DERECHOS DE LOS PASAJEROS Los pasajeros en vuelos nacionales tendrán los siguientes derechos:

Cancelación. En cancelación atribuible a la aerolínea el pasajero podrá solicitar a su elección: •Transporte sustituto en el primer vuelo disponible, y se darán alimentos, alojamiento y transporte terrestre desde y hacia el aeropuerto. Tendrá acceso a llamadas telefónicas y envío de correos electrónicos, y en función del tiempo de espera, a alimento y/o alojamiento*; o Boleto. El costo del boleto comprenderá todos los conceptos incluyendo impuestos. No formarán parte del costo del boleto los servicios provistos por un tercero no relacionados con el transporte aéreo.

Información y publicidad. Se deben informar y respetar las tarifas y sus restricciones. La información debe ser exacta, veraz y comprobable.

•El reintegro del costo del boleto o la proporción que corresponda a la parte no realizada del viaje e indemnización no inferior a 25% de la parte no realizada del viaje*; o •Transporte en fecha posterior al destino contratado e indemnización no inferior a 25% del precio del costo del boleto*.

Aterrizaje en lugar distinto. Trasladar al pasajero a su destino en los medios de transporte más rápidos disponibles.

Pasajeros con discapacidad. Podrán transportar instrumentos personales asociados a su condición sin cargo adicional.

Devolución del costo del boleto. Se puede solicitar si se realiza dentro de las 24 horas siguientes a la compra sin cargo alguno.*

Infantes menores de dos años. El pasajero mayor de edad podrá transportar a un infante sin pago de tarifa, incluyendo una carriola. Se expedirá boleto y pase de abordar al infante, sin derecho a asiento ni franquicia de equipaje.

Equipaje. Transportar una pieza de equipaje de 25 kg sin costo y dos piezas de equipaje de mano para vuelos nacionales que en su conjunto no excedan 10 kg y sus dimensiones no sean mayores a 55 cm de largo, 40 cm de ancho y 25 cm de alto. En caso de destrucción o avería de equipaje de mano, se indemnizará con hasta 80 UMAs, y por la pérdida o avería del facturado, con hasta 150 UMAs.

Cambios de itinerario. Se informará al pasajero a través de llamadas telefónicas, mensajes de texto o correo electrónico, cualquier cambio en la salida programada, tan pronto se tenga certeza de que esta es inevitable.

Segmentos de vuelo. En vuelos de ida y vuelta o con conexión, no se le negará el uso de los segmentos subsecuentes por no haber utilizado uno de los segmentos anteriores (siempre y cuando avise a la aerolínea dentro de las 24 horas posteriores a la hora programada del segmento no utilizado).

Retraso. En caso de retraso imputable a la aerolínea, aplicarán las políticas de compensación establecidas por la misma.*

Pago de indemnizaciones. Se realizarán dentro de los 10 días naturales siguientes a la reclamación, a excepción de alimentos y hospedaje.

Módulos de atención. Las aerolíneas tendrán un módulo de atención en las terminales donde operen.

Sobreventa. En caso de denegación de embarque por sobreventa, se solicitarán voluntarios que renuncien al embarque; pasajeros con discapacidad, adultos mayores, menores sin acompañante y mujeres embarazadas tendrán preferencia para abordar.

UN PASEO PRECIOSO Antes que tener el premio Nobel de Literatura, Isabel Allende quiere vivir su nuevo amor a los 77 años y seguir en el camino de la escritura.

el amor es la brújula que da dirección a su vida. Tiene 77 años y un nuevo matrimonio que quiere disfrutar en una casa pequeña y una vida privada. Isabel Allende no necesita premios, ni siquiera el Nobel de Literatura que tantos dicen que merece desde hace años. Más que reconocimientos o la aprobación de sus libros por parte de sus lectores y editores, lo que más desea la escritora latina más leída del mundo es tiempo para contar historias y disfrutar de su nuevo amor.

“Yo lo único que quiero es seguir trabajando en lo que hago, seguir haciendo lo que pueda desde mi Fundación y mantenerme sana para poder gozar de este amor nuevo. Tengo 77 años y la gente me

Y yo les digo: ‘Bueno, es igual que enamorarse a los 20, pero no hay tiempo que perder’”, dice Isabel, honesta hasta la médula, como en sus libros. “¿Cuántos años me quedan para poder gozar este amor o esta relación? Muy pocos, y el tiempo pasa volando. Vivo muy al día, muy consciente y muy agradecida de lo que tengo”.

un mundo en historias Pese a tener un resfriado, su voz se mantiene fina y melódica. Tiene ganas de hablar y yo de escucharla. Conseguir esta entrevista me tomó más de 10 años por su apretada agenda mezclada con una vida semejante a una montaña rusa. Me responde el teléfono desde California, donde vive como un árbol de muchas ramas pero de pocas raíces. “Mis raíces están en mis libros, en la memoria, en la gente que quiero, pero no en un lugar físico. Tengo un pie en California y un pie en Chile. Cuando me preguntan de dónde soy, digo que de Chile, pero la verdad es que casi no he vivido ahí”, dice quien ha encontrado historias habitando Chile, Perú, Líbano, España, Venezuela y Estados Unidos.

