. But her latest summit isn’t just about breaking altitude records, it’s about reclaiming her life.

Australian high-altitude mountaineer Allie Pepper has spent a huge part of her life chasing the clouds and pushing her limits. Get It Magazine spoke with Allie to hear about a recent summit, Kanchenjunga (the world’s third-highest peak at 8,586 metres!) and to learn more about her journey after a series of deeply personal challenges that nearly saw her hang up her climbing boots for good.

“I was at rock bottom,” Allie says, reflecting on a time not too long ago when everything seemed to collapse at once. “I’d lost my dad

unexpectedly, my marriage had ended, and I was going through severe menopause symptoms. depression, night sweats, insomnia. I didn’t feel like myself. I wasn’t sure if I could ever climb again.”

Like so many women, menopause hit Allie by surprise, and it almost ended her climbing journey. At first, Allie didn’t even realise what was happening to her. “I was 46 and had no idea my symptoms were menopause. I saw three doctors before I found someone who understood. Most GPs aren’t trained in menopause properly. It’s so under-recognised.”

Eventually, she connected with a Welfemtrained doctor and began hormone therapy, and Allie tells me: “It absolutely changed my life. Within a month, the depression, insomnia, and joint pain started to ease. After a year, I felt like my body had reversed in time. I could build muscle again, recover from training: it was like night and day.”

Allie had already completed major climbs in her earlier career, including her first 8,000m summit in 2007, but the dream of completing all 14 of the world’s 8,000-metre peaks without supplemental oxygen (a feat achieved by only a handful of people worldwide) had always burned in the

background. “The project was always in my heart, but I hadn’t fully committed. After everything I went through – it just felt like now or never.”

As her peaks have progressed, it hasn’t all been smooth sailing. For Allie’s Kanchenjunga climb, funding came late & the weather window was closing. And while Allie had planned to summit without bottled oxygen, as she had on five other 8,000m peaks, she made the call to use it. “It wasn’t safe without it,” she says. “I was on the edge of a storm at over 8,500 metres. I wanted to survive and come down.”

“It’s so extreme up there” Allie explains, “Without supplemental oxygen, your brain is operating with just a third of the oxygen it’s used to. Even when conditions are perfect, your legs can give way. This climb wasn’t about the view — it was survival.”

Behind that physical strength, though, is a different kind of work, an ongoing commitment to deep emotional and mental training. “I worked with a life coach for over a year when I began seriously preparing for the 14 Peaks,” Allie explains. “I needed to master my mind, to stop attaching to fear, to outcomes. I meditate daily. I train mentally, emotionally, and spiritually: not just physically.”

Now, she says, “I know my body so well. I feel better at 50 than I did at 40. Stronger. Sharper. I’m climbing better than I ever have – better than most men I’ve climbed with. Only one Australian man has achieved more in the 8,000m peaks than I have.”

The milestone of turning 50 – which coincided with her descent from Kanchenjunga – was a calm and quiet celebration. “We drove for hours that day and stayed in this remote hotel. I went to sleep at 8pm. The next day we celebrated in Kathmandu with some incredible female climbers. It was perfect.”

She laughs when asked if this was the life she imagined at 30. “Not at all. But I also never imagined how much was possible!”

As this next chapter of her life unfolds, Allie is working on a short film about the climb and considering a full documentary. “This journey is about more than mountains. It’s about showing people that it’s never too late. We are capable of way more than we think. You can go through the hardest chapter of your life and still find your way to the summit.”

For those standing at their own crossroads, wondering what’s next? Allie suggests turning the mirror back on yourself:

"I don't want to feel helpless":

WHY IRISH CHOSE NURSING

When Irish Tse lost her grandfather, she felt powerless. But that moment sparked a determination that would shape the rest of her life.

“I don’t want to feel helpless anymore,” she says. “I want to contribute to the community.”

Now in her second year of a Bachelor of Nursing at TAFE Queensland’s Southport campus, Irish is well on her way to becoming a registered nurse, driven by a clear sense of purpose.

Her first patient during placement brought that mission to life.

“He had multiple sclerosis,” says Irish. “I saw him get better, and when he thanked me, I knew I was where I was meant to be. It was so rewarding. It still motivates me.”

At 28, Irish began her journey with TAFE Queensland’s Diploma of Nursing, which she says prepared her for both the academic and emotional demands of the degree.

