We welcome the change of seasons! After a hot summer, we are looking forward to the cool down of fall. The weather has been great as well as all the play!

The Men’s Member Guest Golf Tournament was a success, and now we look forward to our Breast Cancer Awareness Golf Tournament This tournament is to help raise funds for the Central Carolina Hospital Auxiliary Breast Cancer Comfort Care Funds; this was established to help breast cancer patients with comfort items that may not be covered by insurance, as well as patients who are uninsured or have financial constraints Comfort items include head coverings such as caps, scarves, hats, wigs, and other specialty items that may be required

Our administrative assistant, Patricia (Patti) Kieffer, is available to help you with any questions regarding your member statement Patti will be available Monday through Friday 7:30 AM to 3:30 PM in the clubhouse Patti’s contact information is below and on our website

We are also excited to welcome our new Executive Chef Paul Penrose! Chef Paul brings a lot of experience and passion about his culinary expertise.

Carolina Trace Members,

We are in the most beautiful time of year here in the Carolina’s. We had one of the most lively Men’s Member Guest Golf Tournament I have seen in my time here. Seeing all the smiles was certainly the highlight of September. For October, we will be hosting our famous Glow Ball Golf Tournament to transition into the spooky season toward the end of the month! Also, keep an eye out for our next Cars And Clubs event that will be approaching soon; spread the word around town!

Our purpose is to promote friendship and communications among the women of Carolina Trace Country Club and to benefit the local community

Our next meeting is Friday, October 13 The speaker this month is Byron Wortham from Holly’s Nest Animal Rescue Holly’s Nest’s mission is to take in orphaned and injured wildlife, and to rehabilitate them The over all goal is to rehabilitate and release the animal back into the wild as soon as possible

Membership is open to all women who are members of Carolina Trace Country Club

Our $20 annual dues and 50/50 proceeds allow us to support LOCAL charities

We welcome you to join the Carolina Trace Country Club Women’s Club The deadline for a reservation to our next meeting is Friday, October 6, at 3pm

It was another night of intense competition at Trace as Trivia teams vied for first place The game began with DJ Mike C explaining the rules, procedure and categories. After answers for each category were collected, DJ Mike entertained the teams with music Correct answers from each team were calculated and team scores and places were announced

In the final round, teams could wager up to 20 points. If the final answer was incorrect, teams could lose all of the points wagered.

Categories ranged from General Trivia to TV Police Shows to Ad Slogans and others The final category was Animals in Australia DJ Mike made sure that questions were clearly presented and tailored the questions to the audience as much as possible. It was so much fun to be challenged with questions that covered a variety of age groups

Congratulations go to the First Place Team winners: Who Ordered the Lemonade? Members are pictured below. Chippers came in 2nd with a gutsy bet on the final answer.

CTCC HOSTS TAR HEELS WGA

On Thursday, August 24, Carolina Trace hosted players from many of the clubs that comprise the Tar Heels WGA (THWGA) This is a group of clubs that was formed in 1951 and it was started with the following clubs: Fort Bragg Officers Club, Highland CC, Pine Needles CC, Cape Fear CC, Raleigh CC, and Carolina CC The clubs have changed throughout the years but have always kept the original motto of “Meet new friends through the game of golf.” Currently there are fourteen (14) golf clubs in Tar Heels:

Coast Clubs: Wilson CC, Pine Valley CC, River Landing CC, Porter’s Neck and Cape Fear CC;

North Region: MacGregor Downs, Brier Creek, Governor’s Club and the newest, Prestonwood;

Southern Region: Pine Needles/Southern Pines CC/MidPines, Pinehurst 7/9, Pinewild, Highland and Carolina Trace CC

Tar Heels WGA attempts to choose clubs rated in the top 100 in North Carolina CTCC was invited to join in 2018 as we were in the top 100 list Two officers at that time, WGA President Susan Thorn, and WGA Vice President Ellen Ollett, were instrumental in working with management to organize and make necessary preparations to ensure that CTCC was invited to join Tar Heels. Clubs alternate hosting every other year and host a two day end of the year tournament every 7 years.

Players in the Tar Heel WGA Tournament began the day with a grab-and-go breakfast. Teams in each of the 3 flights played 2 best net balls of the foursome on the Lake Course. A luncheon was served after the game and winners were announced in each flight. Susan Thorn headed the tournament and was assisted by Theresa Boyd and Marcia Connor as well as several other members of the Club

The day was a great success and we would like to thank our Management Team, Marking Committee, Greens and Grounds and all of the volunteers that contributed to that success

FALL PHOTO CHALLENGE

With the change of the season, comes a change of scenery. We have enjoyed seeing all the green and blooms of spring and summer, but now it is time for the beauty of fall and winter.