Entre Madrid y California escribió Paula, novela en la que relató el calvario de perder a su hija luego de que estuviera en coma, y cuyas ganancias se convirtieron en una Fundación en favor de los migrantes. De Chile le vino una combinación de la realidad con fantasía llamada La casa de los espíritus, en donde tomó a Tata y Memé, sus abuelos maternos, como inspiración.

Su transparencia le ha dado un público cautivo, 72 millones de libros vendidos y la traducción de sus obras a 42 idiomas. Pero ni ante esos números y reconocimiento siente presión por complacer a nadie. “Me siento muy honrada y muy feliz, pero no es una presión, mi vida no ha cambiado. Yo sigo escribiendo, trabajo como trabajaba antes, muchas horas

I reach her by phone in California, where she lives like a tree with many branches but few roots. “Let’s say I have no roots anywhere. My roots are in my books, my memory, in the people I love, but not in a physical place. I have one foot in California and one foot in Chile. When they ask me where I’m from, I say I’m from Chile, but the truth is that I have hardly lived there,” says the author, who has lived in and written stories about Chile, Peru, Lebanon, Spain, Venezuela and the United States.

Between Madrid and California she wrote Paula, a novel in which she recounted the ordeal of losing her daughter after she was in a coma; proceeds from that book funded her foundation, which supports immigrants.

Chile brought a combination of reality and fantasy called The House of Spirits, inspired by her maternal grandparents, Tata and Memé.

Her transparency has earned a captive audience: Her books have sold 72 million copies and been translated into 42 languages. But even with these numbers and recognition, she feels no pressure to please anyone. “I feel very honored and very happy, but it’s not a pressure, my life has not changed.

al día. No siento presión de los editores o de nadie, porque no me preocupa cómo va a ser recibido un libro, sino tratar de escribir una historia lo mejor posible. Eso es todo lo que tengo que hacer”, señala.

Pero, con tantos libros vendidos, ¿es el Nobel de Literatura un premio que le gustaría ver en su repisa?, le pregunto.

“No, lindo. Mira, yo no tengo ambiciones literarias, para mí esto no es una carrera, esto es un paseo precioso y cada libro es un goce, pero no estoy pensando en premios. En mi página web salen como 15 doctorados y no sé cuántos premios, eso no cambia la vida. Yo ya no estoy en edad de salir a pedir trabajo, entonces no importa tener todo eso en la biografía”, responde.

Incansable, el año pasado presentó su novela Largo pétalo de mar –la 25ª en su carrera– mientras pasaba por una serie de pérdidas. En los últimos dos años murieron Francisca Llona Barros, su madre, Ramón Hudiobro, su padrastro, y William Gordon, su exesposo y con quien estuvo casada 27 años.

Le digo que los diccionarios deberían de tener su foto para definir al ave Fénix, y explica que incluso desde las cenizas, uno puede volver a nacer. En julio de 2019 contrajo matrimonio con Roger Cukras en Washington, y reconoce, el amor juega un papel crucial en su vida. “Me enamoré por primera vez cuando tenía como siete años y desde entonces, siempre estoy enamorada… de diferentes personas, pero siempre enamorada”, revela con risa.

Isabel Allende admite que “la tribu” con la que soñaba no es la que tiene en sus manos, pero que son sus nietos, integrantes de la misma, quienes la ayudan a ver la vida bajo otro prisma.

“Me acabo de casar y mi marido tiene su familia, pero no hay una tribu como la que yo soñaba. Mis nietos me dicen que no me preocupe, que mi tribu son mis lectores”, dice Isabel y vuelve a sus páginas.

“But having sold so many books, is the Nobel Prize for Literature a prize that you would like to see on your shelf?” I ask.

“No, dear. Look, I have no literary ambitions; for me this is not a race. This is a beautiful walk and each book is a delight, but I’m not thinking about prizes. There are something like 15 honorary doctorates and I don’t know how many awards listed on my website, but that doesn’t change my life at all. I am no longer of an age to go out and ask for a job, so it doesn’t matter to have all that in the biography,” she replies.

Tireless, last year she published Largo Pétalo de Mar –her 25th novel– while going through a series of losses. Her mother and step-father, Francisca Llona Barros and Ramón Hudiobro, both died in the last two years, as did her ex-husband William Gordon, to whom she was married for 27 years.

I tell her that her photo should appear next to the dictionary definition of the phoenix, to illustrate how even from the ashes, one can be born again. In July 2019, she married Roger Cukras in Washington; love, she admits, plays a crucial role in her life. “I fell in love for the first time when I was about seven years old, I have always been in love ever since... with different people, but always in love,” she reveals with a laugh.

Isabel Allende admits that “the tribe” she always dreamed of is not the one she has in her hands, but rather her grandchildren, who help her see life through another prism. “I just got married, and my husband has his family, but there is no tribe like the one I dreamed of. My grandchildren tell me not to worry, that my readers are my tribe,” says Isabel. And with that, she returns to her pages.