“It gave me the foundation I needed, not just with writing or assessments, but how to walk into a room, speak to patients, and be confident even when I didn’t have all the answers,” she says.

Now working in the cardiac unit at Pindara Private Hospital while completing her bachelor’s, she is already applying her skills in real-life settings, supported by the practical, hands-on approach at TAFE Queensland.

“The support at TAFE is incredible. The teachers go above and beyond. They care about you, not just your grades. I’ve never felt like just a number,” she says. “They explain complex theories in ways that actually make sense.”

The Southport campus’s realistic training environments and small class sizes gave her the space to grow and the confidence to ask questions without fear.

“That’s my advice to other students: be brave. Ask everything. No question is too small,” says Irish.

Irish sees her future in emergency care, where adrenaline and critical thinking meet purpose. One day, she hopes to volunteer in remote or disaster-affected communities.

“Nursing is never boring. It’s always changing, always growing.”

Scholarships available for TAFE Queensland nursing students

Your bedroom is your sanctuary—a place for sleep, love, and intimacy. However, as a Feng Shui practitioner, I often encounter elements in bedrooms that negatively impact those who reside in them.

From the disappearance of intimacy in a relationship to difficulties in finding a suitable partner, and even a lack of quality sleep, several factors in your bedroom’s décor and arrangement can affect your well-being. Here’s how to transform your bedroom into a true sanctuary.

ABSENT INTIMACY

Take a moment to examine your bedroom. What do you see? Are there photos of your children or family on your chest of drawers or bedside cabinets? These images, while meaningful, can energetically feel like voyeurism, with your family or friends “looking on”. To foster intimacy, move these photos to the East area of your home, which is the Family zone according to Feng Shui principles.

FRUITLESS DATING

Are you struggling with dating—either not getting dates or not progressing beyond the initial stages? Your bedroom decor might be the culprit. Look around: Do you have many images of yourself alone? Does the artwork suggest partnership or eternal singledom? For inviting love, your decor should reflect partnership. Ensure you have pairs of items, such as matching bedside cabinets and lamps. Additionally, remove anything that reminds you of an ex. Creating space for a partner, both physically and symbolically, is crucial.

CONSTANT EXHAUSTION

Whilst having an exercise bike or treadmill in the bedroom might seem convenient for morning workouts, these items can actually create unnecessary exhaustion. Being constantly reminded of an activity that requires motivation and effort can drain your energy, leaving you too tired for other “fun” things in the bedroom. Similarly, working in bed can disrupt your rest. If you must have an office space in your bedroom, make sure you can block it off at the end of the day with a screen or cover it with something like a sarong. This separation helps keep work out of your sleeping space, promoting better rest and relaxation.

Don’t worry, I didn’t miss the most crucial part. Your bed. There are a lot of questions about bed placement, and it is something that I debunk often. There are going to be one or 2 places only that you can put your bed and for the most part it will be obvious.

What you do need however, is a solid headboard to provide you with support and, nothing above your bed. Having art above the bed provides the energy of negativity hanging over you. It can disturb sleep and also create pressure in relationships.

And finally, take the time to upgrade. When it comes time to buy new linen, step up to the next level. You spend nearly 50% of your life in your bed, make sure it’s comfortable.

Strength After 40: Why Lifting Heavy Is Essential, Not Optional

The gym floor can feel intimidating in your forties. Surrounded by twentysomethings throwing around heavy weights, it’s easy to think your best lifting days are behind you. The truth? Strength training after 40 isn’t just beneficial— it’s essential.

From the age of 30, we lose 3–8% of muscle mass every decade. By 40, hormonal changes accelerate the process: testosterone declines in men, while women experience fluctuating oestrogen and progesterone, especially during perimenopause. Bone density drops, metabolism slows, and muscle becomes harder to maintain. Lifting heavy helps reverse many of these age-related changes.

Research shows that progressive overload— gradually increasing weight, reps, or sets— stimulates muscle growth at any age. In fact, men and women in their 60s and 70s can build muscle comparable to those in

their 20s. Compound movements such as squats and deadlifts optimise hormones, strengthen bones, and boost metabolism since muscle burns far more calories at rest than fat.

