Cook Time: 40 mins
Yield: 6 servings
Ingredients:
Sweet Potatoes & Brussel Sprouts
Nonstick spray, as needed
1 red onion, diced
1 large sweet potato peeled and diced
2 TBSP extra-virgin olive oil
2 tsp fresh rosemary, chopped
1 tsp garlic powder
Kosher salt & freshly ground pepper, to taste
2 cups brussels sprouts, shredded
Steps:
Nachos
Tortilla chips, as needed
¾ cup prepared cranberry sauce
1 cup white cheddar cheese, shredded
8 oz brie, thinly sliced
Fresh ground black pepper
Fresh parsley, for garnish
Make the Sweet Potatoes and Brussels: preheat the oven to 400 degrees F. I like to always use convection Lightly grease a baking sheet with nonstick spray
Toss the onions and sweet potatoes along with rosemary, garlic powder and extra virgin olive oil in a bowl. Season with salt & pepper then spread out evenly on the greased baking sheet.
Roast until the sweet potatoes are tender and beginning to brown, @ 12-15 minutes.
Add the shredded brussels sprouts to the baking sheet and toss well to combine Return the baking sheet to the oven until the veggies are golden brown all over, 7-10 minutes more
Make the Nachos: Arrange the tortilla chips in an even layer in a large skillet. Dollop three-quarters of the cranberry sauce all over the chips Top with three-quarters of the vegetables
Arrange the shredded white cheddar and brie in an even layer on top and then finish with a layer of the remaining vegetable mixture and cranberry sauce.
Transfer the skillet to the oven and bake until the cheeses are very melted, @ 15-18 minutes.
Remove the skillet from the oven and serve immediately, garnish with freshly ground pepper and parsley
September is a very exciting month here at The River Club, as it brings some slightly cooler weather along with some great member tournaments! Agronomically, our warm season turfgrasses will begin shutting down with the shorter day lengths and cooler temperatures. On the other hand, our bentgrass putting surfaces will begin to come out of the summer stressful period and we can begin fine tuning them for our championship season ahead.
As a reminder, we will be closed for maintenance September 5th & 6th for greens aerification. This process is extremely important to relieve compaction, remove organic matter and increase water percolation and set us up for a fun filled championship golf season. We will be punching approximately a .2” diameter hole which is the same size hole we punched during our June aerification. This process is minimally invasive and will fully recover within 7-10 days. With the championship season right around the corner, I would like to once again remind our membership to do their part and fill all divots on tees and fairways as well as fix all ballmarks on putting surfaces to ensure the best possible playing conditions We appreciate your continued support and cooperation as always and look forward to seeing everyone out on the golf course
The Sports Center has two great offers for the month of September:

We are thrilled to feature Brad Scarberry and his family in this month's Member Spotlight! The Scarberry's joined The River Club last month and are looking forward to getting to know the rest of The River Club family, so if you see them around be sure to say hi!
Brad and his wife Bricey are Gwinnett County locals. Brad is the founder for a local home remodeling / construction company called “Exodus Design Build” and Bricey is a childcare provider, but most importantly, they are the proud parents of 4 children (ages 2, 4, 5 & 7).
The Scarberry family is all about sports- Brad is an avid golfer and the four kiddos love to play anything that involves a ball and the outdoors
We are so excited to welcome the Scarberry's and can't wait to start building memories together at the River Club!