En un paraíso tropical como Mayakoba, la alberca y la playa siempre llaman. Y pareciera que cuando el estudio Bando x Seidel Meersseman comenzó el proyecto de renovación de las suites de Rosewood, se propuso crear espacios que fueran igual de antojables que el entorno; sin hacerle competencia, sino todo lo contrario: rindiéndole honores. La naturaleza y la cultura de la región son la inspiración de cada detalle en las 129 suites que ahora presumen tonos más claros y luminosos (y por lo mismo, dan una sensación de mayor amplitud).

Para los muebles, el equipo creativo se basó en la arquitectura maya, dándole un twist moderno, mientras que para la decoración, tomaron todo tipo de creaciones locales, desde tejidos y bordados, hasta cerámicas, maderas y piezas de barro. Al trabajar las suites con vista a la playa utilizaron tonos cálidos, y para las que se ubican en la laguna, azules y verdes. El resultado: santuarios que guardan la magia de la Riviera Maya entre sus cuatro paredes, pero que siempre nos recuerdan que hay que a salir a explorarla.

Entre las suites destacan ocho creadas específicamente para quienes vienen a este rincón de la península en busca de una experiencia de relajación absoluta. Las wellness suites, ubicadas alrededor de Sense, a Rosewood Spa, tienen la intención de regalarle al huésped una estancia de transformación. Cada una presume una alberca de agua salada, una estación de snacks saludables, difusores de aceites esenciales (elaborados con las hierbas y plantas cosechadas aquí mismo, en el jardín La Ceiba) y lámparas de luz circadiana, que ayudan a mejorar el ciclo del sueño.

In a tropical paradise like Mayakoba, the pool and the beach always beckon. And it appears that when Bando x Seidel Meersseman studio began its renovation of the Rosewood suites, it set out to create spaces that were just as appealing as the surroundings; but instead of competing with the environment, they would honor it. The nature and culture of the region are the inspiration behind every detail in the hotel’s 129 suites, which now boast lighter and more luminous tones, making them feel more spacious.

For the furniture, the creative team looked to Mayan architecture, giving it a modern twist, while the decor features all manner of local creations, from fabrics and embroidery to ceramic, wood and clay pieces. Warm tones were used for the oceanview suites, and blues and greens for the lagoon-view rooms. The result: sanctuaries that channel the magic of the Riviera Maya within their four walls, while also reminding us to go out and explore.

Especially notable are the eight suites created specifically for those who come to this corner of the peninsula looking for total relaxation. The wellness suites, located near Sense, a Rosewood Spa, were designed to offer guests a transformative stay. Each boasts a saltwater pool, a healthy snack station, essential oil diffusers (with oils made from herbs and plants harvested from the on-site La Ceiba garden), and circadian light lamps to promote healthy sleep.

Los masajes, las cremas y el ejercicio nos llevan lejos, eso ya lo sabemos. Pero no hay bienestar si no cuidamos lo que comemos. Con esta filosofía, el chef Juan Pablo Loza, director de operaciones culinarias del hotel, se ha encargado de revolucionar la oferta gastronómica de cada centro de consumo. “En todos los menús pensamos en el bienestar de las personas y del planeta”, explica.

Entre sus prioridades más grandes está, precisamente, la sostenibilidad de los ingredientes. De una granja cercana obtiene productos como miel y huevos, e incluso ha llevado a huéspedes a conocerla. Y cuando se trata de pescado, Rosewood Mayakoba es el único hotel certificado por el Monterey Bay Aquarium gracias a su consumo responsable de productos del océano. “Queremos que lo que estés comiendo traiga buena intención”, explica.

Además de llevar la gastronomía del hotel hacia un presente más sano, Juan Pablo trae entre manos un proyecto que lo emociona mucho: la apertura del bar Zapote. Desarrollado de la mano con el equipo de Licorería Limantour y con el diseño a cargo de Estudio Atemporal, Zapote ocupará el espacio que pertenecía al lobby bar, y estará inspirado en una casa yucateca. Pero lo más importante, asegura Juan Pablo, será el servicio. “Estamos trabajando bajo el concepto in lakech, que significa yo soy tú y tú eres yo”, cuenta. “Es un toque distinto en el servicio, para que todos se sientan como en casa”.

Juan Pablo saca su iPad y me muestra unos renders para que pueda ver cómo se verá el espacio. Promete ser espectacular.

Pero estoy segura de que lo mejor será la atmósfera: where everybody knows your name.

Massages, face creams and exercise can only get us so far, but true wellness begins with what we eat. With this philosophy in mind, chef Juan Pablo Loza, the resort’s director of culinary operations, has been charged with revolutionizing the resort’s offerings. “We don’t offer wellness cuisine, because all of our menus take into account the well-being of people and the planet,” he explains. “If we eat well, then we serve better, we buy better,” he says.

Sustainability is, in fact, one of his top priorities when it comes to ingredients. He sources products like honey and eggs from a nearby farm, and has even taken guests to see it. And Rosewood Mayakoba is the only hotel whose seafood program is certified sustainable by the Monterey Bay Aquarium. “We want what you eat to be well-intentioned,” he explains.

