With more than 15 years in the camp industry, Reid Nickerson knows that food is at the heart of the camper experience. As Food Services Manager at Camp Squeah, he ensures that every meal is nutritious, high-quality, and inclusive of various dietary needs.
His experience highlights both the challenges and opportunities in camp food service, and how Foodbuy’s support helps camps deliver meals that make a lasting impression.
“The kitchen and dining hall are the heart of camp,” Reid shared. “If we serve poor-quality food, that’s what campers will remember the most.” A great camp experience isn’t just about activities, it’s about creating a welcoming environment where every detail, including food, plays a role.
Nutritious, high-quality meals bring people together and improve the overall camp experience. This is where Foodbuy comes in, providing access to premium ingredients, costsaving programs, and trusted supplier partnerships to help camps serve meals that leave a lasting, positive impression.
Dietary accommodation is one of the top concerns in the camp industry. Many campers face dietary restrictions that can make mealtimes stressful. Reid and his team work hard to ensure inclusivity by offering equivalent meals that allow campers with dietary restrictions to eat alongside their peers without feeling excluded. With Foodbuy’s support, camps can access allergen-friendly and specialty food products while keeping costs manageable. Over the years, advancements in food options have significantly improved the ability to meet diverse dietary needs, making it easier than ever to provide inclusive meal options.
savings into a real investment opportunity for our camp.” This tangible benefit allows camps to reinvest in operations while keeping costs under control. Many camp operators don’t always see the immediate impact of cost-saving programs, but being able to put those savings directly back into the camp’s infrastructure ensures long-term success.
Beyond the kitchen, social media has become a powerful tool for attracting new campers and keeping families engaged. Reid emphasized the importance of maintaining an active online presence, noting that parents and campers look for regular updates, photos, and content that showcase the camp experience. A strong social media strategy helps build trust, reinforce the camp’s values, and keep enrollment strong year after year. Many camps have started to invest more in digital marketing to ensure they remain competitive in an increasingly connected world.
Foodbuy helps camps stay competitive and efficient, so they can focus on creating the best experience for campers. Whether it’s reducing costs, improving food quality, or ensuring dietary inclusivity, Foodbuy provides the tools and resources needed to optimize camp food programs.

Efficiency is key in camp kitchens, where teams must work seamlessly to keep meals running smoothly. Foodbuy’s food programs help reduce prep time while maintaining meal quality. Reid also emphasized the impact of Foodbuy’s rebate programs, stating, “We used our rebate cheques to replace old kitchen equipment, turning an intangible
Group purchasing organizations (GPOs) are not something that most people are familiar with unless you’ve worked in purchasing or if you’re a GM, chef, or seasoned camp manager. However, the GPO business model has been around for decades, saving operators money. Let’s look at Foodbuy, Canada’s leading foodservice and hospitality GPO.
If you’ve shopped at Costco you understand the GPO concept at the retail level. Costco buys massive volumes and its manufacturing partners offer a discounted selling price in return for high sales volume. Costco passes along that savings to their members.
That’s how it works in the Business to Business (B2B) sector as well, except on a much larger scale. Foodbuy is North America’s largest Group Purchasing Organization (GPO) and partners with over 450 suppliers with contracted purchasing agreements on over 36,000 items in Canada alone. When the purchasing volume of all of Foodbuy’s Members is combined, manufacturers are prepared to provide price discounts or rebates, in return for that volume. That is where Foodbuy Members benefit, by receiving price discounts or earning rebates on any item that Foodbuy has contracts with the manufacturers on.
It makes sense to work with a GPO for many reasons, which is why it’s such a prevalent practice across so many businesses. It’s a time saver, a cost reducer, and a support for those Members looking for help with their purchasing requirements. This is especially applicable for the Camp sector where timelines are compressed and part time buyers may not have advanced procurement skills. Foodbuy is your go-to expert for purchasing. And, it is free to join as Foodbuy gets paid by the manufacturers for bringing them added sales volume.
Foodbuy works with camps across Canada, and our dedicated account team has the knowledge and expertise to help camps save money on purchases, select the items that will optimize their purchasing and save time sourcing needed items.

