Wine Tasting 101 The whole wine tasting craze may seem overwhelming and off-putting to most people. Learning the basics of tasting, and the simplest of wine terms will give you confidence to taste in any social situation. There is a whole wonderful world of wine out there, and learning some simple tasting steps and wine terms will give you the self-assurance to step out of your comfort zone and discover wines from around the globe.

SEE:

Begin by pouring a small amount of wine into a large wine glass, hold the wine up to the light. You are doing this for two reasons; you are looking for any indication that the wine is flawed, and to give you a hint of what type of wine you will be drinking.

2 SWIRL:

Gently swirl the wine in the glass, either by

placing it on the table or at eye level. The legs or tears of the wine will give some foresight into the alcohol content and “body” of the wine. You are also releasing the bouquet or aroma of the wine.

3SMELL:

Two things that you do not want to smell are moldy aromas or a vinegar-like scent. These are indications of a flawed wine. Look for fresh fruit aromas, notes of floral, herbs and earth. These are the beginnings of building your wine tasting vocabulary.

There are four simple sTeps to tasting wine like a professional: see, sWirl, smell and TAsTe.

There are four simple components in a wine to look for- a harmony between SWEET, ACIDITY, TANNINS and BODY. SWEET vs. DRY: If there is no indication of sweetness, the wine is considered dry. How sweet a wine will taste is indicated by the acidity and alcohol levels, the amount of tannin present, and whether the wine is still or sparkling. ACIDITY: Too much acidity, and a wine is tart and unpleasant, too little and the wine is flat and uninteresting. TANNINS: Are components that “dry the mouth” and gives structure to red wines. BODY: The impression of weight or fullness on the palate is the body of the wine. Full-bodied describes a wine with fullness of flavor in the mouth, light-bodied means the opposite. Take every opportunity offered and taste, taste, taste. There are wonderful wine bars all over Long Island that offer flights (samples) of a variety of wines. Many of our wine shops and liquor stores offer free weekly tastings. There are more than forty wineries on the east end of Long Island with tastings and tours available at most. The majority of restaurants now offer a selection of wines by the glass, that you can try without committing to a full bottle. Home wine tasting parties are becoming popular too. BACKtoBASICS Spring is for Men Too

Less is (Way) More This Spring, men’s style is about keeping it simple, a happy mantra indeed for most. However, men DO need one piece that brings their look to life. Instead of mixing busy patterns, try taking a solid suit and shirt and then bringing them to life with a fresh print tie. The point is to make 1 or 2 pieces count. As far as color, conventional wisdom says gray suits get darker this time of year. I say ignore that mantra. Once the weather warms up, pale gray is flat-out cooler, literally and figuratively. The shoe choice for Spring? Loafers. No longer designated as casual, a high quality pair can march right into the office with you.

Arguably the most important aspect in updating one’s wardrobe: accessories. Stacking jewelry is mandatory and, at last, a binding excuse to buy two of everything. Mismatched or matched, to stack is to create, influence, and inspire. Pick up some bangle bracelets, standout sunglasses, and one daytime and nighttime bag. Stark white (especially patent) or transparent will go with all the colors you’ll be wearing and thereby save you money.

As the Ultimate Bachelorette, I wanted to share some ideas I’ve come across over the years to help my friends and family celebrate the most special times in their lives.

Bridal Shower

April bridal showers May bring tons of household appliances, but flowers will add a sweet touch to the brides day! A favorite Spring theme of mine is the Flower Theme. Whether you use Gerber daisies or roses, each table should have beautiful bouquet centerpieces. A wonderful idea and great addition to your table setting would be a flower pen. This looks a lot better than a ball point pen for the shower games.

What You’ll Need Pretty Silk Gerber Daisy Flower

What You’ll Do • Remove top off pen. • Trim flower stem so the length will be just long enough for the stem to fit down into the pen. • Add a thin amount of hot glue to flower stem, and insert into pen. Allow to dry. • Begin to wrap the floral tape around the pen {it will stick to itself when stretched}, so pull the tape fairly tight as you wrap. • Wrap all the way up to the base of the flower, then trim off the floral tape and secure. • Grab your jar, fill it with river rocks, and pop your pretty flower pen into it!