In addition to making the hotel’s culinary options healthier, Juan Pablo is working on a project that really excites him: opening the Zapote bar. Developed with the team from Licorería Limantour and designed by Estudio Atemporal, Zapote will occupy the former lobby bar space, and will be inspired by a Yucatecan home. But the most important thing, Juan Pablo assures me, will be the service. “We are working under the concept of in lakech, which means ‘I am you and you are me,’” he says. “It’s a distinct touch in the service, to ensure that everyone feels at home.” Juan Pablo takes out his iPad and shows me some renderings so I can see what the space will be like. It promises to be spectacular. But I’m sure the best part will be the atmosphere: where everybody knows your name.

Dicen que no hay valiente sin miedo. Pocas cosas aterrorizan a un joven cocinero más que ver un restaurante vacío durante un año. Hoy, la historia es otra, pero Enrique Olvera recuerda esa pesadilla como unos años lindos que forjaron el carácter de Pujol, donde la autocrítica siempre está presente. Olvera asegura que ese duro periodo es uno de los componentes que los ha hecho permanecer vigentes a él y su equipo.

Ellos se han encargado de explorar continuamente los ingredientes mexicanos de la mano de su productores, y han sido punta de lanza en demostrar ética y prácticas sostenibles en un entorno de fine dining. Dice mucho de una persona que sus colegas se desvivan en halagos hacia él cada vez que se menciona su nombre. Varios recuerdan noches épicas, cenas conmovedoras, largas pláticas y una alegría por vivir exorbitante. Muchos visitaron el restaurante que estaba en Petrarca, incluyendo el célebre chef francés Michel Bras, que Olvera confiesa es la persona a quien más le ha emocionado cocinarle. Si bien permanece el salón de 33 mesas ­–donde se sirve el menú degustación–, el equipo dejó hace muchos años de estar compuesto tan solo por siete personas. El Pujol de Tennyson­tiene muchos guiños para que el comensal conozca al chef y sus obsesiones, como el color negro, la estética japonesa, la música ­–el mismo Olvera cura las playlists– y los círculos, que él dice son la figura recurrente que encuentra en México y que están presentes en todos lados, desde la decoración, los platos, las tortillas y los moles.

“Idealmente, Pujol debería de sobrevivirme”, reflexiona Olvera sobre lo que viene. “El futuro de los siguientes años es aquí en México.

Creo que todos tenemos derecho a tener acceso a muy buena alimentación y me gustaría que Pujol de alguna manera fuera eso”.

They say there is no courage without fear. Few things terrify a young cook more than seeing their restaurant sit empty for a year. Today, it’s a different story, but Enrique Olvera remembers that nightmarish time as beautiful years that forged the character of Pujol, where self-criticism is always present. He credits that tough period as one of the components that have kept him and his team relevant. They’re not only tasked with continuously exploring Mexican ingredients from the hand of their producers, but also with practicing ethics and sustainability in a fine-dining environment. It says a lot about a person when his colleagues go out of their way to compliment him at the mere mention of his name. Several recall epic nights, heartwarming dinners, long talks, and an irrepressible joie de vivre. Many visited the restaurant that used to be located on Petrarca street, including the famous French chef Michel Bras (Olvera confesses he’s never been more excited to cook for anyone). Although the 33-table dining room where the tasting menu is served still remains, the team is no longer composed of just seven people, and hasn’t been for many years. The new Pujol, located on Tennyson street, gives diners a glimpse of the chef and his obsessions, such as the color black, Japanese aesthetics, music (Olvera himself curates the playlists) and circles, which he says are a recurring theme in Mexico. At Pujol, circles are everywhere, from the decor to the dishes, the tortillas to the moles.

“Ideally, Pujol should outlive me,” Olvera says, reflecting on what’s next. “The future of the next few years is here in Mexico.

I think we all have the right to have access to very good food, and I would like for Pujol to be that, somehow.”

La primera vez que visité Pujol fue hace 12 años. En ese momento, muchos otros chefs de restaurantes fine dining se enfocaban en ingredientes de lujo: caviar, foie gras y trufas. Recuerdo visitar Pujol impresionado por la humildad de Enrique, que podía verse en el plato: una tortilla con hoja santa y queso. Estaba deliciosa, por supuesto. Enrique se asomaba a la sala desde la pequeña cocina del restaurante original, quería ver si los comensales estaban felices; aun antes de conocerlo personalmente, estaba claro que eso era lo más importante para él. Recuerdo que después de varios años redujo el costo de su menú, me dijo “¿Cuál es el punto de tener un gran restaurantes si los locales no pueden costear comer aquí?”. Fue la primera vez que escuché a un chef decir eso, y estaba en lo correcto.

The first time I visited Pujol was 12 years ago. At that time, many other fine dining chefs were focusing on luxury ingredients: caviar, foie gras, and truffles. I remember visiting Pujol impressed by Enrique’s humility, which came through on the plate: a tortilla with hoja santa and cheese. It was of course, delicious. Enrique would peek at the dining room, he wanted to see if his diners were happy. I remember that, several years later, he reduced the cost of his menu, telling me, “what’s the point of having a great restaurant if locals can’t afford to eat here?” It was the first time I ever heard a chef say that, and he was right.

Mi primera impresión de Enrique Olvera fue que me estaba abrazando. Me envolvió en un cálido abrazo de oso desde el momento que nos conocimos. Me encontré desarmado. Cada vez que lo veo ahora, anticipo ese abrazo. Hay una especie de encanto y alegría en sus ojos que es imposible fingir. Parece deleitarse en conocer a la gente y alimentarla. Su cocina parece estar conectada con un amor por vivir, un amor por México y un amor por la vida misma.