How Foodbuy helped a camp realize savings and earn rebates on purchases while maintaining food quality and convenience
Situation / Challenge:
A small, overnight, not-for-profit summer camp engaged with Foodbuy for the first time, to prepare for the upcoming camp season.
This small summer camp, which welcomes approximately 60-100 campers per week, and spends approximately $56,000 with GFS on food, was feeling the pinch from rising food and operating costs.
As a Canadian Camping Association (CCA) member this camp became aware of the Foodbuy program through the CCA. It was the appeal of earning rebates on purchases for their camp, and the fact that Foodbuy supports the CCA and provincial camping associations, that drew them to Foodbuy.
Spend Summary shared with Foodbuy: The camp provided the food ordering summary for their last summer’s food purchases to Foodbuy.
Evaluate spend against Foodbuy contracts: Foodbuy evaluated the camp’s purchases against Foodbuy’s contracted pricing programs. The evaluation and recommendations were presented. The total savings and rebates available were outlined if the camp were to make some adjustments to their current purchasing patterns.
Implementation meeting: The Camp and Foodbuy representatives met to review the opportunities and discuss the optimization and conversion support Foodbuy would provide.
The Result:
$1,100+ in savings and rebates available without adjusting suppliers and spending patterns.
An additional $1,000+ in savings and rebates were available to the camp by switching like-for-like products and suppliers. The camp joined the Foodbuy program for the 2025 camp season, anticipating a minimum $2,200 in savings on their food purchases through GFS, while continuing to offer the same food quality to their campers.

Camp Directors: It’s time to Embrace Change and Make Every Dollar Count
The world is changing faster than ever. If you’re still clinging to the phrase, “That’s how we’ve always done it,” it’s time for a rethink. Matt Wilfrid, Executive Director of the Canadian Camps Association (CCA), recently shared powerful insights: adaptability is key to survival and success.
Are your programs and food services reflecting changing family needs? Are you proactively addressing dietary restrictions or stuck in a “take it or leave it” mindset?
Wilfrid emphasized that simply being welcoming isn’t enough. Camps must be genuinely inclusive, ensuring every camper feels seen, heard, and that their individual needs will be met. Today’s parents, particularly millennials, are more discerning and less comfortable with traditional practices like sleepovers. Camp operators need to build trust proactively, transparently, and responsively. Communication is paramount—engage early, listen, and demonstrate your commitment to safety and well-being.
Knowing who to trust also matters. Leveraging vetted sources offered by national and provincial associations ensures you get the best value.
“Trusted partner, Foodbuy, supports our industry through their support of the CCA and Provincial Camping Associations (PCAs), and supports camps by delivering industry-leading savings and rebate buying programs,” states Wilfrid.“The CCA values Foodbuy as a long-standing partner as they go beyond just offering rebates to camps—they also understand and support the wider scope of camping as a movement.
Wilfrid highlighted the CCA’s advocacy of the summer camp experience to the federal government. The CCA stresses camps aren’t just fun and games. Research shows that camps foster positive change in areas like emotional intelligence, self-confidence and social integration*. The CCA works to demonstrate that camps transform lives, providing safe communities for developing essential skills and connections. Advocacy efforts include pre-budget government statements requesting support for staffing, international staff pathways, and tax breaks for equitable camp access.
Camp is about campfires, friendships, and personal growth away from everyday life. In today’s digital world, balancing technology’s benefits with human connection and nature is vital. Camp uniquely allows campers to disconnect— away from screens and pressures—fostering deeper connections, emotional intelligence, and appreciation of nature. Though camp’s magic lies in tech-free experiences, technology can enhance camp operations: by streamlining tasks such as online registration, keeping digital health records, and making communications more efficient. Additionally AI tools and Foodbuy buying programs help camp operators save valuable time.
Managing food budgets can be daunting. Foodbuy simplifies procurement, saving camps money and time. Wilfrid, who experienced how easy it was to sign-up to become a free Foodbuy member, emphasized its efficiency. Through Foodbuy, camps have access to pre-negotiated supplier contracts, providing the best value for what you’re buying - saving you money and timefreeing you to focus on delivering a fantastic camp experience.