STRONGISLAND WOMAN Dr. Virginia Maurer, MD The Maurer Foundation Dr. Virginia Maurer, MD has been championing breast cancer education for decades. When she first started private practice, Dr. Maurer discovered there wasn’t much accurate information available to women about breast health. In 1995 she established The Maurer Foundation, a non-profit that brings educational programs on breast health and breast cancer awareness into communities, reaching girls and women in schools, through peer-to-peer programs, at corporate seminars, empowering them to take charge of their own health. “If you get into the heart of a community, you can really make an impact,” said Dr. Maurer proudly, noting that all monies raised by the Maurer Foundation go to high schools and colleges, to support free in-school programs offered by the Foundation’s educational team. The Maurer Foundation is dedicated purely to educating women on breast cancer awareness, risk reduction and early detection. “Women need to be actively involved in their own health, because early detection saves lives,” she said. It is because of this vigilance to early detection that “we’re seeing a higher percentage of patients being diagnosed at Stage 1, resulting in a long list of 20+ year survivors,” said Dr. Maurer, who notes that while this is great news we’re all still very much at risk. “Women think if their mammogram is normal, or if they don’t have a family history, then they’re not at risk. That’s not true: more than 70 percent of breast cancer patients don’t have a family history,” she said. Dr. Maurer understands this all too well. A prominent breast surgeon and breast cancer specialist, Dr. Maurer is also a breast cancer survivor, finding her own cancerous lump only through breast imaging. The lump itself was not palpable.

“Women must be proactive. Get mammograms regularly. Do self-exams. Talk to your doctor,” she said. “Breast cancer can happen at any age, as early as your late 20s. Women need to be aware of their breasts and immediately pursue anything that feels abnormal.” Realizing that women have a tendency to put their own needs on the back burner, the Maurer Foundation offers a free Alarm Clock service on the website to remind women when it’s time for their next mammogram and breast health exam. “Women must support one another,” said Dr. Maurer. “I encourage patients to take friends with them when they get their mammograms, go to lunch or dinner afterward. If there’s an unexpected turn of events, your friends will already be by your side to help you through it.”

You pleasantly move forward with your diet plan, exercising and passing up a coveted dessert or glass of wine, and counting your calories. You hop on the scale one day hoping to see the usual weight loss you have become so accustomed to in previous weeks, and there it is looking you square in the face-the beginning of your weight loss plateau. This is not the first time you got the dreaded visit, nor will it be the last. The question is how you can make these visits as short as possible. The fact is, it may not be anything you are consciously doing or not doing. Think back, way back into the history of man, to a time when sporting a few extra pounds was a good idea. Extra fat had a purpose, food was scarce. It is a natural defense for our body to hold on to pounds for dear life after an initial weight loss. Progress in your diet will naturally slow down, and eventually even stop when your food and exercise intake is constant. So the

question is, do I cut my calories again, exercise more? Here is what you need to know about calories: the fact is that it takes calories to burn calories. When you decrease your calorie intake, you also decrease your metabolic rate. What this will do in turn, is allow your body to accept fewer calories which will create hunger and prevent you from losing fat. In order for you to have your metabolic rate remain high, you need

to keep your calories slightly BELOW your maintenance calories. A deficit greater than 500-700 calories makes it much harder to maintain your lean body mass. Here is the formula you need to use in order to determine your lean body mass for women: kg (body weight divided by 2.2) x 23= calories per day. Good luck and good-bye weight loss plateau!

Lessons from Dance; Inspiration for Us All As anyone who watched Darren Aronofsky’s ‘Black Swan’, or danced professionally, will tell you, the world of professional dance can be a “competitive sport.” With literally hundreds of performers competing for only a handful of top spots at the world’s most elite companies, tensions–and jealousy–run high. But Shen Yun, and the performers who comprise it, are truly different. “We really care for each other,” states principal dancer, Miranda Zhou Galati. “If someone’s improving, the other dancers will really cheer you on and be supportive.” Dancer Daoyang Zheng elaborates: “Before coming here (at her previous company), whenever a choreographer would create a dance, we would worry about what positions we would be put in, and everyone wanted the lead role. But it is really different here. We all get along really well and want to bring the best to the audience.”