Naturalmente lo que más recuerdo sobre mi primera comida en Pujol fue el famoso mole madre. Puede ser que sea mi plato favorito que he comido en un restaurante. Es al mismo tiempo simple y complejo, tanto terroso como exquisito. Podría haberme comido una cubeta completa. Es una locura decir esto, pero sentí que el universo entero se expresaba a través de ese mole. Salí de Pujol regocijado y embriagado. La cocina de Enrique Olvera ha obligado a muchos escritores gastronómicos estadounidenses y europeos a hacer lo que deberían haber hecho siempre: considerar la cocina mexicana una de las grandes cocinas de la tierra.

My first impression of Enrique Olvera was that he was hugging me. He enfolded me in a warm, bearlike embrace from the moment we met. I found myself disarmed. Every time I see him, now, I anticipate that hug. There is a kind of charm and joy in his eyes that is impossible to fake. He seems to take great delight in meeting people and feeding people. His cooking seems to be connected to a love of living –a love for Mexico and a love for life itself.

Naturally what I most remember about my first meal at Pujol was Olvera’s famous aged mole. It might be my favorite thing I have ever eaten in a fine dining restaurant. It was both simple and complex, both earthy and exquisite. I could have eaten a bucket of that mole. This is a crazy thing to say, but I felt like the entire universe was being expressed through that mole. I left Pujol feeling exhilarated and intoxicated. I did not feel sluggish or weighed down. Enrique Olvera’s cooking has forced many American and European food writers to do what they should have been doing all along: to view Mexican cuisine as one of the great cuisines on Earth.

Tuve la fortuna de conocer a Enrique muy joven, aunque sigue siendo joven. Inmediatamente me di cuenta de que era un hombre muy talentoso y que sería alguien que iba a llegar muy lejos. De entonces, de la primera etapa de Pujol antes de que se convirtiera en cocina mexicana, recuerdo el sandwich de foie gras, también hacía unos ravioles de aguacate rellenos con cangrejo, y había varios platos muy memorables. Lo que más atesoro de la amistad con Enrique es el tiempo. En nuestros años más mozos él ya era muy reconocido y solíamos platicar más, vernos con más frecuencia. Lo más maravilloso es que no importa la hora, no importa el día, siempre me contesta cuando le pregunto o le platico cualquier cosa.

I was fortunate to meet Enrique when he was very young –although he is still young. I immediately realized that he was a very talented man and that he would go far. From those early days, from the first stage of Pujol, before it became Mexican cuisine, I remember the foie gras sandwich.

He also made avocado ravioli stuffed with crab, and there were several very memorable dishes. What I treasure most about my friendship with Enrique is time. In our younger years, he was already well-known and we used to talk more, see each other more often. The most wonderful thing is that no matter the hour, no matter the day, he always answers whenever I ask him about anything.

Enrique is a revolutionary man. What he has been able to share about Mexico with a wide audience has really been groundbreaking. He keeps pushing through, making everything richer and deeper and more profound and impactful, from the restaurants, to his conferences that brings the world to Mexico, or by simply producing the best tortillas for people.

Fui a Pujol en sus inicios, me gustó mucho. Después me tocó convivir con Enrique cuando hizo el peregrinaje a Ensenada y al Valle para que Benito Molina lo emborrachara, que Hugo D’Acosta lo regañara, que Pablo Ferrer lo paseara e ir a crudear a Laja. Siempre ha estado muy abierto a conocer y es su gran virtud, esa sensibilidad de ver y conocer, hablar y conectar. Con Enrique siempre hay una amistad, una fraternidad, en todos los momentos, con mucha complicidad y mucho apoyo. Él personifica algo muy cabrón, que es que los grandes chefs no son grandes cocineros. ¿Por qué?

Porque él es un director que trabaja con el talento de la gente, es el primero que se dedicó a hacer una escuela y nadie lo ha hecho como él.

I went to Pujol right at the beginning, I really liked it. Later I spent time with Enrique when he made a pilgrimage to Ensenada and the Guadalupe Valley where Benito Molina got him drunk, Hugo D’Acosta scolded him, and Pablo Ferrer showed him around and took him to eat his hangover away at Laja.

He has always been very open, and that is his great virtue, that sensitivity to see and learn, to talk and connect. With Enrique there is always a friendship, a brotherhood, at all times, with a lot of mutual understanding and support. He personifies the fact that great chefs are not great cooks. Why? Because he is a director who works with the talent of the people; he’s been the first one to dedicate himself to building a school and nobody has done it like him. He connects and unites others.

He’s a guy with an inner joy; he’s secure in what he does, a determined man who knows very well what he wants. I so treasure watching this man dance, have fun, laugh, and share his friendship. Beyond being an acclaimed and famous chef, he connects with everything equally, and that is very nice. Pujol is one of the places that has impacted me the most, for its singular vision and its treatment of the product, a twist on tradition that has made an impression on all of us chefs.

