Known for his vibrant, text-based paintings that weave pop culture, nostalgia, and playful motifs, Mesler unveiled a sitespecific installation that took guests on a journey through identity, self-reflection, and humor. Adding to the gala’s visual spectacle, Faena Art presented an exclusive collaboration between Mesler and Hedley Studios, the artisans behind handcrafted, precisionscale, drivable models of the world’s most iconic luxury cars. Each museum-quality Hedley bears an official chassis plate from the original manufacturer and the signature of the artisan who created it. Instead of a traditional seated dinner, the evening unfolded as a culinary procession. It began with a masterful bluefin tuna carving by Chef Paul Qui, whose signature style blends Filipino heritage with Japanese, Spanish, and French influences. This was followed by towers of grilled meats and fire-roasted vegetables prepared by legendary Argentine chef Francis Mallmann, celebrated for his open-flame Asado-style cooking. Throughout the night, music, fashion, and performance art brought Mesler’s vivid aesthetic to life, culminating in a special live set by Faena’s music director, DJ Richie Hell and the one and only Rocky Lanes. Diners indulge in crudo specialties, innovative rice dishes, and meats seared tableside over Japanese binchotan charcoal, adding an element of Faena’s theatrics to the Pao dining experience.
Foodie website Eater praises Pao’s culinary offerings: “The East Side King fried chicken and unforgettable kinilaw—a Filipino-style ceviche preparation— represent Chef Qui’s ability to transform familiar concepts into revelatory culinary moments that linger in memory long after dinner concludes.”
However, it’s not Qui alone cooking up nuanced recipes packed with flavor. His kitchen is a collaboration of chefs from diverse backgrounds taking inspiration from one another. “We draw inspiration from our collective culinary roots from the asian flavors of the Philippines and Japan to the benchmark recipes of Spain and France,” said Chef de Cuisine Paulina Ornelas.
The newest dishes to arise from the kitchen coalition include Kare Kare featuring tiger prawns, almond Kare Kare, snowpea laves, salsa macha, and pickled shallots; Tuna Momo with Bluefin tuna, wakamomo, sanbaizu, negi, crispy quinoa and umami garlic; and grilled duck showcasing farm-sourced Maple Leaf duck breast, roasted celeriac puree, wild mushrooms, and duck adobo.
For beverage pairing, Pao’s restaurant manager Cristian Munarriz recommends pairing Kare Kare with our japanese koedo beer with a unique fragrant sweetness, the Momo with our rich and compex Dassai 24 Junmai Daijingo sake and the duck with our round Pinot Noir from Sonoma County 2022. He also suggests sampling Nine in the Afternoon, a rum and sake-based cocktail that blends honeydew cucumber cordial, which adds a refreshing, slightly vegetal base, St-Germain elderflower liqueur, a dash of lemon juice and fresh mint leaves. “The cocktail got its name from the Panic! at the Disco song, which was playing when we created the cocktail.”

The new daytime offerings showcase the chef’s commitment to responsibly sourced ingredients, with proteins and produce selected from premium farms. The menu’s standout is the chilaquiles—a traditional Mexican breakfast featuring crispy tortilla chips simmered in sauce and topped with eggs—which the chef playfully recommends as “the best thing to cure a hangover.” Diners can customize their experience by adding flank steak, chicken, or other proteins to make it a heartier dish.
Campo also introduced an array of grab-and-go options perfect for beachgoers, including inventive bagel creations like the flank steak option served with smoky chipotle sauce, tomato confit, and grilled onion. There’s also an array of salads with various protein choices, including shrimp, smoked salmon, chicken, and meat, as well as wraps that cater to vegans.
Dinner service offers creative plates, like the popular crispy chicken that can be reimagined as a trio of house-made bao buns served with pepita butter, a jicamacarrot salad, and cilantro sauce—a testament to the restaurant’s from-scratch kitchen philosophy. For intimate gatherings, Campo’s private dining room offers an “Elements of Life” tasting menu featuring six courses that incorporate natural elements in presentation, such as seaworn rocks adorned with delicious salmon tostadas. The beverage program complements the menu’s Mexican roots with an extensive selection of tequilas and mezcals alongside thoughtfully crafted cocktails and wines.

Lanes, who starred in Faena’s Allura Cabaret, continues to mesmerize theater guests with her powerful vocals and show-stopping costumes custommade by fashion designer Gustavo Casanovas. “Music has the power to unite us all,” Lanes says at the start of the show, whether that’s across eras or in-the-moment singing along with other guests. “We wanted to bring back the oldies that make you groove—those songs that have been remastered over and over because they’ve withstood the test of time,” said Lanes. choreography from groovy tap dancing to Studio 54 disco numbers. “I draw inspiration from artists like Sara Reich and Jabu Graybeal for their creativity and charisma,” noted Toro. Stockman and Dopzao infuse Quixotic’s signature cirque element with stunning aerial performances to “Summer Breeze” and “Ain’t No Sunshine.” The multi-talented Stockman also delights with a bubbly roller-skating act to a mashup of “Pump up the Jam” and “Ladies’ Night” from the horndriven funk band Kool & the Gang. The musicians are no less impressive. Emiliano Torres, on the trumpet, is a three-time Grammy winner from Argentina, while bass player Rafael Aldama, guitarist Alberto Torres and drummer Yissey Garcia are all classically trained musicians from Cuba. “I love working with them,” said Lanes. “You can give them a rock song and
tell them to change it to soul and put a little Latin flair on it, and they can do it at the drop of a dime.” With verve and style, the band jams together on songs like Wild Cherry’s “Play that Funky Music,” and Stevie Wonder’s “Higher Ground,” to the Beatles’ Abbey Road anthem “Come Together.” “My parents played this music at home when I was growing up,” said Garcia. “It brings back really fond memories.” The Tina Turner songs sprinkled throughout the show are a favorite of the band including “What’s Love Got To Do With It,” where the singers, dancers and musicians unite onstage in a highoctane swirl of chart-topping lyrics, glittering ensembles and music that rocks the entire theater. “The atmosphere of the show is like a big party,” added Garcia. “I think people in Miami really like that.”