Food&NutritioN It’s a new dawn, it’s a new day, it’s a new life…and with that, I decided Mikey T is breaking out a new format…Spring cleaning and organizing your nutrition to help you learn your dietary needs. Now did you know, across the country the most common wild grown vegetable is the asparagus? It just so happens, these long bamboo stalks, with the beehive haircut, are one of the first harvested crops of Spring. So convenient, is it not?

What’s In It For Me?

These little stalkers follow us in a good way. A 5.3 ounce serving stands tall with only 20 calories, 3g protein, 3g carbs, and 0g fat. FYI, those of you that do not have a scale in your kitchen, 5.3 ounces equates to just over a measuring cup in size. I do recommend picking up a scale, though, it’s a great way to keep track of your serving size portions. Asparagus is a top produce item in many nutrition categories. It’s the Mary Poppins of the vegetable kingdom…perfect in every way. It’s extremely low in sodium, has no cholesterol, and is rich in potassium, which makes it friendly to today’s heart-healthy consumer. There are 3 grams of fiber per serving, which should chip away at your 25g per day goal. Asparagus contains “A-list” amounts of vitamins C and B, and a nutrient known as GSH, which has been studied to reduce cancer development. Nice! It also provides us with 60% of our RDA of folic acid. A deficiency in folate can cause pregnancy complications, mental confusion, cognitive declines, mental depression or behavioral disorders.

Game Time What better way to lose

To get the best possible flavor out of our asparagus, we’ve got to follow 3 simple rules: 1. Make sure the spears you buy are vivid green, crisp, and firm. 2. Take a whiff, don’t feel awkward. If the bunched asparagus smells objectionable, leave it sitting for the uneducated woman who chooses not to pick up GEM Magazine to read Mikey T’s nutrition tips! 3. On the back ends, the asparagus should be moist and fresh-looking. If it’s cracked or dried like grandma’s feet…do I even need to say it? If refrigerating it before cooking, follow my storage tips. Cooking asparagus ASAP is important. Once this veggie has been harvested, the sugars like to transform to starch, so the fresher, the better. I personally purchase mine right when I am going to use them.

Put That Away! Storing asparagus is a little

tedious, much like cutting the crust off the kids PB&J sandwiches. So Mikey T has two options for you: One, wrap them up in a damp cloth, toss them in a plastic bag and refrigerate. Make sure it is not airtight, that will cause stalks to become soggy. Option two, we can trim an inch off the base, wrap a damp paper towel on the end, and stand them upright in a glass. Fill with a few inches of good old H2O. Place a plastic bag loosely over the tips and store in the fridge. I would date the bag just so you know when it was placed away. Remember, fresh asparagus perishes quickly, usually 3-4 days. Quick tidbit, do not wash your asparagus until ready to cook.

InspIratIon&EmpowErmEnt The Key Spring Ingredient! I asked a question of my coach recently: What is the one thing that really moves a person forward to create and sustain a business? When I heard the response, my insides were doing a high five. You see, I have been in a difficult place assessing where I am in my life, and figuring out the balancing act between dedication to my business, (which, right now has me working way too many hours) and not enough high-quality attention to my husband and family, never mind my friends. Why am I sharing this with you? Because I have the sense I am not alone. Asking the question, what is important and finding an answer that works for you and for your love relationship seems complicated. So when I heard the answer distilled in one word, I was so grateful. PASSION. Passion is defined as a compelling emotion, strong fondness and enthusiasm for something. It may or may not include love, though in some sense I think love is inherent in passion. When you feel passion, other people notice, and your effervescence can trigger their enthusiasm. Passion can also be just as evident when you are quietly strong, feel very clear about what you are doing and saying, and your commitment to being fully present shows.