En la primera conversación que tuve con Enrique, me di cuenta de que tenía una magia, una chispa, un talento y un conocimiento para contar, conceptualizar y visionar. Me llevé una sensación de admiración, el deseo de conocerlo y ser su amigo.

Su legado es lo que está haciendo hoy en día, contar y dejar una huella de lo que es no solo México, sino la cocina de este continente y nuestra forma de vivir que trasciende lo gastronómico. Enrique pisa fuerte, con mucha personalidad y seguridad en sí mismo. Nunca deja de ser él, es genuino. Recuerdo que me parecía increíble que una persona de un carácter tan crudo y con una forma de abordar las cosas tan fuerte y tan rotunda, desplegara una sensibilidad tan extraordinaria. Es uno de los cocineros más talentosos que conozco, me parece que tiene un don. Hay muchas personas con mucho talento y voluntad, pero pocas personas tienen un verdadero don. Enrique es uno de ellos. Con Enrique he vivido muchos momentos, y para una persona reservada como es un vasco, que somos discretos y contenidos, encontrarnos con un espíritu tan a caballo como es Enrique se nos hace exótico. Siempre es muy estimulante poder observar y aprender del trabajo de una persona con una sensibilidad y con una gran capacidad de generar tanta elegancia. Él ha abierto el camino para que otros entiendan que imposible no es.

I remember that it seemed incredible to me that someone of such raw character, who approaches things so emphatically, could also have such extraordinary sensitivity. He is one of the most talented cooks I know, I think he has a gift. There are many people with great talent and will, but few have a true gift. Enrique is one of them. I’ve spent a lot of time with Enrique, and for a reserved Basque like me, meeting someone as spirited as he is seems exotic. It’s always very stimulating to be able to observe and learn from someone so aware and capable of generating so much elegance. He has paved the way for others to understand that nothing is impossible.

Su cocina es una síntesis perfecta entre vanguardia y tradición y un homenaje a la riqueza y diversidad de los productos mexicanos. Creo que la excelencia tiene una relación directa con la memoria. Los platos sublimes son aquellos que nunca olvidaremos. Mi primera experiencia en Pujol va a quedar por siempre en mi recuerdo. Sentí que había comido el taco más bello del mundo. Sin embargo, su magia no residía en lo estético de la presentación sino en su capacidad de sorprender. Una tortilla de maíz con ceviche de pescado y frijol que al darle vuelta llevaba una hoja santa en su revés. Fue como encontrar el tesoro escondido, un momento de goce absoluto. Y a partir de allí y como suele pasarnos con las piezas más refinadas, quedé cautivado por los bellos detalles.

The most sublime dishes are unforgettable. I will always remember my first experience at Pujol. I felt like I had eaten the most beautiful taco in the world. But the magic wasn’t in the aesthetics of the presentation but in its ability to surprise.

A corn tortilla with fish ceviche and beans with an hoja santa leaf on the other side. It was like finding hidden treasure, a moment of absolute joy. And from there, as usually happens with the most refined pieces, I was captivated by the beautiful details.

Alemania es antes conocida por sus coches y por sus aspirinas que por sus fuertes medievales.

La principal economía de Europa se hace presente cuando se habla de salchichas y festivales cerveceros, pero apenas figura cuando se trata de grandes montañas. Las aseveraciones anteriores son muy atinadas, especialmente en octubre.

Aun así, el castillo de cuento de hadas más famoso del continente descansa al sur de Baviera. Para ser más precisos, en las pintorescas colinas de Schwangau.

Esta municipalidad rural, que apenas rebasa los 3,000 habitantes, sabe cómo llamar la atención en grande. Para lograrlo no necesita la ayuda de sus lagos cristalinos ni de los cencerros de sus vacas. Un castillo de proporciones épicas, tan fuera de serie como de contexto, es más que suficiente. A cambio de adentrarse en la Alemania profunda, los parajes bávaros revelan bosques encantados, palacios delirantes y reyes que no vivieron felices para siempre.

Había una vez, en una tierra lejana custodiada por colinas fértiles y montañas vestidas de blanco, un castillo como ningún otro. Bueno, en realidad eran dos castillos, pero uno era tan alto, tan imponente y tan majestuoso, que el otro pasaba desapercibido. Su nombre, Neuschwanstein. Su belleza, inspiración de parques temáticos. Y su historia, si bien sugerente de caballeros en armaduras, más bien propia de berrinches reales y torres de adorno.

Construido a finales del siglo XIX, Neuschwanstein es la materialización de un capricho sin sentido.

Enamorado de las fortalezas medievales, Luis II de Baviera mandó construir un castillo que no cumplía con otra función que satisfacer su locura. Con la ayuda de escenógrafos teatrales y una herencia que se probó insuficiente, el monarca de Baviera erigió su condena.

La edificación, una caricatura romántica del medievo, terminó por incapacitar al rey que tacharon de loco.

Still, the most famous fairytale castle on the continent rests in southern Bavaria, in the picturesque hills of Schwangau, to be precise.

With barely 3,000 inhabitants, this rural municipality knows how to attract attention in a big way.

It doesn’t need crystalline lakes or cow bells, just a castle of epic proportions, both off the charts and out of context. Here in deep Germany, the Bavarian landscape reveals enchanted forests, delirious palaces and kings that did not live happily ever after.