During the month of October, there is a photo challenge. The winner of this challenge will be featured on the cover of the newsletter, a spotlight on all of our social media channels, and a spotlight on our member website page.

To enter into the contest, please email your photo(s) to April Fleming with the subject “Fall Photo Contest.” Photos will be shared weekly on social media and through email blasts for all members to enjoy.

FEATURED RECIPE

With the season of comfort food beginning, it is always good to throw something new into the mix. April Fleming shared this recipe with me as it is one of her husbands regularly requested recipes each fall and winter.

Easy to make and a great Instant Pot or Slow Cooker meal to enjoy.

SLOW COOK TAMALE PIE

Ingredients:

2 pounds chuck roast

½ cup water

1 teaspoon chili powder

1 teaspoon cumin

1 ½ teaspoon kosher salt

½ teaspoon black pepper

1 - 15 ounce can enchilada sauce

1 - 4 oz can diced green chilis

3 cups shredded cheddar cheese, divided

4 eggs beaten

1 cup chicken broth

1 cup coconut flour (or almond flour)

1 teaspoon baking soda

Instructions:

Cut the chuck roast into large chunks and season with chili powder, cumin, salt, and pepper

Place the roast and water in an Instant Pot and set for 35 minutes, when finished cooking, let pressure release naturally for 10 minutes, then quick release the rest (If using a slow cooker, 4 hours on high, 8 hours on low )

Remove the roast from instant pot, place into a bowl, and shred the roast with two (2) forks

Preheat oven to 400 degrees

Combine shredded beef, enchilada sauce, and green chilis in a bowl

Pour into a 9x13 rectangle casserole dish

Top with 2 cups of cheese

To make the "cornbread" top: combine beaten eggs and chicken broth in a bowl (Tip: use the same bowl as the roast mixture to gather any leftover sauce ) In a separate bowl combine coconut flour and baking soda

Add the coconut flour mixture to the egg mixture

Add remaining cup of cheese to the batter If it seems too thick, add more chicken broth It should be easy to spread and not dry

Spread over the top of the beef and cheese in casserole dish

Bake for 35-40 minutes until bubbly

Serve with pico de gallo and sour cream (optional)

We had a wonderful turn out for our Taco Tennis Event on Monday, September 18 The weather was perfect for our event. The food was wonderfully prepared by Ernie Violon. It was delicious!

When you are a member of Carolina Trace Country Club you are welcome to join in further tennis events sponsored by the Carolina Trace Tennis Association (CTTA) CTTA membership is open to all country club members who would like to play tennis tournaments and attend sponsored events It’s a great way to enhance your social and tennis experience

We are planning some events, as weather permits Guests are welcome, but with limited play opportunities

Hello Carolina Trace Country Club!

The weather is beginning to cool off! It is a perfect time to fall in love with getting active. Getting active does not mean spending a lot of time in the gym or outside It could simply mean spending 10 to 20 minutes doing a total body workout

In honor of a favorite fall drink, here is a great PSL workout:

30 Lunges (both sides)

This workout will target arms, core, and legs A simple workout for everyone who has just a few minutes to get a quick workout in

MEET OUR EXECUTIVE CHEF: CHEF PAUL PENROSE

As a child growing up in the Valley Forge area of Pennsylvania, Chef Paul Penrose spent hours in his grandmother’s kitchen learning to appreciate the varied flavors of an area rich in European multi-cultural history and cuisine His love of flavorful food and fresh ingredients started here and has stayed with him; augmented by travel during his time in the U S Army, in Europe, Asia and the United States. He completed his service at Fort Bragg and made North Carolina his home.

Chef Penrose spent time in some of the finest kitchens on the Outer Banks, quickly working his way up from the line to Executive Chef. During the off season he continued his development by training at the Culinary Institute of America in Hyde Park, NY The Outer Banks provided him the chance to hone his skills and his appreciation of the bounty offered by coastal North Carolina’s seafood industry Working alongside several of the leading chefs there, he soon acquired his reputation for creating and serving outstanding dishes, both continental and coastal, a skillful hand with fine beef, and a flair for creating meals his diners enjoyed and remembered

Chef Penrose relocated from the Outer Banks in 2018 and joined the staff at Southern Prime Steakhouse as Executive Chef He brought with him his love of creating memorable dishes and developing new and exciting flavors and recipes to offer to the patrons of Southern Prime. He joined the Carolina Trace Country Club Team to come back to a familiar setting of being in a country club environment.