I think an inherent aspect of passion that is often taken for granted is being mindfully engaged. You don’t have to make yourself be present, you simply are. When I am mindfully engaged in what I am doing, whether it is one-on-one with my therapy or coaching clients, meeting someone for the first time, with my husband, or speaking at live events, the key to a meaningful encounter is passion. So what if you have difficulty accessing passion for something or someone? When I help clients who are “depressed,” anxious or don’t feel good enough, finding the thread that accesses passion is the key. Here are some suggestions to help you find your passion. How To Make The Best Life Choices Many decisions are made during the course of each day. Each decision we make, no matter how incidental it may seem, impacts the rest of that day, and every day thereafter. Everyone is at a crossroads each moment of each day–it’s just that we never stop to reflect on the fact that every decision we make can have life-changing consequences. A client recently recounted a story from her youth. She told me that one Friday, instead of doing her usual thing of going to the local hangout with her colleagues for a few drinks after work, she decided she would call this new guy she recently had met and see if he was available to take in a movie and a bite to eat afterwards. The rest is history-they have now been married for twenty-two years. As she said to me “If I hadn’t made that call on that Friday afternoon, we wouldn’t have married, my three children would not exist, and I probably wouldn’t have been propelled along my career path the way I have been, given that my husband has helped me so much and been so supportive.” Little choices that we mindlessly make can change the very course of our life. You have made those choices, so have I. And, yet, the vast majority of us make those choices completely unwittingly, paying little or no attention to the consequences of each of our actions. Only the very fewwhat one of my college professors termed “uncommonly successful” people-have the presence of mind and the selfawareness to realize the importance of the moment-every moment-and, in so doing choose their actions reflectively, mindfully. The converse, for what the same professor might call “normal people”, is to settle for an ordinary life that is not mindful of the opportunities that each moment can potentially create. And therein lies the secret to mindful happiness and success, far beyond the perceived pre-determined routes on which most normal lives meander. We simply need to re-learn to be attentive-not seeking out, searching for or hankering after life’s next opportunity, but simply fully attentive to and mindful of the present moment, the here and now, the only time and place we have. So, you can take the first step on a journey of discovery that will change your life right here, right now. In doing so, you will realize that the choice between mindful happiness and success and the mundane alternatives is not a matter of luck, education or social status-it is simply a matter of choice. TIPS TO KEEP YOUR PET WELL-HYDRATED As pet parents, we control what our dogs and cats eat and drink. We measure food, but how many of us measure the amount of water we provide our pets daily? Water is one of the most important nutrients you can provide to achieve optimal health. The amount of water each dog or cat requires and consumes can be very different, so it’s your job as the pet owner to make sure your pet is getting enough water throughout the day. But how much do they need? To help put this into perspective, here are some examples from an article by JT Clough, a dog trainer in California: “A 7-pound adult Maltese with activities consisting of one 20 minute slow walk and some light indoor activity, would need approximately 1½ cups of water throughout the day to maintain a proper level of body fluid. A dog weighing 65 pounds would require approximately 7 cups of water depending on exercise, anxiety, climate and diet.” (Dogtrainingsandiego.com) Pet water requirements are influenced by factors such as species, size, level of activity, local climate and the kind of food being fed. Talk with your veterinarian about how much water your pet should consume on a daily basis. In my household, we start the day with 8 cups of water distributed between 2 bowls. By the end of the day, I know how much is consumed and am also aware of empty bowls requiring replenishment. Keeping water bowls full is an easy way to increase intake. Just like staying well-hydrated promotes good health in humans, it’s important that our pets get enough fluids as well. Know the amount of fluids your pet needs to be healthy, put a system in place to keep track of what he’s

FAMILY&RELATIONSHIP Get A Voice Launches National Campaign To End Social Cruelty The Get.A.Voice Foundation is a not-for-profit organization dedicated to raising awareness of the growing incidences of bullying-in schools and out, and the impact on children. Its mission is to provide educators guidance in the area of character building, conflict resolution and non-bullying strategies. It provides children with resolution alternatives, coping abilities and outlets to diffuse the negative, destructive nature of bullying and other forms of intimidation that target children. The program has been successfully implemented in public and private schools, before and after school programs and clubs since 2003.

