Non-Vintage Cava Brut Nature Spain
Instead of representing a single year’s harvest, our Creció Brut Nature is a skillful blend of wines from multiple vintages. Non-vintage wines are common in sparkling winemaking, admired for their ability to uphold a consistent house style and capitalize on the unique qualities of numerous growing seasons. Cool-weather years create the crave-able freshness we love about cava, while warmer vintages bring juicy fruit flavors to life. Combining these wines allows our cava to capture the beauty of multiple Spanish summers in a single glass.
Unlike most regional designations, the Cava DO is not a singular stretch of land. Multiple small pockets throughout Spain can label their sparkling wines as cava as long as they follow the correct designations. That said, most cava comes from its birthplace, Penedés, in Spain’s northeast corner. Here, local winemaker José Raventós produced the first cava wine in 1872 after a trip to France inspired him to reimagine Champagne’s traditional sparkling wine method using Spain’s indigenous grape varieties.
Our Creciò Brut Nature Cava is dainty and elegant, showcasing the freshest style of this famous Spanish sparkler. Above the glass, energetic bubbles burst, releasing a bouquet of sweetly scented honeysuckle and white flowers. The palate is smooth, graceful and bright, with creamy textures joined by subtle layers of honeydew melon and cantaloupe. Each sip concludes with a crisp, dry finish, leaving your palate feeling refreshed and ready for another taste.

Our light and crisp cava is food-friendly and versatile. The best pairings will highlight its fruit flavors and harmonize with its refreshing textures. Serve it alongside salty oysters or sushi, or create a signature Spanish pairing with seafood paella. Raw vegetables and fruits will complement the wine’s sense of freshness. Top them off with crumbly or creamy cheeses like brie, feta, or goat cheese to give our cava’s lively acidity something to slice through and create an enjoyable palate-cleansing sensation.

Our cava features Spain’s native grapes—Macabeo, Xarel-lo and Parellada. Following the traditional method, it undergoes a second fermentation inside the bottle to create delightful bubbles, followed by a lengthy aging process. To craft cava’s Brut Nature style, winemakers forgo the final dosage, an optional step where adding wine and natural sugar softens acidity and emphasizes fruitiness. Without it, these styles are exceptionally crisp and dry, with an elegant balance of fruit flavors and savory characteristics.
