Last December, Nomadic Journey and Spirit of Places brought Marina Abramović’s extraordinary artistry to the Faena Art Project Room, celebrating over four decades of groundbreaking work. Campo, Casa Faena’s new sustainabilityfocused restaurant, is led by talented Executive Chef Antonio Maldonado. Serving New American menu cuisine that’s wholesome, nourishing, and flavorful, Chef Maldonado draws on family recipes from his native Mexico as well as global influences informed by his travels. We sat down with the chef to discuss what inspires his cooking and must-try items on the menu.
Tell us a bit about yourself.
Originally from Mexico, I honed my culinary skills at one of the country’s top culinary schools before building a diverse career spanning five-star hotels and acclaimed restaurants worldwide. My experience includes roles at Four Seasons Beverly Hills’ Culina, Scottsdale’s Michelinacclaimed restaurants, St. Regis Bal Harbour, and The Surf Club’s celebrated Le Sirenuse. I’ve also led openings like Sugar at EAST Miami and Gitano across Tulum, New York, Miami, and Dubai. Over 22 years, I’ve developed expertise in Italian, Mediterranean, Asian, American, and Mexican cuisines, blending global flavors into my culinary vision.
What inspires you as a chef?
For me, creating memorable dining experiences transcends mere sustenance. I aim to transport guests beyond their daily routines through dishes that evoke cherished memories and emotional connections. A commitment to fresh ingredients, delicious flavors, great service, inspiration, creativity and passion are fundamentals in my approach to cooking. I, myself, work out a lot and eat a healthy diet, so the recipes at Campo reflect my personal dedication to sustainability and wellness. We source premium ingredients from select purveyors – Creekstone Farms’ prime ribeye, Snake River Farms’ Wagyu beef, and organic chicken from Pennsylvania– while also maintaining an on-site garden for microgreens. I have a high bar for quality and a commitment to working with farms that treat animals humanely and practice regenerative agriculture.
What are some signature dishes on the menu that diners can’t miss?
Our brunch menu features a refined version of my childhood creation—the “burger nut”— alongside fresh Florida mozzarella stracciatella served with housemade focaccia. The Robatas are a crowd favorite like the Key West Shrimp with adobo and yuzu kosho, the Long Island squid with Salsa Macha, and Organic Chicken with Lemongrass, Sesame, and Green Chili. Each one has their own personality of flavor. Diners love our avocado salad, which is a mix of lime, Thai chili, jicama, Green Papaya, Tomato, Cilantro and Mint. I draw on culinary influences from Asia and Latin America, which you can taste in the Fried Rice (which is not your typical fried rice), Ramen, Sushi, Ceviche’s and Tlacoyo. Dishes are clean, light and packed with flavor. I also have a lot of fun with presentations.
What is there to drink?
Campo’s beverage program balances wellness with indulgence. The juice menu has nutrient-rich blends like the All-Green juice, with kale and celery, and the turmeric-infused Stay Alive. Postworkout options include proteinrich shakes and fresh coconut water. Campo’s cocktail selection emphasizes seasonal ingredients and prosecco-based drinks, from the elderflower-accented Ginnie to tropical variations on mimosas. Two types of sangrias, a blood orange-based red and a lighter white version, are delicious, and then there’s the Morning After, Campo’s take on a Bloody Mary.