But many over-40s sabotage progress with common mistakes. A major one is not eating enough protein. The body needs 1.6–2.2 grams per kilogram of bodyweight daily to build and repair muscle. Women often under-eat protein, while men may rely too heavily on supplements instead of whole foods. Without enough raw material, even the best training program falls flat.

Another pitfall is lifting too light out of fear of injury. While safety matters, muscles need sufficient challenge to grow— especially with declining hormones. Women in particular are often conditioned to avoid “heavy” weights, but real results come from working in the 6–12 rep range with compound lifts.

Recovery is also crucial. Unlike in your twenties, you now need 7–9 hours of quality sleep and 48–72 hours between training the

same muscle groups. Women may benefit from adjusting workouts around hormonal changes, while men often underestimate the toll of work stress. Active recovery— walking, stretching, or mobility work— can help prevent fatigue and plateaus.

Another misstep is trying to build muscle while losing fat. After 40, the body responds better to focused efforts: spend 8–12 weeks building muscle with adequate nutrition, then shift to fat loss if needed.

Perhaps the biggest barrier isn’t physical, but mental. Many believe they should “slow down” with age, and women often fear becoming “bulky”. In reality, strength training boosts mental health, cognitive function, and self-esteem while providing the functional strength needed for everyday life and independence later on.

Start with two to three full-body sessions a week, focusing on form before adding weight. Track your progress and remember: every rep after 40 is an investment in your future. Your best lifting days aren’t behind you—they’re just beginning.

The Stats You Can’t Ignore

• 70% of Australians aged 65 and over have at least one chronic condition (ABS, 2022)

Rehab is the recovery phase — restoring movement, strength and function after surgery or injury. Skipping it might not stop you from getting back on your feet, but it can slow your progress, increase your risk of re-injury and limit your long-term mobility.

A “Sol” Deep Escape

Get It magazine visited the newly opened Sol Elements wellness retreat in Mt Tamborine and discovered a world created by nature, design and the divine.

A visit to Mt Tamborine feels like stepping into another realm: crisp air, towering trees, and the hush of rainforest. Floating on a tranquil lake at the base of Tamborine Mountain Glades, you’ll find the muchanticipated Sol Elements – four years in the making and the vision of husband-and-wife duo Shae and Russell Raven.

Described as Australia’s first “floating” elemental bathhouse, Sol Elements feels less like a spa and more like a spiritual retreat wrapped in luxe wellness. From the moment I entered, surrounded by the scent of wood and herbs, I felt removed from everyday life.

A design with meaning

The design, by Design Artisan Co, isn’t just aesthetic, it’s symbolic. The bathhouse’s hexadecagon form, a 16-sided shape in sacred geometry, represents a bridge between earth and the divine. Bronze and slate finishes from ABI Interior’s ‘Antique Collection’ shimmer against timber panels Russell hand-burnt using the Japanese Yakisugi technique. Outside, the Yin Yang Zen garden with , I’m told, of balance and the shifting seasons of life, is a welcome contrast to the starkness of the walls.

The spa has been created to allow guests to journey through a sensory immersion through communal onsens, cold plunge pools, Himalayan salt cave, infrared saunas, floatation therapy, all with an impressively tranquil view of the lake and rainforest. I’m encouraged to immerse myself in the healing powers of Earth, Air, Fire, and Water, and to curate my visit to my needs.

Elemental Escapes

I began my journey in the Earth Suite and Botanical Scrub Bar, where a towering ironbark slab displays eleven handcarved bowls. Guests are invited to craft their own body scrub from raw sugar, hibiscus, spirulina, rose petals and more, a meditative process to encourage you to begin your self-care journey and explore your body and mind’s needs for your visit.

Then: the baths. Three outdoor magnesium thermal pools (heated to a glorious 38 degrees) are tucked under the eaves of the spa, with that same glorious view on display. Seated comfortably next to them are two cold pools (set at a zingy 12 degrees!).

If you’re craving total privacy, SOL’s secluded suites are next level. Each includes a private balcony thermal bath, an indoor infrared sauna, ice bath, panoramic lake views, and a wellness mini bar stocked with “spatinis”, volcanic clay masks and curated ritual teas. One is even dog-friendly, perfect if your wellness buddy has four legs.

