Greetings and I hope you’re enjoying your summer and you’ve had some time to spend with your loved ones this season Nothing is more important Here’s a quick look at what we’ve been up to this summer.
At Eurest, we’re committed to building and celebrating careers, and this summer, our Global University of Lifelong Learning (GULL) program has been a shining example of this dedication, with 52 GULL graduates who are now trained for positions in leadership roles Read about this innovative program on page 4
We also take pride in celebrating our associates' anniversaries. It is heartwarming to see dozens of our team members marking 20 years or more with us each month, and I have included several of their stories on page 6.
In the realm of community and safety, our managers have all been trained in CPR, which has already saved lives This training proved vital last year, helping three individuals in emergency situations. Our responsibility to care for each other is paramount, and these efforts highlight our commitment to safety and community well-being. (See page 5)
We continue to lead with diversity, equity, and inclusion. Our Directors of Diversity, Dr. Ayanna Cummings and Dr. Derren Thompson recently facilitated the “How to Be an Ally in the Workplace” workshop Additionally, we are partnering with local nonprofits to support economic opportunities and inclusivity within our communities Read about it on page 3
Innovation is also at the forefront of our mission. Across the nation, we are adopting new technology to enhance guest experiences, including sustainable digital signage and the Meveca for rooftop dining in New York. Read about it on page 9.

LEADING WITH DIVERSITY, EQUITY AND INCLUSION
In addition to Diversity Job Fairs and their daily duties as leaders for our teams, our Directors of Diversity Dr. Ayanna Cummings and Dr. Derren Thompson recently facilitated the interactive workshop “How to Be an Ally in the Workplace ”
Across the nation, we partner locally with nonprofits that benefit the communities in which we serve Here are just a few examples: In New York and New Jersey we are hiring trained culinary associates from Hot Bread Kitchen. Their mission is to create economic opportunity for women and gender-expansive people, immigrants, and people of color through culinary job skills training and job placement.
NY STATE ASSEMBLY AWARDS
Our Poughkeepsie location was recently commended by the NY State Assembly for our longstanding partnership with ARC and for supporting Americans with Disabilities For the past 25 years, Eurest has been a proud partner with ARC of the Greater Hudson Valley ARC's mission is to provide opportunities for people with unique abilities, including employment, education, and other support systems Aaron Abolafia, who was placed with us through ARC 15 years ago, was just awarded associate of the year!

CAPS OFF TO THE 2024 GULL GRADUATES
Our Eurest GULL (Global University of Lifelong Learning) program is 16 weeks of education and development to help prepare hourly associates for salaried managerial roles. This provides our dedicated associates with a path forward for career growth. This summer, our National Accounts division celebrated 52 GULL graduates. Here is one of their stories.
Mbuteh “Eli” Murray is a prime example of how one can grow a successful career with Compass. Eli began his career with us 15 years ago as a dishwasher, worked his way up to Line Cook, and now, after graduating from our GULL program, was promoted to Sous Chef

EMPOWERING INCLUSION WITH BEST BUDDIES INTERNATIONAL
Eurest is teaming up with Best Buddies International on a national employer partnership to provide job opportunities to people with intellectual and developmental disabilities (IDD).
The partnership is starting in six markets, and we’ll be engaging our clients and communities in a bigger capacity as we ramp up our hiring. Together, we are positively impacting the lives of people with IDD and giving them a pathway to success.

CPR HEROES
COMING SOON: CHEF APPRECIATION WEEK IS SEPTEMBER 8-14
Save the date and join us in celebrating one of our favorite weeks all year: Chef Appreciation Week! This meaningful annual observance is an opportunity for us to give heartfelt thanks to our talented chefs and their teams who work hard to make every day delicious.
On August 8, 2022, I had a choking incident that left me unable to breathe for fifteen minutes. If it hadn’t been for the heroic efforts of Dillon Reed, who performed CPR on me until the EMTs arrived, I would not be here today This is why all of our National Accounts managers from coast to coast have been trained in CPR, and have been able to use those skills in emergencies.
RESCUING A GUEST
Recently, manager Priscilla Saquipay had an incident at one of our NYC locations when a guest fainted. As she dropped to the floor, Priscilla took immediate action. “Seeing a customer faint isn’t something that occurs every day, but having had the tools that the CPR training provided me with was what pushed me to act so quickly and efficiently. I’m grateful that I was prepared.”

A CO-WORKER’S LIFE SAVED


When utility worker Stephen Williams began choking on a sample of steak while passing through the kitchen, Sous Chef Blake Maier, who had recently completed CPR training, rushed over to help. Blake immediately began using the Heimlich maneuver on Steve who was close to being unconscious at this point. After 2 thrusts, Blake was able to dislodge the piece of food from Steve’s throat. He then gently set Steve down to avoid his risk of collapsing.