46 states have enacted anti-bullying statutes in response to the public outcry against the rising number of bullying incidents throughout the country, some of them with fatal consequences. The New York Legislature enacted the Dignity for All Students Act (DASA) on September 13, 2010. This law is intended “to afford all students in public schools an environment free of discrimination and harassment…to foster civility in public schools and to prevent and prohibit conduct which is inconsistent with a school’s educational mission.” DASA seeks to provide a safe school environment for students against harassment based on “race, color, weight, national origin, ethnic group, religion, religious practice, disability, sexual orientation, and gender.” NY. EDUC. LAW §12 (McKinney 2011). The Get.A.Voice Project fulfills the mandates of this law and is being embraced by school districts as a viable, ongoing solution towards helping end social cruelty. Founder and CEO Laurie Mandel, stated that “Get.A.Voice has not only made a tangible difference in the schools and communities who have embraced the program, but the program itself has been developed into a series of classroom-based programs which are now available nationwide through The Bureau For At-Risk Youth.” One elementary principal commented, “Get.A.Voice provides solutions to a problem every principal faces. It’s a pro-active way of addressing the everyday language issues that often leads to bullying.” On April 25th, the Get.A.Voice Foundation will be having a fundraising dinner at the Thatched Cottage in Centerport to honor former NFL player Don McPherson for his ongoing support in promoting the Get.A.Voice Project. Other attendees include Leah Laurenti, American Idol alumni, who will be performing at the event.

Finding Vera

In the Days that Followed

Our family had traveled thousands of miles to the Ukraine to find Vera, but Katia, Darya and Irina’s biological father had not been true to his word. Disappointed ourselves, there was little we could do to comfort our daughters from the emotional disappointment and broken hearts left in the wake of their father‘s lies and manipulation. In the days that followed however, the girls were given renewed hope in finding Vera. From information provided by their newly found maternal uncle, we learned Vera had not been given to a mother in the next hospital room that had delivered a stillborn. This story had been fabricated by an intoxicated and confused father. We were also told that the girl’s biological mother did

not pass during Vera’s delivery. Sadly, she had expired while breast-feeding the following morning. We finally uncovered the name and location of the hospital where Vera was born. We had searched so many other hospitals with no success. We now knew the name of the delivering physician, and the administrative facility where Vera’s records and documentation were filed. With this newly found information, Olga, our investigator, agreed to carry on our search. Once again, there was hope that we would be able to find Vera, so that Katia, Darya and Irina would be reunited with their lost sister. During the final days of our trip in the Ukraine, at the girl’s request, we visited the orphanage where they

spent nearly two years before finding their home in the United States. They wanted to see friends and teachers they had left behind. They also wanted to visit Nikolai. They met Nikolai at the orphanage. His role was to watch out for the children’s wellbeing. Nikolai was a retired police detective and loved children. He also had a sweet spot in his heart for Katia, Darya and Irina. They would often go to his office for protection and he would surprise them with a stray piece of candy. When we finally met up with Nikolai, we shared with him our long journey and disappointing results. As all three girls stood around him, tears in his eyes, he volunteered to team up with Olga and join our investigative team. He vowed that he too, would not stop his search until Vera was found.