I was encouraged to spend 90 minutes in here, beginning with my personalised salt scrub, followed by a shower, before heading into the two-person infrared sauna. After 15 minutes, I plunged briefly into the private cold pool, before heading to the outdoor deck, where I was warmly welcomed into my own exclusive hot pool. Lying back and gazing at the blue sky, edged with the burnt-black wood, real life felt like light years away.

With my body and mind tingling, I then headed to one of the two float caves saturated with Epsom and Dead Sea salts. These are available to all spa visitors, alongside a large cedar sauna with a perfect view of the lake, a silent steam room, and a glowing Himalayan salt cave to complete your wellness circuit.

Treatments to transcend

The indulgence doesn’t end with the baths. Sol’s spa menu blends traditional and alternative healing, with treatments ranging from 30 minutes to two hours. I chose the Signature Sol Transcendence Ritual: crystal massage, facial therapy, hot stone ritual, and the spa’s own Lotus-Encoded Elixir oil. Two hours later, I emerged glowing, grounded, and completely unburdened.

I left Sol with softer skin, looser shoulders, and a wider smile. This truly is an escape that speaks to your soul.

Cheesy Garlic Cob Loaf Dip

Ingredients:

• 1 cob loaf

• 250 g sour cream, sub Greek yoghurt or cream

• 250 g cream cheese

• ½ tsp celery salt

• 2 tsp mixed herbs dried

• 4 garlic finely chopped

• ½ cup parsley fresh, chopped

• 2 spring onion / green onion sliced

• 100 g cheddar cheese, Maffra Cheese Co

• 100 g red Leicester cheese, Maffra Cheese Co

Method:

1. Pre-heat the oven to 110°C / 230°F and grate your cheeses.

2. Slice around 2 cm / 1 inch off the top of the cob loaf, and remove the soft bread inside. Break it up into bite size pieces and place onto a tray lined with baking paper. Add the lid and empty cob loaf and pop the tray into the oven for 5-10 minutes to lightly crisp the bread to your liking.

3. Meanwhile, add in the sour cream, cream cheese, celery salt, mixed herbs, garlic, parsley and spring onion in a medium saucepan over medium heat and warm through for around 3-5 minutes.

4. Next, add in the grated Maffra cheddar and red Leicester cheeses (reserving a handful of each to top). Mix again until the cheese is melted and everything is heated through, around 2 minutes.

5. Remove the cob loaf and bread pieces from the oven and turn the oven up to 200°C / 400°F. Transfer the bread pieces and lid into a bowl ready to serve. Optional: Cut the lid into pieces for dipping too.

6. Pour the cheese and garlic dip into the cob loaf and top with the remaining grated cheese. Place the cob loaf back into the oven for around 10 minutes to melt the cheese on top and warm it a little more.

7. Serve immediately while warm and enjoy!

Full of Flavour: 4 Recipes to Welcome Spring Vietnamese Rice Paper Rolls

Ingredients:

• 200 g prawns, cooked, sliced in half lengthways (500 g if unshelled)

• 200 g vermicelli rice noodles

• 8 sheets rice paper wrappers

• 3 leaves lettuce roughly chopped

• 1 bunch fresh mint leaves

• water boiling, for soaking vermicelli noodles

• water lukewarm, for dipping rice paper sheets

For the Peanut hoisin sauce

• 3 tbsp hoisin sauce

• 2 tbsp crunchy peanut butter

• 1 tsp sesame oil

• 1 clove garlic finely chopped

• water

Method:

1. Take a rice paper wrapper and rotate it in the warm water until all surface areas have been covered.

2. Pop it on your plate and top with lettuce, mint and vermicelli on the edge closest to you, then pop the prawns about 2-3cm closer to the top edge.

3. Now grab the bottom of the rice paper and roll it over the greens. Tuck in both sides and continue rolling up the rest of the way.

4. That’s it! All that’s left is to dip it in your delicious peanut hoisin sauce or nuoc mam cham and eat. Yum!

For the Peanut hoisin sauce

1. Add the hoisin sauce, peanut butter, sesame oil and garlic into a small saucepan and gently simmer on the stove.

2. Stir through water a little bit at a time until the sauce has a glossy look and a smooth, slightly runny texture.

3. Taste test a few times and add more of any ingredient or water until you’re satisfied with the flavour.

Miso Glazed Salmon

Ingredients:

• 4 salmon fillets, 500 g – skin on

• 2 tbsp red miso paste

• 1 tbsp mirin

• 1 tbsp cooking sake

• 1 tbsp soy sauce

• 1 tbsp sugar

• 1 tbsp vegetable oil

Method:

1. In a small bowl, add the red miso paste, mirin, cooking sake, soy sauce and sugar. Mix until combined.

2. In a large bowl, place in the salmon fillets and the miso marinade. Coat well, cover then pop in the fridge for at least 15 minutes.