As you Wish, My Prince

Once upon a time, in a distant land of fertile hills and white-capped mountains, there stood a castle like no other. Well, actually, there were two castles, but one was so tall, so imposing, and so majestic, that the other went unnoticed. Its name: Neuschwanstein. Its beauty, enough to inspire a theme park. And its history, although suggestive of knights in armor, rather more typical of royal tantrums and decorative towers.

Built in the late 19th century, Neuschwanstein is the embodiment of a senseless whim. Enchanted by medieval fortresses, Louis II of Bavaria ordered the construction of a castle that would serve no other purpose than to satisfy his madness. With the help of theatrical set designers and an inheritance that proved insufficient, the Bavarian monarch engineered his own downfall. The building, a romantic caricature of the Middle Ages, ended up incapacitating the king, who was branded crazy.

Full of uninhabitable spaces and anachronisms, Neuschwanstein is one of, if not the, crudest castles in Europe. Still, the campy decor is more attractive than ordinary. Despite the long lines, about 1.5 million people come here to see the most-visited castle in Germany every year. After all, Louis II of Bavaria isn’t the only one who wanted to live out a fairytale-worthy fantasy.

Among Neighbors

Neuschwanstein isn’t the only castle in the region, nor is it the most sensible. That said, the rest are not free of cartoonish aspirations. Other medieval ruins and immodest palaces dot this valley and the neighboring towns. With no talking mirrors or cursed spinning wheels, these silent witnesses recall tales in which

Entre vecinos

El castillo de Neuschwanstein no es el único de la región y tampoco el más sensato. Dicho lo anterior, el resto no libra las aspiraciones caricaturescas. Otras ruinas medievales y palacios custodian este valle y las localidades vecinas.

En el valle donde descansa Neuschwanstein, muchos metros más abajo, se puede ver otra edificación presumida. Se trata de Hohenschwangau, la residencia donde Luis II pasó su infancia. Construido en la primera mitad del siglo XIX, el castillo ocupa el lugar de una fortaleza medieval abandonada. Con vistas privilegiadas del lago Alpsee, este palacio de verano no escatima cuando se trata de fuentes y candiles. Eso sí, gracias a los excesos de Luis II, las almenas de Hohenschwangau y su estilo neogótico parecen poca cosa.

20 kilómetros al oeste, los restos de dos castillos recuerdan una Edad Media menos romantizada, aunque no por eso humilde. Eisenberg, construido en el siglo XIV, se diseñó con la idea de encelar a los vecinos tiroleses. Hohenfreyberg, construido en el siglo XV, se hizo acreedor al título del último gran castillo medieval de Alemania al adoptar un estilo en desuso. Estos fuertes en la municipalidad de Pfronten sobreviven sin maleficios ni selfie sticks.

Bosques encantados

La fama de esta región se debe a su colección de castillos.

Afortunadamente, la imaginación desbordada no es la única riqueza del cuento. Más allá de una postal trillada, el sur de Baviera resguarda parajes capaces de incitar fantasías osadas. Gracias a su geografía accidentada, la campiña es perfecta para practicar actividades como cañonismo, parapente, windsurf y bici de montaña.

El sur de Baviera está lleno de agua dulce de los Alpes. Algovia Oriental no es la excepción. A medio camino entre los castillos de Schwangau y de Pfronten, un lago glaciar cobra vida con la llegada del verano.

Pocos rayos de sol bastan para que las aguas tranquilas de Hopfensee atraigan botes y tablas de stand-up paddle. A las actividades de remo se suman un sendero de siete kilómetros, un pueblito tapizado de terrazas cerveceras y decenas de cisnes flotantes operados a pedal.

No hace falta un milagro para encontrar tesoros naturales en los valles bávaros, y para descubrir el más impresionante conviene confiar en el gusto de Luis II. Las decisiones del rey son cuestionables cuando se trata de seleccionar papel tapiz, pero no patios traseros. A su paso por la montaña donde descansa Neuschwanstein, el río Pollat forma un desfiladero escoltado por una cascada de cuento. Desde el pueblo hasta el castillo, una pasarela empotrada en la pared sigue los pasos del cañón. El camino no necesita hadas para ser mágico y aun así, poquísimas personas lo recorren. En las fantasías modernas, parece que el bosque necesita tienda de recuerditos para llamar la atención.

In the valley where Neuschwanstein rests, many meters below, another smug building can be seen. It is Hohenschwangau, the residence where Louis II spent his childhood. Built in the first half of the 19th century, the castle was built on the site of an abandoned medieval fortress. With privileged views of the Alpsee lake, this summer palace doesn’t skimp on fountains and chandeliers. Of course, thanks to the excesses of Louis II, the battlements of Hohenschwangau and its neo-Gothic style seem trivial.

20 kilometers west, one comes upon the remains of two castles reminiscent of a less romanticized Middle Ages, though not necessarily humble. Eisenberg, built in the 14th century, was designed to make its Tyrolean neighbors jealous. Hohenfreyberg, built in the 15th century, earned the title of Germany’s last great medieval castle by adopting a disused style.

Without no ticket windows or audio guides, these forts in the Pfronten municipality survive without magical curses or selfie sticks.