! a m a Sweet M Momentum Teen Program At-risk kids graduate high school. Estranged relationships with parents are mended. Kids apply to “reach” college and get in. These are just some of the results of the workshops at Momentum Teen. The group, which is based on an adult program called Momentum Education, teaches teens to reach their goals and live the life they dream about through experiential learning, said board member Tamara Azar. They start with a two day basic program where they explore different distinctions. Kids are taught to break through old fears and procrastination to achieve their goals. They explore their belief systems and create visions for their ideal world. In the basic class, they dispel myths and learn what they do not know. For example, if they do not know they can do well in school, they learn ways that they can. This is done by working in pairs and playing role play games. After completing the two day workshop, teens go on to the 90-day leadership program where they focus on friends and family, finance, education, community and health and wellbeing. They set goals in each of those areas and work with mentors to achieve those goals. The mentors are adults who have graduated or are in the process of going through the adult program with Momentum Education. Momentum Teen is a non-profit organization founded by Robin Lynn, a life coach and inspirational trainer, in 2008. Lynn passed away from pancreatic cancer in 2010, and since then there have been nine leadership teams. The program is free, and is open to all 13-17 year olds. The organization has served 500 kids in the basic class, and about 400 in the leadership class. No one is ever turned away. The classes are taught in Manhattan and Bayshore. Your room is like a canvas on which you can have fun with colors. Before putting the paintbrush to your canvas, create a color scheme. A large room with furnishings would do well to have a palette of five hues. Smaller spaces such as a foyer or a powder room can get away with two. Creating a color plan can be a daunting task, so it is helpful to see how others pull together combinations for the home. A good place to start is your neighborhood paint store. Every year, paint companies come out with ideas for the interiors. Their brochures present color stories for various rooms in the home. Each story has three key elements: the main color, an accent color, and the coordinating colors. Together, these ingredients create harmony and balance in the room.

Below are some tips on how to use everyday products you already have in your home to replace their toxic counterparts. • Soap residue can dull your dark clothes. Adding a cup of white distilled vinegar in the final rinse cuts down on residue, keeping your dark clothes looking their best. • Did you know that non-seasoned meat tenderizer can remove stubborn sweat stains from your clothing? Simply moisten the stain with warm water, then sprinkle with the meat tenderizer. Allow to sit for about an hour then launder as usual. • You don’t need expensive chemicals to clean your marbletopped furniture. Instead, make your own cleaner by adding three tablespoons of baking soda to one quart of warm water to clean delicate surfaces. • Got ants? Try setting any of the following items in a thin line at their point of entry: cayenne pepper, cinnamon or dried coffee grounds. You can also use a string soaked in lemon juice or citrus oil. AUTOCARE We’ve made it into Spring 2013 Yes, we’ve made it into spring time and what a relief. We’ve had to deal with nasty storms, cold and snow, and a blizzard we haven’t had for decades. It was a tough one, but it was winter, right? Well, now we can go outside and evaluate if we have any winter damage. FHA Guaranteed Loan Changes Federal Housing Administration (FHA) guaranteed home purchase loans initiated on or after April 1st will be affected by a higher upfront mortgage insurance premium and an increase to monthly mortgage insurance premiums (MIP). In addition, for loans assigned on or after June 3, 2013, the monthly MIP will no longer be removed after 5 years or when 22% equity is reached for the property. Instead the monthly MIP for purchases originated when over l0% is used as the down payment, will remain in effect for 11 years, and for the life of the loan for those purchases where the borrower has put down less than 10% at closing. The FHA does not issue loans, but rather offers insurance to FHA approved lenders. FHA insurance makes these loans more attractive to lenders because it protects the lender’s interest should the homeowner default. The FHA collects MIP to offset these losses. However, with the unforeseen amounts of foreclosures and short sales that flooded the market in recent years, the FHA fund has become severely depleted. As a result, the FHA has issued these revision policies, affecting the cancellation eligibility

and the mortgage insurances fees associated with FHA loans. Lower down payment and less stringent eligibility requirements have made FHA purchase loans very popular among first-time home buyers, and those with limited funds. As the real estate industry is beginning to slowly recover from the collapse of the real estate bubble; realtors, buyers, sellers and mortgage professionals alike, are left to wonder what the repercussions will be, to a still fragile industry. Despite these FHA changes, realtors are anticipating another busy Spring season. After the cold of winter, blooming shrubberies and trees offer a warm welcome to potential buyers, making it the ideal time to showcase a home. With rates still at historic lows, and home prices starting to pick up in many areas, don’t let the opportunity for home ownership pass you by. Small Claims Court

It’s inevitable…one day you will probably find yourself named as a plaintiff or defendant in Small Claims Court. In Small Claims Court, an individual can sue for up to $5,000 in money damages, but they cannot sue to compel someone to do something, or for pain and suffering. A corporation, partnership, or association can also commence an action in Small Claims Court, and this is called a Commercial Small Claims case. There are special rules that apply to Commercial Claims and Consumer Transactions, so make sure to read “Your Guide to Small Claims & Commercial Small Claims in New York City, Nassau County and Suffolk County” found at nycourts.gov/courts/nyc/civil/pdfs/smallclaims.pdf before you proceed with filing an action.