CELEBRATING OUR PEOPLE
Each month, dozens of our National Accounts associates celebrate anniversaries of 20 years or more. It’s gratifying to celebrate so many work anniversaries, and it really says a lot about the dedicated and talented people who work with us Here are a few of our long-time associates and leaders, and their stories
Recently I had the honor of joining District Manager Tim Standke and General Manager Danny Sanchez in congratulating associate Lily Walker on an impressive 40 years of service with Compass. Danny Sanchez had this to say about Lily: “Lily’s best skill is that she knows the job inside and out and can probably recite the employee hand book if needed. What I appreciate about Lily is that she’s a team player! No matter what I ask her to do, she is willing to do it without complaint ” We congratulate Lily for being with Compass for the majority of her working career!
PAOLA BRESSI
District Manager Paola Bressi is a true Compass success story. Born and raised in Puebla, Mexico, her culinary career was inspired by her grandfather who was a chef. Paola started with us 20 years ago as a cashier and worked her way up to District Manager. Paola says, “Over the past 20 years, I was very fortunate to work for amazing people that helped me to grow in the company. I was able to be part of the Project Readiness and was mentored by Chef Daniel LaGarde My motto: Never stop learning, don’t settle for less, always trust yourself and believe in the company ”

FARMERS MARKET FRESH
Summer’s arrival brings a bounty of fresh seasonal fruits and vegetables We work closely with community farmers to source fresh, local ingredients for seasonally crafted menus.
Look out for Eat Local starting this month, with recipes featuring locally grown produce, and pop-up farmers markets with local products for guests to take home.

TASTE & SAVOR DEBUTS
Our new off-premise catering brand, Taste & Savor, is here to elevate your special events
Taste & Savor debuted with a big splash aboard the Intrepid Sea, Air and Space Museum in New York City during the Compass Community Council event in May. The menu showstoppers included a pastrami smoked salmon blini topped with caviar and mini cannoli filled and dipped to order.

Dhaba is a rebirth of one of our most popular concepts, Masala, embracing the authenticity and bold flavors of Indian Cuisine Dhaba’s five new menus are an exploration into India’s diverse cultures and traditions with spices and sauces specific to the regions of North and South India.

NEW STREET EATS: IF PIGS HAD WINGS
A new addition to our global street food concept, Street Eats, is launching! If Pigs Had Wings is an inventive menu centered around seasoned and sauced pork wings. The highquality pork wing is slow cooked to perfection and packed with flavor, including three saucy blends of Pok Pok with Peanuts, Harissa Glaze and Lillie’s Hot Gold.

SUMMER CATERING MENU AVAILABLE
Keep the sizzle in summer by catering your next event. Our summer catering menu features a pancake board, summer salads, sandwiches and a fun snackle box, along with a pineapple mocktail.
Additionally, our limited summer feature meal features a Strawberry Almond Poppyseed Salad with Grilled Chicken served with French baguette, Bubly and a chocolate chunk cookie for only $14

SOLUTIONS CREATE

GUEST EXPERIENCE:
THE BBQ BUCKET LIST IS ON THE ROAD! One of the ways we're creating great guest experiences is with our traveling smoker. It travels on a weekly basis, along with our Texan BBQ Master Michael Williams, remains at a site for one week and then heads to the next location. If locations are close then we are able to do multiple locations in the same week. The smoker has now logged over 15,000 miles!
SUSTAINABLE SOLUTIONS
Smart Tags will replace all signs within the American Airlines Club and Lounge business. They can be timed to automatically switch from breakfast to all-day and have adjustable stands to fit within the buffet area. This will eliminate the printing of hundreds of signs on every quarter for the clubs and every 2 months for the Lounges when the menu changes This will also allow us to make any changes to the signs within seconds if we have a substitution.


MOVABLE FEAST

Our Meveca cook stations allow us to bring the culinary experience to where our guests gather, whether that’s a conference center or a rooftop.

DIVERSE SUPPLIER SPOTLIGHT: POP MIX BY MARILYN AND ZYN
Eurest is proud to partner with a growing list of diverse suppliers with unique products and inspiring stories. Get to know our featured suppliers for July.
Pop Mix by Marilyn: Born out of her tradition of giving caramel popcorn as housewarming gifts, we can all now enjoy the perks of being Marilyn’s neighbor. Pop Mix by Marilyn is vegan, gluten-free and kosher. Look out for her vegan caramel and peanut butter vegan caramel varieties.
ZYN: Inspired by natural healing traditions, Zyn is derived from “zyndagy,” a South Asian word for "life " After a turmeric paste relieved their father’s nerve pain, they researched turmeric and discovered its curative compound, curcumin. Zyn’s tasty electrolyte drink mixes incorporate curcumin and piperine, which boosts absorption.

They will ensure everyone has a seat at the table, designing initiatives around talent, operations and community.

Our community outreach program, Eurest Cares, is buzzing with momentum. When our marketing team held its annual strategy meeting in Chicago, attendees took part in a special team building activity constructing beehives. Where available, we’re proud to support our clients’ beekeeping efforts and local sources of honey

THE NEXT GENERATION OF EUREST
High school seniors gained real-world experience through a marketing design internship with Eurest, utilizing skills learned in the classroom to hospitality projects. The students, with aspirations in architecture and design, supported teams reimagining future marketplaces and retail spaces.