At Pao, renowned chef Paul Qui and his team craft dishes that merge Filipino traditions with international influences. Each dish is a reflection of Pao’s culinary philosophy, combining bold flavors, complex textures, and artful presentations.
This season, Pao’s menu has taken an exciting turn with the addition of wild-caught and sustainably raised Bluefin Tuna sourced from Baja California through True World. The chefs at Pao are putting their own spin on the high-grade ingredient by aging it for a week to enhance its natural flavor, texture and shelf life.
Chef de Cuisine Paulina Ornelas explained, “By aging it, we enhance the umami of the meat. The aging process breaks down the proteins, releasing amino acids, which contributes to a deeper, more complex taste.”
Each part of the fish has a
different flavor profile. The akami is the leanest part of the tuna and has a mild and rich flavor. The chu-toro cut is half lean and half fat, while O-toro is the fatty belly of the fish. “After aging O-toro, the moisture evaporates, and the fish’s natural oils and flavors become more concentrated. It tastes sweeter and has a melt-inyour-mouth texture,” she added.
Pao’s new tuna offerings feature various preparations throughout the menu, from sashimi and nigiri to shiso tacos and the restaurant’s signature Maguro Crudo. One standout weekend special popular with diners has
been the tuna steak. “We keep changing the cooking method and presentation, so our guests experience the versatility and creativity of Pao’s kitchen.”
Chef Ornelas notes that Pao’s menu reflects layers of flavors, textures, and techniques of its Filipino roots, but also the diverse nationalities of the culinary team, which range from Latin American to Japanese. “We all interpret the recipes through our own cultural lens, creating a diversity of flavor and preparation that carries with it distinct international references,” she said. “It’s what makes the dishes at Pao so nuanced and delicious.”
Spring is a time of renewal and creativity in the kitchen. As such, El Secreto has added exciting new dishes to the omakase menu that spotlight the season’s vibrancy and Chef Erik Melendez’s dedication to craftsmanship.
“Every spring, we pickle our own young ginger that’s sourced directly from Fuji, Japan,” said Melendez. “This house-made pickled ginger is a rarity in Miami. It’s an honor to share this traditional process with our guests, offering a taste of Japan that’s both authentic and personal.”
The spring menu features ingredients that celebrate the season’s bounty including morel mushrooms, rhubarb, and wild ramps. “Wild ramps resemble scallions but have a bold garlic flavor,” he explained. “We process them by making pesto with the leaves and pickling the stems. It’s an umami-packed experience.”
In addition, a dry-aged fish program will be added to the omakase experience. “One highlight will be a 30-day aged tuna, which we’ll serve while educating our guests about the intricate process and flavor transformation that comes with dry aging,” Melendez said.
For Valentine’s Day weekend, El Secreto is introducing an exclusive menu inspired by romance and innovation. Sous Chef Carlos Islava from Mexico City will prepare a Japanese-inspired take on chocolate and strawberries in a savory form. This dish will pair his signature mole with Japanese strawberries and scallops sourced from Hokkaido—a perfect fusion of flavors and cultures.

There’s a house I always regret not buying 20 years ago. My accountant at the time wouldn’t let me. He also used to call me “kid”, which should have been a red flag. I eventually fired him and bought a house I love.

Reviving the art burlesque.
What is it that you most dislike? Cruelty and abandonment of animals.
If you could choose what to come back as, what would it be?
A very well-loved cat… perhaps a fancy show cat.
What is your most treasured possession?
My maximalist vintage home… I love thinking of its history, and I am grateful to live in a place that’s distinctively mine.
What do you regard as the lowest depth of misery?
Losing one’s child would be the lowest depth of misery I can imagine.
Where would you like to live?
In a castle somewhere with many pets running around.
What is your most marked characteristic?
My red lipstick and black hairdo… my style.
What do you most value in your friends?
I value kindness and loyalty, and a wacky sense of humor.
Who are your favorite writers?
Mae West is my favorite writer. She wrote every single line she ever said on the silver screen, and her books about her life and her self-help books are zingers. She was the highest paid actor—- male or female—in the 1930s, and the biggest sex symbol in Hollywood at age 40.
Who are your heroes in real life?
Ferly Prado. She’s choreographer of my show in Las Vegas, and she’s also part of my show there, and here at Faena. I’ve honestly never met anyone like her…uplifting and inspiring, beloved by so many. She’s one of those people you just want to do better for. And she’s bombshell beautiful.
What is your greatest fear?
I don’t even like to put energy into writing my fears. I’m a bit superstitious in that way.
What is your motto?
You can be a juicy, ripe peach and there will still be someone who doesn’t like peaches.