General Advice for your Small Claims Case • Every judge (or Arbitrator) has his/her own “style” when presiding over a case. In all likelihood, the judge will not be anything like Judge Judy, so be prepared to deal with any type of personality, from strict to informal or anything in between. • The plaintiff will present their case first. The defense will be heard afterwards (which may include a counterclaim). Do not interrupt any party (especially the judge) when they are speaking, and be respectful of all parties and court personnel. Take notes while the opposing party is speaking because you will have the opportunity to explain or refute their statements. • Remember that you are telling a story so give sufficient relevant details of your claim or defense. Do not give extraneous facts or information. Focus on the issue(s) only.

• Conduct some research on the Internet to determine what the “elements” of your cause of action are. For example, what you must prove in order to prevail. • Bring original documents to court and at least one copy (preferably two) of all documents. Clip the documents together, put a tab on each document, and add an index (cover sheet) that identifies every document you will be presenting. The judge will appreciate the organization. • Try to anticipate what the opposing party will be saying in/ bringing to court and prepare responses, if possible. • Prepare, prepare, prepare. Review what you are going to say in court, and the documents you intend to present before your court date.

A Yearly Insurance Reveiw On October 29th, 2012 New York and the Tri-State area was hit with the ‘Perfect Storm’, Hurricane Sandy. Insurance carriers were on alert and ready to handle the claims that would result from this severe storm. Thankfully, there are 35 million individuals who care about making the problem more manageable with a FREE app called Waze. Waze provides REAL-TIME traffic information through the contribution of others. Their tagline is “Outsmarting Traffic, Together.” And, it can save you time getting to your destination. The Waze app began as a mapping experiment by Ehud Shabtai in Israel in 2009. His girlfriend bought him a GPS for his birthday, and he wanted to see how he could improve upon the technology. Through crowd sourcing, in a social media environment, people began sharing information on how to get somewhere faster. “Waze gives you options to get around without traffic. All information is collected passively and anonymously. You can give as much or as little information as you want,” said Michal Habdank-Kolackowski, Waze Director of Communications.

The company made sure that the app does not distract the user while driving. Users listen to their route and can enable the voice activation feature to report something like an accident, hazard, red light camera or a traffic jam. Waze is currently being used across 20 different broadcast stations to deliver traffic information to their viewers. Michal reported that Tim Cook, the CEO of Apple, apologized for the sub-par map program they released, and suggested that people to use Waze in the meantime. This is a great app for individuals who share the same sentiment about traffic. “I need to know the way to go with the least amount of stops that will keep me moving because I am in a hurry,” said Michal. Wine Tasting 101 The whole wine tasting craze may seem overwhelming and off-putting to most people. Learning the basics of tasting, and the simplest of wine terms will give you confidence to taste in any social situation. There is a whole wonderful world of wine out there, and learning some simple tasting steps and wine terms will give you the self-assurance to step out of your comfort zone and discover wines from around the globe.

SEE:

Begin by pouring a small amount of wine into a large wine glass, hold the wine up to the light. You are doing this for two reasons; you are looking for any indication that the wine is flawed, and to give you a hint of what type of wine you will be drinking.

SWIRL:

Gently swirl the wine in the glass, either by

placing it on the table or at eye level. The legs or tears of the wine will give some foresight into the alcohol content and “body” of the wine. You are also releasing the bouquet or aroma of the wine.

