Gut Friendly Wraps with Spiced Sesame Miso Dressing

makes: 2 | time: 30 mins

Ingredients

• 8-10 Roman lettuce leaves, bottoms trimmed

• 4 tbsp beetroot hummus

• 1 carrot, grated or julienne

• 1 cucumber, de-seeded and grated or julienne

• 1/2 avocado, sliced

• 1/2 cup shredded red cabbage or kimchi

• 1/2 cup alfalfa or sprouts

Dressing

• 1 tbsp white miso paste

• 1 tbsp chilli paste

• 2 tbsp rice wine vinegar

• 2 tbsp mirin

• 1 tbsp coconut aminos

• 1 tbsp hot toasted sesame seeds

Method

1. In a small pan, add the sesame seeds. Cook on medium low until golden (1-2 minutes), continuously moving the pan to avoid burning.

2. In a jug, add the miso & chilli paste. Add the vinegar, mirin, coconut aminos & lastly the hot toasted sesame seeds (we want the sizzling sound). Using a whisk, emulsify until smooth.

3. Lay the lettuce leaves down, alternating top & tail, on flat surface with a large sheet of parchment paper underneath.

4. Layer all ingredients in the centre of the wrap. Roll the larger flaps over to form a tight burrito (based on the shape of the lettuce, the ends close).

5. Cut in half, serve with the dressing & enjoy.
