A FAMILY COMMITTED TO HEALTHY GOURMET FOOD Since our founding in 1952, we have based our food production on the concepts of health and excellence, always in consideration of consumers who are mindful of food-related values, allergen-free products and high quality gastronomy. In committing to our motto, healthy gourmet food, our purpose thus lies in the dedication to people’s wellbeing through offering healthy and natural gourmet products whose elaboration combines tradition and innovation. The values we apply in making our products are also a reflection our company’s responsibility policy that pursues excellence in environmentally, economically and socially related processes. In 2010 we presented our first company responsibility report. We were born in Vic, the heart of a region with a proven culinary heritage and a deeply-rooted swine-raising tradition, thanks to the vision and drive of Josep Vilacís Argila, who along with his wife, Cristina Erra Serrabasa, and patron, José Erre Musach, began to produce Erre cured-cooked ham.
Josep Vilacís, a veterinarian specialized in animal husbandry and nutrition, had a passion for healthy eating. This passion led him to become a founding member of the Catalan Association of Food Science (ACCA) and hold conferences on health and nutrition with the aim to transmit his in-depth knowledge of healthy eating. Through the knowledge he acquired on market demand at the tradeshows and congresses he attended in his travels around Europe and the USA, Josep Vilacís set out on a plan to produce a great cured-cooked ham, plus processing services in the county of Osona. In a short time, business would spread across the region. Today Josep Vilacìs’s plan continues with his three children, who have maintained and applied the same values: the honesty and purity of the products themselves. We want to further Josep’s know-how so it will last.

WE WORK IN THE TRADITIONAL WAY, TAKING OUR TIME AND WORKING BY HAND TO MAKE EACH PIECE A UNIQUE WORK OF ART.
TRADITION AND HONESTY IN PRODUCTION In coherence with our values of honesty and the understanding we have of our suppliers, customers and all those loyal to our origins, we opt for raising pigs on sustainable farms. We select animals raised slowly so as to guarantee better quality of their meat, whose prime cuts feature more protein, more flavor and more texture. We work with whole pieces that have been boned, defatted and denervated in a completely manual process, applying traditional methods. This is a process that leaves the fresh meat’s qualities and properties completely unaltered.
In order to obtain maximum quality, we prepare just the right brine to highlight the texture and aroma without modifying the identifying characteristics of each type of fresh meat. Thanks to the rubbing we do and maceration in refrigeration for the right amount of time and rest, we obtain the natural color, aroma and flavor that turns each one of our pieces into a work of art.

A GOURMET DELIGHT Sophisticated, light and highly versatile – this is curedcooked ham, an honest-made product that becomes an authentic gourmet delight with which to take care of our bodies: a highly nutritional value that is both light and easily digestible. It provides us with a great number of minerals such as iron and vitamins, especially those in the B family. It also comes highly recommended for its protein, ones that are made more digestible thanks to the heat process it undergoes. 100 grams of this gourmet delight provides 9 to 10% of the proteins humans need per day. Such nutritious qualities make this the ideal product for everyone, for consumers of all ages.
The cut reflects its quality as well. It is sliced traditionally to best exhibit the different muscles, fine veins of fat and various shades of color. Its texture matches the slightly fibrous texture of cooked meat, and while the slices may not be uniform and break along the muscle lines, this too is a sign that it has been made in the traditional way. CURED-COOKED HAM
OUR SIGNATURE BRAND Firm in texture and elegant, our cured-cooked ham is a true delicacy, made from the best meat having more protein and the most taste. We seal in the flavor and texture of the meat itself, slightly fibrous, a sign that our ham is the most natural possible. Once rigorously selected, the whole piece is worked manually whole by our experts. It is the piece itself that determines the size of the packaging and its final weight. We make it in a way that preserves all its nutritional properties and showcases its organoleptic characteristics (taste, aroma, texture...). With no added proteins, our desire is to keep the nutritional properties of the raw material intact. All pieces are macerated for at least 5 days in refrigeration.
CANNED CUREDCOOKED HAM
OUR GRAND RESERVE Cooked in the very can itself, affirming the taste, aroma and quality of the ham. Once opened with our can opener, the protective layer of gelatin surrounding the ham must be removed with warm water. Afterward, the piece should be dried off to ensure it is preserved in perfect conditions

CUREDCOOKED HAM ON THE LEG OUR FINEST IN TASTE This is the most natural way to present our cured-cooked ham as it preserves the original shape of the leg itself and maintains its layer of bacon fat, bringing it more aroma and taste, plus a smoother texture and a truly elegant cut. NITRATE and PHOSPHATE FREE Cooked-Cured LEG. A version of our cooked-cured leg for the most demanding environmentally-friendly customers. It keeps all the flavour, colour and aroma of this mild and understated meat, but is free of added nitrates and phosphates.
Cured-Cooked LEG ON BONE / Cured-Cooked BONED LEG. A tastier cut with more color and aroma. Ham either boned or partially boned. Its layer of fat bringing it more aroma, this ham is prepared with a more consistent meat that is less pale, making for a tastier and more colorful slice.
Cooked-Cured DUROC LEG and Cooked-Cured C-DUROC LEG. An exceptional, one-of-a-kind curedcooked ham. The genetics of DUROC-certified raised pork guarantee an excellent quality cured-cooked ham whose rich veins of fat and a texture, color and taste make it unique in the market today. This animal is raised in way that respects proper husbandry practices and is fed naturally, mostly with grain.
BOUQUET Cured-Cooked LEG. Sumptuous meat that is very smooth, elegant and subdued. Ham made of certified quality pork of at least 50% Duroc. Cut into 2 parts and vacuum-packed for easy handling.

THE TRADITIONAL VARIETIES, WITH THE SAME QUALITY AS ALWAYS AND PREPARED FOR LOW-SALT DIETS Here at Erre de Vic, the passage of time has lead us to meet the changing needs of our customers and adapt to their habits as far as eating and looking after themselves. That's why we also make low-salt varieties, which keep the same flavour and organoleptic properties as the traditional varieties, but an even healthier composition. Our products have always been made with reduced amounts of salt. Now we have even gone a step further to reduce the amount of this mineral even further in some varieties, such as braised turkey, or cooked ham and chicken. Erre de Vic's most traditional cuts of meat, ready to be used in menus and diets which need to have a reduced salt intake, from small children to persons with health problems such as hypertension. Because it is possible to look after your health and enjoy eating!
LOW-SALT Cured-Cooked HAM. The intense taste and texture typical of this lightly fibrous meat is kept exactly the same in this cured-cooked ham as in the rest of the artisanal cuts from Erre de Vic. The only difference? Salt, which is almost non-existent in this option.

LOW-SALT BRAISED TURKEY BREAST.
This chicken has all of the natural flavour and traditional taste, and is low in fat and rich in highly-nutritious proteins. With 100% Spanish, high quality meats, the salt content has been reduced to the bare minimum in the elaboration process.
All of the aroma and texture of Erre de Vic turkey breast, this time with an even healthier composition. Low in salt and made with tender, tasty, and practically fat-free meat, its flavour is brought out by a light braising.