Unlike traditional foodservice operations, Camp Nakamun serves a wide range of guests, from young children to adult retreat groups, adapting menus to meet different ages, dietary needs, and cultural preferences. Yet one thing remains constant, the vital role foodservice plays in shaping the camper experience. Whether it’s serving nutritious meals to young campers, accommodating dietary restrictions, or ensuring operational efficiency year-round, the challenges are unique and ever evolving. Kerri Stennes, Food Services Manager at Camp Nakamun, shares insights into how camps manage food operations, navigate rising costs, and leverage Foodbuy Canada’s resources to enhance their programs.
“Our kitchen serves different groups every week, and we have to adapt constantly,” Kerri explains. “For example, a men’s retreat may have very different preferences than a youth camp. We also make allergy accommodations a top priority to ensure every guest is safe.”
To ensure an inclusive dining experience, Camp Nakamun has implemented designated allergyfriendly serving areas and a cafeteria-style system that allows guests to customize their meals. “We never want a child to feel excluded because of an allergy. We do everything possible to provide the same quality of food for everyone,” Kerri adds.
With food prices continuing to rise, camps face mounting financial pressures. As a non-profit organization, Camp Nakamun must balance providing high-quality meals with maintaining a budget. “This is where Foodbuy has been invaluable,” Kerri shares. “The rebate programs give us a reliable way to save money, which we can then reinvest in our camp. Every dollar saved in the kitchen helps improve other areas, whether it’s maintenance, summer programming, or guest services.” Foodbuy’s resources extend beyond cost savings. The annual Camp Guide provides menu ideas and purchasing insights tailored to the unique needs of camps. “I look forward to
receiving the guide every year,” says Kerri. “It’s clear that Foodbuy cares about supporting camps beyond just rebates.”
One noticeable trend in camp dining is the shift in food preferences among younger generations.
“Kids today are much more selective with their food,” Kerri notes. “Dishes like lasagna, which were once a treat, are now less popular because they mix too many ingredients. We’ve had to adjust our approach, offering more build-yourown options to give campers control over their meals.”
Despite these changes, one thing remains constant: the importance of food in the overall camp experience.
“Food brings people together,” says Kerri. “It’s one of the key factors that determines whether campers want to return. great meals create great memories.”
For camps looking to enhance their food programs while maintaining financial stability, Foodbuy Canada offers tailored solutions, supplier partnerships, and rebate programs that make a tangible impact. “Having access to Foodbuy’s resources gives us peace of mind,” Kerri concludes. “We know we’re getting quality ingredients at the best price, allowing us to focus on what really matters, creating an unforgettable camp experience for every guest.”

What trends are shaping the camp experience?
How are camps tackling rising costs? Sharon Fraess, Administrator of Birch Bay Ranch, recently shared her insights on what the camp industry can expect in the 2025 season.
“Enthusiasm from campers and staff continues to increase each year,” Fraess observes. Birch Bay Ranch is on track to reach full capacity again this season, welcoming campers and rental groups. She notes that new cabins, funded by a CFEP provincial grant, will soon provide significant upgrades to Birch Bay Ranch facilities, enhancing the overall experience for campers.
Sharon Fraess, Administrator of Birch Bay Ranch
But we asked about challenges facing camps today? Fraess highlights ongoing issues such as rising costs particularly utility, insurance, and food costs - which require camps to be more resourceful and budget-conscious. She explains how technology, especially AI, has started to play a critical role in easing administrative burdens. “Using AI allows us to spend more time with campers and less time on paperwork,” she says.
Family-focused programs are another notable trend. Fraess points out that more camps are introducing mother/daughter, father/son, and full-family retreats to meet evolving interests.
Alongside these positive developments, camps must also adapt to increasing mental health concerns among both campers and staff that are affecting how camps operate. “It’s vital that we ensure our camps remain a safe space where everyone feels supported.” Fraess stresses.