A menu of delicious appetizers is great for snacking throughout the day, including crispy artichokes with sesame yogurt and sourdough breadcrumbs; prime rib empanadas with llajua sauce; and a vegan option of steamed veggie rice with sweet potato and broccoli.
Come golden hour, the energy shifts. On weekends from 4:00 pm to 7:00 pm, resident DJs set the mood as the bar transitions into a laidback sundowner haunt. The CopaCabana cocktail, a tropical indulgence of banana and apricot liqueur, coconut cream, allspice, and Bulleit Rye, is a guest favorite.
“People order it because it’s served in a Faena -branded coconut, but it’s the taste that makes them request another one,” said Rodriguez.
Inspired by the Paper Plane, a now-iconic whiskey cocktail crafted in 2008 by Sam Ross and Sasha Petraske as a summer sipper for The Violet Hour in Chicago, the Paper Fish takes flight at Pao with a Japanese-influenced twist and an environmental conscience. Master mixologists at Pao have reimagined the classic with a trinity of citrus juices—a radiant blend of lemon, orange, and distinctly floral yuzu—creating a bright, multidimensional flavor profile that mirrors Miami’s zesty tropicality. This isn’t just a drink, it’s a revelation (revelatio, if you will): A liquid meditation served in a coupe glass that urges you to pause, reflect, and drink with presence. The foundation of Suntory Whisky provides a sophisticated backbone, while equal parts Amaro Nonino and Aperol contribute bittersweet complexity. But Pao doesn’t stop at citrus. What truly distinguishes this cocktail, however, is the addition of Sakura Syrup, a delicate whisper of cherry blossom that threads through the drink like silk, and a couple of dashes of Fee Foam, adding a creamy lift that’s more cloud than cap. It’s shaken to a crystalline chill and served in a coupe—gracefully garnished with a golden paper fish origami clipped to the rim and a dehydrated citrus wheel that provides visual poetry while minimizing waste.
LOS FUEGOS BY FRANCIS MALLMANN
At Los Fuegos, breakfast is an art, lunch is fire, and dinner is a sensory stage show. For every meal, the restaurant’s openfire Argentine cooking pleases the palates of its discerning diners.
“What makes Los Fuegos truly extraordinary is our commitment to the ancient art of cooking with fire,” explained Yassine Belkady, the restaurant’s manager. “We use no electricity whatsoever—just fire, wood ovens, and tradition” Everything has that distinctive char, those bold, nearly burnt flavors that taste almost primal. “When you dine here, you can literally smell the wood and rosemary in the air,” he added.
The restaurant’s setting matches its culinary panache. By day, the veranda transforms into an airy ambience when its retractable roof opens to Miami’s brilliant skies. Guests enjoy lunch while overlooking the property’s stunning pool, creating what Belkady called “a completely different experience than any other hotel or restaurant in Miami.”
All-day dining is a specialty of Los Fuegos. “Breakfast here is actually a piece of art,” Belkady noted with pride. “Every dish arrives on gold-rimmed plates with exclusive designs. Our pancakes, for instance, aren’t the typical flat fare—we make them extremely fluffy, which creates a more elevated experience.” There’s also a menu
of cleansing juices made in-house every morning, along with immuneboosting ginger shots to recharge.
For meat lovers, there’s a succulent cut for every appetite starting with churrasco, a traditional Argentine cut, to New York strip steak and the cult-favorite ribeye. The lamb chops come with a pyramid of potatoes that Belkday described as “absolutely phenomenal.”
Los Fuegos’ menu also has plenty of thoughtful dishes for vegetarians and vegans. “Our tomato carpaccio gives you the sensation of eating beef carpaccio, but it’s completely vegetarian, finished with pistachio crumbles for texture and depth,” he explained. “For a heartier entrée, we offer a whole cauliflower slow-cooked in a wood-fire oven and served over crispy rice.”
The restaurant’s crown jewel is its Sunday asado—an Argentine take on brunch featuring acoustic music and a prix-fixe menu centered around shared platters of flame-grilled delights. “Our asado honors Patagonian traditions,” said Belkady. “We hang our meats at eight in the morning on an iron dome and slowly cook them
over wood and charcoal for four hours, marinating them alongside whole cabbages and pineapples to enhance the bold flavors.”
In the evening, Los Fuegos transmutes into an experience reminiscent of Miami’s Golden Age. The leopard-print dining room merges with the Living Room—a haunt Belkady considers “one of the best lounges America.” Each night features different live musical performances from mellow Monday ensembles to Tuesday’s Frank Sinatra tribute to Wednesday’s energetic Gypsy Kings-inspired sets. When it comes to weekends, Executive Chef Sebastian Benitez creates a total of eight new dishes every Friday and Saturday based on what market-fresh ingredients are accessible. “We have a lot of repeat guests, so we want to make sure they have variety to choose from when dining with us,” he said. For the cocktail specials, Faena mixologists get creative. Think of infusing mezcal with pineapples that have been slowly grilled for five hours over an open flame. “We want to create an experience so distinct that people want to return again and again,” said Belkady.