Enchanted Forests

This region is famous for its collection of castles.

Fortunately, a boundless imagination is not this story’s only treasure. Beyond their hackneyed postcard views, the landscapes of southern Bavaria can also incite daring fantasies. With its rugged geography, the countryside is perfect for canyoneering, paragliding, windsurfing and mountain biking.

Thanks to the Alps, southern Bavaria is replete with fresh water, and eastern Allgäu is no exception.

Halfway between the castles of Schwangau and Pfronten, a small glacial lake comes alive with the arrival of summer. Just a few rays of sunshine are enough to attract boats and stand-up paddleboards to the calm waters of Hopfensee. There’s also a seven-kilometer trail, a small village carpeted with beer gardens, and dozens of those awful pedal-operated floating swans.

It doesn’t take a miracle to find natural treasures in the valleys of Bavaria. But to discover the most impressive ones, trust the taste of Louis II. The king may have made questionable decisions when it came to selecting wallpaper, but not backyards. As it passes through the mountain where Neuschwanstein stands, the Pollat river forms a gorge, complete with a fairytale waterfall. From the town to the castle, a walkway recessed into the wall follows the canyon’s footsteps. The path doesn’t need fairies to feel magical, yet very few people walk it. In modern-day fantasies, it seemls like even the forest needs a souvenir shop to attract attention.

Todos los lectores empedernidos tenemos un libro que nos abrió las puertas de ese vicio, arruinándonos para siempre. En mi caso, fue El llamado de lo salvaje, de Jack London: una novela en la que el protagonista es un perro, Buck, al que se roban de su hogar en California para llevarlo a jalar trineos en el Yukón.

No es extraño que algunas de las lecturas infantiles más entrañables tengan como protagonista a un animal, pero el ejercicio de ver el mundo a través de los ojos de otra especie trasciende la literatura infantil y juvenil, y constituye un subgénero rico en obras maestras y diverso en estilos y aproximaciones.

Hace un par de meses adopté un perro criollo y, como es natural, me obsesioné por comprender sus fluctuantes estados de ánimo, lo cual me llevó a repasar algunos de mis libros favoritos sobre perros.

Al igual que en la citada novela de London, en Tombuctú (1999), de Paul Auster, la historia está contada desde la perspectiva del cánido.

Míster Bones es la mascota de un vagabundo que está a punto de morir. Teñido de una sentimentalidad un tanto melodramática, Tombuctú tiene, sin embargo, un final capaz de arrancar

All inveterate readers have one book that acted as a kind of gateway drug, ruining us forever. In my case, that book was The Call of the Wild, by Jack London: a novel whose protagonist, a dog named Buck, is robbed of his comfortable home in California and taken to pull sleds in the Yukon.

It is no surprise that some of the most endearing kids’ books feature an animal as their main character, but the exercise of seeing the world through the eyes of another species transcends children’s and youngadult literature. It’s a subgenre of its own, rich in masterpieces with diverse styles and approaches.

A couple of months ago, I adopted a mutt; naturally, I grew obsessed with understanding its fluctuating moods, and that led me to reflect on some of my favorite books about dogs.

As in the aforementioned London novel, Timbuktu (1999), by Paul Auster, is also told from a canine’s perspective. Mr. Bones belongs to a vagabond poet who is close to death. Tinged with a somewhat melodramatic sentimentality, the ending of Timbuktu

From March 5 to 10, more than 200 guests celebrated the 8th Aeromexico Ski Cup in Whistler, Canada, an hour and a half from Vancouver, a destination the airline has been serving for five years.

LA COMPETENCIA Divididos en tres categorías distintas para las disciplinas de snowboard y esquí, los competidores bajaron las montañas que en 2010 fueron sede de los Juegos Olímpicos de Invierno. Previo al día de la competencia, los deportistas realizaron pruebas en solitario, con instructores profesionales, y reconocieron sus respectivas pistas.

Competing in three different ski and snowboarding categories, competitors raced down the same slopes that hosted the 2010 Winter Olympics. Before the day of the competition, the athletes carried out solo trials with professional instructors to get to know their respective courses.

CAMPECHE: CORAZÓN MAYA La puerta de entrada desde el Golfo de México a la Península de Yucatán es el paraíso en el que los mayas asentaron sus grandes ciudades.

The gateway to the Yucatan Peninsula, Campeche is a paradise where the Maya established their great cities.

EDZNÁ Mascarones de estuco, acrópolis, arquitectura Puuc y Chenes, y vestigios de un complejo sistema hidráulico se encuentran en esta zona arqueológica, que fue una gran capital para los mayas y hoy es historia viva. La ciudad, cuyo nombre significa Casa de los Itzáes, tiene un estilo semejante al Petén guatemalteco debido al gran intercambio cultural. Se encuentra a 55 kilómetros de la ciudad de Campeche.

This archaeological zone features stucco masks, an acropolis, Puuc and Chenes architecture and the vestiges of a complex hydraulic system. Once a great Mayan city, today Edzná is living history. The city, whose name means Home of the Itzá, has a style similar to that of Petén, in Guatemala, as there was a lot of cultural exchange between the two sites. It is located 55 kilometers from the city of Campeche.