Additionally, accessibility challenges persist. Many camps were built decades ago and lack the necessary infrastructure to accommodate campers with special needs. “Camps need to consider how they can better serve all participants,” Fraess notes. “This may include infrastructure upgrades to facilities as well as proper training for staff and volunteers.”
Cost control remains top of mind for camps, leading many to explore creative solutions like engaging more volunteers to reduce payroll costs, and collaborating with procurement organizations such as Foodbuy to
increase purchasing power.
“Our camp has leveraged Foodbuy’s extensive supplier contracts to secure better pricing on food and other supplies. Additionally, Foodbuy provides access to other non-food cost-saving products and services. Foodbuy has been a game-changer for us,” says Fraess. “Their support has helped us keep our food budget on track while still providing high-quality meals.”
As Fraess notes, food quality and variety are critical aspects of the camper experience. While factors like weather are beyond control, serving high-quality meals ensures that campers are well-nourished and engaged.
“We can’t control the weather, but we can control the quality of food we serve,” Fraess emphasizes. “Well-fed, satisfied campers are much more likely to enjoy camp activities and feel at home. There was a time when camp food had a bad reputation, but today, it’s some of the best food around.”
Finally, Fraess underscores the importance of strategic partnerships. Connections with organizations like CCI/Canada have provided invaluable resources, encouragement, and networking opportunities. While partnership with Foodbuy has improved their purchasing power and helped maintain a balanced food budget while offering access to new recipes and product recommendations. “These partnerships make a real difference and allow us to provide the best possible experience for our campers and keep our operations running smoothly.”

As 2025 continues to unfold, businesses worldwide are grappling with the ongoing effects of climate change and rising living costs. McCain, a global leader in frozen food manufacturing, recognizes the pivotal role it plays in strengthening food and agriculture systems. Despite the global difficulties, McCain remains steadfast in its commitment to social and environmental responsibility.
One of McCain’s proudest achievements is its focus on working alongside farmers to trial and adopt regenerative agricultural practices. To date, 98% of McCain’s North American farming partners have been onboarded to the company’s Regenerative Agriculture Framework, a guide for farmers to support their progression toward a more regenerative model. Notably, 13% of McCain’s North American farming partners are already engaging in practices that help build on-farm resilience, contributing to a smarter, more sustainable approach to agriculture. The company’s sustainability strategy extends beyond farm-level improvements. Audrey Leduc, Director North America Planet-Friendly Practices Explains, “Our products are highly dependent on the natural world around us, and as a global business it is our responsibility to help address climate change. We do this by striving to use fewer natural resources and being efficient in our use of energy and water, while reducing our waste.” Since 2017, McCain in North America has achieved a 6.5% absolute reduction in its Scope 1 and 2 emissions. Additionally, 25% of its electrical energy consumption came from renewable electricity sources.
Alongside its environmental efforts, McCain is on a journey to deliver Good Food — food that’s simple, responsible, and meets the needs of increasingly health and environment-conscious consumers. The company’s
acquisition of the vegetable-forward Strong Roots brand is a significant move toward offering healthier, plant-based food options. “McCain has made impressive strides in reducing sodium content across its product lineup. The McCain Menu Signatures Jumbo Spicy Crinkle Cut Fries in Canada Foodservice now feature a 25% reduction in sodium,” states Stephanie Holodinsky, Senior Director of Global Scientific and Regulatory “underscoring McCain’s commitment to offering consumers healthier choices without compromising on taste.”
While McCain celebrates its achievements, the company is also aware of areas that require further attention. The company remains committed to sourcing renewable energy and expanding its own renewable energy sources, a key part of McCain’s energy transition strategy. They are also looking to continue addressing Scope 3 emissions which remains a significant challenge.
Another area of focus for McCain is the sourcing of palm oil. In line with its sustainability goals, McCain has reassessed its palm oil strategy, ensuring that it strikes a balance between environmental responsibility and the livelihoods of farming communities.
McCain is committed to delivering tangible, sustainable change through innovation, collaboration, and resilience. While there is more work to be done, McCain’s commitment to addressing climate change, promoting healthier food options, and supporting local communities reflects a strong dedication to making a positive impact on the