3. To cook, heat a medium non-stick frying pan over medium heat. Pour in your vegetable oil, then coat the pan using a brush or paper towel. Carefully pick up each salmon fillet, and place them skin side down on the pan. Note: The miso marinade is full of sugar and will char, making it look burnt in areas. This is perfectly normal and adds to the flavour. By cooking on medium heat, it allows the fish to cook through without actually burning the outside.

4. Leave the salmon on the skin side for 2-3 minutes, before laying them on the side to cook for another 2-3 minutes. Repeat this, cooking the top and other side of the salmon for the same amount of time, then remove from the pan.

5. Serve with freshly cooked rice and optional garnishes such as toasted sesame seeds and spring onion slices.

Notes

Matcha Powder – We use Maeda-En culinary grade matcha powder. Make sure any matcha powder you use is unsweetened. Otherwise, your cookies will be far too sweet.

Boiling Water – If you have a variable temperature kettle, we recommend boiling your water to 80°C / 175°F. You can also leave a regular kettle for 5 minutes after boiling to allow the temperature to drop slightly. This helps avoid too much bitterness in the matcha tea.

Ingredients:

• ½ cup brown sugar 50 g, not packed down

• ¼ cup caster sugar 40 g, plus 1 – 2 tsp for sprinkling

• ¼ cup salted butter 60 g, softened

• 1 tsp white miso paste

• 1 tsp matcha green tea powder heaped

• 2 tbsp hot water, around 80°C –see notes

• 1 tsp vanilla essence

• 1 egg

• 1 ½ cups self raising flour 180 g

• ½ cup macadamia nuts 60 g, roughly chopped, sub hazelnut or white chocolate chips

Easy Green Tea Matcha Cookies

Method:

To toast the macadamias (optional)

1. Dry toast the macadamia nuts in a medium frying pan on medium heat for 2-3 minutes until golden with a slight char around the edges. Transfer into a small bowl and allow them to cool down for a few minutes before adding to the cookie dough.

Tip: The flavour and aroma of toasted macadamias is out of this world! But you can skip this step if you want to save time.

To

prepare the dough

1. Place the matcha green tea powder into a small dish and pour in the hot water. Mix well with a matcha whisk or small regular whisk until the matcha is fully dissolved and frothy.

2. Cream the brown sugar, caster sugar and salted butter using a stand mixer or hand held beaters for around 3-5 minutes until pale and fluffy.

Tip: You can use a large mixing bowl and wooden spoon if you need.

3. Add the bloomed matcha tea, white miso paste, vanilla essence and egg, then mix together on low.

4. Remove the bowl from the stand mixer (if using) then stir in the 1 ½ cups self raising flour and toasted macadamias using a wooden spoon until well combined. Cover and refrigerate dough for a minimum of 15 min.

5. Cover and refrigerate dough for a minimum of 15 min.

To make the cookies

1. Preheat the oven to 180°C / 360°F.

2. Form cookie dough balls around 3 cm / 1.5 inches in diameter, then place onto baking trays lined with baking paper / parchment paper or a silicone mat. Tip: Leave a little space next to each one, as they will expand while baking.

3. Flatten the tops slightly and sprinkle with the extra 1-2 tsp caster sugar.

4. Bake for around 10 minutes, or until lightly browned around the edges and cracks start to form on top.

5. Transfer to a cooling rack until fully cooled, then serve or store in an airtight container on the benchtop.

With specialist training from the University of Queensland and a warm, approachable manner, Dr Gwengo brings together advanced expertise with genuine compassion. He is an expert in treating patients with both braces and clear aligners (such as Invisalign), and has helped children, teens, and adults choose the option that best fits their lifestyle and smile goals.

What sets him apart is his belief that every patient is more than just teeth on a chart.

“I always take time to listen to what’s most important to my patients. For some, it’s about health and function. For others, it’s about self-esteem. My role is to guide them to the best outcome while making the journey positive and empowering.”