3SMELL:

Two things that you do not want to smell are moldy aromas or a vinegar-like scent. These are indications of a flawed wine. Look for fresh fruit aromas, notes of floral, herbs and earth. These are the beginnings of building your wine tasting vocabulary.

There are four simple components in a wine to look for- a harmony between SWEET, ACIDITY, TANNINS and BODY. SWEET vs. DRY: If there is no indication of sweetness, the wine is considered dry. How sweet a wine will taste is indicated by the acidity and alcohol levels, the amount of tannin present, and whether the wine is still or sparkling. ACIDITY: Too much acidity, and a wine is tart and unpleasant, too little and the wine is flat and uninteresting. TANNINS: Are components that “dry the mouth” and gives structure to red wines. BODY: The impression of weight or fullness on the palate is the body of the wine. Full-bodied describes a wine with fullness of flavor in the mouth, light-bodied means the opposite. Take every opportunity offered and taste, taste, taste. There are wonderful wine bars all over Long Island that offer flights (samples) of a variety of wines. Many of our wine shops and liquor stores offer free weekly tastings. There are more than forty wineries on the east end of Long Island with tastings and tours available at most. The majority of restaurants now offer a selection of wines by the glass, that you can try without committing to a full bottle. Home wine tasting parties are becoming popular too. InTheKitchen Spring Tastes So Good! N.Y. Shell Steak with Shrimp Wrapped In Prosciutto

Spring is just around the corner, and that means more time to grill and spend time with family and friends. Always remember that the one thing everyone on the planet has in common, is we all need to eat. This dish was inspired from living and cooking in Colorado as well as South Carolina. I love to combine different varieties of meat and seafood to produce these Surf & Turf dishes for Gem Magazine.

Mushroom Lemon Couscous

2 oz Extra Virgin Olive Oil 4 oz Mushroom, Chopped 1- Lemon 1- Garlic Clove 1 Cup Couscous 1 Cup Chicken Stock 1/2 Cup White Wine 1/2 Cup Water

What You Will Need!

16 oz N.Y. Shell Steak to be featured on QVC Chef Eddie G’s Spices Cooked Medium Rare 3 - Thin Sliced Prosciutto 3 - Shrimp, cleaned, peeled deveined Wrap prosciutto around shrimp, and grill until shrimp is white and cooked through.

In a medium sautĂŠ pan, heat oil and add garlic, and mushrooms. As mushrooms start to soften, add couscous and let absorb some flavor, about a minute, then add chicken stock, wine and water and allow to cook off all moisture, until the couscous becomes cooked to desired softness. Riverhead’s Revival of The Suffolk Theatre

If you’ve ever watched the 1939 classic film, “The Wizard of Oz”, you’ll recall the famous scene when Judy Garland closes her eyes and says to herself, “We’re not in Kansas anymore,” and everything turns into Technicolor from black and white. Well, that is how I felt when I walked up to a theater reminiscent of old world Hollywood in beautiful Riverhead, Long Island. All at once, it was no longer a time of IPhone and e-mails. Instead, the street was paved with vintage cars and modern day people mirroring the fashions of Mary Pickford and Fred Astaire. 2013? No…it was Saturday March 2nd, 1933 and I was about to attend the party of the year, a Grand Opening Gala. Long Island resident Erminia Gigante arrived to the theater in true 1930’s style with her sister and a friend. Gigante said, “I was honored to receive an invitation to the grand re-opening of the theater. Everything about the 1930’s was glamorous. My mother was married in 1935 and we grew up with such wonderful stories from her era.” From top hats and Spats to feathered boas and faux French cigarettes, hundreds of guests gathered through the doors to show their support and enthusiasm for the revival of the Suffolk Theater. The “Back to the 30’s” cocktail party featured Grammy-Winning Vince Giordano and The Night Hawks playing tunes such as Gershwin’s “I’ve Got Rhythm” and the famous opening song from the film Gold Diggers of 1933, “We’re in the Money.” Thank you, Bob and Dianne Castaldi, for opening the doors to the Suffolk Theater and sharing a piece of history with this generation. I can’t wait to dress up and attend this movie palace again and again.
